在以上技术方案的基础上,优选的,所述中药清膏的制备方法包括:
步骤一、取中药材,加入冷水没过中药材,浸泡0.5-3h,使其溶胀,过滤,得到溶胀后的中药材;
步骤二,称取中药材4-10倍量的水,加入溶胀后的中药材,煎煮1-4h,过滤,得到中药材和煎煮液,收集煎煮液;
步骤三、称取中药材4-10倍量的水,加入上一步所得中药材,煎煮1-4h,过滤,得到中药材和煎煮液,收集煎煮液;
步骤四、重复步骤三0-2次;
步骤五、将步骤二至步骤四所得煎煮液合并,浓缩煎煮液至相对密度(水=1)为1.05-1.12的浓缩液,该浓缩液即为中药清膏。
在以上技术方案的基础上,优选的,所述中药材按质量份数计算,包括3-5份玉竹、5-10份麦冬、1-3份石斛、2-8份百合、1-3份黄精和1-3份乌梅。
上述作为一种优选的方案,坚果包衣液的中药清膏用滋阴生津之品如玉竹、麦冬、石斛、百合、黄精、乌梅等来平衡翻炒油炸坚果的燥热之性,增强濡运功能。长期日食坚果,虽补充了营养,但是时间久了,人容易阴虚火旺,尤其对于阴虚体质的人群,时常引起咽干口燥,干咳少痰,口腔溃疡,甚至燥热烦心失眠。包衣液配伍这些生津之品,滋阴养脏、润燥生津,人就不容易上火,气血不易失衡。
在以上技术方案的基础上,优选的,所述中药材按质量份数计算,包括2-10份火麻仁、2-5份麦冬、5-9份炒莱菔子和1-3份槟榔。
上述作为另一种优选的方案,可以针对便秘人群。长期的便秘容易导致一些毒素的蓄积在体内导致了一个体内全身不适。甜杏仁、扁桃仁、松子仁、核桃仁、柏子仁等富含天然油脂,原本具有润肠通便作用,如果配伍行气导滞之品如莱菔子、火麻仁、槟榔等以促进肠道蠕动,使得大便通畅。包衣液用蜂蜜增香调味,蜂蜜也具有润肠通便之功。
更进一步优选的,所述中药材按质量份数计算,包括2-5份桑葚、3-7份菊花、1-5份决明子和3-7份枸杞。

在以上技术方案的基础上,优选的,所述增稠剂为黄原胶、淀粉或卡拉胶中的一种或几种的混合物。
本发明还公开了一种中药清膏包衣液的制备方法,包括如下步骤:将包衣液、蜂蜜、白砂糖、增稠剂和水按照配方比例混合搅拌1-10min,得到中药清膏包衣液。
在以上技术方案的基础上,优选的,所述水的温度为40-65℃。
在以上技术方案的基础上,优选的,将中药清膏包衣液用于坚果的包衣,过程包括:称取坚果质量的4-10%的中药清膏包衣液,将其喷洒在坚果表面,将喷洒有中药清膏包衣液的坚果投入包衣机中转动1-5min,得到包衣坚果半成品,将包衣坚果半成品放入温度为110-130℃的油炸锅中油炸5-10min,油炸完毕,冷却至室温、放入搅拌机中打散0.5-3min,即可得到具有中药清膏包衣的坚果。
在以上技术方案的基础上,优选的,将中药清膏包衣液用于坚果的包衣,过程包括:称取坚果质量的4-10%的中药清膏包衣液,将其喷洒在坚果表面,将喷洒有中药清膏包衣液的坚果投入包衣机中转动1-5min,得到包衣坚果半成品,将包衣坚果半成品放入温度为150-170℃的烘箱中焙烤12-20min,焙烤完毕,冷却至室温、放入搅拌机中打散0.5-3min,即可得到具有中药清膏包衣的坚果。
本发明的技术方案中,所述坚果优选的,采用甜杏仁、巴旦木、瓜蒌仁、核桃仁、柏子仁、腰果仁、榛子仁等这些具有高植物蛋白、不饱和脂肪酸和膳食纤维的坚果仁,再结合不同的中药清膏蜂蜜包衣液喷淋,最后低温焗烤或油炸,做成一款有保健功效的休闲零食。
本发明的中药清膏包衣液及其制备方法和应用相对于现有技术具有以下有益效果:
(1)本发明的中药清膏包衣液采用中药清膏和蜂蜜白砂糖融合在一起,加入适量的增稠剂,有利于包衣液的黏附和均匀性,同时保证坚果外观的一致性,在经过焙烤或油炸后,冷却到40℃左右,将其打散,避免坚果粘接在一起,或者有多余的包衣液凝结成块黏附在坚果上,影响外观;
(2)本发明的中药清膏包衣液包衣坚果,可以使坚果有光泽,颜色自然,味道甘香可口,无中药的苦涩味道,口感酥脆滑润、细腻,儿童或老年人拒绝都非常方便。同时其充分发挥药食同源产品的食疗价值,具有很好的健康养生效果,适宜不同人群的需求。
具体实施方式
下面将结合本发明实施方式,对本发明实施方式中的技术方案进行清楚、完整地描述,显然,所描述的实施方式仅仅是本发明一部分实施方式,而不是全部的实施方式。基于本发明中的实施方式,本领域普通技术人员在没有做出创造性劳动前提下所获得的所有其他实施方式,都属于本发明保护的范围。
实施例1
(1)中药清膏的制备:
将30g火麻仁、20g麦冬、20g炒莱菔子和10g槟榔混合均匀,倒入冷水至没过所有药材,浸泡2h,得到溶胀的中药材混合物,过滤除去水分,加入640g水煎煮2h后过滤,收集第一次滤液,向滤渣中加入640g水煎煮2h后过滤,收集第二次滤液,合并第一次和第二次的滤液,浓缩至相对密度(水=1)为1.1,得到中药清膏。
(2)配置包衣液:
称取20g蜂蜜、25g白砂糖、3g黄原胶、10g中药清膏和42g40℃的水,混合搅拌1min,得到包衣液100g。
(3)坚果包衣:称取1000g核桃仁,将100g包衣液喷洒在核桃仁表面,在包衣机中转动2min,得到包衣坚果半成品,将包衣坚果半成品放入120℃的油炸锅中油炸6min,油炸完毕,捞出,冷却至40℃,并放入搅拌机中,搅拌1min,得到包衣完毕的核桃仁。
实施例2
(1)中药清膏的制备:
将100g火麻仁、50g麦冬、50g炒莱菔子和30g槟榔混合均匀,倒入冷水至没过所有药材,浸泡3h,得到溶胀的中药材混合物,过滤除去水分,加入920g水煎煮4h后过滤,收集第一次滤液,向滤渣中加入920g水煎煮1h后过滤,收集第二次滤液,收集第二次滤液,向滤渣中加入920g水煎煮1h后过滤,收集第三次滤液,合并第一次、第二次和第三次的滤液,浓缩至相对密度(水=1)为1.12,得到中药清膏。
(2)配置包衣液:
称取10g蜂蜜、10g白砂糖、3g黄原胶、12g中药清膏和65g65℃的水,混合搅拌10min,得到包衣液100g。
(3)坚果包衣:称取2500g核桃仁,将100g包衣液喷洒在核桃仁表面,在包衣机中转动5min,得到包衣坚果半成品,将包衣坚果半成品放入110℃的油炸锅中油炸5min,油炸完毕,捞出,冷却至40℃,并放入搅拌机中,搅拌0.5min,得到包衣完毕的核桃仁。
实施例3
(1)中药清膏的制备:
将20g火麻仁、30g麦冬、40g炒莱菔子和20g槟榔混合均匀,倒入冷水至没过所有药材,浸泡0.5h,得到溶胀的中药材混合物,过滤除去水分,加入1100g水煎煮1h后过滤,收集第一次滤液,向滤渣中加入1100g水煎煮4h后过滤,收集第二次滤液,收集第二次滤液,向滤渣中加入1100g水煎煮4h后过滤,收集第三次滤液,收集第三次滤液,向滤渣中加入1100g水煎煮4h后过滤,收集第四次滤液,合并第一次、第二次、第三次和第四次的滤液,浓缩至相对密度(水=1)为1.05,得到中药清膏。
(2)配置包衣液:
称取15g蜂蜜、20g白砂糖、1g黄原胶、1g中药清膏和63g50℃的水,混合搅拌5min,得到包衣液100g。
(3)坚果包衣:称取2000g核桃仁,将100g包衣液喷洒在核桃仁表面,在包衣机中转动1min,得到包衣坚果半成品,将包衣坚果半成品放入130℃的油炸锅中油炸10min,油炸完毕,捞出,冷却至40℃,并放入搅拌机中,搅拌3min,得到包衣完毕的核桃仁。
实施例4
(1)中药清膏的制备:
将30g玉竹、50g麦冬、20g石斛、20g百合、10g黄精和10g乌梅混合均匀,倒入冷水至没过所有药材,浸泡2h,得到溶胀的中药材混合物,过滤除去水分,加入1400g水煎煮2h后过滤,收集第一次滤液,向滤渣中加入1400g水煎煮2h后过滤,收集第二次滤液,合并第一次和第二次的滤液,浓缩至相对密度(水=1)为1.1,得到中药清膏。
(2)配置包衣液:
称取20g蜂蜜、25g白砂糖、3g黄原胶、10g中药清膏和42g40℃的水,混合搅拌4min,得到包衣液100g。
(3)坚果包衣:称取1000g扁桃仁,将100g包衣液喷洒在扁桃仁表面,在包衣机中转动2min,得到包衣坚果半成品,将包衣坚果半成品放入120℃的油炸锅中油炸6min,油炸完毕,捞出,冷却至40℃,并放入搅拌机中,搅拌1min,得到包衣完毕的扁桃仁。
实施例5
(1)中药清膏的制备:
将50g玉竹、100g麦冬、10g石斛、80g百合、30g黄精和30g乌梅混合均匀,倒入冷水至没过所有药材,浸泡2h,得到溶胀的中药材混合物,过滤除去水分,加入1200g水煎煮4h后过滤,收集第一次滤液,向滤渣中加入1200g水煎煮1h后过滤,收集第二次滤液,收集第二次滤液,向滤渣中加入1200g水煎煮1h后过滤,收集第三次滤液,合并第一次、第二次和第三次的滤液,浓缩至相对密度(水=1)为1.12,得到中药清膏。
(2)配置包衣液:
称取10g蜂蜜、10g白砂糖、3g黄原胶、12g中药清膏和65g65℃的水,混合搅拌6min,得到包衣液100g。
(3)坚果包衣:称取2500g扁桃仁,将100g包衣液喷洒在扁桃仁表面,在包衣机中转动5min,得到包衣坚果半成品,将包衣坚果半成品放入110℃的油炸锅中油炸5min,油炸完毕,捞出,冷却至40℃,并放入搅拌机中,搅拌0.5min,得到包衣完毕的扁桃仁。
实施例6
(1)中药清膏的制备:
将40g玉竹、80g麦冬、20g石斛、40g百合、20g黄精和20g乌梅混合均匀,倒入冷水至没过所有药材,浸泡2h,得到溶胀的中药材混合物,过滤除去水分,加入1200g水煎煮1h后过滤,收集第一次滤液,向滤渣中加入1200g水煎煮4h后过滤,收集第二次滤液,收集第二次滤液,向滤渣中加入1200g水煎煮4h后过滤,收集第三次滤液,收集第三次滤液,向滤渣中加入1200g水煎煮4h后过滤,收集第四次滤液,合并第一次、第二次、第三次和第四次的滤液,浓缩至相对密度(水=1)为1.05,得到中药清膏。
(2)配置包衣液:
称取15g蜂蜜、20g白砂糖、1g黄原胶、1g中药清膏和63g50℃的水,混合搅拌3min,得到包衣液100g。
(3)坚果包衣:称取2000g扁桃仁,将100g包衣液喷洒在扁桃仁表面,在包衣机中转动1min,得到包衣坚果半成品,将包衣坚果半成品放入130℃的油炸锅中油炸10min,油炸完毕,捞出,冷却至40℃,并放入搅拌机中,搅拌3min,得到包衣完毕的扁桃仁。
实施例7
(1)中药清膏的制备:
将50g桑葚、30g菊花、50g决明子和70g枸杞混合均匀,倒入冷水至没过所有药材,浸泡2h,得到溶胀的中药材混合物,过滤除去水分,加入2000g水煎煮2h后过滤,收集第一次滤液,向滤渣中加入2000g水煎煮2h后过滤,收集第二次滤液,合并第一次和第二次的滤液,浓缩至相对密度(水=1)为1.1,得到中药清膏。
(2)配置包衣液:
称取20g蜂蜜、25g白砂糖、3g黄原胶、10g中药清膏和42g40℃的水,混合搅拌7min,得到包衣液100g。
(3)坚果包衣:称取1000g开心果仁,将100g包衣液喷洒在开心果仁表面,在包衣机中转动2min,得到包衣坚果半成品,将包衣坚果半成品放入120℃的油炸锅中油炸6min,油炸完毕,捞出,冷却至40℃,并放入搅拌机中,搅拌1min,得到包衣完毕的开心果仁。
实施例8
(1)中药清膏的制备:
将30g桑葚、50g菊花、20g决明子和40g枸杞混合均匀,倒入冷水至没过所有药材,浸泡2h,得到溶胀的中药材混合物,过滤除去水分,加入840g水煎煮4h后过滤,收集第一次滤液,向滤渣中加入840g水煎煮1h后过滤,收集第二次滤液,收集第二次滤液,向滤渣中加入840g水煎煮1h后过滤,收集第三次滤液,合并第一次、第二次和第三次的滤液,浓缩至相对密度(水=1)为1.12,得到中药清膏。
(2)配置包衣液:
称取10g蜂蜜、10g白砂糖、3g黄原胶、12g中药清膏和65g65℃的水,混合搅拌2min,得到包衣液100g。
(3)坚果包衣:称取2500g开心果仁,将100g包衣液喷洒在开心果仁表面,在包衣机中转动5min,得到包衣坚果半成品,将包衣坚果半成品放入110℃的油炸锅中油炸5min,油炸完毕,捞出,冷却至40℃,并放入搅拌机中,搅拌0.5min,得到包衣完毕的开心果仁。
实施例9
(1)中药清膏的制备:
将20g桑葚、70g菊花、10g决明子和30g枸杞混合均匀,倒入冷水至没过所有药材,浸泡2h,得到溶胀的中药材混合物,过滤除去水分,加入520g水煎煮1h后过滤,收集第一次滤液,向滤渣中加入520g水煎煮4h后过滤,收集第二次滤液,收集第二次滤液,向滤渣中加入520g水煎煮4h后过滤,收集第三次滤液,收集第三次滤液,向滤渣中加入520g水煎煮4h后过滤,收集第四次滤液,合并第一次、第二次、第三次和第四次的滤液,浓缩至相对密度(水=1)为1.05,得到中药清膏。
(2)配置包衣液:
称取15g蜂蜜、20g白砂糖、1g黄原胶、1g中药清膏和63g50℃的水,混合搅拌9min,得到包衣液100g。
(3)坚果包衣:称取2000g开心果仁,将100g包衣液喷洒在开心果仁表面,在包衣机中转动1min,得到包衣坚果半成品,将包衣坚果半成品放入130℃的油炸锅中油炸10min,油炸完毕,捞出,冷却至40℃,并放入搅拌机中,搅拌3min,得到包衣完毕的开心果仁。
综合感官评价:
采用市售普通坚果制品作为对比,选取10名食品调味师对实施例1-9的产品色泽、香气、滋味和质地的总体印象进行综合感官评价,权重得分级感官评定表如下:

采用100分制进行打分,最后以每一个实施例样品得分的平均值为其最终得分,同时以采用普通方法制备的坚果食品为对照。最终的得到评分表如下:

以上数据可以看出,本发明所得中药清膏包衣液包衣处理后的坚果相比市面常规产品而言,在色泽、香气、滋味和质地上具有更好的感官评价。
同时对实施例1-9所得包衣坚果与普通坚果进行对应的理化性质检测,所得结果如下:

从以上结果可以看出,本发明制得的中药清膏蜂蜜坚果油分偏低,硬度适中,酸价较低,过氧化值比普通坚果低,有利于延长保质期。中药清膏蜂蜜坚果的产品品质好,外观均匀,不完善颗粒小于2%,有较好的保健,有较好的市场应用前景。

1.一种中药清膏包衣液,其特征在于,以质量百分比为100%计算,包括:

2.如权利要求1所述的中药清膏包衣液,其特征在于,所述中药清膏的制备方法包括:
步骤一、取中药材,加入冷水没过中药材,浸泡0.5-3h,使其溶胀,过滤,得到溶胀后的中药材;
步骤二,称取中药材4-10倍量的水,加入溶胀后的中药材,煎煮1-4h,过滤,得到中药材和煎煮液,收集煎煮液;
步骤三、称取中药材4-10倍量的水,加入上一步所得中药材,煎煮1-4h,过滤,得到中药材和煎煮液,收集煎煮液;
步骤四、重复步骤三0-2次;
步骤五、将步骤二至步骤四所得煎煮液合并,浓缩煎煮液至相对密度(水=1)为1.05-1.12的浓缩液,该浓缩液即为中药清膏。
3.如权利要求2所述的中药清膏包衣液,其特征在于,所述中药材按质量份数计算,包括3-5份玉竹、5-10份麦冬、1-3份石斛、2-8份百合、1-3份黄精和1-3份乌梅。
4.如权利要求2所述的中药清膏包衣液,其特征在于,所述中药材按质量份数计算,包括2-10份火麻仁、2-5份麦冬、5-9份炒莱菔子和1-3份槟榔。
5.如权利要求2所述的中药清膏包衣液,其特征在于,所述中药材按质量份数计算,包括2-5份桑葚、3-7份菊花、1-5份决明子和3-7份枸杞。
6.如权利要求1所述的中药清膏包衣液,其特征在于,所述增稠剂为黄原胶、淀粉或卡拉胶中的一种或几种的混合物。
7.一种中药清膏包衣液的制备方法,其特征在于,包括如下步骤:将包衣液、蜂蜜、白砂糖、增稠剂和水按照配方比例混合搅拌1-10min,得到中药清膏包衣液。
8.如权利要求7所述的中药清膏包衣液的制备方法,其特征在于,所述水的温度为40-65℃。
9.权利要求1-6中任一所述的中药清膏包衣液在坚果包衣中的应用,其特征在于,称取坚果质量的4-10%的中药清膏包衣液,将其喷洒在坚果表面,将喷洒有中药清膏包衣液的坚果投入包衣机中转动1-5min,得到包衣坚果半成品,将包衣坚果半成品放入温度为110-130℃的油炸锅中油炸5-10min,油炸完毕,冷却、打散,即可得到具有中药清膏包衣的坚果。
10.权利要求1-6中任一所述的中药清膏包衣液在坚果包衣中的应用,其特征在于,称取坚果质量的4-10%的中药清膏包衣液,将其喷洒在坚果表面,将喷洒有中药清膏包衣液的坚果投入包衣机中转动1-5min,得到包衣坚果半成品,将包衣坚果半成品放入温度为150-170℃的烘箱中焙烤12-20min,焙烤完毕,冷却、打散,即可得到具有中药清膏包衣的坚果。
