本发明一种茶叶肘子及其制作方法,属于食品加工技术领域,所要解决的技术问题是提供一种口感好、风味佳、营养丰富,并且具备保健作用的肘子,采用的技术方案为:一种茶叶肘子,它是由以下重量份配比原料制成:肘子1000‑1500份,红茶20‑30份,人参10‑15份,枸杞5‑10份,金银花5‑10份,菊花10‑15份,陈皮5‑10份,红枣10‑15份,调料组分10‑20份。

本发明一种茶叶肘子及其制作方法,属于食品加工技术领域。
背景技术
茶是人们日常生活中喜爱的饮品,茶叶中所含的成份很多,主要有咖啡碱、茶碱、可可碱、胆碱、黄嘌呤、黄酮类及甙类化合物、茶鞣质、儿茶素、萜烯类、酚类、醇类、醛类、酸类、酯类、芳香油化合物、碳水化合物、多种维生素、蛋白质和氨基酸。氨基酸有半胱氨酸、蛋氨酸、谷氨酸、精氨酸等。茶中还含有钙、磷、铁、氟、碘、锰、钼、锌、硒、铜、锗、镁等多种矿物质;这些成分对人体大都是有益的;如,茶多酚具有很强的抗氧化性和生理活性,有助于延缓衰老,防癌抗癌;茶叶中的咖啡碱能促使人体中枢神经兴奋,增强大脑皮层的兴奋过程,起到提神益思、清心的效果等。
茶又有很多种类,从性味来分,茶有温凉之分。性温的茶有红茶等,性凉的茶有绿茶等。根据季节气候不同,人们可以选择引用不同种类的茶,对身体适时保健。但是,人们利用茶进行保健是多为浸泡引用或制成饮品等,摄入方式比较单一。
肘子营养很丰富,含较多的蛋白质,特别是含有大量的胶原蛋白质,和肉皮一样,是使皮肤丰满、润泽,强体增肥的食疗佳品,肘子还具有和血脉、润肌肤、填肾精、健腰脚的作用,肘子的制作方法很多,常见有东坡肘子、冰糖猪肘、卤猪肘、酱肘子等,但如何充分利用肘子的营养价值,做到营养丰富均衡,口感外脆里嫩,香浓爽口,满足人们对食品色香味的食用追求和营养茶叶需求的肘子制品,还未见报道,因此,广大食品工作者亟需研制一种口感好、风味佳、营养丰富并且具备保健作用的肘子。
发明内容
本发明解决的技术问题在于提供一种茶叶肘子及其制作方法,提供一种口感好、风味佳、营养丰富,并且具备保健作用的肘子。
为了解决上述技术问题,本发明所采用的技术方案为:一种茶叶肘子,是由以下重量份配比的原料制成:肘子1000-1500份,红茶20-30份,人参10-15份,枸杞5-10份,金银花5-10份,菊花10-15份,陈皮5-10份,红枣10-15份,调料组分10-20份。
所述调料组分按照以下重量份配比:大茴香10-15份,白芷3-6份,草寇5-8份,草果4-6份,荜拨3-5份,桂皮5-10份,良姜8-13份,肉蔻4-7份,花椒8-13份。
一种茶叶肘子的制作方法,包括以下步骤:
①将猪肘除去猪毛、洗净,再添加红茶叶碎片,在温水下反复揉搓,再去除茶叶碎片,冲洗干净,再添加红茶叶碎片,浸泡5个小时,沥干水,在开水中煮2-3分钟,撇去浮沫,取出用清水冲洗干净,放入冰箱中冷藏3-5小时;
②将上述重量份的红茶,人参,枸杞,金银花,菊花,陈皮,红枣,粉碎至20~40目,加入100-150倍体积的水搅拌,中火煮沸5~8分钟,再小火将汤汁浓缩至原体积的50~60%,液渣分离,得到中药液,将洗净的肘子放入中药液中,加入少量食盐,浸泡15个小时;
③干净锅烧热,加入大豆油,烧热至八成热,加入冰糖炒出糖色,加入生姜、大葱,加水,放入浸泡好的肘子,再次加入红茶叶5份,加入调料组分,味精,食盐,生抽,老抽,大火煮开,然后小火炖2-3小时,即得茶叶肘子。
所用药材功效如下:
红茶:帮助胃肠消化、促进食欲,可利尿、消除水肿,并强壮心脏功能。红茶中“富含的黄酮类化合物能消除自由基,具有抗酸化作用,降低心肌梗塞的发病率。红茶中的多酚类化合物具有消炎的效果,再经由实验发现,儿茶素类能与单细胞的细菌结合,使蛋白质凝固沉淀,藉此抑制和消灭病原菌。所以细菌性痢疾及食物中毒患者喝红茶颇有益。
人参:味甘、微苦,性温、平。归脾、肺经、心经。补气,固脱,生津,安神,益智。主治体虚欲脱,肢冷脉微,脾虚食少,肺虚喘咳,津伤口渴,内热消渴,久病虚羸,惊悸失眠,阳痿宫冷;心力衰竭,心原性休克。用于气短喘促,心悸健忘,口渴多汗,食少无力,一切急慢性疾病及失血后引起的休克、虚脱。大补元气,固脱生津,安神。治劳伤虚损,食少,倦怠,反胃吐食,大便滑泄,虚咳喘促,自汗暴脱,惊悸,健忘,眩晕头痛,阳痿,尿频,消渴,妇女崩漏,小儿慢惊,及久虚不复,一切气血津液不足之证。
枸杞:甘,平。归肝、肾经。养肝,滋肾,润肺,免疫调节, 保护生殖系统,增强造血功能。
金银花:性寒,味甘,入肺、心、胃经,具有清热解毒、抗炎、补虚疗风的功效,主治胀满下疾、温病发热,热毒痈疡和肿瘤等症。其对于头昏头晕、口干作渴、多汗烦闷、肠炎、菌痢、麻疹、肺炎、乙脑、流脑、急性乳腺炎、败血症、阑尾炎、皮肤感染、痈疽疔疮、丹毒、腮腺炎、化脓性扁桃体炎等病症均有一定疗效。
菊花:味苦、甘,性微寒。归肺、肝经。散风清热,平肝明目,清热解毒。主治风热感冒,头痛眩晕,目赤肿痛,眼目昏花,疮痈肿毒。
红枣:味甘、性温,能补中益气、养血生津;能够提高体内血清白蛋白含量,具有保肝养肝的作用。
陈皮:味苦、辛,性温。归肺、脾经。理气健脾,燥湿化痰。主要用于脘腹胀满,食少吐泻,咳嗽痰多。
如上所述,本发明与现有技术相比具有的有益效果是:本发明茶叶肘子是采用特殊的方法制得的,首先用茶叶去除异味,充分利用茶叶促进消化、促进食欲、抗自由基的作用,结合肘子丰富营养价值,同时加入了人参、枸杞等药食同源的中草药,起到了补气生津、养阴安神、调节免疫的作用;红枣活血造血、养血生津;陈皮利水燥湿、理气健脾;金银花、菊花清热解毒、平肝明目;同时又加入了大茴香,豆蔻,草果,荜拨,桂皮,良姜,花椒使其口感更加可口,同时也增强了健脾和胃的功效,所以食用本发明肘子,可以增强人体的消化功能,增强了延缓衰老、防癌抗癌、活血益气、提神益思、清热解毒的功效,具有增强人体免疫力,调节人体阴阳平衡,快速纠正亚健康状态的作用,做到营养丰富均衡,满足人们对食品色香味的食用追求和营养保健需求。

以下结合具体实施例对本发明作进一步说明。
实施例1
一种茶叶肘子,是由以下重量份配比的原料制成:肘子1000份,红茶20份,人参10份,枸杞5份,金银花5份,菊花10份,陈皮5份,红枣10份,调料组分10份。
所述调料组分按照以下重量份配比:大茴香10份,白芷3份,草寇5份,草果4份,荜拨3份,桂皮5份,良姜8份,肉蔻4份,花椒8份。
一种茶叶肘子的制作方法,包括以下步骤:

制作方法与实施例1相同。
实施例3
一种茶叶肘子,是由以下重量份配比的原料制成:肘子1300份,红茶26份,人参12份,枸杞7份,金银花7份,菊花12份,陈皮7份,红枣12份,调料组分14份。
所述调料组分按照以下重量份配比:大茴香12份,白芷5份,草寇7份,草果5份,荜拨4份,桂皮7份,良姜10份,肉蔻5份,花椒10份。
制作方法与实施例1相同。
实施例4
一种茶叶肘子,是由以下重量份配比的原料制成:肘子1400份,红茶28份,人参14份,枸杞9份,金银花9份,菊花14份,陈皮9份,红枣14份,调料组分18份。
所述调料组分按照以下重量份配比:大茴香14份,白芷5份,草寇7份,草果5份,荜拨4份,桂皮9份,良姜12份,肉蔻6份,花椒12份。
制作方法与实施例1相同。
实施例5
一种茶叶肘子,是由以下重量份配比的原料制成:肘子1500份,红茶30份,人参15份,枸杞10份,金银花10份,菊花15份,陈皮10份,红枣15份,调料组分20份。
所述调料组分按照以下重量份配比:大茴香15份,白芷6份,草寇8份,草果6份,荜拨5份,桂皮10份,良姜13份,肉蔻7份,花椒13份。
制作方法与实施例1相同。

1.一种茶叶肘子,其特征在于:是由以下重量份配比的原料制成:肘子1000-1500份,红茶20-30份,人参10-15份,枸杞5-10份,金银花5-10份,菊花10-15份,陈皮5-10份,红枣10-15份,调料组分10-20份。
2.根据权利要求1所述的一种茶叶肘子,其特征在于所述调料组分按照以下重量份配比:大茴香10-15份,白芷3-6份,草寇5-8份,草果4-6份,荜拨3-5份,桂皮5-10份,良姜8-13份,肉蔻4-7份,花椒8-13份。
3.一种权利要求1所述的茶叶肘子的制作方法,其特征在于,包括以下步骤:
①将猪肘除去猪毛、洗净,再添加红茶叶碎片,在温水下反复揉搓,再去除茶叶碎片,冲洗干净,再添加红茶叶碎片,浸泡5个小时,沥干水,在开水中煮2-3分钟,撇去浮沫,取出用清水冲洗干净,放入冰箱中冷藏3-5小时;
②将上述重量份的红茶,人参,枸杞,金银花,菊花,陈皮,红枣,粉碎至20~40目,加入100-150倍体积的水搅拌,中火煮沸5~8分钟,再小火将汤汁浓缩至原体积的50~60%,液渣分离,得到中药液,将洗净的肘子放入中药液中,加入少量食盐,浸泡15个小时;
③干净锅烧热,加入大豆油,烧热至八成热,加入冰糖炒出糖色,加入生姜、大葱,加水,放入浸泡好的肘子,再次加入红茶叶5份,加入调料组分,味精,食盐,生抽,老抽,大火煮开,然后小火炖2-3小时,即得茶叶肘子。
