Abstract
本发明涉及一种具有解酒功能,营养成分高,适口性好,稳定性好的含有葛根提取物的玉米肽复合饮料,其组成成分及重量份数如下:玉米肽0.35~0.75份;葛根提取物0.1~0.5份;甜味剂6~10份;β‑环状糊精0.2~1.0份;酸味剂0.1~0.3份;浓缩果汁0.1~0.5份;稳定剂0.05~0.13份。本发明玉米肽复合饮料的配料中,以玉米肽作为主要原料,玉米肽具有很高的营养价值,可以补充人体必须的各种氨基酸,同时添加葛根提取物,葛根提取物具有降血压、扩张冠状动脉、调节酒精代谢的作用,研发本款饮料为消费者提供具有营养价值、解酒功能的方便饮用、携带,同时可以丰富解酒食品的市场,提高玉米及葛根的综合利用率。
Description
技术领域
本发明属于食品饮料研发领域,尤其是一种含有葛根提取物的玉米肽复合饮料及其制备方法。
背景技术
近年来,随着人们的生活节奏逐渐加快、生活压力不断的增加,导致我国的饮酒消费群体不断地增大。酗酒和酒精中毒已成为我国的公共社会问题之一。大量研究表明,少量或者适量饮酒能活血通络,但肆意饮酒过度,则可对人体的肝脏、神经系统、生殖系统产生毒性损害,并且饮酒不光对人身体有害,而且酒后驾驶会有安全隐患,因此研发醒酒饮料具有深远的意义,它不但可以缓解饮酒者的酒后不适感,还可以减少交通事故,提高生命安全。
玉米肽是从玉米中提取的蛋白质经过定向酶切及特定小肽分离技术获得的小分子多肽物质。其营养丰富,含有人体必须的各种氨基酸(如谷氨酸、脯氨酸、亮氨酸和丙氨酸),提供氨基酸及肽能营养,并且由于玉米肽具有抑制血管紧张素转换酶的作用,从而具有降低血压、醒酒(能够抑制酒精中毒)、抗疲劳、保肝、提高机体免疫力等功能。其易被机体吸收,在大范围pH值下完全溶于水,无浑浊现象和沉淀物产生,对热稳定,组份不改变,功能不丧失且安全可靠,无毒副作用,是研制现代天然功能性饮料的最理想原料之一。
葛根提取物中含有葛根素、大豆苷元、葛根皂苷、葛香豆雌酚以及甘露醇等活性成分,就有调节血管舒张收缩和解酒护肝的作用。葛根素是野葛、粉葛中特有的活性成分,具有降血压、扩张冠状动脉、调节酒精代谢、改善微循环、降血糖、降血脂、抗氧化等多种生物活性。
通过检索,发现如下几篇与本发明申请相关的专利公开文献:
1、玉米肽饮料及其加工方法(CN1650731A),该专利公开了一种玉米肽的饮料及其加工方法,它包括以下步骤:(1)将玉米蛋白粉进行粉碎后分布于水溶液当中;(2)加入酶进行酶解反应;(3)加入有机酸进行酸化反应;按照上述比例混合得到常规加工方法,得到玉米肽饮料。该发明以玉米肽为原料,选用适当的酶进行水解,确定适宜的酶解条件,使DH达到33%,YASP达到88%;水解产物中多肽含量达到200mg/gpr,多肽分子量主要分布于1000-2000Da1范围内。该发明产品稳定、口感适合大众需求,饮料感官及理化、卫生标准符合Q/HRT03一2004标准,肤含量达到1.0g/l。
2、一种含有发酵胡萝卜汁的玉米肽饮料及其制备方法(CN105851756A),该饮料配方为所述玉米肤饮料按质量分数计算,由益生菌发酵胡萝卜汁、玉米蛋白肽粉、甜菜碱、甜味剂、稳定剂和余量的水组成。该方法为将益生菌发酵胡萝卜汁、玉米蛋白肤粉、甜菜碱、甜味剂、稳定剂和余量的水充分溶解后混合搅拌、均匀、均质、巴氏杀菌后无菌灌装、得到含发酵胡萝卜汁的玉米肤饮料。益生菌发酵胡萝卜原浆、富含果蔬营养和益生菌代谢产物,将其与玉米肤一起调制成饮料、既可掩盖玉米肤的苦味、又可增加营养成分,形成具有胡萝卜发酵风味、色泽鲜艳、符合大众口味的玉米肤饮料。
3、一种葛根饮料的制备方法及葛根饮料(CN110353139A)该发明涉及保健饮品领域,具体涉及一种葛根饮料的制备方法及葛根饮料。葛根饮料的制备方法包括以下步骤:(1)往经熟制后的葛根内加入米根霉粉,在25-30℃下进行糖化,(2)在糖化后的葛根内加入热水并加热,加热至温度为80-100℃,保持30-60min得到葛根物料,(3)将葛根物料依次进行乳酸菌发酵、酵母菌发酵、醋酸菌发酵以使葛根物料最终的酸度≥15g/L,发酵结束,(4)取上清液调配、过滤、杀菌即得葛根饮料。本发明提供的制备方法增强了葛根素、黄酮的提取,提高了葛根饮料的营养价值,同时不同菌种产生的风味物质能将葛根本身的气味转化彻底,并产生令人愉悦的气味,提高了产品的商品价值。
通过对比,第一篇专利公开文献主要配方由玉米肽、白砂糖、其他辅料、组成,该专利申请的配方不添加任何香精,最大程度的保留玉米肽的原有风味但是存在玉米肽苦味的现象比较明显,口感不好。第二篇公开专利文献主要配方为玉米蛋白肽粉、益生菌发酵胡萝卜汁、甜菜碱、甜味剂、和稳定剂,本发明的配方不仅添加了稳定剂,还添加了发酵的胡萝卜汁,赋予了玉米肽饮料一定的风味,掩盖了玉米肽自身的苦味,同时也增加了玉米肽饮料的营养成分,形成具有胡萝卜发酵风味、色泽鲜艳、符合大众口味的玉米肽饮料但是没有发挥出玉米肽补充人体氨基酸解酒功效等营养功能。第三篇公开专利所述葛根饮料的制备,利用熟制、糖化、不同的微生物发酵,增强了饮料中的葛根素和黄酮的含量。但是没有对葛根中的提取物进行的提取纯化,故通过对比,本发明专利申请与上述专利公开文献存在本质不同。
发明内容
本发明旨在通过扩大玉米肽的应用前景,将葛根的提取物和玉米肽粉为主要原料研究开发一种具有解酒功能,营养成分高,适口性好,稳定性好的复合饮料,其具有重要的实用价值和经济价值,通过对玉米肽的进一步开发利用,可大大提高玉米加工企业的经济效益,加入葛根提取物还可以为复合饮料的开发开辟新途径。
本发明解决其技术问题是采取以下技术方案实现的:
一种含有葛根提取物的玉米肽复合饮料,其组成成分及重量份数如下:

而且,所述酸味剂为食品级酸味剂柠檬酸,苹果酸。
而且,所述稳定剂料为食品级稳定剂CMC。
一种含有葛根提取物的玉米肽复合饮料的制备方法,步骤如下:
(1)将称量好的低聚玉米肽、葛根提取物、白砂糖等固体物料混合均匀;
(2)溶解:向混合好的固体物料加入水,并不断搅拌使之全部溶解,成为透明的溶液;
(3)调配:将柠檬酸,草莓浓缩汁,蜂蜜等加入不断地搅拌使之溶解,封口;
(4)杀菌:采用常压杀菌,杀菌介质为温度100℃的热水,杀菌时间为3~12min,
(5)灌装:将热处理的物料,趁热灌装密封,放置冷却至室温;
(6)检验玉米肽复合饮料的色、香和味,要求复合饮料要酸甜可口,柔和细腻,口感好;颜色均匀,有光泽;具有香甜的气味无臭味;细腻,浑浊均匀,不分层,无沉淀,无气泡和杂质;确保产品稳定且不腐败变质,即得玉米肽复合饮料。
本发明取得的优点和积极效果是:
1、本发明玉米肽复合饮料的的配料中以玉米肽为主要成分,玉米肽是以玉米为原料,从玉米中提取的蛋白质经过定向酶切及特定小肽分离技术获得的小分子多肽物质,营养丰富可以为消费者提供各种氨基酸、醒酒抗疲劳、保肝等功能是研制现代天然功能性饮料的最理想原料之一,同时可以提高玉米的综合利用率。
2、本发明玉米肽复合饮料的辅料为葛根提取物,葛根提取物中含有葛根素、大豆苷元、葛根皂苷、葛香豆雌酚以及甘露醇等活性成分,就有调节血管舒张收缩,降血压,降血脂,抗衰老,解毒排毒和解酒护肝的作用,因此可以充分发挥葛根的功效提高市场利用率。
3、本发明的玉米肽复合饮料可以有效提高玉米的利用率,避免资源浪费,而且,本玉米肽复合饮料在生产过程中,最大限度的保持了原有的营养成分,与市场上同类产品相比,本产品具有营养价值高、解酒护肝等优点,为市场上醒酒产品提供了新产品而且成本低廉,方便食用和携带。

(6)检验玉米肽复合饮料的色、香和味,要求复合饮料要酸甜可口,柔和细腻,口感好;颜色均匀,有光泽;具有香甜的气味无臭味;细腻,浑浊均匀,不分层,无沉淀,无气泡和杂质;确保产品稳定且不腐败变质,即得玉米肽复合饮料。
上述玉米肽复合饮料的主要品质指标检测结果:

4.根据权利1所述的含有葛根提取物的玉米肽复合饮料,其特征在于:所述的稳定剂为食品级稳定剂羧甲基纤维素CMC等。
5.根据权利1所述的含有葛根提取物的玉米肽复合饮料,其特征在于:所述酸味剂为食品级酸味剂柠檬酸,苹果酸等。
6.根据权利1所述的含有葛根提取物的玉米肽复合饮料,其特征在于:所述特色辅料为草莓,蔓越莓等特色浓缩果汁。
7.根据权利6所述的含有葛根提取物的玉米肽复合饮料,其特征在于:所述葛根提取物为食品级水提葛根提取物。
