背景技术
生活中常常有许多因为各种原因而使身体不健康的案例,或许是因为熬夜,或许是因为抽烟喝酒,或许是因为暴食或者节食,而种种原因,都有可能会导致身体释放能量和排泄能量的不平衡,最终导致肥胖。
肥胖不仅影响美丽,而且对人民的身体有着各种各样的损害,会使患病程度大幅度提升,危害身体健康;从国家角度来看,中国的医疗水平并不足以支撑肥胖带来的问题,每年都要为肥胖患者消耗大量的医疗资源,这无疑对国家是不利的。
代餐粉是一种用来代替正餐的食品,以谷类、豆类、薯类食材等为主,其它属类植物的根、茎、果实等可食用部分为辅制成的种单一或综合性冲调粉剂产品,集营养均衡、效果显著、食用方便等优点于一身。以往的代餐粉存在较为单一的问题,不能满足人一天所需的营养需求,不能长期食用。本代餐粉在保证营养均衡和味道感官良好的前提下,不仅食后具有饱腹感,还有减脂排毒、减弱便秘的功效,且适用于各种人群。
发明内容
本发明的目地在于克服以往的代餐粉存在较为单一,不能满足人一天所需的营养需求的问题,本代餐粉提供在保证营养均衡的前提下,合理搭配各种原料,特加入了当前倍受关注的“魔力食品”魔芋精粉,不仅食后具有饱腹感,还有减脂排毒、减弱便秘的功效,适用于各种人群。
为实现上述目地,本发明提供的技术方案为:该代餐粉是由以下重量份计的物质组成:苦荞叶粉3-5份、荷叶粉3-5份、红小豆粉5-10份、熟化薏米粉10-20份、魔芋精粉2-3份、紫薯全粉40-60份、麦芽糊精1-2份、脱脂奶粉10-20份、芦荟粉3-5份、维生素包1-2份、香料0.5-2份。
本发明的优势是:
1、特加入当前倍受关注的“魔力食品”魔芋精粉,魔芋精粉又称魔芋粉或魔芋甘露聚糖,含淀粉35%,蛋白质3%,以及多种维生素和钾、磷、硒等矿物质元素,还含有人类所需要的魔芋多糖,即葡甘露聚糖高达30%。纤维素能促进胃肠蠕动,润肠通便,防止便秘和减少肠对脂肪的吸收,有利于肠道病症的治疗。魔芋是低热食品,其葡萄甘露聚糖吸水膨胀,可增大至原体积的30~100倍,因而食后有饱腹感,是理想的减肥食品;
2、脱脂奶粉的营养成分含量为蛋白质36%,脂肪1%,碳水化合物52%,每百克含钙1300毫克,磷1030毫克,铁0.6毫克,维生素A(国际单位)40,硫胺素0、35毫克,核黄素1.96毫克,尼克酸1.1毫克,抗坏血酸微量。蛋白质不低于非脂乳固体的34%,脂肪不高于2.0%的粉末状产品,适宜肥胖而又需要补充营养的人饮用,

加糖量应在15~20%,尤以15%左右为宜,而且蔗糖应符合国家特级品要求,
加糖方法及其杀菌:(1)预热时加糖;(2)包装前添加蔗糖细粉;(3)制成65%糖浆杀菌以后加入奶中;(4)预热时加一部分,装前再加一部分,
3)、真空浓缩
概念:杀菌以后的牛乳很快送入真空蒸发器,在8~21KPA减压的情况下采用间接蒸汽加热方式,使牛奶在低温情况下(60℃左右)沸腾,使牛奶中70%左右的水分不断汽化并排出,除去牛乳中约70~ 80%的水分,这就是真空浓缩,
条件:(1)维持牛奶沸腾要不断供给热量,奶子进入蒸发器,温度65℃。(2)迅速排除牛乳水分汽化形成的二次蒸汽,
目的:(1)真空浓缩蒸发效率高节省能源,浓缩后节省蒸汽,仅用1~1.5kg,不浓缩蒸发1kg水,需蒸汽3~4kg;(2)牛奶沸点降低,对牛乳的一些热敏性物质(乳清蛋白、维生素)不受明显破坏。3、牛奶经过浓缩以后所得奶粉颗粒致密、结实,较大排出氧气。则冲调性(溶解度)好,排除氧气降低脂肪氧化,提高保存性。(4)真空浓缩后使牛乳处于密闭状态避免外界污染,保证成品卫生质量。浓缩到原乳体积1/4,浓缩后仍具有一定流动性,蛋白质不应变性,符合微生物指标。(5)真空浓缩对奶粉颗粒的物理性状有明显影响,经浓缩后,喷雾干躁所得奶粉颗粒大有良好分散性和冲调性,
4、喷雾干燥
概念:浓缩乳在高压高速心力的作用下,通过喷雾器向干躁喷成雾状形成无数微细乳滴,使其表面积增大与同时进入的热蒸汽接触,促使水分迅速蒸发,使浓缩乳干躁成奶粉,
目的:(1)干燥速度快,受热时间短。营养成分破坏程度小,奶粉质量好;(2)干燥过程温度低,奶粉质量好。乳滴表面受热温度60℃;(3)可以调节工艺参数,控制成品质量;(4)卫生质量好,整个产品不易受到污染,一般要求在密闭状态下生产,
5、出粉、冷却、过筛、贮粉。
五、包装
将调配好的产品真空包装后杀菌即得一种具有减脂排毒解除便秘效果的代餐粉成品。
Claims (10)
1.一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:包括以下重量份计的物质组成 :苦荞叶粉3-5份、荷叶粉3-5份、红小豆粉5-10份、熟化薏米粉10-20份、魔芋精粉2-3份、紫薯全粉40-60份、麦芽糊精1-2份、脱脂奶粉10-20份、芦荟粉3-5份、维生素包1-2份、香料0.5-2份,本代餐粉在保证营养均衡和味道感官良好的前提下,不仅食后具有饱腹感,还有减脂排毒、减弱便秘的功效,且适用于各种人群。
2.根据权利要求1所述的一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:苦荞中含有大量黄酮类化合物,研究表明,摄入富含黄酮类化合物的苦荞叶及其醇提取物,可以降低动脉粥样硬化的风险,摄入苦荞全叶组较摄入苦荞叶醇提取物组效果更好,大量的纤维可以促进脂质的排出。
3.根据权利要求1所述的一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:荷叶具有清解暑热、升发清阳、凉血止血的作用,临床将其广泛用于肥胖症及高脂血症,并取得了较好疗效,荷叶在食用及药用两个方面均有较广泛的应用,荷叶总生物碱类物质具有较明显的降脂减肥作用。
4.根据权利要求1所述的一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:红小豆也有去湿健脾的功效,预防便秘,红小豆中含有多量对于治疗便秘的纤维,润肠通便、降血压、降血脂、调节血糖、解毒抗癌、预防结石、健美减肥的作用。
5.根据权利要求1所述的一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:薏仁米可用作粮食吃,味道和大米相似,且易消化吸收,煮粥、作汤均可,由于薏米营养丰富,对于久病体虚、病后恢复期患者,老人、产妇、儿童都是比较好的药用食物,可经常服用,不论用于滋补还是用于治病,作用都较为缓和,微寒而不伤胃,益脾而不滋腻。
6.根据权利要求1所述的一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:魔芋所含的黏液蛋白能减少体内胆固醇的积累,预防动脉硬化和防治心脑血管疾病,吃魔芋能提高机体免疫力,所含的甘露糖酐对癌细胞代谢有干扰作用,所含的优良膳食纤维能刺激机体产生一种杀灭癌细胞的物质,能够防治癌瘤,纤维素能促进胃肠蠕动,润肠通便,防止便秘和减少肠对脂肪的吸收,有利于肠道病症的治疗,魔芋是低热食品,其葡萄甘露聚糖吸水膨胀,可增大至原体积的30~100倍,因而食后有饱腹感,是理想的减肥食品,魔芋能延缓葡萄糖的吸收,有效地降低餐后血糖,从而减轻胰脏的负担,使糖尿病患者的糖代谢处于良性循环,不会像某些降糖药物那样使血糖骤然下降而出现低血糖现象,另外,魔芋还具有补钙、平衡盐分、洁胃、整肠、排毒等作用。
7.根据权利要求1所述的一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:紫薯富含蛋白质、淀粉、果胶、纤维素、氨基酸、维生素及多种矿物质,还富含铁、硒元素和花青素,紫薯营养丰富具特殊保健功能,其中的蛋白质氨基酸都是极易被人体消化和吸收的,其中富含的维生素A可以改善视力和皮肤的粘膜上皮细胞,维生素C可使胶元蛋白正常合成,防治坏血病的发生,花青素是天然强效自由基清除剂。
8.根据权利要求1所述的一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:麦芽糊精感官良好,体系均一,摄入后能够维持饱腹感,持续而缓慢提供能量的食品,麦芽糊精作为一种广泛应用的食品原料,具有流动性好,溶解性高等优点,易于消化。
9.根据权利要求1所述的一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:脱脂奶粉,仅以乳为原料,添加或不添加食品营养强化剂,经脱脂、浓缩、干燥制成的,蛋白质不低于非脂乳固体的34%,脂肪不高于2.0%的粉末状产品,适宜肥胖而又需要补充营养的人饮用。
10.根据权利要求1所述的一种具有减脂排毒解除便秘效果的代餐粉,其特征在于:所述调味剂可以改善食品的感官性质,使食品更加美味可口,并能促进消化液的分泌和增进食欲的食品添加剂,食品中加入一定的调味剂,不仅可以改善食品的感观性,使食品更加可口,而且有些调味剂还具有一定的营养价值。
