本发明属于饮料加工技术领域,具体涉及一种果蔬汁醋饮料。
背景技术
果蔬汁中保留有水果和蔬菜中的维生素、矿物质、糖分和膳食纤维中的果胶等大部分营养成分,果蔬汁是一种能改善人们身体健康的饮品。果蔬汁醋中含有多种有机酸、人体所需的多种氨基酸和微量元素,能促进新陈代谢、调节酸碱平衡和消除疲劳。近年来果蔬汁醋饮料作为健康饮品开发的产品比较多,但基本是用浓缩果蔬汁添加水、醋、糖、防腐剂等原料制作而成。不仅水果、蔬菜的营养成份损失比较多,添加其它物质后,破坏了原有果蔬汁的风味,甚至有的对人体造成不利的影响。
发明内容
为了克服如上所述的问题,本发明提供一种果蔬汁醋饮料,以弥补其不足。
本发明解决其技术问题所采取的技术方案是:一种果蔬汁醋饮料,其特征在于,由下述重量份原料组成:苹果100份、葡萄15份、芒果10份、红萝卜15份、白菜15份、果胶酶0.007份、果蔬汁醋2.4份。其生产步骤如下:(1)将上述苹果、葡萄、芒果、红萝卜、白菜清洗干净,得到干净苹果、干净葡萄、干净芒果、干净红萝卜、干净白菜,备用;(2)将干净苹果、干净葡萄、干净芒果、干净红萝卜、干净白菜送到鼠笼式破碎机破碎,再用带式压榨机进行榨汁,榨汁液送到振动过滤机中进行过滤,得到果蔬汁滤液,备用;(3)将果蔬汁滤液加热到75-85℃进行灭菌,灭菌后冷却至45-50℃,然后放入酶解罐,加入果胶酶,搅拌30-40分钟后,静置20-30分钟,将沉淀物从酶解罐的底部排除,得到果蔬汁酶解液,备用;(4)将果蔬汁酶解液先通过硅澡土过滤,再进行中空过滤,得到果蔬汁过滤酶解液,备用;(5)将果蔬汁过滤酶解液与相应全汁液态自然发酵的果蔬汁醋进行充分混合,得到果蔬汁混合液,备用;(6)将果蔬汁混合液在80-90℃下进行巴氏灭菌,冷却后进行灌装,灌装后的产品再进行喷淋灭菌,即得一种果蔬汁醋饮料。

1.一种果蔬汁醋饮料,其特征在于,由下述重量份原料组成:苹果100份、葡萄15份、芒果10份、红萝卜15份、白菜15份、果胶酶0.007份、果蔬汁醋2.4份。
2.根据权利要求1所述的一种果蔬汁醋饮料,其特征在于,生产步骤如下:(1)将上述苹果、葡萄、芒果、红萝卜、白菜清洗干净,得到干净苹果、干净葡萄、干净芒果、干净红萝卜、干净白菜,备用;(2)将干净苹果、干净葡萄、干净芒果、干净红萝卜、干净白菜送到鼠笼式破碎机破碎,再用带式压榨机进行榨汁,榨汁液送到振动过滤机中进行过滤,得到果蔬汁滤液,备用;(3)将果蔬汁滤液加热到75-85℃进行灭菌,灭菌后冷却至45-50℃,然后放入酶解罐,加入果胶酶,搅拌30-40分钟后,静置20-30分钟,将沉淀物从酶解罐的底部排除,得到果蔬汁酶解液,备用;(4)将果蔬汁酶解液先通过硅澡土过滤,再进行中空过滤,得到果蔬汁过滤酶解液,备用;(5)将果蔬汁过滤酶解液与相应全汁液态自然发酵的果蔬汁醋进行充分混合,得到果蔬汁混合液,备用;(6)将果蔬汁混合液在80-90℃下进行巴氏灭菌,冷却后进行灌装,灌装后的产品再进行喷淋灭菌,即得一种果蔬汁醋饮料。
