Abstract
本发明提供了一种含化颗粒及其制备方法和应用,属于含化颗粒加工技术领域。本发明的制备方法无需添加淀粉和黄精等辅料,只采用山梨糖醇和植物提取物水溶液进行沸腾雾化包衣制粒。本发明得到的含化颗粒溶解性极强,经过60℃水溶解测试只需要2s即可全部融化。人体测试将产品直接倒入口腔舌尖上只需要2~3秒即可全部溶化并分散。本发明的含化颗粒中活性物质保留较完整,健康功效也比较明显。
Description
技术领域
本发明涉及含化颗粒加工技术领域,尤其涉及一种含化颗粒及其制备方法和应用。
背景技术
目前市面上的食品含化颗粒主要采用湿法制粒,该方法需要添加许多糊精或淀粉等辅料,辅料添加量到一定比例后才能将物料揉成团并通过筛网挤出切段成粒,颗粒烘干后成型。由于辅料添加量至40~60%,其主要原料含量占比减少,加上辅料溶解性差,产品的口腔中溶化的速度较慢,5~20s才能溶化,这样口感和体验效果较差。
发明内容
本发明的目的在于提供一种含化颗粒及其制备方法和应用,该含化颗粒含化时间短。
为了实现上述发明目的,本发明提供以下技术方案:
本发明提供了一种含化颗粒,由包括以下质量份的原料制备获得:山梨糖醇40~80份和植物提取物水溶液20~60份;所述植物提取物水溶液中可溶性固形物的含量为50%~55%。
优选的,所述含化颗粒的粒径为0.5~1.5mm。
优选的,所述山梨糖醇的粒径为20~50目。
优选的,所述植物提取物水溶液的植物原料包括桔梗、桑叶、甘草、栀子、淡豆豉、莱菔子、决明子、白芷、玉竹、百合、大枣、西青果、鲜姜、紫苏叶、薄荷、藤茶、酸枣仁、山楂、枸杞、山药、肉桂、罗汉果、人参、西洋参、红参、短梗五加、金银花、菊花、桂花、玫瑰花、茉莉花、茶叶、蛹虫草、食用菌和黄精中的一种或几种。
优选的,所述含化颗粒还包括薄荷脑和/或表没食子儿茶素没食子酸酯。
本发明还提供了上述方案所述含化颗粒的制备方法,包括以下步骤:
将所述植物提取物水溶液雾化处理,雾化液喷于扬起的山梨糖醇表面进行包衣,干燥得到含化颗粒。
优选的,所述干燥的温度为40~60℃;所述干燥的时间为30~60min。
优选的,所述雾化液的细度为30~100μm。
优选的,所述山梨糖醇扬起的高度为50~150cm。
本发明还提供了上述方案所述含化颗粒在制备具有清咽润喉功效的食品或药品中的应用。
本发明的有益效果:本发明提供了一种含化颗粒及其制备方法和应用,本发明的制备方法无需添加淀粉糊精等辅料,只采用山梨糖醇和植物提取物水溶液进行沸腾雾化包衣制粒。本发明得到的含化颗粒溶解性极强,经过60℃水溶解测试只需要2s即可全部融化。体验测试将产品直接倒入口腔舌尖上只需要2~3秒即可全部溶化并分散。本发明的含化颗粒中活性物质保留较完整,健康功效也比较明显。
具体实施方式
本发明提供了一种含化颗粒,由包括以下质量份的原料制备获得:山梨糖醇40~80份和植物提取物水溶液20~60份;所述植物提取物水溶液中可溶性固形物的含量为50%~55%;所述含化颗粒的粒径优选为0.5~1.5mm,更优选为1mm。
本发明所述含化颗粒包括山梨糖醇40~80份,优选为50~70份,更优选为60份;所述山梨糖醇的粒径优选为20~50目,更优选为30~40目;本发明中,所述山梨糖醇的作用是加快溶解速度和改善口感。
本发明所述含化颗粒包括植物提取物水溶液20~60份,优选为30~50份,更优选为40份;所述植物提取物水溶液的植物原料优选的包括桔梗、桑叶、甘草、栀子、淡豆豉、莱菔子、决明子、白芷、玉竹、百合、大枣、西青果、鲜姜、紫苏叶、薄荷、藤茶、酸枣仁、山楂、枸杞、山药、肉桂、罗汉果、人参、西洋参、红参、薄荷、薄荷脑、EGCG(表没食子儿茶素没食子酸酯)、短梗五加、金银花、菊花、桂花、玫瑰花、茉莉花、茶叶、蛹虫草、食用菌和黄精中的一种或几种。本发明中,上述植物原料为药食同源的原料,作为功效成分。
本发明中,所述植物提取物水溶液优选的采用以下方法制备获得:将植物提取物速溶粉和水按1:1~1.2的质量比混合;或者将上述植物原料和水混合,经提取和浓缩获得;本发明对所述提取和浓缩的温度和时间没有特殊限制,采用本领域常规方法即可。
本发明中,所述含化颗粒优选的还包括薄荷脑和/或表没食子儿茶素没食子酸酯;所述薄荷脑占总物料的质量百分含量优选为1.0%~1.4%;所述表没食子儿茶素没食子酸酯占总物料的质量百分含量优选为0.5%~1.5%。本发明中,所述薄荷脑的作用是让口腔充满清凉感和达到清热降火的效果;所述表没食子儿茶素没食子酸酯的作用是消炎、杀菌、抗氧化。
本发明还提供了所述含化颗粒的制备方法,包括以下步骤:
将所述植物提取物水溶液雾化处理,雾化液喷于扬起的山梨糖醇表面进行包衣,干燥得到含化颗粒。
本发明中,所述雾化液的细度优选为30~100μm,更优选为50~80μm;所述雾化的设备优选为压力式雾化器;所述压力式雾化器的压力优选为0.2~0.3Mpa;所述部分山梨糖醇扬起的高度优选为50~150cm,更优选为80~120cm,最优选为100cm;所述包衣的温度优选为35~40℃,更优选为37℃;所述包衣的设备优选为流化床;该步骤中雾化的植物提取物水溶液均匀的粘附在山梨糖醇的表面,在温度和物料沸腾扬起的运动状态下,两种物料相互聚合形成球状颗粒。
本发明中,所述干燥的温度优选为40~60℃,更优选为50℃;所述干燥的时间优选为30~60min,更优选为40~50min。
当所述含化颗粒的原料中包括薄荷脑时,所述含化颗粒的制备方法优选的还包括:
1)将薄荷脑融化后和山梨糖醇混合,冷却得到薄荷脑颗粒;
2)将步骤1)所述薄荷脑颗粒和上述方案所述含化颗粒混合。
本发明将薄荷脑融化后和山梨糖醇混合,采用锥形混合机混合30~40min,随着时间的延长混合物料自然冷却至30℃以下即可得到薄荷脑颗粒;所述融化的温度优选为60~80℃,更优选为70℃;本发明对所述融化的时间没有特殊限制,以薄荷脑融化完全为准。
得到薄荷脑颗粒后,本发明将薄荷脑颗粒和上述方案所述含化颗粒混合20~30min,以混合均匀为准。
当所述含化颗粒的原料中还包括没食子儿茶素没食子酸酯时,所述没食子儿茶素没食子酸酯优选的先与植物提取物水溶液混合,得到的混合溶液雾化处理后喷于扬起的山梨糖醇表面进行包衣,干燥得到含化颗粒。
本发明中,所述混合的方式优选为搅拌混合;本发明对所述混合的温度和时间没有特殊限制,以混合均匀为准。
本发明中,所述含化颗粒优选的装入铝箔袋保存;每个铝箔袋装入的含化颗粒的质量优选为0.5~1.2g,更优选为0.6~1.0g,最优选为0.8g。
本发明还提供了上述方案所述含化颗粒在制备具有清咽润喉功效的食品或药品中的应用。
下面结合实施例对本发明提供的技术方案进行详细的说明,但是不能把它们理解为对本发明保护范围的限定。
实施例1一种含化颗粒食品的制备方法
1)取甘草15kg、金银花20kg、菊花20kg、罗汉果20kg、薄荷20kg,分别粉碎后混合均匀为195kg,按照重量计算加20倍的纯净水提取,提取温度90℃,提取时间为40min,然后采用离心机去渣,原液经过0.2μm的过滤器过滤后得到原液3700kg,固形物含量为Brix1.5,然后采用离心低温瞬时浓缩器进行浓缩,获得浓缩液78kg,固形物含量为Brix53.6,在浓缩液中加入EGCG(表没食子儿茶素没食子酸酯)2.4kg搅拌均匀,获得80.4kg浓缩液,固形物含量为Brix55作为制粒备用。
2)称取山梨糖醇17.7kg倒入流化床,鼓入经高效过滤器净化空气,使流化床锅底内的山梨糖醇被气流鼓风扬起,逐渐加热至温度65℃进入流化床,物料温度出常温逐渐升至36℃时,取之前备好的浓缩液3.64kg,开启蠕动泵将浓缩液泵入流化床侧部压力式雾化器,雾化器的压力调至0.25Mpa,浓缩液经雾化细度达到50~100μm,从流化床的侧面雾化喷向扬起的山梨糖醇物料中,使得雾化的浓缩液均匀的粘附在山梨糖醇的表面,在温度和物料沸腾扬起的运动状态下,两种物料相互聚合形成球状颗粒,所有提取液喷雾完毕后,转入干燥。干燥时风量可降低至20%,直到颗粒的含水量达到7%以下,符合固体饮料要求即可出锅。
3)取约2kg颗粒,将薄荷脑0.26kg采用水浴锅加热溶解,完全溶解后直接倒入2kg颗粒中进行搅拌混合,混合过程薄荷脑粘附在颗粒的表面,随着自然冷却并还原成固体颗粒时,再与之前的大料混合均匀得到成品料19.70kg,将成品料再过14目筛,然后采用复合铝箔袋按0.6克/袋进行包装即得到含化固体饮料产品。
实施例2一种含化颗粒食品的制备方法
1)取原料:黄精30kg、短梗五加15kg、人参5kg、枸杞50kg、蛹虫草20kg,分别粉碎至40目的颗粒或粉末状,混合均匀后合计120kg,按照重量计算加20倍的纯净水提取,提取温度95℃,提取时间为60min,然后采用离心机去渣,原液经过0.2μm的过滤器过滤后得到原液2260L,固形物含量为Brix2.1。然后采用离心低温瞬时浓缩器进行浓缩,获得浓缩液86kg,固形物含量为Brix55。
2)称取山梨糖醇30kg倒入流化床,鼓入经高效过滤器净化空气,使流化床锅底内的山梨糖醇被气流鼓风扬起,逐渐加热至温度65℃进入流化床,物料温度出常温逐渐升至36℃时,取之前备好的浓缩液20kg,开启蠕动泵将浓缩液泵入流化床侧部压力式雾化器,雾化器的压力调至0.25Mpa,浓缩液经雾化细度达到60~80μm,从流化床的侧面雾化喷向扬起的山梨糖醇物料中,使得雾化的浓缩液均匀的粘附在山梨糖醇的表面,在温度和物料沸腾扬起的运动状态下,两种物料相互聚合形成球状颗粒,所有提取液喷雾完毕后,转入干燥。干燥时风量可降低至之前的20%,直到颗粒的含水量达到7%以下,符合固体饮料要求即可出锅。自然冷却后得到成品39.70kg,将成品料再过14目筛,然后采用复合铝箔袋按0.6克/袋进行包装即得到含化固体饮料产品。
实施例3溶解分析
1.材料
板蓝根颗粒、实施例1制备得到的含化颗粒食品。
2.试验方法
采用市面销售的板蓝根颗粒作为对照,分别准备60℃温水100ml置200ml的烧杯,将备好的颗粒倒入水中搅拌溶解试验,观察完全溶解所需要的时间。试验结果参见表1。由表1可以看出本发明实施例1得到的含化颗粒溶解性极强,经过60℃水溶解测试只需要2s即可全部融化。

Claims (10)
1.一种含化颗粒,由包括以下质量份的原料制备获得:山梨糖醇40~80份和植物提取物水溶液20~60份;所述植物提取物水溶液中可溶性固形物的含量为50%~55%。
2.根据权利要求1所述的含化颗粒,其特征在于,所述含化颗粒的粒径为0.5~1.5mm。
3.根据权利要求1或2所述的含化颗粒,其特征在于,所述山梨糖醇的粒径为20~50目。
4.根据权利要求3所述的含化颗粒,其特征在于,所述植物提取物水溶液的植物原料包括桔梗、桑叶、甘草、栀子、淡豆豉、莱菔子、决明子、白芷、玉竹、百合、大枣、西青果、鲜姜、紫苏叶、薄荷、藤茶、酸枣仁、山楂、枸杞、山药、肉桂、罗汉果、人参、西洋参、红参、短梗五加、金银花、菊花、桂花、玫瑰花、茉莉花、茶叶、蛹虫草、食用菌和黄精中的一种或几种。
5.根据权利要求1所述的含化颗粒,其特征在于,所述含化颗粒还包括薄荷脑和/或表没食子儿茶素没食子酸酯。
6.权利要求1~5任意一项所述含化颗粒的制备方法,包括以下步骤:
将所述植物提取物水溶液雾化处理,雾化液喷于扬起的山梨糖醇表面进行包衣,干燥得到含化颗粒。
7.根据权利要求6所述的制备方法,其特征在于,所述干燥的温度为40~60℃;所述干燥的时间为30~60min。
8.根据权利要求6或7所述的制备方法,其特征在于,所述雾化液的细度为30~100μm。
9.根据权利要求8所述的制备方法,其特征在于,所述山梨糖醇扬起的高度为50~150cm。
10.权利要求1~5任意一项所述含化颗粒在制备具有清咽润喉功效的食品或药品中的应用。
