本发明属于保健品技术领域,尤其涉及一种全营养发酵养生食品及其制备方法。
背景技术
我国传统养生食品的加工方法多为蒸、熬、煎、烘、烤、成糕、粉、粥、汤等,是中华五千年养生文化的重要组成部分。但随着营养学者的研究发现,我国传统的高温加工方法,会破坏和损失食物本身含有的营养元素,如:多种酶、维生素E100%、维生素B1 90%、维生素B261%、维生素B6 63%、烟酸80%、叶酸79%、泛酸69%、亚麻酸50%、蛋白质22%、锰84%、鎂78%、铁76%、钾74%、铜74%、钙60%、锌54%等。因此,现有技术中的保健品领域推出原料发酵的加工概念,可以避免高温对原料营养成分的破坏,但是现有技术中食品发酵基本皆为采用单一菌种进行单一发酵的方式,食物原料本身产生的营养素较少。
发明内容
本发明的目的是提供一种全营养发酵养生食品及其制备方法,本发明选用食材配伍合理,而且利用低温复合菌群深层次发酵的技术进行制备,克服了传统养生食品和传统发酵食品的加工方法的不足,不但不会破坏食材本身的营养成分,而且产生新的营养素,同时消除有害物质,使各种营养素分解、细化达到极易被人体吸收的水平,具有极高的营养价值与养生效果。
为解决上述技术问题,本发明采用的技术方案如下:
一种全营养发酵养生食品,由营养原料和发酵原料制成,所述营养原料包括以下重量份原料:
桑椹、沙棘果、刺五加果、葡萄嫩枝叶、槐树嫩枝叶各2-7份;
麦芽脱水干燥物、谷芽脱水干燥物、黑芝麻芽脱水干燥物、红薯芽脱水干燥物和丝瓜叶芽脱水干燥物各2-6份;
小米、薏仁米、大黄米、红曲米、糯米各1-5份;
杏孢菇、香菇、金针菇、茯苓、黒木耳各1-5份。
优选的,所述营养原料包括以下重量份原料:
桑椹、沙棘果、刺五加果、葡萄嫩枝叶、槐树嫩枝叶各5份;麦芽脱水干燥物、谷芽脱水干燥物、黑芝麻芽脱水干燥物、红薯芽脱水干燥物和丝瓜叶芽脱水干燥物各4份;小米、薏仁米、大黄米、红曲米、糯米各3份;杏孢菇、香菇、金针菇、茯苓、黒木耳各3份。
具体的,所述发酵原料包括以下重量份原料:发酵菌3-9份、琼脂粉3-9份、蜂蜜15-30份。
优选的,所述发酵菌包括等量的食用醋酸菌、乳酸菌和酒酵母菌。
上述全营养发酵养生食品的制备方法,步骤为:营养原料粉碎、发酵原料制备发酵液、营养原料和发酵液混合并发酵和烘干发酵。
具体的制备方法如下:
1)粉碎:按所述重量份取各营养原料,于外界温度不高于5℃、粉碎温度不高于35℃的条件下粉碎至80目并混合均匀;
2)制备发酵液
取发酵菌、琼脂粉、部分蜂蜜和食用水搅拌均匀,分别制备食用醋酸菌发酵液、乳酸菌发酵液和酒酵母菌发酵液,密封存放待用;
3)密封发酵:
取粉碎后营养原料、食用醋酸菌发酵液和剩余蜂蜜混合并加入食用水160-200份,于29-39℃下搅拌发酵4-8h,完成好氧发酵;
将好氧发酵产物与乳酸菌发酵液混合均匀,于29-39℃下密封发酵4-8h后放气、搅拌并再次密封发酵,如此循环操作1-4天后,加入酒酵母菌发酵液,于29-39℃下密封发酵4-8h后放气、搅拌并再次密封发酵,如此循环操作至发酵无气体产生,完成厌氧发酵,取发酵物密封存放待用;
4)烘干发酵:
将厌氧发酵物过滤,取固体于35℃条件下烘干至粉剂,将粉剂密封埋存至地下发酵90-100天后取出,即得全营养发酵养生食品;
取液体密封埋存至地下发酵90-100天后取出,即得全营养发酵养生饮品。
优选的,制备方法如下:
1)粉碎:按所述重量份取各营养原料,于外界温度不高于5℃、粉碎温度不高于35℃的条件下粉碎至80目并混合均匀;
2)制备发酵液
按重量份配比1:1:1:20取发酵菌、琼脂粉、蜂蜜和食用水搅拌均匀,分别制备食用醋酸菌发酵液、乳酸菌发酵液和酒酵母菌发酵液,密封存放待用;
3)密封发酵:
取粉碎后营养原料、食用醋酸菌发酵液和剩余蜂蜜混合并加入食用水180份,于29-39℃下搅拌发酵6h,完成好氧发酵;

4)烘干发酵:
将厌氧发酵物用120目筛过滤,取固体于35℃条件下烘干至粉剂,将粉剂密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生食品;
取液体密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生饮品。
本发明的营养原料的配伍是基于营养学、预防科学、生态医学、自然医学、中医五行学的理论,经过多年的理论和实践验证,创造性地复合配方如下:
1)桑椹性味甘寒,可补肝益肾、生津润肠、乌发明目,具有生津止渴、促进消化、帮助排便之效;
沙棘果富含棕榈酸、棕榈烯酸、硬脂酸等多种有益脂肪酸,其中不饱和脂肪酸占比高达70%,而且具有强力杀菌作用,防止组织病菌感染,调节血糖;
刺五加果又称刺五加籽,含多种糖甙、丁香甙、香豆精甙、多糖及果酸,有效扩张血管、降低血脂,健脾固肾阳,缓解神经性疲劳;
葡萄嫩枝叶富含橡胶质、糖类和异槲皮甙、槲皮甙、芸香甙,其提取液利小便、止水肿、治痈肿;
槐树嫩枝叶治惊痫、壮热、痔疮、湿疹和疥癣等症,此五者的复配协同作用及功效如下:
①清血、活血、破血、通血、净化血液、祛瘀血、养血,降血脂,降低胆固醇,降低甘油三酯,降低低密度脂蛋白,保护血管内壁细胞,抗动脉硬化;防治血栓形成,对多种因子形成的血栓都有良好的解聚或抑制作用,增加心肌血流量,打通微循环;
②促睡眠,能调节大脑皮层质兴奋和抑制反应的平衡,对中枢神经系统有双向调节作用,有强心、镇静、催眠、抗紧张、抗疲劳、增强记忆力的功效;
③延缓细胞衰老,对人体细胞再生次数由22代提升到27代,延长细胞寿命22.7%,有增高超氧化物歧化酶的活性和耐力;抑制脂褐质的形成,有护肤美容的作用;增进食欲、畅通大便,平喘止咳、消脂减肥;
④提高免疫力,能提高巨噬细胞能力,有明显增高白细胞数量,同时增加自身的吞噬功能,促进体内白介素的分泌,增加血清免疫球蛋白的产生,能诱发产生干扰素的作用,对免疫系统有双向调节作用;防抗癌,调节人体生理机能,抑制胆结石形成等功效。
⑤有防治脑萎缩、老年痴呆,提高记忆力的功效。
2)麦芽脱水干燥物、谷芽脱水干燥物、黑芝麻芽脱水干燥物、红薯芽脱水干燥物和丝瓜叶芽脱水干燥物,此五者皆为植物嫩芽,芽期植物内富含糖类、植物生命激活素、植物化学物等营养素,具有扶正祛邪、高效营养与修复变异细胞的作用;
3)小米、薏仁米、大黄米、红曲米、糯米,此五者皆为谷物,营养脾胃,疏通与提高消化系统功能,保障进食通、代谢通;
4)杏孢菇、香菇、金针菇、茯苓、黒木耳,此五者极为食用菌类,富含生理营养要素如下:
几丁聚糖、真菌多糖,具有增强免疫、提高血液供氧能力,提高肝功能、提高合成蛋白质、DNA、RNA的能力;
三萜类物质,具有镇静止痛、灭菌解毒、杀肿瘤细胞、抗幅射、抗衰老的功效;

同时,本发明采用了独创生物发酵技术,在低温条件下,利用复合菌群对营养原料进行深层次发酵,有益效果如下:
1)消除有害物质、使得产品安全无公害:本发明采用菌种对营养原料进行三次发酵,可以最大限度地将其中的多摄有害的成分进行形态转化,如硒摄入量超过50微克就会中毒,经发酵的硒摄入量可达500微克也不会引发中毒;
2)对植物组分进行裂解和破壁:由于植物性细胞都有细胞壁,而不同植物的细胞壁质量、强度各不相同,细胞壁的裂解与环境、时间、有益微生物群、发酵技术有关,有的一次裂解破壁、有的二次裂解破壁,有的需要反复多次发酵裂解才会破壁。人对植物营养素的吸收率,其关键在于细胞壁的裂解与破壁。本发明所述发酵菌种中的有益微生物分泌性能不同的多种酶,能裂解植物细胞壁,显著提高人体对营养素的利用率,
3)产生新的营养素群:营养原料经过三次发酵后,其中的一些大分子组分被分解成小分子,同时发酵为化学反应的过程,会生产一些新的营养素群,如具有营养细胞的活性物质多聚糖、真菌多糖、油酸、谷固醇等,可以人体液酸碱平衡、增强免疫系统、修复神经系统,同时改善体内微生态平衡,调节生理、增强消化;乙酸、乳酸,核酸、叶绿素、几丁聚糖、生命激活素、多种植物化学物、黄酮、多肽等,可以灭杀有害菌、病毒等;
4)灭菌保鲜,配伍中的沙棘果本身就具有抗菌作用,同时发酵后生成的乙酸、乳酸、核酸、果酸、植物酸等配合有益菌合力有抑制与杀灭有害菌、病毒的能够保证在无添加任何化学添加剂、保鲜剂、抗生素的基础上,长时间保持产品的品质。申请人现有保存15年的产品,至今品质无损,保鲜性可见一斑。
本发明所述全营养发酵养生食品粉剂,作为养生粉剂,可以单独服用或配合其他食品食用,所述全营养发酵养生食品饮剂,作为浓缩养生液,可以单独服用或配合其他食品食用。两者适用人群广泛,幼儿、老人亦可服用,建议均配体温开水、糖蜜适量,使用量3克--50克/次,也可拌凉菜、加入饭汤中食用。
具体实施方式
为了使本发明的目的、技术方案及优点更加清楚明白,以下结合实施例,对本发明进行进一步详细说明。应当理解,此处所描述的具体实施例仅仅用以解释本发明,并不用于限定本发明。
实施例1
取桑椹、沙棘果、刺五加果、葡萄嫩枝叶、槐树嫩枝叶各2千克;麦芽脱水干燥物、谷芽脱水干燥物、黑芝麻芽脱水干燥物、红薯芽脱水干燥物和丝瓜叶芽脱水干燥物各2千克;小米、薏仁米、大黄米、红曲米、糯米各1千克;杏孢菇、香菇、金针菇、茯苓、黒木耳各1千克。食用醋酸菌1千克、乳酸菌1千克、酒酵母菌1千克、琼脂粉3千克、蜂蜜19千克。
制备方法如下:
1)粉碎:按所述重量份取各营养原料,于外界温度不高于5℃、粉碎温度不高于35℃的条件下粉碎至80目并混合均匀;
2)制备发酵液
取食用醋酸菌1千克、琼脂粉1千克、蜂蜜1千克和食用水20千克,取乳酸菌1千克、琼脂粉1千克、蜂蜜1千克和食用水20千克,取酒酵母菌1千克、琼脂粉1千克、蜂蜜1千克和食用水20千克,分别搅拌均匀制备成食用醋酸菌发酵液、乳酸菌发酵液和酒酵母菌发酵液,密封存放待用;
3)密封发酵:
取粉碎后营养原料、食用醋酸菌发酵液和剩余蜂蜜16千克混合并加入食用水20千克,于29-39℃下搅拌发酵6h,完成好氧发酵;
将好氧发酵产物与乳酸菌发酵液混合均匀,于29-39℃下密封发酵6h后放气、搅拌并再次密封发酵,如此循环操作3天后,加入酒酵母菌发酵液,于29-39℃下密封发酵6h后放气、搅拌并再次密封发酵,如此循环操作至发酵无气体产生,完成厌氧发酵,取发酵物密封存放待用;
4)烘干发酵:
将厌氧发酵物用120目筛过滤,取固体于35℃条件下烘干至粉剂,将粉剂密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生食品;
取液体密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生饮品。
实施例2
取桑椹、沙棘果、刺五加果、葡萄嫩枝叶、槐树嫩枝叶各5千克;麦芽脱水干燥物、谷芽脱水干燥物、黑芝麻芽脱水干燥物、红薯芽脱水干燥物和丝瓜叶芽脱水干燥物各4千克;小米、薏仁米、大黄米、红曲米、糯米各3千克;杏孢菇、香菇、金针菇、茯苓、黒木耳各3千克。食用醋酸菌1千克、乳酸菌1千克、酒酵母菌1千克、琼脂粉3千克、蜂蜜19千克。
制备方法如下:
1)粉碎:按所述重量份取各营养原料,于外界温度不高于5℃、粉碎温度不高于35℃的条件下粉碎至80目并混合均匀;
2)制备发酵液
取食用醋酸菌1千克、琼脂粉1千克、蜂蜜1千克和食用水20千克,取乳酸菌1千克、琼脂粉1千克、蜂蜜1千克和食用水20千克,取酒酵母菌1千克、琼脂粉1千克、蜂蜜1千克和食用水20千克,分别搅拌均匀制备成食用醋酸菌发酵液、乳酸菌发酵液和酒酵母菌发酵液,密封存放待用;
3)密封发酵:
取粉碎后营养原料、食用醋酸菌发酵液和剩余蜂蜜16千克混合并加入食用水100千克,于29-39℃下搅拌发酵6h,完成好氧发酵;
将好氧发酵产物与乳酸菌发酵液混合均匀,于29-39℃下密封发酵6h后放气、搅拌并再次密封发酵,如此循环操作3天后,加入酒酵母菌发酵液,于29-39℃下密封发酵6h后放气、搅拌并再次密封发酵,如此循环操作至发酵无气体产生,完成厌氧发酵,取发酵物密封存放待用;
4)烘干发酵:
将厌氧发酵物用120目筛过滤,取固体于35℃条件下烘干至粉剂,将粉剂密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生食品;
取液体密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生饮品。
实施例3
取桑椹、沙棘果、刺五加果、葡萄嫩枝叶、槐树嫩枝叶各7千克;麦芽脱水干燥物、谷芽脱水干燥物、黑芝麻芽脱水干燥物、红薯芽脱水干燥物和丝瓜叶芽脱水干燥物各6千克;小米、薏仁米、大黄米、红曲米、糯米各5千克;杏孢菇、香菇、金针菇、茯苓、黒木耳各5千克。食用醋酸菌3千克、乳酸菌3千克、酒酵母菌3千克、、琼脂粉9千克、蜂蜜30千克。
制备方法如下:
1)粉碎:按所述重量份取各营养原料,于外界温度不高于5℃、粉碎温度不高于35℃的条件下粉碎至80目并混合均匀;
2)制备发酵液
取食用醋酸菌3千克、琼脂粉3千克、蜂蜜3千克和食用水60千克,取乳酸菌3千克、琼脂粉3千克、蜂蜜3千克和食用水60千克,取酒酵母菌3千克、琼脂粉3千克、蜂蜜3千克和食用水60千克,分别搅拌均匀制备成食用醋酸菌发酵液、乳酸菌发酵液和酒酵母菌发酵液,密封存放待用;
3)密封发酵:
取粉碎后营养原料、食用醋酸菌发酵液和剩余蜂蜜21千克混合并加入食用水200千克,于29-39℃下搅拌发酵6h,完成好氧发酵;
将好氧发酵产物与乳酸菌发酵液混合均匀,于29-39℃下密封发酵6h后放气、搅拌并再次密封发酵,如此循环操作3天后,加入酒酵母菌发酵液,于29-39℃下密封发酵6h后放气、搅拌并再次密封发酵,如此循环操作至发酵无气体产生,完成厌氧发酵,取发酵物密封存放待用;
4)烘干发酵:
将厌氧发酵物用120目筛过滤,取固体于35℃条件下烘干至粉剂,将粉剂密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生食品;
取液体密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生饮品。
本发明产品经十六年验证:经常服用本全营养发酵养生食品,可让人达到行气通、血脉通、经络通、进食通、代谢通;同时对中老年常见病均有疗效,如心脑血管疾病、糖尿病患者,内服外用3个月至一年,发病率大幅度降低;脑萎缩、老年痴呆患者,1--6月大幅度缓解症状,记忆力有较为显著的恢复;妇科病、月经不调,内服外用15--30天症状大幅度减轻,犯病率大幅度下降;外科疾病,各种溃疡7--15天痊愈;野蜂蜇伤三分钟止疼、七天痊愈;护肤美容,皮肤粗糙外用7--30天皮肤光亮。
Claims (7)
1.一种全营养发酵养生食品,其特征在于,由营养原料和发酵原料制成,所述营养原料包括以下重量份原料:
桑椹、沙棘果、刺五加果、葡萄嫩枝叶、槐树嫩枝叶各2-7份;
麦芽脱水干燥物、谷芽脱水干燥物、黑芝麻芽脱水干燥物、红薯芽脱水干燥物和丝瓜叶芽脱水干燥物各2-6份;
小米、薏仁米、大黄米、红曲米、糯米各1-5份;
杏孢菇、香菇、金针菇、茯苓、黒木耳各1-5份。
2.如权利要求1所述的全营养发酵养生食品,其特征在于,所述营养原料包括以下重量份原料:
桑椹、沙棘果、刺五加果、葡萄嫩枝叶、槐树嫩枝叶各5份;麦芽脱水干燥物、谷芽脱水干燥物、黑芝麻芽脱水干燥物、红薯芽脱水干燥物和丝瓜叶芽脱水干燥物各4份;小米、薏仁米、大黄米、红曲米、糯米各3份;杏孢菇、香菇、金针菇、茯苓、黒木耳各3份。
3.如权利要求1或2所述的全营养发酵养生食品,其特征在于,所述发酵原料包括以下重量份原料:
发酵菌3-9份、琼脂粉3-9份、蜂蜜15-30份。
4.如权利要求3所述的全营养发酵养生食品,其特征在于,所述发酵菌包括等量的食用醋酸菌、乳酸菌和酒酵母菌。
5.如权利要求1-4任一所述的全营养发酵养生食品的制备方法,其特征在于步骤为:营养原料粉碎、发酵原料制备发酵液、营养原料和发酵液混合并发酵和烘干发酵。
6.如权利要求5所述的全营养发酵养生食品的制备方法,其特征在于步骤如下:
1)粉碎:按所述重量份取各营养原料,于外界温度不高于5℃、粉碎温度不高于35℃的条件下粉碎至80目并混合均匀;
2)制备发酵液
取发酵菌、琼脂粉、部分蜂蜜和食用水搅拌均匀,分别制备食用醋酸菌发酵液、乳酸菌发酵液和酒酵母菌发酵液,密封存放待用;
3)密封发酵:
取粉碎后营养原料、食用醋酸菌发酵液和剩余蜂蜜混合并加入食用水20-140份,于29-39℃下搅拌发酵4-8h,完成好氧发酵;
将好氧发酵产物与乳酸菌发酵液混合均匀,于29-39℃下密封发酵4-8h后放气、搅拌并再次密封发酵,如此循环操作1-4天后,加入酒酵母菌发酵液,于29-39℃下密封发酵4-8h后放气、搅拌并再次密封发酵,如此循环操作至发酵无气体产生,完成厌氧发酵,取发酵物密封存放待用;
4)烘干发酵:
将厌氧发酵物过滤,取固体于35℃条件下烘干至粉剂,将粉剂密封埋存至地下发酵90-100天后取出,即得全营养发酵养生食品;
取液体密封埋存至地下发酵90-100天后取出,即得全营养发酵养生饮品。
7.如权利要求5所述的全营养发酵养生食品的制备方法,其特征在于步骤为:
1)粉碎:按所述重量份取各营养原料,于外界温度不高于5℃、粉碎温度不高于35℃的条件下粉碎至80目并混合均匀;
2)制备发酵液
按重量份配比1:1:1:20取发酵菌、琼脂粉、蜂蜜和食用水搅拌均匀,分别制备食用醋酸菌发酵液、乳酸菌发酵液和酒酵母菌发酵液,密封存放待用;
3)密封发酵:
取粉碎后营养原料、食用醋酸菌发酵液和剩余蜂蜜混合并加入食用水180份,于29-39℃下搅拌发酵68h,完成好氧发酵;
将好氧发酵产物与乳酸菌发酵液混合均匀,于29-39℃下密封发酵6h后放气、搅拌并再次密封发酵,如此循环操作3天后,加入酒酵母菌发酵液,于29-39℃下密封发酵6h后放气、搅拌并再次密封发酵,如此循环操作至发酵无气体产生,完成厌氧发酵,取发酵物密封存放待用;
4)烘干发酵:
将厌氧发酵物用120目筛过滤,取固体于35℃条件下烘干至粉剂,将粉剂密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生食品;
取液体密封埋存至地下一米并发酵99天后取出,即得全营养发酵养生饮品。
