Abstract
本发明涉及生物制品制备技术领域,一种有助于塑身的固体饮料及其制备方法,具体包括组分含量按质量百分比分别如下:复合益生菌粉0.6%~1%、燕麦葡聚糖10%~25%、左旋肉碱酒石酸盐1%~3%、白芸豆粉4%~6%、荷叶粉3%~5%、β‑羟基‑β‑甲基丁酸钙5%~15%、低聚果糖5%~15%、赤藓糖醇3%~5%以及抗性糊精40%~60%;通过如下步骤制备,包括将抗性糊精、低聚果糖按配方比例进行混合成复合益生元配料;将燕麦葡聚糖、左旋肉碱酒石酸盐、白芸豆粉、荷叶粉、β‑羟基‑β‑甲基丁酸钙按配方比例混合成减肥原料;将上述得到的复合益生元配料、复配益生菌、减肥原料及赤藓糖醇混合均匀,制得固体饮料。本技术方案可实现改善肠道微生物环境,便于形成易瘦体质,且可更有效且稳定持续控制体重指标。
Description
技术领域
本发明涉及生物制品制备技术领域,尤其涉及一种有助于塑身的固体饮料及其制备方法。
背景技术
对于现代人来说,生活水平提高了,温饱已不再是问题,而“肥胖”却困扰着现代人,成为全球人面临的主要社会医学新问题。肥胖是一种慢性病,在不同年龄层和不同职业群体中都有存在,不仅欧美国家,包括中国、印度、日本、巴西等很多国家的肥胖率也在急剧上升。
医学专家认为,肥胖作为一种慢性病,虽然不像其他病种症状来的快,但它可能慢慢会诱发诸如糖尿病、冠心病、高血压等各类疾病,对身体健康存在很大隐患,因此减肥瘦身控制好体重是非常有必要的。
新冠疫情期间,不少居民表示长时间待在家里导致变胖,如何健康瘦身也成为老生常谈的话题。疫情的影响也使人们对健康的关注程度进一步提高,人们的健康意识得到增强,对于瘦身追求也将更注重健康化。但目前瘦身方式呈现多样化,如饮食搭配、健身锻炼、药理保健等,在市场教育尚未完全展开的情况下,消费者对于健康瘦身缺乏专业知识,因此推出科学的健康瘦身能满足消费痛点。
益生菌一直是市场热点,而呵护消化与肠道健康的益生菌与帮助体重管理的减肥功能原料搭配可以说是相辅相成的天作之合。全球多项研究都已经证实,胖人和瘦人之间的体质是完全不同的,而两者最大的区别可能是肠道微生态环境的差异。益生菌可改善肠道微生物环境,提升肠道代谢率缩短食物在肠道的再吸收时间,促进多余营养成分的及时排出可起到调整体质。
对于减肥人群来说,减肥最大的问题就是饥饿感。饥饿感其实是非常复杂的一个问题,主要受瘦素(Leptin)、肽YY(PYY)、食欲刺激素(Ghrelin)及胰岛素(Insulin)等综合参与调控,这就需要在做配方设计时,考虑如何通过功能原料的添加,达到相当于多靶点的设计,让产品产生强饱腹感。例如β-葡聚糖有吸水膨胀的性质,人食用后能在胃中吸水膨胀,产生饱腹感,防止饮食过量。
单一的减重瘦身方式存在局限性,消费者需要通过饮食、运动等多种手段结合进行健康瘦身。HMB钙是一种人体基本的微量含支链氨基酸的代谢产物,作为运动营养的新贵,在肌肉组织的蛋白质合成中起重要作用,可促进肌肉细胞生长,提高斜体组织。HMB钙作为高强度运动者一种新型的合成代谢营养剂,能使人体脂肪减少,减少肌肉蛋白质消耗,有助肌肉恢复和减少因过度劳累导致肌肉损伤的作用,可提高运动强度和耐力。
发明内容
本发明目的是为了克服现有技术的不足而提供一种具有减肥且能塑身功效的益生菌固体饮料,本产品通过将益生菌,益生元及减肥功能原料的搭配使用,可以改善肠道微生物环境,便于形成易瘦体质,可更有效且持续控制体重的固体饮料及其制备方法。
为达到上述目的,本发明采用了如下技术方案。
一种有助于减肥塑身的固体饮料,其以质量百分比计,具体包括成分及其组分含量如下:复合益生菌粉0.6%~1%、燕麦葡聚糖10%~25%、左旋肉碱酒石酸盐1%~3%、白芸豆粉4%~6%、荷叶粉3%~5%、β-羟基-β-甲基丁酸钙5%~15%、低聚果糖5%~15%、赤藓糖醇3%~5%以及抗性糊精40%~60%。
一种有助于塑身的固体饮料及其制备方法,具体包括如下步骤:
(1)将抗性糊精、低聚果糖按配方比例进行混合成复合益生元配料;
(2)将燕麦葡聚糖、左旋肉碱酒石酸盐、白芸豆粉、荷叶粉、β-羟基-β-甲基丁酸钙按配方比例混合成减肥原料;
(3)将上述混合得到的复合益生元配料、复配益生菌、减肥原料及赤藓糖醇混合均匀,制得含益生菌、益生元及减肥原料的固体饮料。
作为本发明的进一步改进,所述复合益生菌粉由植物乳杆菌Lp90、嗜酸乳杆菌LA85和乳双歧杆菌BLa80组成。
作为本发明的进一步改进,所述制备的固体饮料分别按每袋益生菌的固体饮料为10g重量进行包装。
由于上述技术方案的运用,本发明的技术方案带来的有益技术效果:
1.本品添加可高效抑制脂肪积累的功能性菌株植物乳杆菌 Lp90,辅以嗜酸乳杆菌及乳双歧杆菌,通过调节肠道菌群、炎症因子、肠粘膜屏障、能量代谢及食欲等达到帮助控制体重的目的:
1) 植物乳杆菌 Lp90 具有高存活率及稳定性,可有效抑制脂肪吸收,从而帮助缓解肥胖,同时该菌还可调节肠道菌群平衡及增强机体免疫力;
2) 嗜酸乳杆菌 LA85 能有效平衡肠道菌群,进入机体后可产生多种细菌素抑制致病菌,
具有广谱抗菌作用,可有效改善因肥胖导致的菌群变化;
3) 乳双歧杆菌 BLa80 可高效粘附于肠粘膜上皮细胞并产生多种有机酸,通过降低肠道pH 抑制致病菌或腐生菌的生长。此外,乳双歧杆菌可通过调节细胞因子、抗体及巨噬细胞的活性从而提高机体防御功能。
2.本品含有天然减肥原料,白芸豆提取物、荷叶粉。
1) 白芸豆提取物含天然的α-淀粉酶抑制剂(α-amylase inhibitor),可有效抑制淀粉的降解,减少人体碳水化合物的摄入,降低能量的吸收;
2) 荷叶粉可通过吸附体内脂肪并排出体外,与益生菌搭配使用可从脂肪的吸收和外排;两个方面有效减少人体内脂肪的积累。
3.本品含有左旋肉碱酒石酸盐,它是左旋肉碱的稳定形式,不易吸潮,在潮湿条件下保持稳定,具有令人愉快的酸性气味,易溶于水。左旋肉碱可燃烧体内多余的脂肪作为能量,可以减轻体重,减少体内脂肪的含量,具有减肥作用,如果体内缺乏左旋肉碱,就会造成脂肪酸代谢紊乱,导致两种后果。⑴造成肌肉供应能量不足,产生肌体疲劳以及相关的心脏疾病;⑵造成脂类物质在肌纤维和肝脏中积累,产生肥胖,脂肪肝等疾病。运动不足的肥胖型人,经常补充左旋肉碱,加以保持锻炼,就能够消耗体内积累的脂肪酸,起到减肥的作用.所以左旋肉碱是一种很理想的不用节食,不厌食,不乏力,不腹泻的减肥产品。
4.β-葡聚糖是低热量食品,食用后不易被人体消化吸收,可减缓血液中葡萄糖含量的增加,预防和控制肥胖症、糖尿病及心血管疾病。又由于β-葡聚糖有吸水膨胀的性质,人食用后能在胃中吸水膨胀,产生饱腹感,防止饮食过量。它在小肠中不能水解,而在大肠中降解并作为细菌发酵的底物,发酵产生短链脂肪酸,特别是丁酸,有益于肠道功能。燕麦葡聚糖能使小鼠肠道和粪便中双歧杆菌和乳酸杆菌增值,而使大肠杆菌的数量减少,因此燕麦葡聚糖还具有改善肠道功能,促进肠道有益菌的增殖。
5.本品还含有β-羟基-β-甲基丁酸钙(HMB钙),HMB钙是一种人体基本的微量含支链氨基酸的代谢产物,在肌肉组织的蛋白质合成中起重要作用,可促进肌肉细胞生长,提高斜体组织。HMB钙作为高强度运动者一种新型的合成代谢营养剂,能使人体脂肪减少,减少肌肉蛋白质消耗,有助肌肉恢复和减少因过度劳累导致肌肉损伤的作用,可提高运动强度和耐力。
6.本品富含益生元低聚果糖,能显著促进双歧杆菌等益生菌生长繁殖,与益生菌相辅相成促进肠道菌群平衡。
7.抗性糊精在小肠内不被吸收,可直接进入大肠,能促进肠道有益菌群的生长、繁殖,是一种双歧杆菌增殖因子。抗性糊精的吸水膨胀能增加粪便体积,促进肠道蠕动,对于便秘、痔疮、结肠癌等疾病有良好的预防效果。
赤藓糖醇可以增加饮料的甜度、厚重感和润滑感,同时减少苦味,还可以掩盖其他气味,提高饮料风味。赤藓糖醇是唯一一款零热量糖醇。由于其分子量小,容易被人体吸收,同时被人体吸收的赤藓糖醇只有少量进入人体大肠被微生物发酵。80%的赤藓糖醇被人体食用后进入人体血液之中,但不能被人体内酶分解代谢,不为机体提供能量,不参加糖代谢,只能通过尿液从人体排出。
具体实施方式
下面将对本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动前提下所获得的所有其他实施例,都属于本发明保护的范围。

感官要求:
冲调或冲泡后具有该产品应有的色泽、香气和滋味,无异味,无外来杂质。
(三)感官评价:
参考 GB/T 15682-2008 的方法,选择 10 名初级评价员,将全部试样随机编号。品评员在每次品评前先漱口,漱去口中的残留物。取 5g 固体饮料放于透明玻璃杯中,加入约 40℃的水 50ml,然后放于鼻腔下方,仔细辨别气味。观察固体饮料色泽和组织状态,之后品尝其口感。
根据每个品评员的评分结果计算平均值,个别品评误差大者(超过平均值 10 分以上)可舍弃,舍弃后重新计算平均值。最后以评分的平均值作为固体饮料食用品质感官评定的结果,计算结果取整数。每个指标标准为 10 分,总分 40 分。当感官评分大于 30 分时,样品总体感官品质为好,在 20-30 之间为一般,小于 20 分为差。

该产品的配方设计思路是用益生菌、益生元和其它减肥功能原料搭配,既可以有效调节肠道菌群平衡,还能帮助控制体重。
使用益生菌可以改善肠道微生物环境,调整体质;益生元的搭配使用能显著促进双歧杆菌等益生菌生长繁殖,与益生菌相辅相成促进肠道菌群平衡;β-葡聚糖有吸水膨胀的性质,食用后能在胃中吸水膨胀,产生饱腹感,防止饮食过量;白芸豆提取物含天然的α-淀粉酶抑制剂(α-amylase inhibitor),可有效抑制淀粉的降解,减少人体碳水化合物的摄入,降低能量的吸收;荷叶粉可通过吸附体内脂肪并排出体外,与益生菌搭配使用可从脂肪的吸收和外排,两个方面有效减少人体内脂肪的积累;左旋肉碱可燃烧体内多余的脂肪作为能量,可以减轻体重,减少体内脂肪的含量,具有减肥作用;HMB钙能使人体脂肪减少,减少肌肉蛋白质消耗,在增肌方面的功效显著。

Claims (4)
1.一种有助于塑身的固体饮料及其制备方法,其特征在于,其以质量百分比计,具体包括成分及其组分含量如下:复合益生菌粉0.6%~1%、燕麦葡聚糖10%~25%、左旋肉碱酒石酸盐1%~3%、白芸豆粉4%~6%、荷叶粉3%~5%、β-羟基-β-甲基丁酸钙5%~15%、低聚果糖5%~15%、赤藓糖醇3%~5%以及抗性糊精40%~60%。
2.根据权利要求1所述的一种有助于塑身的固体饮料及其制备方法,其特征在于,具体包括如下步骤:
(1)将抗性糊精、低聚果糖按配方比例进行混合成复合益生元配料;
(2)将燕麦葡聚糖、左旋肉碱酒石酸盐、白芸豆粉、荷叶粉、β-羟基-β-甲基丁酸钙按配方比例混合成减肥原料;
(3)将上述混合得到的复合益生元配料、复配益生菌、减肥原料及赤藓糖醇混合均匀,制得含益生菌、益生元及减肥原料的固体饮料。
3.根据权利要求2所述的一种有助于塑身的固体饮料及其制备方法,其特征在于:所述复合益生菌粉由植物乳杆菌Lp90、嗜酸乳杆菌LA85和乳双歧杆菌BLa80组成。
4.根据权利要求2所述的一种有助于塑身的固体饮料及其制备方法,其特征在于:所述制备的固体饮料分别按每袋益生菌的固体饮料为10g重量进行包装。
