本发明属于黄酒酿造技术领域,具体涉及一种新型黄酒的酿造方法。将干黄精及辅料(所述辅料包括:茯苓、葛根、石斛、党参、黄芪、灵芝、枸杞、枳椇子中的一种或多种)分别进行粉碎后加生物酶高速剪切,再粗筛过滤后高压均质得到水解液。将黄精水解液在糯米糖化后加入,混合发酵,前发酵结束后加入辅料水解液进入后发酵阶段酿造风味独特、高营养价值的新型黄酒。

本发明属于黄酒酿造技术领域,具体涉及一种新型黄酒的酿造方法。
背景技术
黄精(Polygonatum sibiricum),又名鸡头黄精,我国首批进入食药同源的食材,在治疗疲劳、降血糖、提高免疫和缓解性功能障碍等方面均有很好的疗效,中医以其根茎入药,是一种重要的中草药,已经使用了数千年。其中,黄精多糖、黄酮、皂苷是主要的功效成分。近年来,酒精饮料的消费需求正在从高度白酒向低度营养酒类转变,黄精因其较高的营养价值及滋补作用被广为利用,但多以高度蒸馏酒为酒基泡制为主,这样使得黄精功效成分不能充分浸出,导致其利用不充分、营养价值低,同时不符合现在的消费观念。
黄酒是以糯米为原料,一般酒精含量为8%-20%,属于低度酿造酒,黄酒含有丰富的营养,含有21种氨基酸,而且人体自身不能合成必须依靠食物摄取8种必需氨基酸黄酒都具备,故被誉为“液体蛋糕”。
然而目前黄酒酿造存在产品单一、营养物质少等问题,本发明通过添加黄精等药食同源的食材,可以解决诸如此类的问题。
发明内容
针对上述技术问题,本发明提供一种新型黄酒的酿造方法。将黄精与糯米共同发酵酿制新型黄酒,能够充分体现出黄精的生理功效,增加黄酒营养价值;还能满足人们日益增强的健康饮酒意识和低度健康、营养保健的全新饮酒理念。
本发明是通过以下技术方案实现的:
一种新型黄酒的酿造方法,所述方法包括:
水解液制备:将黄精和辅料分别进行粉碎后加生物酶高速剪切,再粗筛过滤后高压均质得到黄精水解液和辅料水解液;所述辅料包括:茯苓、葛根、石斛、党参、黄芪、灵芝、枸杞、枳椇子中的一种或多种;上述辅料均为药食同源食材;
前发酵:将糯米糖化,然后加入所述黄精水解液,进行混合发酵;后发酵:前发酵结束后加入所述辅料水解液进入后发酵阶段,酿造获得风味独特、具有高营养价值的新型黄酒。
进一步地,所述黄精采用干黄精,包括鸡头黄精、滇黄精、多花黄精中的一种或多种;选择上述几种黄精的原因包括:1)富含水溶性多糖化合物;2)色泽成淡黄色;3)口感微甜、适口;适合用于酿造黄酒。
进一步地,采用的所述生物酶为纤维素酶和葡聚糖酶,按质量百分比计,酶添加总量为1.0-5.0%;纤维素酶与葡聚糖酶比例为1:3-3:1。选择这两种酶能够减少溶剂提取时来自细胞壁、细胞膜和细胞间质的阻力,使有效成分得到释放,同时这两种酶的使用也可将部分多糖降解为更小分子量的片段,从而更有利于黄精或辅料的活性物质更容易从细胞内溶出,使其更充分添加到酒体中,最大程度提高黄酒的营养价值。
进一步地,所述高速剪切的参数具体为:剪切时间30-60min、剪切转速10000-20000r/min、料液比1:(10-60)g/mL、剪切次数 1-5次;
所述粗筛过滤采用40-80目筛子;
所述高压均质的参数为:压力值50-100MPa、均质次数1-5次。
其中,高速剪切能够减小食材颗粒直径、破坏植物细胞壁;粗筛过程用于进行分级处理;高压均质过程使物料的物理、化学及结构性质发生变化,最终达到均质,活性物质溶出率增加;有利于黄精的水解,增加水解中活性物;提高黄酒的营养价值。
进一步地,糯米糖化的方法为:将糯米浸泡、蒸饭、摊凉后,添加糖化曲,糖化曲添加量0.4-0.6%,糖化温度28-32℃,糖化时间 24-28h。
进一步地,所述前发酵的过程中,控制前发酵温度24-32℃、糖化后糯米和酿造水的料液比为1:(1.0-1.5)g/mL,酵母接种量为 1.0-5.0%(单位是:mL/g)、发酵时间3-9d;
其中,所述酿造水中添加所述黄精水解液;黄精水解液占酿造水的体积比为20%-100%。
进一步地,所述前发酵的过程中,采用的酵母异常威克汉姆酵母。
具体地,所述酿酒酵母来自实验室分离;菌种已2020年6月30 日保藏到中国典型培养物保藏中心(地址:中国武汉武汉大学),保藏号:CCTCC No: M 2020249,名称:异常威克汉姆酵母FBKL2.00K8 (Wickerhamomyces anomalus FBKL2.00K8)。
进一步地,所述后发酵的工艺参数为:添加辅料水解液,使辅料水解液占酿造水的1.0-20%;后发酵温度13-15℃,时间13-17d。
本发明的有益技术效果:
1)本发明提供的方法发酵得到新型黄酒:酒精度11.2-15%vol、总糖(以葡萄糖计)11.2-12.5g/L、总酸(以乳酸计)5.95-6.32g/L、 pH为4.21-4.40、氨基态氮0.39-0.48g/L,非糖固形物14.5-16.8g/L,光亮透明、有光泽、酒体协调、浓郁醇香、酸甜适中。
2)本发明提供的方法发酵得到新型黄酒,酒液中多糖浓度 5.01-8.95mg/mL,皂苷浓度1.38-2.45mg/mL,黄酮浓度0.57-0.66 mg/mL,结果表明该新型黄酒中多糖、皂苷、黄酮三种功能性物质浓度均高于传统泡制黄精酒,同时与纯糯米酿制的黄酒相比较,新型黄酒具有更高的营养成分和保健作用。
3)本发明提供的方法酿制的新型黄酒具有益肾填精、滋阴润肺、宽中益气、生津补脾等方面的功能,缓解心悸气短、体虚乏力、肺燥干咳、久病津亏口干、高血压、糖尿病、慢性肝炎、结核病、心血管疾病以及在抗菌、解毒、抗疲劳、抗衰老等方面均有较好作用。

实施例1
将黄精粉与水按1:20的比例,即黄精粉2.5kg,水50L添加到 100L高速剪切乳化机中。纤维素酶:葡聚糖酶按1:1,酶添加量1.0%,剪切时间60min,剪切转速20000r/min,剪切3次;剪切结束后,过40目筛,将滤液添加到高压均质机中,压力值80MPa、均质次数 3次,最后得到黄精水解液,备用。
按上述方法将茯苓、葛根、石斛、党参按1:1的比例进行水解,得到的辅料水解液在后发酵阶段添加。
称取100kg糯米洗净的浸泡12h,使米粒保持完整酥软(即用手指掐米粒成粉状,无硬心)。蒸米、摊凉将浸泡后的糯米常压蒸40 min,然后摊凉至30℃左右。加入雅大酒曲0.5kg,在28℃糖化24h。糖化完成后加入100L酿造水、25L黄精水解液。接种Wickerhamomyces anomalus,接种1.0L,28-30℃进行前发酵6d。
前发酵结束后,加入12L辅料(茯苓、葛根、石斛、党参)水解液,在15-17℃后发酵15d。发酵结束后用全自动黄酒压滤机进行压榨,榨出250kg酒度约为12.5的新酒。以上实施例中使用是500L 蒸饭、糖化、发酵一体机。

将黄精粉与水按1:20的比例,即黄精粉2.5kg,水50L添加到 100L高速剪切乳化机中。纤维素酶:葡聚糖酶按1:1,酶添加量1.0%,剪切时间60min,剪切转速20000r/min,剪切3次;剪切结束后,过40目筛,将滤液添加到高压均质机中,压力值80MPa、均质次数 3次,最后得到黄精水解液,备用。
称取100kg糯米洗净的浸泡12h,使米粒保持完整酥软(即用手指掐米粒成粉状,无硬心)。蒸米、摊凉将浸泡后的糯米常压蒸40 min,然后摊凉至30℃左右。加入雅大酒曲0.5kg,在28℃糖化24h。糖化完成后加入125L酿造水、25L黄精水解液。接种Wickerhamomyces anomalus,接种1.0L,28-30℃前发酵6.5d。
前发酵结束后,在15-17℃后发酵13d。发酵结束后用全自动黄酒压滤机进行压榨,榨出220kg酒度约为13.8的新酒。以上使用是 500L蒸饭、糖化、发酵一体机。
实施例3
将黄精粉与水按1:15的比例,即黄精粉3.5kg,水50L添加到100 L高速剪切乳化机中。纤维素酶:葡聚糖酶按2:1,酶添加量0.5%,剪切时间60min,剪切转速10000r/min,剪切3次;剪切结束后,过60目筛,将滤液添加到高压均质机中,压力值80MPa、均质次数 3次,最后得到黄精水解液,备用。
按上述方法将茯苓、葛根、石斛、党参按1:1的比例进行水解,得到的辅料水解液在后发酵阶段添加。
称取200kg糯米洗净的浸泡12h,使米粒保持完整酥软(即用手指掐米粒成粉状,无硬心)。蒸米、摊凉将浸泡后的糯米常压蒸40 min,然后摊凉至30℃左右。加入雅大酒曲0.5kg,在28℃糖化24 h。糖化完成后加入200L酿造水、50L黄精水解液。接种Wickerhamomyces anomalus,接种1.5L,28-30℃进行前发酵5d。前发酵结束后,加入12L辅料(茯苓、葛根、石斛、党参)水解液,在15-17℃后发酵17d。发酵结束后用全自动黄酒压滤机进行压榨,榨出480kg酒度约为13.2的新酒。以上实施例中使用是500L蒸饭、糖化、发酵一体机。

Claims (9)

1.一种新型黄酒的酿造方法,其特征在于,所述方法包括:
水解液制备:将黄精和辅料分别进行粉碎后加生物酶高速剪切,再粗筛过滤后高压均质得到黄精水解液和辅料水解液;所述辅料包括:茯苓、葛根、石斛、党参、黄芪、灵芝、枸杞、枳椇子中的一种或多种;
前发酵:将糯米糖化,然后加入所述黄精水解液,进行混合发酵;
后发酵:前发酵结束后加入所述辅料水解液进入后发酵阶段,酿造获得风味独特、具有高营养价值的新型黄酒。
2.根据权利要求1所述一种新型黄酒的酿造方法,其特征在于,所述黄精采用干黄精,包括鸡头黄精、滇黄精、多花黄精中的一种或多种。
3.根据权利要求1所述一种新型黄酒的酿造方法,其特征在于,采用的所述生物酶为纤维素酶和葡聚糖酶,按质量百分比计,酶添加总量为1.0-5.0%;纤维素酶与葡聚糖酶比例为1:3-3:1。
4.根据权利要求1所述一种新型黄酒的酿造方法,其特征在于,所述高速剪切的参数具体为:剪切时间30-60min、剪切转速10000-20000r/min、料液比1:(10-60)g/mL、剪切次数1-5次;
所述粗筛过滤采用40-80目筛子;
所述高压均质的参数为:压力值50-100MPa、均质次数1-5次。
5.根据权利要求1所述一种新型黄酒的酿造方法,其特征在于,糯米糖化的方法为:将糯米浸泡、蒸饭、摊凉后,添加糖化曲,糖化曲添加量0.4-0.6%,糖化温度28-32℃,糖化时间24-28h。
6.根据权利要求1所述一种新型黄酒的酿造方法,其特征在于,所述前发酵的过程中,控制前发酵温度24-32℃、糖化后糯米和酿造水的料液比为1:(1.0-1.5)g/mL,酵母接种量为1.0-5.0%、发酵时间3-9d;
其中,所述酿造水中添加所述黄精水解液;黄精水解液占酿造水的体积比为20%-100%。
7.根据权利要求6所述一种新型黄酒的酿造方法,其特征在于,所述前发酵的过程中,采用的酵母为异常威克汉姆酵母。
8.根据权利要求1所述一种新型黄酒的酿造方法,其特征在于,所述后发酵的工艺参数为:添加辅料水解液,使辅料水解液占酿造水体积比的1.0-20%;后发酵温度13-15℃,时间13-15d。
9.根据权利要求1所述一种新型黄酒的酿造方法,其特征在于,采用所述方法制备获得的黄酒的酒精度为11.2-15%vol、以葡萄糖计总糖为11.2-12.5g/L、以乳酸计总酸为5.95-6.32g/L、pH为4.21-4.40、氨基态氮为0.39-0.48g/L,非糖固形物为14.5-16.8g/L。
