本发明涉及一种酵素的制备工艺,取水果作为原料,消毒处理后,在洁净条件下切碎,混合均匀然后加入白糖,常温下发酵20‑40天,过滤,得到酵素原液;将酵素原液接种枯草杆菌和乳酸菌,发酵30‑60天后,得到酵素;所述水果选自芒果、苹果、猕猴桃、梨、葡萄、草莓、木瓜、橙子、柠檬、番石榴、山楂、桑葚中的一种或两种以上任意比例的混合物。本发明的制备方法发酵时间短,生产效率高,制得的酵素活性成分高,可以增强人们的抵抗能力,起到养生保健的作用,特别适用于体弱多病者。

技术领域
本发明涉及一种酵素的制备工艺。
背景技术
酵素又称为酶,是一种比细胞单位更小的一种蛋白质,是一种生物催化剂,它承担人体内新陈代谢中各种化学反应,能增加组织各种生化反应(氧化、还原、分解、合成、转化)的速率,人体内凡是细胞的代谢,新生,分解,消化,合成等,都依靠酵素来完成,所以酵素又被称之为“生命之泉”。伴随着人们年龄的增长,人们体内的酵素会日益减少,由于现代社会竞争激烈,生活节奏加快,环境污染日益严重,酵素的活性也在下降,代谢功能也在不断衰退。酵素的减少及活性的下降,会导致各种症状的出现,由于酵素作用的单一性,要预防和治疗这些疾病,我们必须从膳食中摄取更多的酵素,然而酵素是非常脆弱的,在高温烹饪(60℃以上就完全失去活性)、加工过程中就会失去活性,造成人们从食物中摄取的酵素很低,无法满足人们的正常需要。
现有技术的酵素一般都是用各种杂果混合自然发酵而成,发酵过程容易染菌,且所需要的发酵时间长,得到的酵素产品中,活性成分低。
发明内容
本发明的目的是解决现有技术的不足,提供一种酵素的制备工艺。
本发明采用的技术方案是:
一种酵素的制备工艺:取水果作为原料,消毒处理后,在洁净条件下切碎,混合均匀然后加入白糖,常温下发酵20-40天,过滤,得到酵素原液;将酵素原液接种枯草杆菌和乳酸菌,发酵30-60天后,得到酵素;所述水果选自芒果、苹果、猕猴桃、梨、葡萄、草莓、木瓜、橙子、柠檬、番石榴、山楂、桑葚中的一种或两种以上任意比例的混合物。
优选地,所述枯草杆菌和乳酸菌的接种量为3-7%。
优选地,所述原料水果与白糖的重量比为1:0.6-1。
有益效果:本发明的制备方法发酵时间短,生产效率高,制得的植物酵素活性成分高,可以增强人们的抵抗能力,起到养生保健的作用,特别适用于体弱多病者。
具体实施方式
下面结合实施例对本发明作进一步说明。
实施例1
取芒果、苹果、猕猴桃、梨、葡萄、草莓、木瓜、橙子各500g作为原料,消毒处理后在洁净条件下切碎,混合均匀,加入白糖,原料水果与白糖重量比为1:0.8,常温下发酵25天,过滤,得到酵素原液;将酵素原液接种枯草杆菌和乳酸菌,接种量均为4%,发酵35天,即得。
实施例2
取猕猴桃、梨、葡萄、草莓、木瓜、橙子、柠檬、番石榴、山楂、桑葚各500g作为原料,消毒处理后在洁净条件下切碎,混合均匀,加入白糖,原料水果与白糖重量比为1:0.9,常温下发酵35天,过滤,得到酵素原液;将酵素原液接种枯草杆菌和乳酸菌,接种量均为6%,发酵40天,即得。

1.一种酵素的制备工艺,其特征在于,取水果作为原料,消毒处理后,在洁净条件下切碎,混合均匀然后加入白糖,常温下发酵20-40天,过滤,得到酵素原液;将酵素原液接种枯草杆菌和乳酸菌,发酵30-60天后,得到酵素;所述水果选自芒果、苹果、猕猴桃、梨、葡萄、草莓、木瓜、橙子、柠檬、番石榴、山楂、桑葚中的一种或两种以上任意比例的混合物。
2.如权利要求1所述的酵素的制备工艺,其特征在于,所述枯草杆菌和乳酸菌的接种量为3-7%。
3.如权利要求1所述的酵素的制备工艺,其特征在于,所述原料水果与白糖的重量比为1:0.6-1。
