背景技术
DHA(docosahexaenoic acid,DHA),二十二碳六烯酸,俗称脑黄金,是一种对人体非常重要的不饱和脂肪酸。DHA是神经系统细胞生长及维持的一种主要成分,是大脑和视网膜的重要构成成分,在人体大脑皮层中含量高达20%,在眼睛视网膜中所占比例约50%,对胎婴儿智力和视力发育至关重要。DHA从存在形态上分为:甘油三酯型、甲酯型、乙酯型和卵磷脂型;从来源上分为:鱼油DHA、藻油DHA和蛋黄DHA。来源于鱼油、藻油的DHA为甘油三酯型、甲酯型和乙酯型,来源于蛋黄的DHA为卵磷脂型。
DHA作为一种必需脂肪酸,其增强记忆与思维能力、提高智力等作用更为显著。人群流行病学研究发现,体内DHA含量高的人的心理承受力较强、智力发育指数也高。孕期,DHA能优化胎儿大脑锥体细胞的磷脂的构成成分。尤其胎儿满5个月后,如人为地对胎儿的听觉、视觉、触觉进行刺激,会引起胎儿大脑皮层感觉中枢的神经元增长更多的树突,这就需要母体同时供给胎儿更多的DHA。
研究表明,DHA在自然界通常是以甘油三酯形态存在的。海洋鱼类,某些海藻或低等真菌是DHA的重要来源。以鱼油DHA为例,鱼体内含有的DHA是以甘油三酯形态存在,但含量较低,通常在5%~14%,含量偏低与人们日常摄取DHA的需求之间便出现了矛盾。基于上述问题,鱼油制品便应运而生,虽然鱼油制品在一定程度上解决了人们日常摄取DHA的问题,但是鱼油特有的腥味实际上无法全部脱净,在孕妇和婴儿食用时会因气味的不快而产生抵触。基于上述问题,人们探寻在日常食用的主食中添加DHA,如富含DHA的面条,人们通过在面条内添加DHA藻油,提高面条内的DHA含量,达到人们想要在日常进食中获取大量的DHA的目的,且口感较佳。但是现有的这种增加面条内DHA含量的方法,制作出来的面条中的DHA为乙酯型DHA,吸收率仅为20%,人们食用富含DHA面条时,实际DHA吸收量并不高。
发明内容
本发明意在提供一种富含DHA的鹌鹑蛋营养面条的制备工艺,以解决现有技术中DHA面条在食用时,实际DHA吸收率低的问题。
为达到上述目的,本发明的技术方案如下:一种富含DHA的鹌鹑蛋营养面条,包括如下质量份的原料,面粉65~75份,富含DHA的鹌鹑蛋10~15份,水5~12份,盐1~2份,食用碱0.03~0.05份,制备而成的面条中DHA含量大于0.4mg/100g。

步骤C:鹌鹑的喂养,将鱼油粉末、柴胡粉、党参粉、甘草粉及金钱草粉添加到鹌鹑饲料中,并分阶段在鹌鹑饲料中添加鱼肝油喂养鹌鹑使其产富含DHA的鹌鹑蛋;
步骤D:调粉,按照比例在面粉中添加鹌鹑蛋、食用盐和食用碱,加水后和面并放置30min;
步骤E:面条的制备,将调粉后的面团压延、成型、切割、烘干、切断后制成富含DHA的鹌鹑蛋营养面条;
步骤F:消毒包装。
本技术方案的原理及有益效果在于:本技术方案中,对鱼油进行了初步的精制,使其在添加到鹌鹑饲料中时,味道易于被鹌鹑接受。在鹌鹑饲料中加入精制鱼油后,鱼油进入鹌鹑体内,其在鹌鹑体内的代谢过程也起到生物脱腥的作用,实现对鱼油的进一步精制。经饲喂的鹌鹑产出的鹌鹑蛋中,由于鱼油在鹌鹑体内的代谢等作用,使得鹌鹑蛋中DHA含量升高。本技术方案在饲养鹌鹑的饲料中还添加了柴胡、党参、甘草及金钱草,在改善饲料营养成分的同时,还能够提高鹌鹑的抗病能力,保证鹌鹑的健康。利用鹌鹑蛋与面粉混合制备面条,一方面鹌鹑蛋中的蛋清能够赋予面条劲道爽滑的口感;另一方面鹌鹑蛋中富含的DHA会融入到面条内,使得制成的面条内富含DHA。由于本技术方案向面条中添加DHA的方式是通过添加鹌鹑蛋实现的,通过饲喂鹌鹑添加鱼油的饲料,使DHA在鹌鹑体内代谢过程中实现结构类型的转变,自然转变成易于消化的卵磷脂型DHA,卵磷脂型DHA在体内以主动吸收的方式被吸收,吸收率接近100%,相较于目前常见的乙酯型、甲酯型或者是甘油三酯型DHA以被动扩散的方式被吸收来说,吸收率提高了4~5倍。解决了解决现有技术中DHA面条在食用时,实际DHA吸收率低的问题。值得一提的是,本技术方案中添加的DHA是源于蛋黄的,属于生物DHA,不含任何的化学加工,因此能够做到绝对的无化学残留,无重金属污染,尤其是对于肝胆尚未发育健全且对安全性要求较高的儿童来说,具有更大的价值。
进一步,步骤A中,脱胶过程以80℃的热水按照1:2的体积比冲洗鱼油1~2次,除去鱼油中的水溶性胶质组分。
通过本技术方案对鱼油进行脱胶处理,可除去鱼油内的水溶性胶质组分,避免胶质杂质存在而使鱼油在后续脱酸过程中过度乳化,使油皂不能很好的分离。
进一步,步骤A中,脱酸过程按照体积比为1:2将15%的NaOH溶液倒入粗制鱼油中,加热至80℃后搅拌10min,离心除去皂化的游离脂肪酸。
通过本技术方案对鱼油进行脱酸,能够通过NaOH除去鱼油中的游离脂肪酸,避免游离脂肪酸影响鱼油的稳定性和风味,同时,还可以通过脱酸过程除去鱼油中的部分胶质和色素,一举两得。
进一步,步骤A中,脱臭过程采用绿茶浸提液和鱼油按照体积比为1:1混合后,在170~180℃、1.3~6.6hPa下通入水蒸气0.5~1h,弃水相。
粗制的鱼油内含有类脂等物质,具有挥发性。绿茶浸提液中的单宁类物质会与鱼油中的蛋白质、类脂类等物质在水相中发生反应,达到初步化学降解除臭的目的,通过高压水蒸气可带走挥发性臭味物质,达到进一步的物理除臭的目的,两者相结合,对鱼油除臭效果好。
进一步,步骤A中,脱色过程中,向脱臭后的鱼油中加入3%~5%的活性白土,搅拌后过滤。
活性白土具有较强的吸附作用,能够达到进一步脱色的目的,且操作方便。
进一步,步骤A中,冬化过程将鱼油降温至0℃,过滤除去固态析出物得精制鱼油。
冬化的目的在于利用温度的改变,使得鱼油中的固体与液体分开,进而实现固态物质分离精制的目的。
进一步,步骤B中,向精制鱼油中加入抗氧化剂、脱腥剂、乳化剂后,搅拌后进行喷雾干燥。
进一步,喷雾干燥的条件为,进口温度150~180℃,出口温度75~90℃。
在此条件下,能够使喷雾干燥的效果好。
进一步,步骤D中,在添加富含DHA的鹌鹑蛋之前,将富含DHA的鹌鹑蛋进行打散、过滤、均质、杀菌和喷雾干燥,制成富含DHA的鹌鹑蛋粉。
通过将富含DHA的鹌鹑蛋制备成富含DHA的鹌鹑蛋粉,既保留了鹌鹑蛋内的营养成分,又便于面条制备过程中面团的揉制。
具体实施方式
一、饲喂实验
在进行饲喂实验之前,要进行鱼油的精制和粉末化,具体操作如下:
步骤1:鱼油的脱胶,以80℃的热水按照1:2的体积比冲洗鱼油2次,除去鱼油中的水溶性胶质组分;避免胶质杂质存在而使鱼油在后续脱酸过程中过度乳化,使油皂不能很好的分离;
步骤2:鱼油的脱酸,按照体积比为1:2将15%的NaOH溶液倒入粗制鱼油中,加热至80℃后搅拌10min,离心除去皂化的游离脂肪酸,避免游离脂肪酸影响鱼油的稳定性和风味,同时,还可以通过脱酸过程除去鱼油中的部分胶质和色素;
步骤3:鱼油的脱臭,采用绿茶浸提液和鱼油按照体积比为1:1混合后,在170℃、5hPa下通入水蒸气1h,弃水相,绿茶浸提液中的单宁类物质会与鱼油中的蛋白质、类脂类等物质在水相中发生反应,达到初步化学降解除臭的目的,通过高压水蒸气可带走挥发性臭味物质,达到进一步的物理除臭的目的,两者相结合,对鱼油除臭效果好;
步骤4:鱼油的脱色,向脱臭后的鱼油中加入5%的活性白土,搅拌后过滤;
步骤5:鱼油的冬化,将步骤4中的鱼油降温至0℃,过滤除去固态析出物得精制鱼油;
步骤6:精制鱼油的粉末化,向精制鱼油中加入抗氧化剂、脱腥剂、乳化剂后,搅拌后进行喷雾干燥,得鱼油粉末,喷雾干燥的条件为,进口温度160℃,出口温度80℃。
将上述制备而成的鱼油粉末按照5%的体积比添加到鹌鹑饲料中,并搅拌均匀,由于鱼油粉末经过精制过程,其易于被鹌鹑接受并进食,此外将柴胡、党参、甘草及金钱草墨粉后等体积比混合制备成中药粉,将中药粉添加到鹌鹑饲料中,添加量为饲料体积的4%,并分阶段在鹌鹑饲料中添加鱼肝油,鱼肝油的具体添加量为:在首月添加,前10天鱼肝油的添加量为饲料体积的3%,11~20天鱼肝油的添加量为饲料体积的4%,21~30天鱼肝油的添加量为饲料体积的5%,喂养鹌鹑使其产富含DHA的鹌鹑蛋。
本次试验中随机选取雌性小鹌鹑,并分成五组,每组10只,且每组内配给2只健康的雄性小鹌鹑,进行饲喂试验,共计饲喂60天(鹌鹑60日龄开始产蛋),具体分组如下:
第一组的12只小鹌鹑饲喂未添加鱼油粉末的鹌鹑饲料,每天控制饲喂的饲料量为35g/只;
第二组的12只小鹌鹑饲喂添加鱼油粉末的鹌鹑饲料5天,5天后饲喂未添加鱼油粉末的鹌鹑饲料,每天控制饲喂的饲料量为35g/只;
第三组的12只小鹌鹑饲喂添加鱼油粉末的鹌鹑饲料12天,12天后饲喂未添加鱼油粉末的鹌鹑饲料,每天控制饲喂的饲料量为35g/只;
第四组的12只小鹌鹑饲喂添加鱼油粉末的鹌鹑饲料30天,30天后饲喂未添加鱼油粉末的鹌鹑饲料,每天控制饲喂的饲料量为35g/只;
第五组的12只小鹌鹑饲喂添加鱼油粉末的鹌鹑饲料60天,每天控制饲喂的饲料量为35g/只。
60天饲喂试验后,对各实验组鹌鹑蛋中的DHA含量进行检测,每组检测三个样本,每个样本设置三个平行试验,检测方法为气相色谱法,检测结果(平均值±标准差)如表1所示。饲喂添加鱼油粉末的鹌鹑产的鹌鹑蛋无论是蛋黄的质量还是鹌鹑蛋内DHA的含量都显著高于饲喂未添加鱼油粉末的鹌鹑产的鹌鹑蛋,且蛋黄质量及DHA含量与饲喂含鱼油粉末的饲料的天数呈正相关关系,选取第五组鹌鹑产的鹌鹑蛋为原料,进行进一步的面条制备。

二、富含DHA的鹌鹑蛋营养面条的制备
步骤a:鹌鹑蛋粉的制备,将富含DHA的鹌鹑蛋进行打散、过滤、均质、杀菌和喷雾干燥,制成富含DHA的鹌鹑蛋粉;
步骤b:调粉,取新疆奇台高筋面粉75份,鹌鹑蛋粉15份、食用盐1份、食用碱0.03份加入水12份后和面制成面团,将面团放置30min,在面粉的选择上,选择原生态无添加的面粉,能够进一步保证面条的安全性;
步骤c:将调粉后的面团压延、成型、湿面切割、烘干、切断后制成富含DHA的鹌鹑蛋营养面条;
步骤d:消毒包装。
对上述制备而成的鹌鹑蛋营养面条进行理化指标的检验,检验指标及结果如表2所示,本技术方案制备而成的鹌鹑蛋营养面条DHA含量达0.406mg/100g,且DHA种类为卵磷脂型DHA,其在体内以主动吸收的方式被吸收,吸收率接近100%,相较于目前常见的乙酯型、甲酯型或者是甘油三酯型DHA以被动扩散的方式被吸收来说,吸收率提高了4~5倍。解决了解决现有技术中DHA面条在食用时,实际DHA吸收率低的问题,本发明在研究中发现,对鹌鹑饲喂添加鱼油的鹌鹑饲料30天后,能够保证鹌鹑蛋中DHA含量及存在状态稳定。制备而成的面条中不仅DHA含量高,而且B族维生素及钙、铁、锌、磷等微量元素均能够满足儿童生长需求,营养全面均衡。

Claims (10)
1.一种富含DHA的鹌鹑蛋营养面条,其特征在于:包括如下质量份的原料,面粉65~75份,富含DHA的鹌鹑蛋10~15份,水5~12份,盐1~2份,食用碱0.03~0.05份,制备而成的面条中DHA含量大于0.4mg/100g。
2.根据权利要求1所述的一种富含DHA的鹌鹑蛋营养面条的制备工艺,其特征在于,包括如下步骤:
步骤A:鱼油的精制,将粗制鱼油经脱胶、脱酸、脱臭、脱色、冬化工艺制备成精制鱼油;
步骤B:精制鱼油的粉末化,将精制鱼油通过喷雾干燥制备成鱼油粉末;
步骤C:鹌鹑的喂养,将鱼油粉末、柴胡粉、党参粉、甘草粉及金钱草粉添加到鹌鹑饲料中,并分阶段在鹌鹑饲料中添加鱼肝油喂养鹌鹑使其产富含DHA的鹌鹑蛋;
步骤D:调粉,按照比例在面粉中添加鹌鹑蛋、食用盐和食用碱,加水后和面并放置30min;
步骤E:面条的制备,将调粉后的面团压延、成型、切割、烘干、切断后制成富含DHA的鹌鹑蛋营养面条;
步骤F:消毒包装。
3.根据权利要求2所述的一种富含DHA的鹌鹑蛋营养面条的制备工艺,其特征在于:步骤A中,脱胶过程以80℃的热水按照1:2的体积比冲洗鱼油1~2次,除去鱼油中的水溶性胶质组分。
4.根据权利要求3所述的一种富含DHA的鹌鹑蛋营养面条的制备工艺,其特征在于:步骤A中,脱酸过程按照体积比为1:2将15%的NaOH溶液倒入粗制鱼油中,加热至80℃后搅拌10min,离心除去皂化的游离脂肪酸。
5.根据权利要求4所述的一种富含DHA的鹌鹑蛋营养面条的制备工艺,其特征在于:步骤A中,脱臭过程采用绿茶浸提液和鱼油按照体积比为1:1混合后,在170~180℃、1.3~6.6hPa下通入水蒸气0.5~1h,弃水相。
6.根据权利要求5所述的一种富含DHA的鹌鹑蛋营养面条的制备工艺,其特征在于:步骤A中,脱色过程中,向脱臭后的鱼油中加入3%~5%的活性白土,搅拌后过滤。
7.根据权利要求6所述的一种富含DHA的鹌鹑蛋营养面条的制备工艺,其特征在于:步骤A中,冬化过程将鱼油降温至0℃,过滤除去固态析出物得精制鱼油。
8.根据权利要求7所述的一种富含DHA的鹌鹑蛋营养面条的制备工艺,其特征在于:步骤B中,向精制鱼油中加入抗氧化剂、脱腥剂、乳化剂后,搅拌后进行喷雾干燥。
9.根据权利要求8所述的一种富含DHA的鹌鹑蛋营养面条的制备工艺,其特征在于:喷雾干燥的条件为,进口温度150~180℃,出口温度75~90℃。
10.根据权利要求9所述的一种富含DHA的鹌鹑蛋营养面条的制备工艺,其特征在于:步骤D中,在添加富含DHA的鹌鹑蛋之前,将富含DHA的鹌鹑蛋进行打散、过滤、均质、杀菌和喷雾干燥,制成富含DHA的鹌鹑蛋粉。
