本发明涉及一种预防改善2型糖尿病的特医食品,其特包括以下重量份数的各原料:乳清蛋白粉8‑11份;夏威夷果仁12‑17份;核桃仁7‑13份;麦芽糊精20‑30份;蕃茄粉10‑20份;紫薯粉7‑17份;黄原胶4‑8份;菊粉0.8‑1.6份;魔芋精粉0.4‑1.6份;果糖1.3‑2.4份;葡萄籽提取物0.03‑0.08份;橄榄果提取物0.05‑0.09份;复合维生素0.01‑0.08份;复合矿物质0.02‑0.06份。优点为,该特医食品优选地中海天然食物来源,具有地中海饮食结构特点,适用于有潜在罹患或已罹患2型糖尿病的人群。
Description
技术领域
本发明属于糖尿病预防、检测及食疗领域,具体涉及一种预防改善2型糖尿病人的特医食品及其制备方法和应用。
背景技术
慢性病是目前世界范围内面临的医疗难题,其中糖尿病的发病率与诊断仍不断攀升,威胁着人们的生命,据国际糖尿病联盟最新报告,全球有4.25亿糖尿病患者,比2015年增加了1000万,此外还有3.5亿多糖尿病高危人群,在我国,近30年糖尿病患病率持续增加,2013年我国慢性病及其危险因素监测显示,18岁及以上人群糖尿病患病率为10.4%。糖尿病主要有4大类,I型、2型、妊娠期糖尿病和特殊类型糖尿病,其中,糖尿病患者较多为2型糖尿病,多在35-40岁之后发病,伴有“三多一少”症状,即多饮、多尿、多食、消瘦,其病因包括久坐、不健康的饮食方式、超重/肥胖、抽烟、过度饮酒等,目前还仍不可根治,其治疗包括饮食控制、运动处方、血糖监测、自我管理及药物治疗,其中饮食干预是防治2型糖尿病治疗基础。
目前临床研究表明,地中海膳食结构能够有效的预防慢性疾病,包括肥胖、糖尿病、心脑血管疾病等,地中海膳食是指居住在地中海沿岸国家(希腊、葡萄牙、西班牙、法国、意大利等14国)的膳食模式,一般是以希腊为代表,该种饮食是以植物性食物为主要膳食来源,包括水果、蔬菜、全谷物、豆类、坚果、少量的动物性食物,其膳食结构以高摄入水果、蔬菜、豆类、坚果、橄榄油;适量摄入奶类产品和红酒;少量摄入红肉和加工肉类、黄油、奶油、含糖饮料等,该种饮食结构富含丰富的多酚类、高比例的不饱和脂肪酸、Omega-3脂肪酸、多种膳食纤维、人体必需的矿物质和维生素、优质蛋白质等,多酚类成分能够有效的降低2型糖尿病的发病率,其主要通过抑制小肠内葡萄糖的吸收及改善胰岛素抵抗的途径,预防和改善2型糖尿病;高不饱和脂肪酸膳食能够改善人体骨骼肌细胞膜磷脂的组成,从而提高胰岛素的敏感性,骨骼肌细胞膜中长链多不饱和脂肪酸含量越高、饱和脂肪酸越低,空腹血清胰岛素水平越低;Omega-3脂肪酸可通过降低甘油三酯水平来改善胰岛素敏感性,预防2型糖尿病;高比例膳食纤维能够提高人体饱腹感,延缓胃排空,促进餐后血糖稳定。
众多研究表明,地中海膳食结构能够有效的预防和改善2型糖尿病,国际对地中海膳食与2型糖尿病的相关研究已经比较成熟,但均偏向于生鲜食物,对具有地中海膳食特点的代餐食品的研究和开发鲜少,国内针对糖尿病患者设计的代餐食品并未涉及到地中海膳食概念,且配方复杂,工艺繁琐,或者营养成分单一,添加较多食品添加剂或者降低血糖的药物成分,不利于患者病情控制。
发明内容
本发明所要解决的技术问题是提供一种地中海膳食特点的特医食品及其制备方法和应用,旨在对2型糖尿病进行有效预防和改善并有效克服糖尿病检测时直接口服葡萄糖和使用馒头餐的不足。
本发明解决上述技术问题的技术方案如下:一种预防改善2型糖尿病的特医食品,其特包括以下重量份数的各原料:乳清蛋白粉8-11份;夏威夷果仁12-17份;核桃仁7-13份;麦芽糊精20-30份;蕃茄粉10-20份;紫薯粉7-17份;黄原胶4-8份;菊粉0.8-1.6份;魔芋精粉0.4-1.6份;果糖1.3-2.4份;葡萄籽提取物0.03-0.08份;橄榄果提取物0.05-0.09份;复合维生素0.01-0.08份;复合矿物质0.02-0.06份。
在上述技术方案的基础上,本发明还可以有如下进一步的具体选择。
具体的,所述复合维生素包括按照1-6:1-3:1的重量比例混合的维生素A、维生素D和维生素B12。
具体的,所述复合矿物质包括按照1-3:1的重量比例混合的氯化铬和碘化钾。
具体的,每份所述特医食品呈长条状且长宽高为3.2cmx1.5cmx7.8cm,每份所述特医食品的蛋白质供能8-15%,饱和脂肪酸供能小于10%,不饱和脂肪酸供能20%-32%,单不饱和脂肪酸供能>12%,碳水化合物供能50-65%,其中不饱和脂肪酸中Omega6/Omega3脂肪酸的质量比为2/1-4/1,每份所述特医食品的膳食纤维含量为5-7g
本发明还提供了上述的预防改善2型糖尿病的特医食品的制备方法,其包括如下步骤:
取相应重量份的夏威夷果仁和核桃仁一起在110-140℃下翻炒8-12min,冷却至室温后,破碎处理至粒径为8-10目的颗粒状原料A;将其余原料一起充分混合得粉状原料B;将原料A和原料B充分混合;然后在-15℃至-20℃的超低温下挤压成型,然后将温度调整至4-10℃,切片、杀菌并包装即得。
具体的,切片是指将成型且温度调整后的原料切成3.2cmx1.5cmx7.8cm的长条状。
具体的,杀菌采用紫外线灭菌处理或臭氧灭菌处理。其中紫外线灭菌处理是紫外线灯管的辐射强度在90μw/cm2以上,温度控制为20-40℃,照射时间不低于45min;臭氧灭菌处理的具体条件为,控制环境中臭氧浓度80-100mg/m3,处理时间控制在60min以上。
本发明还提供了上述的预防改善2型糖尿病的特医食品的应用,具体为用作2型糖尿病患者的代餐食品或用作糖耐量试验的标准餐。
与现有技术相比,本发明的有益效果是:
本发明提供的特医食品优选地中海天然食物来源,选取食物干燥原粉,不含添加剂,含有人体所需全营养成分,适口性好,方便携带,解决了亚洲人群难以实现地中海饮食结构这一难题;本发明提供的特医食品可有效预防和改善2型糖尿病,是一种健康食品,适用于绝大多数的人群,尤其适用于有潜在罹患或已罹患2型糖尿病的人群,可减少发病风险及帮助已发病的糖尿病患者有效控制病情;本发明提供的特医食品还能够用作糖耐量试验的标准餐,克服现有技术中直接口服葡萄糖时风险较大及使用馒头餐时不方便且难以有统一标准的不足。
具体实施方式
以下结合具体实施例对本发明的原理和特征进行描述,所举实例只用于解释本发明,并非用于限定本发明的范围。
以下实施例中用到的原料若无特别说明均为市售产品,用到的方法若无特别说明均为常规方法。着重要说明的是,橄榄果提取物即橄榄青果提取物,其为棕黄色粉末状。
实施例1
一种预防改善2型糖尿病的特医食品,其特包括以下重量份数的各原料:乳清蛋白粉10份;夏威夷果仁15份;核桃仁10份;麦芽糊精25份;蕃茄粉15份;紫薯粉12份;黄原胶6份;菊粉1.2份;魔芋精粉1.0份;果糖2.0份;葡萄籽提取物0.06份;橄榄果提取物0.07份;复合维生素0.05份;复合矿物质0.04份;其中,所述复合维生素包括按照1:1:1的重量比例混合的维生素A、维生素D和维生素B12;所述复合矿物质包括按照3:1的重量比例混合的氯化铬和碘化钾。
相应的制备方法为:取相应重量份的夏威夷果仁和核桃仁一起在110℃下翻炒12min,冷却至室温后,破碎处理至粒径为8目的颗粒状原料A;将其余原料一起充分混合得粉状原料B;将原料A和原料B充分混合;然后在-20℃的超低温下挤压成型,然后将温度调整至4-10℃,切片、杀菌并包装即得;其中,切片是指将成型且温度调整后的原料切成3.2cmx1.5cmx7.8cm的长条状。
实施例2
一种预防改善2型糖尿病的特医食品,其特包括以下重量份数的各原料:乳清蛋白粉8份;夏威夷果仁17份;核桃仁13份;麦芽糊精20份;蕃茄粉20份;紫薯粉17份;黄原胶4份;菊粉0.8份;魔芋精粉1.6份;果糖1.3份;葡萄籽提取物0.05份;橄榄果提取物0.09份;复合维生素0.01份;复合矿物质0.06份;其中,所述复合维生素包括按照4:3:1的重量比例混合的维生素A、维生素D和维生素B12;所述复合矿物质包括按照1:1的重量比例混合的氯化铬和碘化钾。
相应的制备方法为:取相应重量份的夏威夷果仁和核桃仁一起在140℃下翻炒8min,冷却至室温后,破碎处理至粒径为10目的颗粒状原料A;将其余原料一起充分混合得粉状原料B;将原料A和原料B充分混合;然后在-15℃的超低温下挤压成型,然后将温度调整至4-10℃,切片、杀菌并包装即得;其中,切片是指将成型且温度调整后的原料切成3.2cmx1.5cmx7.8cm的长条状。
实施例3
一种预防改善2型糖尿病的特医食品,其特包括以下重量份数的各原料:乳清蛋白粉11份;夏威夷果仁17份;核桃仁13份;麦芽糊精20份;蕃茄粉10份;紫薯粉7份;黄原胶4份;菊粉0.8份;魔芋精粉1.6份;果糖2.4份;葡萄籽提取物0.08份;橄榄果提取物0.09份;复合维生素0.08份;复合矿物质0.02份;其中,所述复合维生素包括按照6:3:1的重量比例混合的维生素A、维生素D和维生素B12;所述复合矿物质包括按照2:1的重量比例混合的氯化铬和碘化钾。
相应的制备方法为:取相应重量份的夏威夷果仁和核桃仁一起在125℃下翻炒10min,冷却至室温后,破碎处理至粒径为8目的颗粒状原料A;将其余原料一起充分混合得粉状原料B;将原料A和原料B充分混合;然后在-20℃的超低温下挤压成型,然后将温度调整至4-10℃,切片、杀菌并包装即得;其中,切片是指将成型且温度调整后的原料切成3.2cmx1.5cmx7.8cm的长条状。
申请人招募了100名健康受试者对本发明提供的特医食品的GI值进行检测,测得的平均GI值为50.73±1.10,表明该特医食品为一种中低GI升糖指数的食品,可作为预防和改善糖尿病患者的代餐食品。
为了验证本发明提供的特医食品(具体尺寸为3.2cmx1.5cmx7.8cm的一块)能够替代直接口服75g葡萄糖或直接食用馒头餐在糖耐量试验方面的应用,申请人做了如下试验,招募90名健康受试者,平分成三组,餐前均禁食12h,测试当日餐前,空腹抽前臂血,之后向三组受试者分别提供本发明的特医食品一块、75g葡萄糖及100g馒头,配合250mL温水,于12min内食用完,餐后2h±5min内对受试者进行静脉采血,并立刻送检,测得受试者餐前餐后血糖值。对数据进行统计分析,结果如下表所示:

上表中的数据表明,本发明提供的特医食品完全可用于代替75g葡萄糖和馒头餐来进行糖耐量试验。另外,申请人还招募了一些2型糖尿病患者的志愿者,使用本发明提供的特医食品进行糖耐量试验,未发现类似于口服葡萄糖后出现的恶心、呕吐以及血糖急骤升高等不良现象,表明本发明提供的物医食品是一种方便且安全性更好的糖耐量试验标准餐,具有较好的推广价值和市场前景。
以上所述仅为本发明的较佳实施例,并不用以限制本发明,凡在本发明的精神和原则之内,所作的任何修改、等同替换、改进等,均应包含在本发明的保护范围之内。

1.一种预防改善2型糖尿病的特医食品,其特征在于,包括以下重量份数的各原料:乳清蛋白粉8-11份;夏威夷果仁12-17份;核桃仁7-13份;麦芽糊精20-30份;蕃茄粉10-20份;紫薯粉7-17份;黄原胶4-8份;菊粉0.8-1.6份;魔芋精粉0.4-1.6份;果糖1.3-2.4份;葡萄籽提取物0.03-0.08份;橄榄果提取物0.05-0.09份;复合维生素0.01-0.08份;复合矿物质0.02-0.06份。
2.根据权利要求1所述的一种预防改善2型糖尿病的特医食品,其特征在于,所述复合维生素包括按照1-6:1-3:1的重量比例混合的维生素A、维生素D和维生素B12。
3.根据权利要求1所述的一种预防改善2型糖尿病的特医食品,其特征在于,所述复合矿物质包括按照1-3:1的重量比例混合的氯化铬和碘化钾。
4.根据权利要求1所述的一种预防改善2型糖尿病的特医食品,其特征在于,每份所述特医食品呈长条状且长宽高为3.2cmx1.5cmx7.8cm,每份所述特医食品的蛋白质供能8-15%,饱和脂肪酸供能小于10%,不饱和脂肪酸供能20%-32%,单不饱和脂肪酸供能>12%,碳水化合物供能50-65%,其中不饱和脂肪酸中Omega6/Omega3脂肪酸的质量比为2/1-4/1,每份所述特医食品的膳食纤维含量为5-7g。
5.一种如权利要求1至4任一项所述的预防改善2型糖尿病的特医食品的制备方法,其特征在于,包括如下步骤:
取相应重量份的夏威夷果仁和核桃仁一起在110-140℃下翻炒8-12min,冷却至室温后,破碎处理至粒径为8-10目的颗粒状原料A;将其余原料一起充分混合得粉状原料B;将原料A和原料B充分混合;然后在-15℃至-20℃的超低温下挤压成型,然后将温度调整至4-10℃,切片、杀菌并包装即得。
6.根据权利要求5所述的一种预防改善2型糖尿病的特医食品的制备方法,其特征在于,切片是指将成型且温度调整后的原料切成3.2cmx1.5cmx7.8cm的长条状。
7.根据权利要求5所述的一种预防改善2型糖尿病的特医食品的制备方法,其特征在于,杀菌采用紫外线灭菌处理或臭氧灭菌处理。
8.一种如权利要求1至4任一项所述的预防改善2型糖尿病的特医食品的应用,其特征在于,用作2型糖尿病患者的代餐食品。
