Abstract
一种高蛋白代餐调理营养棒,按照重量份数,所述代餐营养棒包括:大豆分离蛋白膨化颗粒30‑50份、膨化谷物30‑50份、复合食用菌营养粉13‑15份、调理组合物粉剂8‑10份、复合果蔬粒8‑10份、燕麦片3‑5份、麦芽糖醇6‑8份、纳米钙粉0.5‑1.5份、柿子醋1‑2份、复合维生素0.5‑1.5份和磷脂1‑2份,其中,所述调理组合物粉剂由山茶果、山楂、山药、陈皮、莱菔子、石斛、干姜、蒲公英、鸡内金、薏米、黑米制备而成。本发明既具有补充营养物质又相应具有治疗效果,可以显著提高人体免疫力、改善胃肠功能,功效丰富,满足更多的人群需求。

技术领域
本发明涉及食品生产技术领域,具体为一种高蛋白代餐调理营养棒及其制备方法。
背景技术
营养棒是指利用一定的可食用性食材,以无毒的配合方式加工到一定的结构中,通过特定的加工方式做出的食物集合体,并通过各种食材的共同作用达到一定的效果,比如代替普通食材,或着可以使人体摄入较少的脂类物质等。人在健身运动后感到肌肉、关节酸胀和精神疲乏,其主要原因是体内的糖、脂肪、蛋白质被大量分解,在分解过程中产生乳酸、磷酸等酸性物质,这些酸性物质刺激人体组织器官,使人感到肌肉、关节酸胀和精神疲乏,如果此刻不进行糖类和蛋白类的摄入与获取,尤其是功能性蛋白的摄入,身体就会分解人体蛋白,而蛋白质是人体最为重要的成分之一,这样就有可能对人体造成损伤。目前市面上的代餐营养棒功效单一,仅能够提供人体运动后必须的糖类、蛋白质等主要营养,无法满足人体的其他需求。为此,需要研发一种能够满足人体机体多种需求的营养棒,诸如具有补钙、调理肠胃功效的营养棒。
发明内容
为了解决上述问题,本发明的目的是提出一种高蛋白代餐调理营养棒,以及一种高蛋白代餐调理营养棒的制备方法。
本发明为了解决上述问题所采取的技术方案为:一种高蛋白代餐调理营养棒,按照重量份数,所述代餐营养棒包括:大豆分离蛋白膨化颗粒30-50份、膨化谷物30-50份、复合食用菌营养粉13-15份、调理组合物粉剂8-10份、复合果蔬粒8-10份、燕麦片3-5份、麦芽糖醇6-8份、纳米钙粉0.5-1.5份、柿子醋1-2份、复合维生素0.5-1.5份和磷脂1-2份,其中,所述调理组合物粉剂由山茶果、山楂、山药、陈皮、莱菔子、石斛、干姜、蒲公英、鸡内金、薏米、黑米制备而成。
本发明中,按照重量份数:所述代餐营养棒中还含有3-5份坚固碎。
本发明中,调理组合物粉剂的制备方法如下:将山茶果、山楂、山药、陈皮、莱菔子、石斛、干姜、蒲公英、鸡内金、薏米、黑米依次充分粉碎后,按照2:1:1:2:1:1:1:2:1:1:2的重量比均匀混合,然后再添加占混合粉剂总量1%-2%的天然蜂蜜,搅拌均匀,即得调理组合物粉剂。
本发明中,所述的膨化谷物为膨化大米、膨化燕麦、膨化玉米、膨化黑米的其中一种或多种。
本发明中,所述复合果蔬粒为苹果、草莓、香蕉或蓝莓中的任意一种与胡萝卜、西兰花、菠菜或苋菜中的任意一种或多种按照1:1的重量比混合制得。
本发明中,所述复合食用菌营养粉的制备方法如下:首先,将食用菌清洗、熟制,真空干燥,粉碎,过300目筛,得到食用菌粉;其次,将食用菌粉与鲜牛奶按照3:2的重量比混合,均质,喷雾干燥,粉碎,过200目筛;最后加入占总量5%的经过烘焙的糙米粉、2%的花生粉和2%的芝麻粉,混合均匀后即得。
本发明中,所述复合食用菌营养粉中的食用菌原料选用平菇、黑木 耳、银耳、香菇、姬松茸、金针菇、鸡腿菇、猴头菇、草菇、茶树菇、杏鲍菇、灵芝、灰树花、双孢 菇、牛肝菌、羊肚菌、花菇、老人头菇、真姬菇、桑黄菇中的任意一种或任意两种以上的组合。
一种低糖高蛋白代餐营养棒的制备方法,包括以下步骤:
步骤一、制备混合物料,取大豆分离蛋白膨化颗粒、膨化谷物、复合食用菌营养粉、调理组合物粉剂、复合果蔬粒、燕麦片、膳食纤维麦芽糖醇、纳米钙粉、柿子醋、复合维生素和磷脂并用三维混合机进行混合,混匀后备用;
步骤二、成型,将步骤一所得混合料经过模具压制成型制成棒状结构;
步骤三、烘烤,将压制成型的能量棒,放入烤箱中烘烤,烤箱的上火温度为160℃(±5℃),下火温度为125℃(±5℃),烘烤25min;
步骤四、包装,将步骤三中烘烤后的营养棒冷却后真空包装即得成品。

本发明所述的一种高蛋白代餐调理营养棒,一方面,该营养棒适用于运动后人群、减肥人群以及户外活动人群,为人体提供所需的营养需求总值以及各种营养配比,不仅能够及时为人体提供充足能量的糖分,而且还能补充人体所需的蛋白质,消除机体疲劳、恢复体力;另一方面,在营养棒中添加的纳米钙粉能够补充运动后钙的流失,麦芽糖醇作为甜味剂能够代替糖类,能够满足糖尿病人等人群的食用需要,复合食用菌营养粉营养丰富,口感细腻滑爽,易于人体消化吸收,且调理组合物选择山茶果、山楂、山药、陈皮、莱菔子、石斛、干姜、蒲公英、鸡内金、薏米、黑米,共凑解毒消痈、润肠通便、健脾和胃功效,其加入到营养棒中,能够使营养棒形成一种既具有补充营养物质又相应具有治疗效果,可以显著提高人体免疫力、改善胃肠功能的功能性营养食品,丰富营养棒的功效,适应更多的人群需求。

进一步的,调理组合物粉剂的制备方法如下:将山茶果、山楂、山药、陈皮、莱菔子、石斛、干姜、蒲公英、鸡内金、薏米、黑米依次充分粉碎后,按照2:1:1:2:1:1:1:2:1:1:2的重量比均匀混合,然后再添加占混合粉剂总量1.5%的天然蜂蜜,搅拌均匀,即得调理组合物粉剂。
