Abstract
本发明目的是提供一种非油炸速食岐山臊子面的制作工艺,以兼顾食用方便、健康和岐山臊子面的传统风味。具体地说,一种非油炸速食岐山臊子面,将非油炸面块、脱水蔬菜包、岐山臊子包、调料包独立封装小袋后统一包装而成。每份包装各组成部分重量为:非油炸面块105±5克、脱水蔬菜包8±2克、岐山臊子包15±2克、调料包10±2克。

技术领域
本发明涉及一种食品的制作方法,特别是一种非油炸速食面制作方法。
背景技术
岐山的臊子面历史悠久,起源于商周,清代已经很驰名。是陕西乃至西北地区家喻户晓的风味小吃,品种多达数十种。岐山臊子面乡土风味尤为浓厚,以酸辣著称,一碗合格的岐山臊子面应该具有“薄、筋、光、汪、酸、辣、香”等特色,吃口柔韧滑爽,特点是面条细长,厚薄均匀,臊子鲜香,红油浮面,汤味酸辣,筋韧爽口,老幼皆宜。
但是,岐山臊子面制作工艺复杂,在家制作不够方便,市场尚无可供人方便食用的岐山臊子面。
发明内容
在本发明目的是提供一种非油炸速食岐山臊子面的制作工艺,以兼顾食用方便、健康和岐山臊子面的传统风味。
具体地说,一种非油炸速食岐山臊子面,将非油炸面块、脱水蔬菜包、岐山臊子包、调料包独立封装小袋后统一包装而成。每份包装各组成部分重量为:非油炸面块105±5克、脱水蔬菜包8±2克、岐山臊子包 15±2克、调料包 10±2克。
所述一种非油炸速食岐山臊子面的制备工艺,它的选料如下:选用岐山当地优质小麦面粉,岐山香醋,五花猪肉以及豆角、豆腐、木耳、黄花、鸡蛋、韭菜、盐、白砂糖。
按照如下步骤制作:(1)将岐山优质小麦面粉经相关设备加工成非油炸速食面块。(2)将上述豆角、豆腐、木耳、黄花、鸡蛋、韭菜等进行工业化脱水加工并封装为脱水蔬菜包。(3)沿用岐山臊子肉的传统加工方法将猪五花肉加工制成岐山臊子,封装为岐山臊子包。(4)将岐山香醋、盐、白砂糖经高温熬制成调料汁并封装为调料包。(5)将非油炸面块、脱水蔬菜包、岐山臊子包和调料包装入特制碗或袋内,用包装机包装、密封、消毒、装箱。
本发明制备的非油炸速食岐山臊子面,保持了岐山臊子面的传统味道和口感,食用时可在锅中煮食,也可用沸水冲泡,由面块于不采用油炸,较之现有油炸方便面更健康。
具体实施方式
非油炸速食岐山臊子面的制备工艺,按照如下步骤实施:
(1)选取岐山优质小麦面粉,经相关设备,使用微膨化工艺和热风干燥工艺加工成105±5克的非油炸速食面块。
(2)将豆角、豆腐、木耳、黄花、韭菜等蔬菜清洗、择捡、切成约1cm²大小,将鸡蛋做成0.5mm厚蛋饼并切成进1cm²大小,脱水加工后,封装为脱水蔬菜包,每包8±2克。
(3)选用五花猪肉,切成约2mm×10mm×10mm块状,沿用岐山臊子肉的传统加工方法将猪五花肉加工制成岐山臊子,封装为岐山臊子包,每包15±2克。
(4)将岐山香醋、盐、白砂糖按照5:2:1比例经高温熬制成调料汁并封装为调料包,每包10±2克。
(5)将非油炸面块、脱水蔬菜包、岐山臊子包和调料包装入特制碗或袋内,用包装机包装、密封、消毒、装箱。

1.一种非油炸速食岐山臊子面,将非油炸面块、脱水蔬菜包、岐山臊子包、调料包独立封装小袋后统一包装而成。
2.根据权利要求1所述的一种非油炸速食岐山臊子面,其特征在于它的选料如下:选用岐山当地优质小麦面粉,岐山香醋,五花猪肉以及豆角、豆腐、木耳、黄花、鸡蛋、韭菜、盐、白砂糖。
3.根据权利要求1所述的一种非油炸速食岐山臊子面,其特征在于它的制作工艺如下:第一、将岐山优质小麦面粉经相关设备加工成非油炸速食面块;第二、将上述豆角、豆腐、木耳、黄花、鸡蛋、韭菜等进行工业化脱水加工并封装为脱水蔬菜包;第三、沿用岐山臊子肉的传统加工方法将猪五花肉加工制成岐山臊子,封装为岐山臊子包;第四、将岐山香醋、盐、白砂糖经高温熬制成调料汁并封装为调料包;第五、将非油炸面块、脱水蔬菜包、岐山臊子包和调料包装入特制碗或袋内,用包装机包装、密封、消毒、装箱。
