本发明涉及医用食品技术领域,具体为一种湿法工艺复合蛋白型全营养粉及制备方法。
背景技术
医用食品,全称特殊医学用途配方食品(foods for special medical purposes,FSMP),特殊医学用途配方食品是为了满足进食受限、消化吸收障碍、代谢紊乱或特定疾病状态人群对营养素或膳食的特殊需要,专门加工配制而成的配方食品。该类产品必须在医生或临床营养师指导下,单独食用或与其他食品配合食用。特殊医学用途配方食品是食品不是药品,不能对疾病和临床症状进行预防和治疗,但可以作为一种营养补充途径,起到营养“治疗”的作用,并改善病人消化道结构、促进伤口愈合、提高病人生存率、缩短住院时间。
病人生病住院期间因忌口、进食受限、消化吸收障碍导致营养不良,仅靠日常膳食无法满足其营养需求,研究表明营养不良病人的住院时间显著长于无营养不良病人。据报道,我国有1.4亿住院患者,有1.1亿住院患者存有营养不良或营养风险,有4-5千万住院患者存在严重营养不良和营养风险。其中癌症病人营养不良发生率约为40%-80%,糖尿病病人营养不良发生率高达50%以上。改善病人的营养状况,对预防感染,减少并发症,缩短住院期,提高病人生存质量和延长生存时间有重要意义。而目前,针对病人的营养全面、价格优惠的全营养配方食品比较少。因此,开发一种复合蛋白型全营养配方食品,具有重大的经济效益和社会意义。

进一步地,所述的复合维生素为水溶性维生素和脂溶性维生素,其中水溶性维生素包含维生素B1、维生素B2、维生素B6、维生素B12、L-抗坏血酸钠、D-泛酸钙、叶酸、烟酰胺、氯化胆碱、D-生物素、肌醇,脂溶性维生素包含维生素A、维生素D3、维生素E、维生素K1。
进一步地,所述的复合矿物质为钙、磷、钠、镁、铁、锌、钾、硒、碘、铜、锰中的一种、几种或全部混合。
与现有技术相比,本发明的有益效果是:本产品配方根据GB29922-2016《食品安全国家标准特殊医学用途配方食品通则》的严格要求,采用乳清蛋白和酪蛋白酸钙相复合的形式,两种蛋白互相补充,易于消化吸收。并且本发明富含脂肪酸、益生元、微量元素等,营养全面均衡,能量科学合理,可作为单一营养来源满足进食受限、消化吸收障碍、代谢紊乱状态人群的营养需求。
本发明所述配方食品的蛋白质来源于优质蛋白,乳清蛋白含有人体所需的全部20种氨基酸,赖氨酸和精氨酸含量丰富,且是含硫氨基酸的良好来源,吸收快,利用度高,具有独特的生物活性,并具有抗疲劳、抗氧化、降血脂、降血糖、降血压等功能,是理想的动物蛋白来源。酪蛋白酸钙中的酪蛋白可以提高新陈代谢率,并提供谷氨酸盐,对希望增加体重和防止蛀牙的人都有益处。海洋鱼低聚肽、大豆低聚肽等小分子肽,能为人体提供不同形式的氮源,易于患者消化吸收。
本发明所述配方食品富含必需脂肪酸,饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸合理配比,有助于保持机体免疫力。
本产品中含有菊粉,菊粉具有预防肥胖、调节血糖、降低血脂水平、预防心脑血管疾病、改善肠道功能、抗癌等作用。低聚半乳糖是人体肠道中双歧杆菌、嗜酸乳酸杆菌等有益菌极好的营养源和有效的增殖因子,可以改善患者肠道内的消化吸收功能。
本发明中包含人体不可缺少的牛磺酸,可提高机体的免疫能力,同时含有核苷酸等免疫营养素,并提高机体抗氧化能力、抗辐射能力以及对外界的应激能力。

初混料c:酪蛋白酸钙、牛初乳、大豆低聚肽、海洋鱼低聚肽、阿斯巴甜、香蕉粉末香精;
初混料d:紫苏油、椰子油、大豆油、橄榄油、中链甘油三酯、脂溶性维生素、大豆磷脂;
初混料e:氧化镁、卡拉胶、酪蛋白酸钙分别单独称量于不同的容器中;
(2)水锅配制
分别使用60℃温水溶解酪蛋白酸钠和卡拉胶,搅拌至基本完全溶解;
在容器中加入60℃温水,并置于60℃热水浴中,将氧化镁溶于温水中,逐渐加入柠檬酸调节溶液至澄清pH3,再逐渐加入氢氧化钾,调节至pH6;
将初混料a加入上述容器中充分搅拌,使用立式剪切乳化机10000r/min剪切至完全溶解;将初混料c加入到上述溶液中充分搅拌,然后使用立式剪切乳化机16000r/min剪切至完全溶解;将初混料b加入到上述溶液中充分搅拌,使用立式剪切乳化机16000r/min剪切至完全溶解;将溶解的卡拉胶和酪蛋白酸钠分别使用立式剪切乳化机10000r/min剪切至完全溶解,然后加入上述溶液,再使用立式剪切乳化机16000r/min剪切1min;
(3)油锅配制
将初混料d置于塑料烧杯中,并在60~65℃恒温水浴锅中搅拌至基本溶解,使用立式剪切乳化机10000r/min剪切至完全溶解;然后转移至上述水相溶液中,使用立式剪切乳化机16000r/min剪切1min,然后静置10min后定容,并剪切1min得到待乳化液;
(4)剪切乳化
使用卧式高速剪切乳化机,采用10000r/min进行剪切乳化15次,待乳化结束后静置10min再进行均质;
(5)高压均质
将剪切乳化的料液使用高压均质机进行进一步分散乳化,采用二次均质,第一次均质压力为200bar,第二次均质压力为400bar;
(6)高温瞬时灭菌
将均质后溶液进行高温瞬时灭菌;
(7)喷雾干燥
将灭菌溶液冷却后进行喷雾干燥得到固体粉末成品。
实施例7:
结合实施例2中的一种湿法工艺复合蛋白型全营养粉的制备方法,包括以下步骤:
(1)准确称量原辅料
初混料a:50%的麦芽糊精、复合矿物质;
初混料b:50%的麦芽糊精,水溶性维生素、牛磺酸、左旋肉碱、核苷酸;
初混料c:酪蛋白酸钙、牛初乳、大豆低聚肽、海洋鱼低聚肽、阿斯巴甜、香蕉粉末香精;
初混料d:紫苏油、椰子油、大豆油、橄榄油、中链甘油三酯、脂溶性维生素、大豆磷脂;
初混料e:氧化镁、卡拉胶、酪蛋白酸钙分别单独称量于不同的容器中;
(2)水锅配制
分别使用65℃温水溶解酪蛋白酸钠和卡拉胶,搅拌至基本完全溶解;
在容器中加入65℃温水,并置于65℃热水浴中,将氧化镁溶于温水中,逐渐加入柠檬酸调节溶液至澄清pH4,再逐渐加入氢氧化钾,调节至pH7;
将初混料a加入上述容器中充分搅拌,使用立式剪切乳化机10000r/min剪切至完全溶解;将初混料c加入到上述溶液中充分搅拌,然后使用立式剪切乳化机16000r/min剪切至完全溶解;将初混料b加入到上述溶液中充分搅拌,使用立式剪切乳化机16000r/min剪切至完全溶解;将溶解的卡拉胶和酪蛋白酸钠分别使用立式剪切乳化机10000r/min剪切至完全溶解,然后加入上述溶液,再使用立式剪切乳化机16000r/min剪切1min;
(3)油锅配制
将初混料d置于塑料烧杯中,并在60~65℃恒温水浴锅中搅拌至基本溶解,使用立式剪切乳化机10000r/min剪切至完全溶解;然后转移至上述水相溶液中,使用立式剪切乳化机16000r/min剪切1min,然后静置10min后定容,并剪切1min得到待乳化液;
(4)剪切乳化
使用卧式高速剪切乳化机,采用16000r/min进行剪切乳化20次,待乳化结束后静置15min再进行均质;
(5)高压均质
将剪切乳化的料液使用高压均质机进行进一步分散乳化,采用二次均质,第一次均质压力为300bar,第二次均质压力为500bar;
(6)高温瞬时灭菌
将均质后溶液进行高温瞬时灭菌;
(7)喷雾干燥
将灭菌溶液冷却后进行喷雾干燥得到固体粉末成品。
实施例8:
结合实施例3-5中任意一个所述的湿法工艺复合蛋白型全营养粉的制备方法,包括以下步骤:
(1)准确称量原辅料
初混料a:50%的麦芽糊精、复合矿物质;
初混料b:50%的麦芽糊精,水溶性维生素、牛磺酸、左旋肉碱、核苷酸;
初混料c:酪蛋白酸钙、牛初乳、大豆低聚肽、海洋鱼低聚肽、阿斯巴甜、香蕉粉末香精;
初混料d:紫苏油、椰子油、大豆油、橄榄油、中链甘油三酯、脂溶性维生素、大豆磷脂;
初混料e:氧化镁、卡拉胶、酪蛋白酸钙分别单独称量于不同的容器中;
(2)水锅配制
分别使用64℃温水溶解酪蛋白酸钠和卡拉胶,搅拌至基本完全溶解;
在容器中加入62℃温水,并置于63℃热水浴中,将氧化镁溶于温水中,逐渐加入柠檬酸调节溶液至澄清pH4,再逐渐加入氢氧化钾,调节至pH6;
将初混料a加入上述容器中充分搅拌,使用立式剪切乳化机10000r/min剪切至完全溶解;将初混料c加入到上述溶液中充分搅拌,然后使用立式剪切乳化机16000r/min剪切至完全溶解;将初混料b加入到上述溶液中充分搅拌,使用立式剪切乳化机16000r/min剪切至完全溶解;将溶解的卡拉胶和酪蛋白酸钠分别使用立式剪切乳化机10000r/min剪切至完全溶解,然后加入上述溶液,再使用立式剪切乳化机16000r/min剪切1min;
(3)油锅配制
将初混料d置于塑料烧杯中,并在60~65℃恒温水浴锅中搅拌至基本溶解,使用立式剪切乳化机10000r/min剪切至完全溶解;然后转移至上述水相溶液中,使用立式剪切乳化机16000r/min剪切1min,然后静置10min后定容,并剪切1min得到待乳化液;

使用卧式高速剪切乳化机,采用12000r/min进行剪切乳化18次,待乳化结束后静置13min再进行均质;
(5)高压均质
将剪切乳化的料液使用高压均质机进行进一步分散乳化,采用二次均质,第一次均质压力为260bar,第二次均质压力为480bar;
(6)高温瞬时灭菌
将均质后溶液进行高温瞬时灭菌;
(7)喷雾干燥
将灭菌溶液冷却后进行喷雾干燥得到固体粉末成品。

Claims (5)
1.一种湿法工艺复合蛋白型全营养粉,其特征在于:包含如下重量份的组份:乳清蛋白58-466份、酪蛋白酸钙62-500份、牛初乳0.56-4.5份、大豆低聚肽0.56-4.5份、海洋鱼低聚肽0.56-4.5份、紫苏油2.5-20份、椰子油10-86份、大豆油28-225份、橄榄油8-68份、中链甘油三酯29-233份、麦芽糊精227-1816份、菊粉3.4-27份、低聚半乳糖1.7-13.5份、复合矿物质10-79份、复合维生素5.6-45份、牛磺酸0.375-3份、左旋肉碱0.068-0.54份、核苷酸0.1-0.8份、磷脂11.25-90份、酪蛋白酸钠0.42-3.33份、卡拉胶0.42-3.33份、香蕉粉末香精1-8份、阿斯巴甜0.625-5份。
2.根据权利要求1所述一种湿法工艺复合蛋白型全营养粉,其特征在于:所述的复合维生素为维生素A、维生素D3、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、L-抗坏血酸钠、D-泛酸钙、叶酸、烟酰胺、氯化胆碱、D-生物素、肌醇中的一种、几种或全部混合。
3.根据权利要求2所述一种湿法工艺复合蛋白型全营养粉,其特征在于:所述的复合维生素为水溶性维生素和脂溶性维生素,其中水溶性维生素包含维生素B1、维生素B2、维生素B6、维生素B12、L-抗坏血酸钠、D-泛酸钙、叶酸、烟酰胺、氯化胆碱、D-生物素、肌醇,脂溶性维生素包含维生素A、维生素D3、维生素E、维生素K1。
4.根据权利要求1所述一种湿法工艺复合蛋白型全营养粉,其特征在于:所述的复合矿物质为钙、磷、钠、镁、铁、锌、钾、硒、碘、铜、锰中的一种、几种或全部混合。
5.一种如权利要求1-4中任意一条所述湿法工艺复合蛋白型全营养粉的制备方法,其特征在于:包括以下步骤:
(1)准确称量原辅料
初混料a:50%的麦芽糊精、复合矿物质;
初混料b:50%的麦芽糊精,水溶性维生素、牛磺酸、左旋肉碱、核苷酸;
初混料c:酪蛋白酸钙、牛初乳、大豆低聚肽、海洋鱼低聚肽、阿斯巴甜、香蕉粉末香精;
初混料d:紫苏油、椰子油、大豆油、橄榄油、中链甘油三酯、脂溶性维生素、大豆磷脂;
初混料e:氧化镁、卡拉胶、酪蛋白酸钙分别单独称量于不同的容器中;
(2)水锅配制
分别使用60~65℃温水溶解酪蛋白酸钠和卡拉胶,搅拌至基本完全溶解;
在容器中加入60~65℃温水,并置于60~65℃热水浴中,将氧化镁溶于温水中,逐渐加入柠檬酸调节溶液至澄清pH3~4,再逐渐加入氢氧化钾,调节至pH6~7;
将初混料a加入上述容器中充分搅拌,使用立式剪切乳化机10000r/min剪切至完全溶解;将初混料c加入到上述溶液中充分搅拌,然后使用立式剪切乳化机16000r/min剪切至完全溶解;将初混料b加入到上述溶液中充分搅拌,使用立式剪切乳化机16000r/min剪切至完全溶解;将溶解的卡拉胶和酪蛋白酸钠分别使用立式剪切乳化机10000r/min剪切至完全溶解,然后加入上述溶液,再使用立式剪切乳化机16000r/min剪切1min;
(3)油锅配制
将初混料d置于塑料烧杯中,并在60~65℃恒温水浴锅中搅拌至基本溶解,使用立式剪切乳化机10000r/min剪切至完全溶解;然后转移至上述水相溶液中,使用立式剪切乳化机16000r/min剪切1min,然后静置10min后定容,并剪切1min得到待乳化液;
(4)剪切乳化
使用卧式高速剪切乳化机,采用10000-16000r/min进行剪切乳化15-20次,待乳化结束后静置10-15min再进行均质;
(5)高压均质
将剪切乳化的料液使用高压均质机进行进一步分散乳化,采用二次均质,第一次均质压力为200-300bar,第二次均质压力为400-500bar;
(6)高温瞬时灭菌
将均质后溶液进行高温瞬时灭菌;
(7)喷雾干燥
将灭菌溶液冷却后进行喷雾干燥得到固体粉末成品。
