本发明公开了一种谷物营养强化全豆奶工艺,将豆料进行蒸煮挤压破碎混合,得到豆糊;将辅料和谷物填料进行粉碎,得到混合干粉;将辅料和谷物添料加入豆糊中,加入适量清水,通过搅拌机混合均匀;将物料进行干燥磨粉,进行常温灭菌,避免高温影响营养成分,最大程度保存物料营养活性。本发明涉及一种谷物营养强化全豆奶工艺,通过辅料和谷物填料的添加,提高全豆奶的口味丰富程度,营养程度更高,且使用全豆制粉,得到的全豆粉相对单一的大豆粉,可以大大丰富豆类摄入品类,营养更加丰富。

本发明涉及豆奶工艺,具体是一种谷物营养强化全豆奶工艺。
背景技术
豆奶是大豆经研磨后,萃取性状良好的呈乳白色至淡黄色的乳状液体制品,植物蛋白:豆奶中的大豆蛋白是优质的植物蛋白,能提供人体无法自己合成、必须从饮食中吸收的9 种氨基酸。大豆蛋白还能提高脂肪的燃烧率,促使过剩的胆固醇排泄出去,使血液中胆固醇含量保持在低水平,从而柔软血管,稳定血压,防止肥胖。皂角苷:它有强大的抗氧化作用,能抑制色斑的生成,还能促进脂肪代谢,防止脂肪聚集。
现有的豆粉内部豆类品种单一,导致营养单一,口味不丰富,营养成分不足,同时单一的豆类提供的能量有限,内部食物热量不足,代餐效果差,无法起到粥品的饱腹效果。
发明内容
本发明的目的在于提供一种谷物营养强化全豆奶工艺,以解决上述背景技术中提出的问题。
为实现上述目的,本发明提供如下技术方案:
一种谷物营养强化全豆奶工艺,包括以下步骤:
1)将豆料进行蒸煮挤压破碎混合,得到豆糊;
2)将辅料和谷物填料进行粉碎,得到混合干粉;
3)将辅料和谷物添料加入豆糊中,加入适量清水,通过搅拌机混合均匀;
4)将物料进行干燥磨粉,进行常温灭菌,避免高温影响营养成分,最大程度保存物料营养活性;
5)通过称重分包机按照一百五十份为单位重量进行分包,得到等重的单独包装。
作为本发明再进一步的方案:碾磨制粉至60目及100目之间。
作为本发明再进一步的方案:豆料包括以下重量配比:总共一百份,其中三十份大豆、二十五份豌豆、十五份绿豆、十五份蚕豆、五份赤豆、五份黑豆、五份红小豆。
作为本发明再进一步的方案:辅料包括以下重量配比:总共二十一份,五份黑芝麻、五份花生仁、五份核桃仁、两份半麦芽精、一份虾仁粉,一份半脱脂大豆分离蛋白,一份维生素预混料和矿物质混料。
作为本发明再进一步的方案:谷物填料包括以下重量配比:总共二十九份,五份糥稻、五份小麦、五份荞麦、五份高粱、五份玉米,四份小米。

3)将辅料和谷物添料加入豆糊中,加入适量清水,通过搅拌机混合均匀;
4)将物料进行干燥磨粉,进行常温灭菌,避免高温影响营养成分,最大程度保存物料营养活性;
5)通过称重分包机按照一百五十份为单位重量进行分包,得到等重的单独包装。
