本发明涉及即食花胶生产领域,尤其涉及一种低GI值益生元即食花胶罐头及其制备方法。本发明的低GI值益生元即食花胶罐头包括以下重量份原料:干花胶1‑10份、藜麦3‑9份、青稞3‑9份、赤藓糖醇3‑9份、低聚果糖1‑12份、奇亚籽0.5‑2份、银耳0.5‑2份和水70‑140份。本发明以干花胶,藜麦,青稞,赤藓糖醇,低聚果糖,奇亚籽,银耳为原料,能达到低GI值产品的效果,益生元促进人体对胶原蛋白、钙等营养素的吸收,对非糖尿病人的食用可以达到控糖的目的,而对糖尿病人则可放心食用,不易导致血糖问题。

本发明涉及即食花胶生产领域,尤其涉及一种低GI值益生元即食花胶罐头及其制备方法。
背景技术
花胶即鱼肚,是各类鱼鳔的干制品,以富有胶质而著名,故名为花胶。花胶又名鱼肚,是从鱼腹中取出鱼鳔,切开晒干后而成。花胶含有丰富的蛋白质、胶质等,食疗有滋阴养颜、固肾培精之效,可令人迅速消除疲劳。对外科手术病人伤口恢复有帮助。花胶是将大型鱼的鱼鳔(控制鱼类升降浮沉的器官)干沥而成。顶级鱼肚排名依次是鱼胶之王:金钱鳘鱼胶(黄唇鱼)、白花胶(大白花鱼)、黄鲟胶(鲟鱼)、黄花胶(非洲鲈鱼)、鳘鱼胶(大鳘鱼)、门鳝胶(大门鳝)。
花胶不仅是筵席名菜,还有相当的滋补作用和药用价值。《本草纲目》记载:花胶能补肾益精,滋养筋脉,能治疗肾虚滑精及产后(产后食用)风痉。花胶含丰富的蛋白质及胶质,具滋阴养颜,补血,补肾,强壮机能之效。最适宜腰膝酸软,身体虚弱者食用。
目前行业中普遍采用谷物类+冰糖/木糖醇的方式制备即食花胶产品,如现有的一种即食花胶产品配方包括以下重量份数的组分:干花胶3-10份,紫米1-7份,燕麦1-7份,冰糖3-8份,蜜豆1-7份,水70-130份。但该即食花胶产品升糖指数(GI值)比较高,不适宜控糖人士以及糖尿病人食用。
发明内容
本发明的目的在于克服现有技术的不足,提供一种低GI值益生元即食花胶罐头及其制备方法。本发明通过科学调整配料配比,设计一款低GI值的益生元即食花胶产品,可以满足糖尿病人的食用。
为实现上述目的,本发明采取的技术方案为:提供一种低GI值益生元即食花胶罐头,包括以下重量份原料:干花胶、藜麦、青稞、赤藓糖醇、低聚果糖、奇亚籽、银耳和水。
本发明即食花胶罐头所采用的原料中,花胶的主要成分为高级胶原蛋白、多种维生素及钙、锌、铁、硒等多种微量元素。其蛋白质含量高达84.2%,脂肪仅为0.2%,是理想的高蛋白低脂肪食品。从中医角度,花胶极有滋补食疗作用,《本草纲目》记载:花胶能补肾益精,滋养筋脉,能治疗肾虚滑精及产后(产后食用)风痉。花胶含丰富的高级胶原蛋白质,具滋阴养颜,补肾,强壮机能。最适宜腰膝酸软,身体虚弱者食用。
本发明即食花胶罐头所采用的原料中,藜麦的营养价值超过任何一种传统的粮食作物,藜麦是一种全谷全营养完全蛋白碱性食物,藜麦作为一种藜科植物其蛋白质含量与牛肉相当,其品质也不亚于肉源蛋白与奶源蛋白。藜麦所含氨基酸种类丰富,除了人类必须的9种必须氨基酸,还含有许多非必须氨基酸,特别是富集多数作物没有的赖氨酸,并且含有种类丰富且含量较高的矿物元素,以及多种人体正常代谢所需要的维生素,不含胆固醇与麸质,糖含量、脂肪含量与热量都属于较低水平。藜麦的全营养性和高膳食纤维等特性决定了它对健康的益处。研究表明,藜麦富含的维生素、多酚、类黄酮类、皂苷和植物甾醇类物质具有多种健康功效。藜麦具有高蛋白,其所含脂肪中不饱和脂肪酸占83%,还是一种低果糖低葡萄糖的食物能在糖脂代谢过程中发挥有益功效。

本发明即食花胶罐头所采用的原料中,奇亚籽富含人体必需脂肪酸α-亚麻酸,多种抗氧化活性成分(绿原酸,咖啡酸,杨梅酮,槲皮素,山奈酚等),是天然omega-3脂肪酸的来源,并含有丰富的膳食纤维、蛋白质,维生素,矿物质等。

本发明同时提供所述低GI值益生元即食花胶罐头的制备方法,所述制备方法具体包括以下步骤:
S1:将干花胶进行蒸制,获得花胶原料;
S2:将花胶原料泡发后沥干;
S3:将干银耳泡发后清洗沥干;
S4:将藜麦、青稞、奇亚籽、银耳以及沥干后的花胶原料灌装后,再向其中加入糖水溶液,经过杀菌处理,制得所述低GI值益生元即食花胶罐头。
作为本发明所述制备方法的优选实施方式,步骤S4所述糖水溶液为将赤藓糖醇、低聚果糖放入水中搅拌溶解获得。

本发明所述血糖生成指数(GI)是指某种食物升高血糖效应与标准食品(通常为葡萄糖)升高血糖效应的比值,代表的是人体食用一定量的某种食物后会引起多大的血糖反应。它通常反映了一个食物能够引起人体血糖升高多少的能力,血糖生成指数是由人体试验而得来的,而多数评价食物的方法是化学方法,因此也常说食物血糖生成指数是一种生理学参数。

S1:将干花胶进行蒸制,获得花胶原料;
S2:将花胶原料泡发后沥干;
S3:将干银耳泡发后清洗沥干;
S4:将赤藓糖醇、低聚果糖放入水中搅拌溶解获得糖水溶液;
S5:将藜麦、青稞、奇亚籽、银耳以及沥干后的花胶原料灌装后,再向其中加入糖水溶液,经过杀菌处理,制得低GI值即食花胶产品。

当血糖生成指数在55以下时,可认为该食物为低GI食物;当血糖生成指数在55~70之间时,该食物为中等GI食物;当血糖生成指数在70以上时,该食物为高GI食物。一般而言,食物血糖生成指数>70为高食物血糖生成指数食物,它们进入胃肠后消化快,吸收率高,葡萄糖释放快,葡萄糖进入血液后峰值高;食物血糖生成指数<55为低食物血糖生成指数食物,它们在胃肠中停留时间长,吸收率低,葡萄糖释放缓慢,葡萄糖进入血液后的峰值低,下降速度慢。因此,用食物血糖生成指数,合理安排膳食,对于调节和控制人体血糖大有好处。一般来说,只要一半的食物从高血糖生成指数替换成低血糖生成指数,就能获得显著改善血糖的效果。
通过查询各食物GI值可得,本发明实施例1-3的低GI值益生元即食花胶罐头中,主原料花胶的营养成分为蛋白质,几乎不含碳水化合物,GI值为0,藜麦的GI值为35,青稞GI值为25,银耳GI值为27,果糖GI值为23,赤藓糖醇GI值为1,根据各食物的GI值进行加和分析,整个产品的GI值<55,属于低GI值产品。

6.权利要求1-5任一所述低GI值益生元即食花胶罐头的制备方法,其特征在于,所述制备方法具体包括以下步骤:
S1:将干花胶进行蒸制,获得花胶原料;
S2:将花胶原料泡发后沥干;
S3:将干银耳泡发后清洗沥干;
S4:将藜麦、青稞、奇亚籽、银耳以及沥干后的花胶原料灌装后,再向其中加入糖水溶液,经过杀菌处理,制得所述低GI值益生元即食花胶罐头。
7.根据权利要求6所述的制备方法,其特征在于,步骤S4所述糖水溶液为将赤藓糖醇、低聚果糖放入水中搅拌溶解获得。
8.权利要求1-5任一所述低GI值益生元即食花胶罐头在制备控糖食品中的应用。
9.权利要求1-5任一所述低GI值益生元即食花胶罐头在制备供糖尿病人食用的食品中的应用。
10.权利要求1-5任一所述低GI值益生元即食花胶罐头在制备滋阴养颜的食品中的应用。
