Abstract
本发明公开了一种养胃山苍子煲汤药膳包及制备方法,属于食品加工技术领域,其主要由以下重量份的原料制成:山苍子根40‑50份、山药粉25‑35份、虎尾轮5‑8份、山茶油5‑10份、生姜油1‑2份、竹炭10‑20份;该制备方法首先对山苍子根的功效成分进行了提取并与山茶油及生姜油混合进行微胶囊包埋处理,制成为粉末油脂,有效减缓了各组分功效成分的氧化及挥发;对其它药材进行了细胞破壁,极大提高了其在人体中的吸收率,该药膳包用于煲汤,不仅可以使汤汁味道鲜美、香气浓郁,且通过相关功效评价及志愿者使用前后体验对照显示,长期使用该药膳包具有改善脾胃,增强体质,美容养颜,活血益气等益处。

本发明涉及一种养胃山苍子煲汤药膳包及制备方法,属于食品加工技术领域。
背景技术
随着社会经济的发展和人民生活水平的提高,生活节奏加快,各个年龄阶段都容易出现营养缺乏,免疫力下降,身体素质低等亚健康状态,这与生活习惯不健康和饮食结构不合理有直接关系。“药食同源”是中华原创医学之中对人类最有价值的贡献之一,中医历来强调“药疗不如食疗”,食疗成为现代人追求返璞归真、健康饮食的最佳选择。在食疗的多种形式中,煲汤又是最为普遍的一种形式,所谓补益煲汤,即是通过汤品的形式来达到滋补身体的效果。随着大众的饮食生活越来越丰富,人们已经不仅仅满足于味觉的享受,而是要求在拥有鲜美味道的基础上,还能够具有食疗功效。
在煲汤时直接加入一些中药材制作药膳是食疗最为常见的方法,比如加入玉竹、百合、当归、人参、枸杞、冬虫草等,以达到保健身体、抗衰防老等目的。山苍子,又名山鸡椒、山姜子属樟科,果实清香,纯正,风味独特且富含硒、锌等多种微量元素,对人体大有裨益;山苍子果实,称“毕澄茄”,入药可治胃寒痛和血吸虫病,同时具有健胃、散寒、理气之效,可治感冒及预防感冒;其根为一种中药材,可治疗风湿关节、外伤出血以及劳倦乏力等疾病。但是,在我国山苍子大多是作为精油以及核仁油的提取原料,部分被加工成为中药材,而其整体作为食材的价值往往被人们所忽略,从而造成资源浪费,同时也制约了山苍子的附加值,因此,开发山苍子的药、食使用方法,成为提高山苍子经济价值的重要手段。
为了开发山苍子的多种食药用形式,将山苍子运用在煲汤药膳包是一种可行的方案,但是,目前,市面上煲汤药膳包大都为直接将多种药材碎块按一定配比进行混合包装即可,此种方法制备的药膳包在存放过程中,药材中的部分功效成分极易挥发或被氧化,导致功效大幅下降;此外,块状药材中的功效成分在汤中溶解度较低,且不易被人体肠道吸收,导致功效甚微。
发明内容
为了解决研发山苍子其它使用方式,将其运用在煲汤药膳包,同时避免其中功效成分的挥发或氧化,进而提高药膳包功效,本申请提供一种养胃山苍子煲汤药膳包及制备方法。
本发明的技术方案如下:
本发明公开一种养胃山苍子煲汤药膳包,包括以下重量份的原料:山苍子根30-55份、山药粉25-35份、虎尾轮5-7份、山茶油4-10份、生姜油1-2份和竹炭10-20份。
进一步地,养胃山苍子煲汤药膳包包括以下重量份的原料:山苍子根45份、山药粉30份、虎尾轮6份、山茶油8份、生姜油2份和防腐成分15份。
本发明还公开一种养胃山苍子煲汤药膳包,包括以下步骤:
S1、将晾晒后的山苍子根、虎尾轮投入超声波清洗机中洗净,后烘干并晾晒除去水分;
S2、将经过步骤S1处理后的山苍子根粉碎,过60目筛后投入萃取罐,并向萃取罐中加入无水乙醇作为夹带剂进行萃取;
S3、收集经过步骤S2获取的萃取产物,并将其倒入真空旋转蒸发仪中,控制温度为45-50℃,转速为50-70r/min,蒸发掉萃取产物中的无水乙醇后,经无水硫酸钠干燥;
S4、将山茶油和生姜油按比例混合,并与经过步骤S3处理后得到的油状液体混合搅拌均匀,得到复配油;
S5、按重量比为1:1的比例称取大豆分离蛋白和麦芽糊精,利用磁力搅拌将其完全溶解于50-70℃的超纯水中,溶解后滴加至经过步骤S4后得到的复配油中,搅拌30-40min,组织捣碎机剪切分散,均质机均质得到乳状液,经喷雾干燥,得到呈微胶囊状的复配油粉末油脂;
S6、将经步骤S1处理的虎尾轮和山药粉按比例加入JK型翻转式振动超细粉碎机进行细胞破壁处理,制成1000目的药材超微粉混合物;
S7、将竹炭置入粉碎机粉碎过1000目筛后与经过步骤S5后制得的复配油粉末油脂和经过步骤S6后制得的超微粉混合物混合并搅拌均匀装入纱布包,密封即可。
进一步地,所述步骤S2中山苍子根与夹带剂的比例为1g:3.5mL;所述萃取罐设定分离釜压力为8-10MPa、温度为40-45℃,控制CO2流量为10-12L/h,萃取时间3-4h。
进一步地,所述步骤S4中山茶油与生姜油的重量比为4:1。
进一步地,所述步骤S6中虎尾轮与山药粉的重量比为1:5。

1、本发明提供一种养胃山苍子煲汤药膳包,通过研究实践,将山苍子根、多种常见中药材与植物油进行复配形成煲汤的药膳,其中山苍子根和山药粉健脾养胃,虎尾轮清热解毒,山茶油能够补充人体所需多种维生素和营养元素,生姜油能祛湿散寒、调理肠胃,竹炭能清洁肠胃,提高免疫力;煲汤药膳包中各种成分相辅相成,对人体进行全面调理,功效甚益;
本发明中的药膳中所加的各种中草药原料的功效如下:
山苍子根具有清肝明目、去湿解毒、润肺止咳、健脾养胃、补气养血、养颜美容、强筋活络、壮阳补肾、调经止痛等保健养生、食疗调理作功效。
山药中含有黏蛋白、淀粉酶、皂苷、游离氨基酸、多酚氧化酶、多糖类蛋白等物质,具有健脾养胃、滋肾益精、益肺止咳等作用,还可以起到滋补身体、预防动脉硬化、延缓衰老、预防骨质疏松、促进胃肠道的蠕动、促进排便、改善睡眠等功效。
虎尾轮:甘微苦,平,可清热,解毒,止血,消痈,治咳嗽,肺痈,吐血,咯血,尿血,肿毒等。
山茶油味甘性凉,其富含多种维生素和亚麻酸等营养元素,不饱和脂肪酸高达百分之90以上,是非常好的纯天然绿色食用油,可以为人体补充维生素,同时具有活血化瘀,解热化湿,杀虫解毒美容养颜,减肥等功效。
生姜油可活血化瘀,祛湿散寒,解毒排毒,调理肠胃不适,缓解恶心、治疗呕吐等。
竹炭含有钾、钙、钠等营养成分,矿物质形式与免疫机能有关的酵素可增强人体免疫力,其良好的吸附性可吸收肠道有害物质,并排出体外,减少肠道有害菌。
2、本发明还提供一种养胃山苍子煲汤药膳包的制备方法,在制备过程中对山苍子根的功效成分进行了提取并与山茶油及生姜油混合,进行微胶囊包埋处理,制成为粉末油脂,能够避免现有技术中药膳包直接将多种药材碎块混合包装容易导致存放过程中药材部分功效成分挥发或被氧化,有效减缓了各功效成分在储存过程中的氧化及挥发;同时,制备过程中对其它药材进行了细胞破壁处理,极大提高了其在汤汁中的溶解度以及人体中的吸收率,使该煲汤药膳包的功效更加显著,各药材的在煲汤过程中的有效利用率大大提高;加入的竹炭具有天然防腐功效,使该药膳包在保证绿色健康的前提下具有良好的保质效果。

S1、将晾晒后的山苍子根、虎尾轮投入超声波清洗机中洗净,后烘干并晾晒除去水分;
S2、将经过步骤S1处理后的山苍子根粉碎,过60目筛后投入萃取罐,并向萃取罐中加入无水乙醇作为夹带剂进行萃取,设定分离釜压力为8MPa、温度为40℃,控制CO2流量为10L/h,萃取时间3h;其中,山苍子根与夹带剂的比例为1g:3.5mL;
S3、收集经过步骤S2获取的萃取产物,并将其倒入真空旋转蒸发仪中,控制温度为45℃,转速为50r/min,蒸发掉萃取产物中的无水乙醇后,经无水硫酸钠干燥;

上述养胃山苍子煲汤药膳包的制备方法如下:
S1、将晾晒后的山苍子根、虎尾轮投入超声波清洗机中洗净,后烘干并晾晒除去水分;
S2、将经过步骤S1处理后的山苍子根粉碎,过60目筛后投入萃取罐,并向萃取罐中加入无水乙醇作为夹带剂进行萃取,设定分离釜压力为10MPa、温度为50℃,控制CO2流量为12L/h,萃取时间4h;其中,山苍子根与夹带剂的比例为1g:3.5mL;
S3、收集经过步骤S2获取的萃取产物,并将其倒入真空旋转蒸发仪中,控制温度为40℃,转速为70r/min,蒸发掉萃取产物中的无水乙醇后,经无水硫酸钠干燥;
S4、将山茶油和生姜油按比例混合,并与经过步骤S3处理后得到的油状液体混合搅拌均匀,得到复配油;
S5、按重量比为1:1的比例称取大豆分离蛋白和麦芽糊精,利用磁力搅拌将其完全溶解于60℃的超纯水中,溶解后滴加至经过步骤S4后得到的复配油中,搅拌40min,组织捣碎机剪切分散,均质机均质得到乳状液,经喷雾干燥,得到呈微胶囊状的复配油粉末油脂;
S6、将经步骤S1处理的虎尾轮和山药粉按比例加入JK型翻转式振动超细粉碎机进行细胞破壁处理,制成1000目的药材超微粉混合物;

复配油微胶囊包埋率的测定
取1mg步骤S5所得复配油微胶囊于10mL离心管中,加入5mL 2mol/LHCl溶液,25℃浸泡30min后,加入1mLCH2Cl2混合均匀,用高速离心机25℃、9000r/min离心5min。测定离心后的上清液在264nm波长处的吸光度,并通过复配油标准曲线计算得到茶复配油的含量,用等体积空白纳米粒悬液作为空白样以同样的方法测定,包埋率根据下式计算:

复配油微胶囊含油率的测定
将上述实施例中所制得的微胶囊各取20g放入纱袋,悬挂在0.5m*0.8m*1.5m的同一衣柜中,隔7天后,取出微胶囊样品1g,用研钵捣碎后用石油醚多次萃洗出微胶囊中的复配油,抽滤后将滤渣在50℃烘2h,冷却至室温后测其重量,除以样品量1g,即测得微胶囊含油率。
综上所述,当综合考虑包埋率和含油率时,根据表中数据显示,步骤S5复配油粉末油脂制备温度最佳为60℃。
根据实施例9的原料组成和制备方法制备养胃山苍子煲汤药膳包的功效评价
本发明采用志愿者试用前后调查对比法进行功效评价,具体操作如下:共招募100名志愿者,其中儿童17名,青少年28名,中年人37名,老年人18名。首先对这100名志愿者一周内出现食欲不佳、失眠盗汗、胃胀、感冒、起痘这五种症状的次数做问卷调查,整理问卷数据计算得出这100名志愿者平均每天出现以上五种症状的各自的总次数,并记录;让着100名志愿者每两天使用一次本发明,持续满50天;再次对这100名志愿者一周内出现食欲不佳、失眠盗汗、胃胀、感冒、起痘这五种症状的次数做问卷调查,并整理问卷数据计算得出这100名志愿者在使用本发明满50天后平均每天出现以上五种症状的各自的总次数,并记录如下:
根据以上反馈可看出本发明对食欲不佳及胃胀具有良好的缓解效果,对失眠盗汗、感冒、起痘等由于体虚、免疫力差、上火抑或体内毒素过多等情况所引起的不良症状也具有明显的缓解功效。
根据实施例9的原料组成和制备方法制备的养胃山苍子煲汤药膳包检测
依据食品安全国家标准:GB2716(植物油)、GB2760(食品添加剂使用标准)、GB2762(食品中污染物限量)、GB2763(视频中农药最大残留限量)、GB 5009.11(食品中总神及无机砷的测定)、GB 5009.12(食品中铅的测定)、GB 5009.227(食品中过氧化值的测定)、GB5009.229(食品中酸价的测定)、GB 5009.3(食品中水分的测定)对本发明做出以下说明,如下表所示:

S4、将山茶油和生姜油按比例混合,并与经过步骤S3处理后得到的油状液体混合搅拌均匀,得到复配油;
S5、按重量比为1:1的比例称取大豆分离蛋白和麦芽糊精,利用磁力搅拌将其完全溶解于50-70℃的超纯水中,溶解后滴加至经过步骤S4后得到的复配油中,搅拌30-40min,组织捣碎机剪切分散,均质机均质得到乳状液,经喷雾干燥,得到呈微胶囊状的复配油粉末油脂;
S6、将经步骤S1处理的虎尾轮和山药粉按比例加入JK型翻转式振动超细粉碎机进行细胞破壁处理,制成1000目的药材超微粉混合物;
S7、将竹炭置入粉碎机粉碎过1000目筛后与经过步骤S5后制得的复配油粉末油脂和经过步骤S6后制得的超微粉混合物混合并搅拌均匀装入纱布包,密封即可。
4.如权利要求3所述的一种养胃山苍子煲汤药膳包,其特征在于:所述步骤S2中山苍子根与夹带剂的比例为1g:3.5mL。
5.如权利要求3所述的一种养胃山苍子煲汤药膳包,其特征在于:所述步骤S4中山茶油与生姜油的重量比为4:1。
6.如权利要求3所述的一种养胃山苍子煲汤药膳包,其特征在于:所述步骤S6中虎尾轮与山药粉的重量比为1:5。
