背景技术
粥是指在较多量的水中加入米或面,或在此基础上再加入其他食物或中药,煮至汤汁稠浓,水米义融的一类半流质食品。其中,以米为基础制成的粥又称稀饭;以面为基础制成的粥又称糊。中国人民自古就有食粥的习惯,仅据文离记载也有2000多年的历史,相传粥最早是由黄帝始创的。经过历代的饮食生活实践,粥的制作方法不断发展,种类也增加到上千种。
《随园食单》在谈到粥时曾指出"见水不见米,非粥也;见米不见水,非粥也。必使水米融洽,柔腻如一,而后谓之粥"。粥还包括了食疗药粥,集传统营养科学与烹饪科学于一体,对增进国民的健康发挥着更为重要的作用。它从"医食同源"、"药食同用"的观念出发,根据传统营养学的理论,以各种养生食疗食物为主,或适当佐以中药,并经过烹调加工而成的具有相应养生食疗效用的一类粥品。
粥的制作,一般有煮和焖两种方法。煮法即先用旺火煮至滚开,再改用小火煮至粥汤稠浓的方法。焖法是指用旺火加热至滚沸后,即倒入有盖的木桶内,盖紧桶盖,焖约2小时即成,具有香味较浓的特点。通常粥多采用煮法。粥在制作时,应注意水要一次加足,一气煮成,才能达到稠稀均匀、米水交融的特点。煮粥用的米既可先用清水浸泡5-6小时,然后下锅再煮,也可淘洗干净后直接下锅煮粥。先浸后煮,可缩短煮粥的时间,但浸泡易致养分损失。若配方中有不能直接食用的中药,则可先用中药煮取汤汁,再加入米或面煮粥,或先将中药研成粉末,再入粥与米同煮;若粥中的配料形体较大,应先进行刀工处理,再下锅煮粥,以使粥稠味浓。
粥多在早晨进食,以适应人体肠胃空虚的生理特点。正如北宋文人张耒在《粥记》中所说"每晨起,食粥线大碗,空腹胃虚,谷气便作,所补不细,又极柔腻,与肠胃相得,最为饮食之良"。不仅晨起宜食粥,苏东坡还提倡晚上进食白粥,认为它能推陈致新,利膈益胃,粥后一觉,尤妙不可言。粥在传统营养学上占有重要地位,它与汤食一样,具有制作简便、加减灵活、适应面广、易于消化吸收的特点,甚宜养生保健长期食用,被誉为"世间第一补人之物"。
粥的传统制作方法,比较费时费力,粥的材料和水的比例不好掌握,现实中人们熬粥不是水多了,就是米多了熬糊锅了;此外,传统粥的原料成分较少,营养成分和功效单一。

为此,本发明实施例第一方面提供一种五谷固体饮料,以解决现有技术中熬粥费时费力,比例不好掌握以及营养成分和功效单一的问题。
本发明实施例第二方面提供一种五谷固体饮料的制备方法,该制备方法能够制备得到即食方便、快速的五谷固体饮料,并能够充分保留各原料的营养成分和色、香、味、形等风味。
为了实现上述目的,本发明实施例提供如下技术方案:
根据本发明实施例的第一方面提供一种五谷固体饮料,所述五谷固体饮料由包括如下重量份原料制得:
赤小豆2-4g、黄豆2-4g、黑大豆2-4g、豌豆2-4g、绿豆2-4g、白扁豆2-4g、小米5-8g、燕麦5-8g、薏米2-4g、黑米3-6g、黑糯米3-6g、玉米1-3g、苦荞麦1-3g、糙米1-3g、大麦米1-3g、黑小麦1-3g、核桃仁3-6g、花生仁1-3g、南瓜籽仁1-3g、葵花籽仁1-3g、酸枣仁0.5-1g、黑芝麻3-6g、决明子1-3g、莲子1-3g、茯苓3-6g、红枣3-6g、枸杞2-4g、山楂1-3g、山药3-6g、百合1-3g、芡实1-3g、银耳1-2g、黑木耳1-2g、木瓜干1-3g、桑葚2-4g和黄精1-3g。
本发明按照中医理论合理搭配,以健脾养胃、补气补血、护肝益肾为目的,通过选用上述具有补中益气、和胃止泻、健脾补肺、补肝养血、补肾固精、强心补血、清热明目、美容润肤、温肺定喘、健脑益智和延年益寿的原料,并按照特定的重量份配比制备得到,能够使得制备得到的五谷固体饮料具有丰富的营养物质,并具有改善睡眠、缓解更年期综合征、降烦降噪、美容养颜以及增强体力等功效。

根据本发明实施例的第二方面提供一种上述五谷固体饮料的制备方法,所述制备方法包括如下步骤:
(a)将各原料分别进行熟制;
(b)将熟制后的各原料分别进行粉碎;
(c)将粉碎后的各原料混匀、装袋,即得所述五谷固体饮料。
本发明上述方法通过熟制以及粉碎,能够制备得到即食方便、快速的五谷固体饮料,并能够充分保留各原料的营养成分和色、香、味、形等风味,提高制备的五谷固体饮料的综合性能。
进一步地,所述熟制方式为低温烘焙或炒制;优选地,所述低温烘焙温度为120-130℃;更优选地,所述低温烘焙的加热方式为微波加热。
本发明通过采用微波加热能够在加热的同时进行杀菌,并能够更好的保留各原料中的微生素,此外,通过限定烘焙的温度,能够避免温度过高造成含淀粉类原料中产生丙烯酰胺,对人体造成伤害。
进一步地,所述粉碎后的粒径为100-120目。通过对粉碎后各原料粒径的限定,能够使制备得到的五谷固体饮料能够速溶并利于人体吸收各原料中营养成分。
进一步地,所述五谷固体饮料每袋25-30g。
本发明上述五谷固体饮料的服用方法如下:
按照质量体积比为0.8-0.13g/ml将五谷固体饮料置入60-100℃的水中,搅拌混匀即可。
本发明实施例具有如下优点:
(1)本发明按照中医理论合理搭配,以健脾养胃、补气补血、护肝益肾为目的,通过选用具有补中益气、和胃止泻、健脾补肺、补肝养血、补肾固精、强心补血、清热明目、美容润肤、温肺定喘、健脑益智和延年益寿的原料,并按照特定的重量份配比制备,能够使得制备得到的五谷固体饮料具有丰富的营养物质,并具有改善睡眠、缓解更年期综合征、降烦降噪、美容养颜以及增强体力等功效。
(2)本发明上述方法通过熟制以及粉碎,能够制备得到即食方便、快速的五谷固体饮料,并能够充分保留各原料的营养成分和色、香、味、形等风味,提高制备的五谷固体饮料的综合性能。

二、制备方法
上述五谷固体饮料的制备方法,该制备方法包括如下步骤:
(a)将各原料分别进行熟制,熟制具体为采用微波加热至120℃进行烘焙;
(b)将熟制后的各原料分别进行粉碎至100-120目;
(c)将粉碎后的各原料混匀,按照每袋25g进行装袋,即得五谷固体饮料。

二、制备方法
上述五谷固体饮料的制备方法,该制备方法包括如下步骤:
(a)将各原料分别进行熟制,熟制具体为采用微波加热至130℃进行烘焙;
(b)将熟制后的各原料分别进行粉碎至100-120目;

二、制备方法
上述五谷固体饮料的制备方法,该制备方法包括如下步骤:

二、制备方法
上述五谷固体饮料的制备方法,该制备方法包括如下步骤:
(a)将各原料分别进行熟制,熟制具体为采用微波加热至125℃进行烘焙;
(b)将熟制后的各原料分别进行粉碎至100-120目;
(c)将粉碎后的各原料混匀,按照每袋30g进行装袋,即得五谷固体饮料。
实验例1
选取实施例4制备得到的五谷固体饮料,送至河北冠卓检测科技股份有限公司进行营养成分检测,检测结果如表1所示:选取旗帜品牌的婴幼儿奶粉,其说明上记载了各营养成分含量,如表1所示:

由表1可知,本发明实施例制备得到的五谷固体饮料与现有婴幼儿奶粉相比,具有更高的的蛋白,以及较低的热量、脂肪和钠,属于低热量高蛋白低脂低钠食品,可见本发明五谷固体饮料营养更加丰富均衡。
实验例2
选取具有更年期综合征患者43例,年龄48-54岁,患者均具有体虚无力、腰膝酸软、失眠健忘、烦躁易怒、面色黯淡无光等症状;
将上述患者随机分为两组,第一组22人,第二组21人,其中第一组服用北京同仁堂生产的坤宝丸,按照说明书服用;第二组服用本发明实施例4制备得到的五谷固体饮料;每日早晚服用一次,每次服用30g,服用方法为冲服;持续服用1月;结束后分别确认患者各症状情况;
疗效判定标准:
显效:体虚无力、腰膝酸软、失眠、烦躁易怒症状消失,面色回复光色;
有效:体虚无力、腰膝酸软、失眠、烦躁易怒症状减轻,面色改善;
无效:体虚无力、腰膝酸软、失眠、烦躁易怒症无变化或加重,面色无变化或加重。
按照上述标准,统计各组患者治疗情况,统计结果如表2所示:

由表2可知,通过第一组和第二组相比,本发明制备的五谷固体饮料对更年期综合征治疗效果以及缓解症状效果显著,在短期服用时间内效果虽略差于坤宝丸,但本发明五谷固体饮料为一种即食食品,而且对人体无毒副作用,可长期服用,长期服用必然能更好的预防和缓解更年期综合症症状,持别是对中老年人浑身无力、腿软乏力有明显的增强体力作用。
虽然,上文中已经用一般性说明及具体实施例对本发明作了详尽的描述,但在本发明基础上,可以对之作一些修改或改进,这对本领域技术人员而言是显而易见的。因此,在不偏离本发明精神的基础上所做的这些修改或改进,均属于本发明要求保护的范围。

1.一种五谷固体饮料,其特征在于,由包括如下重量份原料制得:
赤小豆2-4g、黄豆2-4g、黑大豆2-4g、豌豆2-4g、绿豆2-4g、白扁豆2-4g、小米5-8g、燕麦5-8g、薏米2-4g、黑米3-6g、黑糯米3-6g、玉米1-3g、苦荞麦1-3g、糙米1-3g、大麦米1-3g、黑小麦1-3g、核桃仁3-6g、花生仁1-3g、南瓜籽仁1-3g、葵花籽仁1-3g、酸枣仁0.5-1g、黑芝麻3-6g、决明子1-3g、莲子1-3g、茯苓3-6g、红枣3-6g、枸杞2-4g、山楂1-3g、山药3-6g、百合1-3g、芡实1-3g、银耳1-2g、黑木耳1-2g、木瓜干1-3g、桑葚2-4g和黄精1-3g。
2.根据权利要求1所述的五谷固体饮料,其特征在于,由包括如下重量份原料制得:

4.权利要求1-3任一所述的五谷固体饮料的制备方法,其特征在于,包括如下步骤:
(a)将各原料分别进行熟制;
(b)将熟制后的各原料分别进行粉碎;
(c)将粉碎后的各原料混匀、装袋,即得所述五谷固体饮料。
5.根据权利要求4所述的制备方法,其特征在于,所述熟制方式为低温烘焙或炒制。
6.根据权利要求5所述的制备方法,其特征在于,所述低温烘焙温度为120-130℃。
7.根据权利要求5或6所述的制备方法,其特征在于,所述低温烘焙的加热方式为微波加热。
8.根据权利要求4所述的制备方法,其特征在于,所述粉碎后的粒径为100-120目。
9.根据权利要求4所述的制备方法,其特征在于,所述五谷固体饮料每袋25-30g。
