Abstract
本发明涉及一种桑叶叶蛋白乳特殊医学用途配方食品的制作方法,采取的是叶蛋白棕色液不分离技术,是将桑叶鲜品分离的叶草渣分别制成“添加叶草粉配合饲料”用于奶牛养殖,并将所得牛乳与提取的叶蛋白合并,制成叶蛋白乳特殊医学用途配方食品;并按剂量制得的叶蛋白乳特殊医学用途配方食品,定量灌装包装;每人每天按定量食用本品,即可达到保健的目的;本发明产业链无缝对接,有益于从农田到产品可追溯,有益于食品安全,有益于开发绿色出口食品,来扩大我国就业人群,增长我国人们收入。

1 .引《草产品加工技术》汪玺主编陈本健等编著——北京:金盾出版社,2002 .9第265页,第271页① .叶蛋白的另一个重要用途,是作为人类食品。叶蛋白被誉为当今世界上最好,最具有食用价值的保健品,正逐渐受到人们的普遍欢迎。
2.引《乳制品生产工艺与配方》郭本恒主编——北京,化学工业出版社,2007 .9第34—35页掺假掺杂检验:①掺水检验的一般方法和计算合格牛乳的冰点为-0 .508—0 .546℃,
若牛乳中掺入水,则牛乳的冰点会升高。一般认为,牛乳冰点为-0 .516—0 .546℃时是优质乳,-0 .5—0 .508℃时表明已掺入了少量水,而高于-0 .500℃或低于-0 .557℃时为不合格牛乳。② .掺碱掺假的检验被检牛乳中加入0 .05%玫瑰红酸5ml,呈玫瑰红为阳性乳,含碱物质。此法只能用于检出碱性物质较多的牛乳。③ .掺淀粉掺假的检验:取5ml牛乳稍稍煮沸,待冷却后加入数滴碘液,有蓝色或青蓝色沉淀者为阳性,表明其中加有淀粉(米汤)。④ .掺食盐掺假的检验与0 .01ml/L硝酸银溶液混合呈黄色的样品为阳性,表明牛乳掺有食盐。⑤ .掺豆浆、豆饼水的检出:与乙醚乙酸等比溶液和氢氧化钾溶液混均,黄色为掺杂牛乳。⑥ .掺尿素掺假的检验 9ml牛乳与1ml 1%亚硝酸钠,1ml浓硫酸混合放置5min,消泡后加0 .5g格林试剂,正常乳为紫色,含尿素为黄色。⑦ .掺蔗糖掺假的检出 3ml乳中加入浓硫酸2ml混均,加入1g固体间苯二酚,于酒精灯上煮沸,红色表示为蔗糖。⑧ .掺甲醛掺假的检出 3ml稀硫酸加入溴化钾结晶一小粒,沿管壁加牛乳1ml,很快出现紫色环带为阳性(表示含甲醛)。
3 .引《食品标准与法规》张建新等编——北京:中国轻工业出版社(全国高等学校食品质量与安全专业食用教材) 2006 .8 第90页据有关材料统计,从1999年8月到2000年1 月,我国共有643批出口食品,因不符合美国的技术法规遭到美国食品与药物管理局(FDA)的扣押,尤为严重的是从2003年初开始,我国的动物源性食品和水产品由于含有有害人体健康的抗生素和超标的农残而被欧盟全面禁止进口。传统出口拳头商品如冻禽肉,水产品和蜂蜜等均出现不符合标准问题,在重重的绿色壁垒面前纷纷被掀下马,另外茶叶、蔬菜、花生等食品也由于农残超标和达不到标准而在多国受阻。
4 .桑叶《中药大辞典》:【性味】甘、苦,寒。【归经】归肺、肝经。【功能主治】疏散风热,清肺润燥,清肝明目。用于风热感冒,肺热燥咳,头晕头痛,目赤昏花。【用法用量】5~15g。
5 .现有技术不足之处现有技术没有利用产业链无缝对接工艺——将桑叶制成叶蛋白乳制品,无益于提高人们营养水平。
发明内容
(一).发明的目的:本发明是根据国家绿色发展方向,提供一种银杏绿色叶蛋白乳特殊医学用途配方食品,是将叶蛋白加工技术与乳制品技术无缝对接合并利用,是为了开发更加科学营养的绿色全产业链出口食品,是为了扩大我国就业人群,提高我国人们收入,如说明书附图1 叶蛋白乳制品的生产工艺流程图。
(二)发明的技术方案
1 .为解决上述问题,本发明的技术方案包括如下步骤:原料选择,选择叶蛋白含量丰富的桑叶鲜品,用水清洗,要求无泥土、砂石、金属物质,去除不适宜生产食品的成份及危害健康的物质;第1次提取,将清洗干净的桑叶送入集粉碎、打浆、压榨为一体的多功能压榨机中,收集提取液,滤渣作第2次提取用,再经第2次提取,滤渣中加入2倍重的水做提取剂,再次送入多功能压榨机中,收集第2次提取液,滤渣作第3次提取用,再经第3次提取,滤渣中加入与上次同样多的水作提取剂,再次送入多功能压榨机中,收集第3次提取液;
将第1次,第2次,第3次提取液合并,送入高压均质机进行二级均质,均质温度55—80℃,均质压力10—25mpa,提取液控制在70—75℃,然后进行浓缩或干燥,得到桑叶叶蛋白浓缩液或叶蛋白粉;将分离的叶草渣送入牧草烘干机中,通过高温空气,使湿叶草渣迅速干燥成叶草粉,然后制成“添加叶草粉配合饲料”用于奶牛养殖,收集所得鲜牛乳,经酸度、相对浓度、细菌总数,检测合格后,先后经过双联过滤器过滤,牛乳净化机离心处理除杂后,根据脂肪含量进行标准化,冷却至4℃左右储存备用;将上述所得桑叶叶蛋白浓缩液或叶蛋白粉与所得牛乳合并,添加食品辅料,食品营养强化剂,食品添加剂,经均质、热处理、杀菌、冷却,制成液态或固态叶蛋白乳制品,分别并按10—30g桑叶鲜品所制成的叶蛋白乳制品定量灌装;
最后将所得厩肥用于绿色桑叶所属绿色植物的种植。
2 . 剂量是根据鲜品加倍的用药方法,即《中药大辞典》桑叶干品用量为5—15克,本发明鲜品用量为10—30g;并将每剂草本植物所制作的叶蛋白乳制品定量灌装包装。
3.去除“添加叶草粉配合饲料”中的苦、涩等异味,以确保奶牛适口性,人可以良药苦口,动物必须适口,① .采用添加0 .3%—0 .5%的β—环糊精包埋脱苦去涩。② .加入适量的糖浆与Nacl,因适量的甜味与适量的咸味可以矫正苦味。③ .加入维生素A、维生素C、维生素E中任何一种均可矫正苦味,涩味可用糖浆加琼脂矫正。④ .利用甜味剂、酸味剂、香精香料对苦涩等异味进行掩盖;以上方法也用于叶蛋白乳的脱苦去涩去异味,并将10—30g桑叶鲜品所分离的叶草渣,所制成的“添加叶草粉配合饲料”,所养殖的奶牛,所得牛乳,所制成的叶蛋白乳特殊医学用途配方食品定量灌装、包装。
4.液体叶蛋白乳特殊医学用途配方食品,是将上述所得叶蛋白浓缩液或叶白粉与所得
牛乳合并,加入可可、咖啡、果汁、蔗糖、食品营养强化剂,经加热、混合、搅拌、均质、杀菌、灌装生产的① .维生素强化叶蛋白乳;② .叶蛋白乳饮料;③ .低乳糖叶蛋白乳;④ .膳食纤维叶蛋白乳;⑤ .高钙叶蛋白乳。
5 . 桑叶叶蛋白酸乳饮料特殊医学用途配方食品,是将上述所得牛乳经乳酸菌发酵、灭菌,加入叶蛋白浓缩液,白砂糖,食品营养强化剂,食品添加剂,二次均质、灭菌、定量灌装。
6 . 桑叶叶蛋白乳粉特殊医学用途配方食品,是利用上述所得叶蛋白浓缩液或叶蛋白粉,所得牛乳为主要原料,添加或不添加食品辅料、食品营养强化剂、食品添加剂、经均质、预热、杀菌、浓缩、干燥、出粉、冷却、制成的粉末状叶蛋白乳特殊医学用途配方食品,并定量包装。
7 . 桑叶叶蛋白干酪特殊医学用途配方食品,是以上述所得牛乳,经均质、热处理、预发酵、添加氯化钙、凝乳及处理,加盐制成的干酪,再经清洗、切割、细分切割,加入上述所得叶蛋白浓缩液或叶蛋白粉、食品辅料、食品营养强化剂、食品添加剂,经混合、加热、熔化、制片、灭菌、定量灌装。
8 . 桑叶叶蛋白冰淇淋特殊医学用途配方食品,是利用上述所得叶蛋白浓缩液或叶蛋白粉,所得牛乳为主要原料,添加食品辅料,食品营养强化剂,食品添加剂,经混合、杀菌、均质、乳化、冷却、老化、凝冻、硬化、不同类型产品的成型,并按10—30g桑叶鲜品所制成的叶蛋白乳特殊医学用途配方食品定量包装。
9 . 桑叶叶蛋白牛乳泡腾片特殊医学用途配方食品,是以上述所得固态叶蛋白乳粉为主要原料,添加甜味剂、泡腾剂、持泡剂、崩解剂、食品营养强化剂、食品添加剂,经配料、制粒、混合、压片、定量包装。
(三)本发明有益效果
1 .本发明利用鲜桑叶鲜品与现有技术相比的有益效果:现有技术在桑叶的利用上,一般采用地面晒制青干草,资料显示青干草干物质,粗蛋白损失一般在20%—30%,胡萝卜素损失高达90%以上,本发明所用鲜品草本植物的维生素含量是现有技术自然干燥草本植物的2倍。
2 .本发明有益于提高我国人群营养水平① .中国人群维生素缺乏:中国营养学会于1997年对6—18岁青少年儿童做的营养调查显示,这个阶段的青少年儿童的视黄醇(维生素A)摄入量平均为386μg,占RDA的58%,城市为462μg,农村为362μg,分别占RDA的69 .8%和54.3%。
② .中国人群乳制品利用率很低目前中国每年人均饮奶量只有8 .8kg ,而世界人均饮奶量为100kg ,发达国家则为200kg,不发达也有42kg。
③ .叶蛋白的营养成分叶蛋白,也称维生素-蛋白质胶,含有极为丰富的营养成分,据测定结果表明,叶蛋白中蛋白质含量一般为45%—65%,氨基酸组成齐全且配比合理,含量十分丰富,其中赖氨酸和苏氨酸含量最高。叶蛋白的可消化率为62%—72%,能量代谢率为69%—90%,粗蛋白质省物价为73%—79%,每千克蛋白浓缩物(CPC)中,代谢能为11 .7—13.4兆焦,有效磷为0 .31%,胡萝卜素为500—1200毫克,叶黄素为1000—1800毫克,碳水化合物为5%—10%,矿质元素为3%—8%,高度不饱和脂肪酸为3%—7%,还含有脂溶性维生素E和维生素K等。
3 .本发明有益于食品安全和绿色发展本发明叶蛋白乳制品产业链无缝对接合并利用,有益于食品安全,有益于国内外各种所有制企业对我国中草药的开发,有益于开发绿色出口食品来扩大我国就业人群,增长我国人们收入。

(一). 桑叶叶蛋白的提取技术:
1 .将收割的草本植物鲜品及时加工处理,避免由于叶子本身的作用和微生物的污染,而引起叶蛋白的产量和品质下降。研究表明,在收割后每多放置一天,其叶蛋白提取率会随着放置天数的增加而下降,下降幅度为10%—40%,生产实践证明,从原料收割到制成叶蛋白的加工过程所用的时间越短,叶蛋白的产品率越高,其蛋白质、维生素等营养成分的含量也越高。
2 .粉碎、打浆和压榨:叶蛋白浓缩物属于功能性蛋白质,主要由细胞质蛋白和叶绿体蛋白组成。其中35%—45%为难溶性的结构蛋白,55%—65%为溶解性能良好的水解蛋白。因此必须破坏细胞结构,才能把蛋白质充分提取出来。打浆研磨时,不一定要研磨得特别细,过细反而不利于叶蛋白的生产。生产叶蛋白,采用集粉碎、打浆和压榨于一体多功能压榨机。需要打三遍,为了提取更多的叶蛋白以及药物有效成分,在打第二遍和第三遍浆时加入2倍于原料的水。然后通过压榨机,将打好的浆状物挤压出汁液,并滤出遗漏的杂质。
3. 桑叶叶蛋白的浓缩或干燥:
本发明采用的是叶蛋白棕色液不分离技术,利用二次均质将上述桑叶提取液中的悬浮微粒进一步破碎,减小粒度,保持均匀的浑浊状态,然后进行浓缩或干燥,得到叶蛋白浓缩液或叶蛋白粉。
4. 桑叶草渣(药渣)与奶牛养殖。分离出的叶草渣(药渣)含水量高,若不及时烘干成叶草粉,会产生霉变和有毒的亚硝酸盐。叶草渣(药渣)有苦味、涩味等异味,必须脱苦去涩处理。
5本发明将“添加叶草粉配合饲料”用于奶牛养殖,并将所得牛乳与所得叶蛋白浓缩液或叶蛋白粉合并,制成叶蛋白乳特殊医学用途配方食品。
6.叶蛋白乳制品对维生素强化的利用:① .对热敏性的维生素(如维生素B1),采用微膜过滤杀菌,生产线上在灌装段前安装无菌添加装置。②对热稳定的维生素(如维生素A),可直接投入到配料缸,然后进行均质,杀菌,灌装。
桑叶叶蛋白乳制品利用乳糖水解工艺:①37℃酶解曲线的制作:生鲜牛乳→85℃保持15s→冷却(37℃)→加乳糖酶(37℃)→搅拌→取样→均质(70℃,15mpa)→杀菌、灭酶(95℃,5min)→冷却至7℃→测葡萄糖。② .9℃酶解曲线的制作:生鲜牛乳→85℃保持15s→冷却(9℃)→加乳糖酶(9℃)→搅拌→取样均质(70℃,15mpa)→杀菌、灭酶(95℃,保持5min)→冷却至7℃→测葡萄糖。只需测定反应前后葡萄糖的变化,就可以求得乳糖的水解率。
7 . 桑叶叶蛋白乳特殊医学用途配方食品主要原料辅料:
主要原料①桑叶鲜品;② .所得蛋白浓缩液或叶蛋白粉;③ .所得牛乳。主要辅料,①.糖类—蔗糖,麦芽糖浆,淀糖浆,果葡糖浆、蜂蜜。②食盐。③ .常用食品添加剂——酸味剂、甜味剂、漂白剂、食品色素、硬化剂、防腐剂、杀菌剂、抗氧化剂、增稠剂、乳化剂、强化剂、泡腾剂、持泡剂、崩解剂、食用加工助剂、香精、香料等。④ . 本发明利用微生物对牛乳进行发酵,但不利用微生物对所得提取物叶蛋白进行发酵,因微生物发酵会改变药物的性能。
8 . 桑叶提取液与所得原料乳的净化:桑叶提取液与所得原料乳常混有一些普通过滤方法不能去除的杂质,如灰尘、乳房细胞等,需要利用离心式净乳机去除杂质。
9 . 桑叶提取液与所得牛乳的均质,均质温度55—80℃,均质压力10—25mpa。
10 . 桑叶叶蛋白乳特殊医学用途配方食品的预热和杀菌:① .杀菌条件为72—75℃保持15s ② .处理条件为130—150℃保持0 .5—4s。
11 . 桑叶提取液与所得提取液牛乳的浓缩:用浓缩锅或蒸发器加热使提取液、牛乳达到沸点,提取液牛乳中的水分不断由液态转变为气态,并将气化所产生的二次蒸汽不断移出,从而使牛乳浓度不断提高的过程。
12 . 桑叶叶蛋白粉、乳粉干燥技术:桑叶提取液与牛乳浓缩后含有50%—60%的水分,借机械力(高压或离心力)的作用,并通过雾化器使其在干燥室内分散成雾状细微的液滴(直径一般为10—100μm),从而增加其表面积。当浓缩液滴与干燥介质(热空气)接触时,即在瞬间(0 .01—0 .04s)进行强烈的热交换和质交换,使浓缩液中的绝大部分水被干燥介质不断带走而除去,大约经15—30s便可得到符合标准要求的叶蛋白粉,乳粉,叶蛋白乳粉。
13 .糖、酸、稳定剂、香精、色素
① .糖酸度调整:汁液的糖酸调整是为了改善制品的风味,使之更适合人们的口味。汁
液成品的糖酸以(13—18):1为好,调整时一般使用砂糖和柠檬酸。
② .溶糖:如果产品中没有稳定剂,最好专门配置一个溶糖缸,将糖溶于热水中,然后煮沸15—20min,再冷却过滤到牛乳中。
③ .稳定剂:如果产品中需要用白砂糖,可按稳定剂:白砂糖=1:(10—20)的比例进行干混,然后通过水粉混合器打入热的牛乳或水中。
④ .香精与色素:香精可分为液体香精和固体香精。液体香精在线添加到已经杀菌的牛乳中,不经过热处理这个步骤,这样能避免热处理引起的香味损失。固体香精较耐高温,可以与白砂糖和稳定剂等辅料混在一起加入牛乳中,也可以与一定的水或牛乳混合制成溶液,然后在线添加到已经杀菌的牛乳中。
14 .实施例工艺流程中的叶蛋白、原料乳
①.工艺流程中所述叶蛋白:是指桑叶鲜品叶蛋白。本发明是将每10—30g桑叶鲜品制作的叶蛋白乳特殊医学用途配方食品定量灌装包装,工艺流程中简略为“定量灌装包装”。
② .工艺流程中的原料乳:是指利用10—30g桑叶鲜品分离的叶草渣,所制成的“添加叶草粉配合饲料”养殖的奶牛,获得牛乳。
由所得牛乳与每剂10—30g桑叶鲜品所制成的叶蛋白合并,添加食品辅料、营养强化剂、食品添加剂,制成叶蛋白乳特殊医学用途配方食品,定量罐装包装,在工艺流程中简略为“定量包装”。
例1 :成年奶牛泌乳期饲料配方为:麸皮17% ,玉米粉10% ,高粱7% ,豆饼4 .5% ,贝壳粉1 .5%,玉米胚芽粕4%,豆腐渣15%,玉米青饲料32%,每10—30g桑叶草粉9%,β-环糊精0.5%。
例2:每10—30g桑叶鲜品蛋白乳饮料特殊医学配方食品的生产工艺流程:叶蛋白浓缩液原料乳→添加食品辅料,维生素矿物质等食品营养强化剂,食品添加剂→水→加热→加入糖、稳定剂(干混)→搅拌→香精色素→均质→杀菌→定量灌装。
例3:每10—30g桑叶鲜品叶蛋白膳食纤维乳特殊医学用途配方食品的生产工艺流程:
叶蛋白浓缩液、原料乳→添加食品辅料,维生素矿物质等食品营养强化剂,食品添加剂
→加热→稳定剂(干混)→搅拌→可溶性膳食纤维→香精色素→均质→杀菌→定量灌装。
例4:每10—30g桑叶鲜品叶蛋白高钙乳特殊医学用途配方食品的生产工艺流程:
叶蛋白浓缩液原料乳→添加食品辅料,维生素矿物质等食品营养强化剂,食品添加剂
→加热→稳定剂(水粉混合器)→搅拌→钙强化剂→香精色素→均质→杀菌→定量灌装
例5:每10—30g桑叶鲜品叶蛋白乳酸饮料特殊医学用途配方食品的工艺流程:
原料乳→乳酸→杀菌→冷却(20℃左右)→叶蛋白浓缩液→添加食品辅料,维生素矿物质等食品营养强化剂,食品添加剂→增稠剂安赛蜜(乳化机化胶)→白砂糖(溶糖)→混合搅拌(≤30℃)→柠檬酸、香精→均质(15mpa ,30-40℃)→冷却<15℃→搅拌10min→均质(20mpa,70—80℃)→灭菌→定量灌装操作要点:
① .原料酸乳在使用前应搅拌至均匀无凝块流体状,其发酵酸度≥90℃。然后杀菌,加入叶蛋白浓缩液。② .原料酸乳叶蛋白浓缩液与溶解后的糖和增稠剂混合液应充分混合均匀并冷却(≤30℃)后再添加柠檬酸、香精和营养强化剂;复合营养素应先用10倍温水(40—45℃)溶解后加入,水温切勿超过50℃,否则营养素易损失,柠檬酸也应先用10倍冷水溶解后边搅拌边缓慢加入。③ .添加柠檬酸计算方法,每吨成品如需增加100 °T,应添加柠檬酸7 .8kg。生产本产品应在酸乳叶蛋白浓缩液、稳定剂混合液混合均匀后,测定半成品酸度,然后按上述比例调整,总产品酸度控制在42—48 °T。

例7:每10—30g桑叶鲜品叶蛋白脱脂乳粉特殊医学用途配方食品的生产工艺流程:原料乳验收→过滤及净化→标准化→离心脱脂(脱脂后稀乳油另做他用)→叶蛋白浓缩液→添加食品辅料,维生素矿物质等食品营养强化剂,食品添加剂→预热至50—55℃→均质(3.5/16mpa)→杀菌(75℃,20s)→贮乳罐→真空浓缩→喷雾干燥→冷却→过筛→定量包装→抽真空充氮→密封→检验→装箱→检验→出厂。

例9:每10—30g桑叶鲜品叶蛋白婴儿配方乳粉特殊医学用途配方食品的生产工艺流程:原料乳验收→过滤及净化→标准化→全脂乳→叶蛋白浓缩液→预热至50—55℃→均质(3 .5/16mpa)→杀菌(75℃,20s)→脱盐乳精粉、复合维生素、矿物质、胆碱、牛磺酸、多种植物油(熔化)→搅拌→真空浓缩→喷雾干燥(加入卵磷脂和奶油)→冷却→干混合热敏性物料、蛋白粉、DHA、ARA→过筛→定量包装→抽真空充氮→密封→检验→装箱→检验→出厂。
例10:每10—30g桑叶鲜品叶蛋白成人配方乳粉特殊医学用途配方食品的生产工艺流程: 原料乳验收→过滤及净化→标准化→全脂化→叶蛋白浓缩液→预热至50—55℃→均质(3 .5/16mpa)→杀菌(75℃,20s)→脱盐乳精粉、复合维生素、矿物质、胆碱、牛磺酸、多种植物油(熔化)→搅拌→真空浓缩→喷雾干燥(加入卵磷脂和奶油)→冷却→过筛(干混合热敏性物料、蛋白粉、DHA、ARA)→定量包装→抽真空充氮→密封→检验→装箱→检验→出厂。
例11:每10—30g桑叶鲜品叶蛋白乳粉特殊医学用途配方食品的生产工艺流程:原料乳验收→过滤及净化→叶蛋白浓缩液→营养元素、添加剂(溶解)→混合均匀→均质(65—70℃,15—20mpa)→杀菌(85℃,16s)→不耐热活性物质、免疫活性保护、溶解并添加保护物质→浓缩→喷雾干燥(喷涂卵磷脂)→干混部分营养素→定量包装→检验→出厂。
例12:每10—30g桑叶鲜品叶蛋白降血脂乳粉特殊医学用途配方食品的生产工艺流程:
原料乳验收→过滤及净化→叶蛋白浓缩液、大豆分离蛋白、耐热活性DHA→混合→各种植物油混合→均质(65—70℃,15—20mpa)→杀菌(85℃,16s)→浓缩→喷雾干燥(喷涂卵磷脂)→干混部分DHA→定量包装→检验→出厂。
例13:每10—30g桑叶鲜品叶蛋白干酪特殊医学用途配方食品的生产工艺流程:原料乳→标准化→热处理→预成熟→凝乳→切割→热汤、搅拌→排乳清→质构化→切碎→加盐→装潢→压碎→成熟→成熟原料清洗→切割→细分切割→叶蛋白浓缩物→添加食品辅料,维生素矿物质等食品营养强化剂,食品添加剂→混合→加热熔化→制片→快速冷却→定量包装→外包装→成品。
① . 原料切割——切割为10cm×10cm的块状
② .细分切割——通过熔化锅或利用特定设备将原料切割为糜状
③ .加热熔化——将干酪混合物加热至80℃,同时进行适度的剪切处理,在此过程中剪切处理要尽可能温和。④ .制片、定量包装——熔化的再制干酪混合物进入独立片装包装机进行定量包装。⑤ .快速冷却——以0—4℃冰水迅速将成片的干酪温度降至10℃以上。
例14:每10—30g鲜品桑叶叶蛋白冰淇淋生产流程:
原料乳、叶蛋白浓缩液、白砂糖→添加食品辅料,维生素矿物质等食品营养强化剂,食品添加剂→混合→批量杀菌或连续杀菌→均质→冷却→老化→香精色素等→空气→连续凝冻或批量凝冻→坚果等固体配料→定量包装→硬化→包装/贮存。
例15:每10—30g桑叶鲜品叶蛋白牛乳泡腾片特殊医学用途配方食品的生产工艺流程:
原料乳、叶蛋白浓缩固体→添加甜味剂、泡腾剂、持泡剂、崩解剂、食品营养强化剂、食品添加剂→配料→制粒→混合→压片→定量包装。
① .碱液的作用机理与酸反应生成二氧化碳,使用方法一般是将PVP乙醇溶液与酸分开制粒,或取结晶状态的碱直接压片。酒石酸与碳酸氢钠为1:2 .5左右,柠檬酸与碳酸氢钠的比例为7:10,柠檬酸:碳酸氢钠:碳酸钠的比例为7:9:1 。
酸碱用量至少要占到整个片剂重量的一半以上,才能满足药典的崩解要求。制备时酸和碱一个制粒时加,一个外加,制粒用5%的PVP—乙醇,PVP内外各加一半。
碱源——有碳酸钠,碳酸氢钠,碳酸钾,碳酸氢钾,碳酸钙等。酸源——有柠檬酸,酒石酸,富马酸,己二酸,苹果酸等。
② .润滑剂对泡腾片的制备起着十分重要的作用
润滑剂:聚乙二醇4000或6000,十二烷基硫酸钠,十二烷基硫酸镁,L-亮氨酸,苯甲酸钠,油酸钠,氯化钠,醋酸钠,硼酸等。
用量:硼酸1%,苯甲酸钠5%,油酸钠5%,氯化钠5%,醋酸钠5%
③ .生产过程必须严格防止水分的吸收,颗粒与压片车间要控制空气的温度湿度,相对湿度控制在20%—25%,温度18—21%或15—25℃。
④ .在压片前,慢慢开动压片机,用大功率的红外线烘烤压片机转盘,压片机运转一段时间后,冲头发热,上下冲和中模温度升高,粘冲就不那么明显了。
⑤ .干燥时使水分降低至1%以下。
Claims (9)
1.一种桑叶叶蛋白特殊医学配方食品的制作方法:其特征在于将桑叶叶蛋白加工技术与乳制品加工技术无缝对接合并利用;制作方法包括如下步骤:原料选择,选择叶蛋白含量丰富的桑叶鲜品,用水清洗,要求无泥土、沙石、金属杂质,除去不适宜生产食品的成份及其它危害健康的物质;
第1次提取,将清洗干净的草本植物送入集粉碎、打浆、压榨为一体的多功能压榨机中,
收集提取液,滤渣作第2次提取用,再经第2次提取,滤渣中加入2倍重的水做提取剂,再次送入多功能压榨机中,收集第2次提取液,滤渣作第3次提取用,再经第3次提取,滤渣中加入与上次提取同样多的水作提取剂,再次送入多功能压榨机中,收集第3次提取液;
将第1次、第2次、第3次提取液合并,送入高压均质机中进行二级均质,均质温度55—80℃,均质压力10—25mpa,然后进行浓缩或干燥,得到桑叶叶蛋白浓缩液或叶蛋白粉;
将分离的草渣或叶渣送入牧草烘干机中,通过高温空气,使湿叶草渣迅速干燥成叶草粉,然后制成“添加叶草粉配合饲料”用于奶牛养殖,收集所得鲜牛乳,经酸度、相对浓度、细菌总数、检测合格后,先后经过滤,牛乳净化机离心处理杂质后,根据脂肪含量进行标准化、冷却至4℃左右储存备用;
将上述所得叶蛋白浓缩液或叶蛋白粉与所得牛乳合并,添加食品辅料、食品营养强化剂、食品添加剂,经均质、热处理、杀菌、冷却、制成液态或固态叶蛋白牛乳制品,并按每6—
30g鲜品所制成的叶蛋白乳制品定量灌装、包装;最后将所得厩肥用于桑叶所属绿色植物的种植。
2.按照权利要求1所述的一种绿色叶蛋白特殊医学配方食品的制作方法:其特征在于所用剂量是根据鲜品加倍的用药方法,即《中药大辞典》桑叶干品用量为5—15克, 本发明鲜品用量为10—30g;并将每剂桑叶所制作的叶蛋白乳特殊医学用途配方食品定量灌装包装。
3.按照权利要求1所述的一种桑叶叶蛋白特殊医学配方食品的制作方法,其特征是将分离的叶草渣制成“添加叶草粉配合饲料”,并去除饲料中的苦涩异味,① .利用添加 0.3—0 .5的β-环糊精包埋脱苦去涩,② .加入适量的糖浆与Nacl,因适量的甜味与适量的咸味可以矫正苦味,③ .加入维生素A、维生素C、维生素E中任何一种均可矫正饲料中苦味,涩味可用糖浆加琼脂矫正,④ .利用甜味剂、酸味剂、香精香料对苦涩异味进行掩盖;以上方法也用于叶蛋白乳的脱苦去涩去异味,并将每剂桑叶所分离的叶草渣,所制成的“添加叶草粉配合饲料”,所养殖的奶牛,所得牛乳,所制成的叶蛋白乳特殊医学用途配方食品定量灌装、包装。
4.按照权利要求1所述的一种桑叶叶蛋白特殊医学配方食品的制作方法,其特征在于将上述桑叶分别制成液态叶蛋白制品,是将上述所得叶蛋白浓缩液或叶蛋白粉与所得牛乳合并,加入可可、咖啡、果汁、蔗糖、食品营养强化剂、食品添加剂,经加热混合、搅拌、均质、杀菌、灌装制成的① .维生素强化叶蛋白乳,② .叶蛋白乳饮料,③ .低乳糖叶蛋白乳,④.膳食纤维叶蛋白乳,⑤ .高钙叶蛋白乳。
5.按照权利要求1所述的一种桑叶叶蛋白特殊医学配方食品的制作方法,其特征在于将上述桑叶分别制成叶蛋白乳酸饮料特殊医学用途配方食品,是将上述所得牛乳经乳酸菌发酵、灭菌,加入所得绿色叶蛋白浓缩液、白砂糖、食品营养强化剂、食品添加剂、再经二次均质、灭菌、定量灌装。
6.按照权利要求1所述的一种桑叶叶蛋白特殊医学配方食品的制作方法,其特征在于将上述桑叶分别制成叶蛋白乳粉,是利用上述所得叶蛋白浓缩液或叶蛋白粉,所得牛乳为主要原料,添加或不添加食品辅料,食品营养强化剂,食品添加剂,经均质、预热、杀菌、浓缩、干燥、出粉、冷却、制成的粉末状叶蛋白乳特殊医学用途配方食品,并定量包装。
7.按照权利要求1所述的一种桑叶叶蛋白特殊医学配方食品的制作方法,其特征在于将上述桑叶分别制成叶蛋白干酪特殊医学用途配方食品,是以上述所得牛乳经均质、热处理、预发酵,添加氯化钙,凝乳及处理,加盐制成的干酪,再经清洗、切割、细分切割,加入上述所得叶蛋白浓缩液或叶蛋白粉、食品辅料、食品营养强化剂、食品添加剂,经混合、加热熔化制片、灭菌、定量包装。
8.按照权利要求1所述的一种桑叶叶蛋白特殊医学配方食品的制作方法,其特征在于将上述桑叶分别制成叶蛋白冰淇淋特殊医学用途配方食品,是利用上述所得叶蛋白浓缩液或叶蛋白粉,所得牛乳为主要原料,添加食品辅料、食品营养强化剂、食品添加剂、经混合、杀菌、均质、乳化、冷却、老化、凝冻、硬化、不同类型产品的成型,定量包装。
9.按照权利要求1所述的一种桑叶叶蛋白特殊医学配方食品的制作方法,其特征在于将上述桑叶分别制成叶蛋白牛乳泡腾片特殊医学用途配方食品;是以上述所得固态叶蛋白乳粉为主要原料,添加甜味剂、泡腾剂、持泡剂、食品营养强化剂、食品添加剂,经调配、制粒、混合、压片、定量包装。
