Abstract

本发明提出一种含有麦饭石颗粒的啤酒及其生产工艺,过去生产麦饭石啤酒主要是采用麦饭石浸出水参予制酒过程,这种方法溶出量小,效果不明显。本工艺在此基础上,又在糖化、发酵等过程中重新填加麦饭石,并且在滤得成品后,在盛酒容器中加装麦饭石颗粒。因而麦饭石的营养元素溶出量大,各项理化指标明显改善,保健效果尤为突出。

一种有麦饭石颗粒的啤酒的生产工艺
技术领域:本发明涉及一种啤酒加工方法,即一种含有麦饭石颗粒的啤酒的生产工艺。
背景技术:由于麦饭石含有多种对人体有益的营养元素,因而有的啤酒厂用浸泡麦饭石的水作为啤酒生产用水,其目的是让麦饭石中的营养元素进入啤酒之中。可是,过去所用的浸泡工艺,麦饭石的营养元素溶出很少,健身效果不明显。
发明内容:本发明的目的是采用一种先进工艺,制取一种能大量溶入麦饭石的营养元素的啤酒。
技术方案:在装成品啤酒的酒瓶中,加入麦饭石颗粒。
采用上述方案,制成的啤酒,麦饭石溶出的机会和时间大大增加,因而营养元素溶出量增多,啤酒的口感、观感及防腐性能等理化指标都得到了明显的改善。此外,在酒瓶内加入麦饭石,直观性强,从而解决了麦饭石饮品质量标准不易掌握和监督的问题。

实施方式:由图可见,这种工艺的主要过程是:将水和麦饭石放入存贮器,得到浸出水,再将浸出水与麦饭石粉末混合,煮沸,再次滤得麦饭石浸出水,同时,将麦芽大米等原料进行粉碎加工,与麦饭石浸出水混合,进入糖化过程,再加入麦饭石进行二次煮出,再过滤,连同加热的麦饭石浸出水一起进行洗糟,再加入麦饭石和酒花经煮沸、沉淀、冷却后,进入繁殖槽并加酵母,然后进入发酵槽,加麦饭石,再进入后酵槽,加麦饭石,然后过滤,清酒。同时,将麦饭石颗粒灭菌后投入酒瓶中,然后装瓶,杀菌贴标、封盖即可。
加入酒瓶内的麦饭石颗粒,可以制成较小的颗粒,也可以制成“福”“喜”“寿”等字样的小块。
