Abstract

一种桑黄白酒制作方法,以桑黄发酵液为添加剂与原浆白酒混合勾兑,添加剂占总重量的百分比为6‑10%,桑黄发酵液为桑黄发酵液培养基接种常规桑黄摇瓶种培养发酵而成。本发明的桑黄白酒制作方法,桑黄液体发酵过程中在培养基中加入桑黄及补肾壮阳草药以提高桑黄的免疫有效成分和填补壮阳补肾的有效成分,使得经过生化反应的前述添加物变成易于人体吸收的小分子结构而被吸收利用;提取工艺成本低,桑黄及中药经过液体发酵技术的生化反应进行逐级分解成易于吸收的小分子,有利于人体的吸收利用,长期适量饮用能增强人体免疫力,祛病强身。

本发明涉及饮品制备技术领域。
背景技术
白酒为中国特有的一种蒸馏酒,由淀粉或糖质原料制成酒醅或发酵后经蒸馏而得,传统的白酒营养成分少,营养浓度低。
桑黄是针层孔菌属真菌火木层孔菌,是一种珍贵的多年生大型药用真菌,又名桑寄生、桑臣、桑耳、树鸡、胡孙眼、桑黄菰、桑黄菇等。桑黄作为我国传统的应用型中药材之一,药用最早收载于李时珍《本草纲目》中,性甘平、味苦、味辛,归肝、膀胱经,是目前公认的抗癌效率较高的一种药用大型真菌,在医药领域具有重要的应用价值,有“森林黄金”之美称。传统上,桑黄的活性成分是从子实体中提取,但受生理生态的特殊性和复杂性以及外部环境条件的制约,桑黄在自然界中形成子实体稀少,特别是形成可用子实体需要多年,人工栽培难度较大,资源匮乏。因此,桑黄的开发和利用也受到限制,采用液体发酵技术培养桑黄菌丝体成为研究热点,但液体发酵中的具有抗氧化、抗肿瘤的粗多糖、粗黄酮、粗三萜的有效活性成分却低于子实体。
肉苁蓉,是一种寄生在沙漠树木梭梭根部的寄生植物,从梭梭寄主中吸取养分及水分。素有“沙漠人参”之美誉,具有极高的药用价值,是中国传统的名贵中药材,其具有补肾阳、益精血、润肠道等功效。主肾阳虚衰、精血不足之阳痿、遗精、白浊、尿频余沥、腰痛脚弱、耳鸣目花、月经衍期、宫寒不孕、肠燥便秘等。
锁阳,属多年生肉质寄生草本,无叶绿素,全株红棕色,大部分埋于沙中,寄生根根上着生大小不等的锁阳芽体,初近球形,后变椭圆形或长柱形,具多数须根与脱落的鳞片叶。其具有补肾、益精、润燥等功效,主治阳痿遗精、腰膝酸软、肠燥便秘,对瘫痪和改善性机能衰弱有一定的作用。
枸杞果实及叶(中药称枸杞子),性平、味甘,归肝、肾、肺经。其具有养肝、滋肾、润肺补虚益精、清热明目等功效。
桑椹,桑科植物,桑的近成熟干燥的果穗。性寒、味甘,功能补肝益肾、滋阴养血,主治眩晕耳鸣、心悸失眠、肠燥便秘等。
淫羊藿,多年生草本植物,主治阳萎早泄、腰酸腿痛、四肢麻木、半身不遂、神经衰弱、健忘、耳鸣、目眩等症。淫羊藿味辛甘性温,走肝肾二经。为补命门、益精气、强筋骨、补肾壮阳之要药,临床常用于治疗男子阳痿不举、滑精早泄、小便不禁以及女子不孕等症。现代研究表明,淫羊藿含淫羊藿甙、挥发油、蜡醇、植物甾醇、鞣质、维生素E等成分。能兴奋性机能,对动物有促进精液分泌作用,还有降压(引起周围血管舒张)、降血糖、利尿、镇咳祛痰以及维生素E样作用。药理实验研究表明,淫羊藿能增加心脑血管血流量、促进造血功能、免疫功能及骨代谢,具有抗衰老、抗肿瘤等功效。
熟地黄,功能主治滋阴、补血。治阴虚血少、腰膝痿弱、劳嗽骨蒸、遗精、崩漏、月经不调、消渴、溲数、耳聋、目昏等。
现有功能酒中营养成分少,营养浓度低,品味不佳,抗癌效率、免疫效果差,将上述中药成分共溶于酒液中,增加白酒的营养成分以及增加药用功能是本发明所要解决的问题。
发明内容
为了解决传统白酒营养成分少的问题,本发明提供了一种桑黄白酒制作方法,以增加白酒的营养成分及药用功能。
本发明为实现上述目的所采用的技术方案是:一种桑黄白酒制作方法,以桑黄发酵液为添加剂与原浆白酒混合勾兑,添加剂占总重量的百分比为6-10%, 桑黄发酵液为桑黄发酵液培养基接种常规桑黄摇瓶种培养发酵而成。
所述桑黄发酵液培养基配方为:每1000毫升水加桑黄100-150克。
所述桑黄发酵液培养基配方还包括:肉苁蓉10-15g、锁阳10-15g、枸杞20-30g、桑椹10-15克、淫羊藿10-15克、熟地5-10克。
所述桑黄发酵液培养基接种量为桑黄发酵液培养基总重量的3-15%,培养温度为20℃-30℃,常规通气培养4-6天。
所述原浆白酒为60°-70°的原浆白酒。
本发明的桑黄白酒制作方法,采用了桑黄发酵液为主营养液,有效成分含量高,同时桑黄液体发酵过程中在培养基中加入桑黄及补肾壮阳草药以提高桑黄的免疫有效成分和填补壮阳补肾的有效成分,使得经过生化反应的前述添加物变成易于人体吸收的小分子结构而被吸收利用;提取工艺成本低,桑黄及中药经过液体发酵技术的生化反应进行逐级分解成易于吸收的小分子,有利于人体的吸收利用,长期适量饮用能增强人体免疫力,祛病强身。
具体实施方式
下面结合具体实施例对本技术作进一步的说明。
实施例一
1、桑黄发酵液制备:
(1)桑黄发酵液培养基配方:每1000毫升水加:桑黄150克,肉苁蓉15g,锁阳15g,枸杞30g,桑椹15克,淫羊藿15克,熟地10克。
(2)桑黄发酵液接种菌种为常规桑黄摇瓶种,接种量15%。
(3)桑黄发酵液培养条件:培养温度为25℃,常规通气培养6天。
(4)将培养好的发酵液保存备用。
2、勾兑制酒:
以桑黄发酵液为添加剂,添加到65度的原浆白酒中,添加剂占总重量的百分比为6%,进行勾兑,然后经调味灌装制成。
实施例二
1、桑黄发酵液制备:
(1)桑黄发酵液培养基配方,每1000毫升水加:桑黄120克,肉苁蓉11g,锁阳11g,枸杞25g,桑椹12克,淫羊藿13克,熟地8克。
(2)桑黄发酵液接种菌种为常规桑黄摇瓶种。
(3)桑黄发酵液培养条件,接种量15%,培养温度为25℃,常规通气培养6天。
(4)将培养好的桑黄发酵液保存备用。
2、勾兑制酒
以桑黄发酵液为添加剂,添加到60度的原浆白酒中,添加剂占总重量的百分比为8%,进行勾兑,然后经调味灌装制成。
本发明在发酵液培养基中加入桑黄的子实体,即桑黄发酵加桑黄做前期诱导,以提高发酵液的有效成分含量,解决了长期难以解决的液体发酵有效成分含量低的问题。
不同工艺营养成分对照结果如下:

结果表明,本发明的桑黄发酵液与野生桑黄子实体、单一菌丝体营养成分相比,各营养成分均高,其中具有抗氧化、抗肿瘤的粗多糖、粗黄酮、粗三萜有效活性成分多。

表中结果说明:饲料中添加本发明的白酒,雄鼠爬背率明显增加。

1.一种桑黄白酒制作方法,其特征在于:以桑黄发酵液为添加剂与原浆白酒混合勾兑,添加剂占总重量的百分比为6-10%, 桑黄发酵液为桑黄发酵液培养基接种常规桑黄摇瓶种培养发酵而成。
2.根据权利要求1所述的一种桑黄白酒制作方法,其特征在于:所述桑黄发酵液培养基配方为:每1000毫升水加桑黄100-150克。
3.根据权利要求2所述的一种桑黄白酒制作方法,其特征在于:所述桑黄发酵液培养基配方还包括:肉苁蓉10-15g、锁阳10-15g、枸杞20-30g、桑椹10-15克、淫羊藿10-15克、熟地5-10克。
4.根据权利要求3所述的一种桑黄白酒制作方法,其特征在于:所述桑黄发酵液培养基接种量为桑黄发酵液培养基总重量的3-15%,培养温度为20℃-30℃,常规通气培养4-6天。
5.根据权利要求1所述的一种桑黄白酒制作方法,其特征在于:所述原浆白酒为60°-70°的原浆白酒。
