本发明公开了一种姜味提神抗疲劳果冻及其制备方法,由下述重量份的原料制成:生姜20‑30份、大枣20‑40份、黄精10‑30份、枸杞子10‑30份、人参10‑30份、红糖10‑30份、瓜拉纳提取物1‑3份,卡拉胶0.4‑0.8份、刺槐豆胶0.3‑0.6份、山梨酸钾0.03‑0.06份。本发明的保健果冻香辣爽口,水润有弹性,入口具有姜枣香和姜辣味,甜润可口,开袋即食、便于携带,具有开胃提神抗疲劳的功效,非常适合长途车司机或工作学习任务重需要提神抗疲劳的人群食用。
Description
技术领域
本发明属于食品加工技术领域,具体涉及一种姜味提神抗疲劳果冻及其制备方法。
背景技术
果冻以酸甜滑爽、体积小、携带服用方便成为一种大众都普遍喜欢的食品,市面上的大多数果冻主要以果汁为原料,一般没有提神抗疲劳效果,目前提神抗疲劳的产品有红牛饮料、东鹏特饮等液体产品,也有巧克力、润喉糖等方便食品,液体饮料产品具有口感好饮用方便等特点,但一般饮用量大多在300ml以上,大部分人喝完饮料即有便意,对于在高速路上开车的长途车司机或其他工作学习中不方便上洗手间人来说很不方便,而巧克力产品口感甜腻,润喉糖提神醒脑持续时间较短。如果将产品开发一款携带服用方便、提神抗疲劳且能克服液体饮料缺点的果冻产品将具很好的市场前景。
瓜拉纳原产于巴西,含有咖啡因、瓜拉纳因等生物碱成分,能起很好的提神和抗疲劳效果,由于瓜拉纳具有浓烈的热带地域特色风味,被广泛用于食品、饮料和制药工业中,拥有广泛的消费人群。专利 CN201711443649.0公开了一种含有瓜拉纳提取物的组合物,具有扩张血管,提高肌肉血流量,提高运动员爆发力及耐力的作用,可满足运动员及健身健美人群需求。专利CN201710262284.5公开一种用于减肥的柑橘瓜拉纳制品及其制备方法和应用,其制品包为散剂、粉剂、片剂、颗粒剂、汤剂、口服液、蜜膏体、蜜露、饮料或茶包制剂中的任意一种,没有包含果冻剂型。专利201010573534.5公开了一种由红枣汁、姜汁等制成的保健果冻,其制备方法是将无核红枣、去皮鲜姜各进行挑选、冲洗、晾干、搅汁、过滤;用150 目的过滤网过滤,过滤,得姜汁和枣汁,再和其它原料制成果冻。生姜和红枣直接榨汁在一定程度上可以保留风味,但提取不完全,仍有大量的有效成分保留在药渣中,势必造成物料浪费。而目前市场上尚缺少以生姜红枣等为主要成分,配以瓜拉纳提取物制成的具有明显辣味、甜爽可口的提神抗疲劳果冻产品。
发明内容
为了克服上述现有技术的不足,本发明的首要目的在于提供一种姜味提神抗疲劳果冻,该果冻产品具有姜香辣味、甜爽可口、开袋即食、便于携带,可以起到快速提神抗疲劳作用,非常适合长途车司机或学习工作任务重需要提神抗疲劳的人群食用。
本发明的另一目的在于提供上述姜味提神抗疲劳果冻的制备方法。
本发明是通过以下技术方案实现:
一种姜味提神抗疲劳果冻,由下述重量份的原料制成:生姜20-30份、大枣20-40份、黄精10-30份、枸杞子10-30份、人参10-30份、红糖10-30份、瓜拉纳提取物1-3份,卡拉胶0.4-0.8份、刺槐豆胶0.3-0.6份、山梨酸钾0.03-0.06份。
本发明中各原料的药理作用如下报述:
瓜拉纳提取物:瓜拉那提取物含有咖啡因,咖啡因是一种较柔和的兴奋剂,它可以提高人体的灵敏度、注意力,加速人体的新陈代谢,改善人体的精神状态和体能,从而消除疲劳。
生姜:味辛,性微温。归肺、脾、胃经。生姜中含有姜辣素,具有开胃健脾作用,同时具有排汗降温、提神等作用,还可以可缓解疲劳、乏力、厌食、失眠等症状。
大枣:味甘性湿,归脾胃经,有补中益气,养血安神,缓和药性的功能。大枣可健脾益胃,脾胃虚弱、腹泻,倦怠无力等症。大枣可增强人体免疫力,大枣含有大量的糖类物质,主要为葡萄糖,含有果糖、蔗糖以及由葡萄糖和果糖组成的低聚糖,阿拉伯聚糖及半乳醛聚糖等;并含有大量的维生素C、核黄素、硫胺素、有胡萝卜素、尼克酸等多种维生素,具有较强的补养作用,能提高人体免疫功能,增强抗病能力。
黄精:甘,平。归脾、肺、肾经。补气养阴,健脾,润肺,益肾。用于脾胃气虚,体倦乏力,胃阴不足,口干食少,肺虚燥咳,劳嗽咳血,精血不足,腰膝酸软,须发早白,内热消渴。
人参:甘、微苦,微温。归脾、肺、心、肾经。是公认治虚劳内伤的第一要药,能大补元气,复脉固脱,补脾益肺,生津养血,安神益智。用于体虚欲脱,肢冷脉微,脾虚食少,肺虚喘咳,津伤口渴,内热消渴,气血亏虚,久病虚赢,惊悸失眠,阳痿宫冷。
枸杞子:性味甘平,滋补肝肾、益精明目、养血、可增强免疫力。枸杞具有降血糖、软化血管、降低血液中的胆固醇、甘油三酯水平的作用,对脂肪肝和糖尿病具有一定的辅助治疗疗效。枸杞含有丰富的维生素E、β-胡萝卜素、硒及黄酮类等抗氧化物质,可减轻自由基过氧化损伤,有助于延缓衰老。此外,枸杞富含枸杞多糖,其对肝损伤有保护作用,可降低肝脏血清谷丙转氨酶 ,利于肝损伤的修复。
本发明以生姜、大枣、人参等药食同源原料为主要原料,配以提神抗疲劳的瓜拉纳提取物,生姜香辣健胃提神,大枣健脾益胃,益气补血,人参补气抗疲劳,黄精、枸杞子滋阴补肾,抗疲劳,诸药合在一起,可以起到快速提神醒脑、补充能量和抗疲劳作用,非常适合长途车司机或工作学习任务重需要提神抗疲劳的人群食用。
为了更好地实现本发明的技术效果,本发明对凝胶剂进行了优化研究:
实验方法:将卡拉胶分别与刺槐豆胶、黄原胶、明胶以1:1,2:1的比例,进行两两复配组成混合胶;称取0.9g混合食品胶,与15g白糖粉、20g速溶咖啡粉混匀后,加入冷水制成100ml胶液,溶胀15min后,80-90℃水浴30min至胶液清亮透明;待溶液完全冷却后,观察所得果冻产品性状并进行评分;
实验结果:评分结果如下表所示,果冻产品性状参数包括凝胶强度、硬度、弹性和脆度,分值越大表示强度越大;
由实验数据可得,卡拉胶和刺槐豆胶的组合凝胶剂使果冻产品凝胶强度较大,果冻弹性较大,脆性小,硬度小,使果冻产品口感水润绵软而富有弹性,品尝体验感最佳。因此, 本发明选用卡拉胶和刺槐豆胶作为凝胶剂。优选的,所述卡拉胶与刺槐豆胶的质量比为1:1-2:1,更优选为2:1。
本发明上述姜味提神抗疲劳果冻的制备方法,包括如下步骤:
a)取大枣,洗净,烘干,切成3-5mm厚片,用大火蒸制30-60min至大枣色泽变为红褐色;黄精,洗净,润透,切成2-4mm厚片;人参,洗净,润透,切成1-2mm薄片;取生姜,洗净,粗碎,榨汁,得到生姜汁,用洁净器保存,备用;
b)取生姜渣、蒸制大枣、人参、黄精及枸杞子加水煎煮提取两次,第一次加4-6倍量水,煎煮30-50min,滤过,得提取液A,第二次加6-8倍量水,煎煮1-2小时,滤过,滤液浓缩到相对密度1.08-1.10,为浓缩液B;
c)取拉卡胶、刺槐豆胶和红糖混合均匀,得胶糖混合物;
d)取胶糖混合物,加入提取液A,搅拌溶解至分散均匀,加入姜汁及瓜拉纳提取物煮沸5-10分钟;再加入浓缩液B,加入山梨酸钾混匀,包装,灭菌,即得。
本发明先将新鲜生姜榨汁,可以很好的保留姜香和辣味,大枣原料预先用大火蒸制至大枣色泽变为红褐色即可,麦拉德反应不仅能提升大枣的香味,而且可以增加大枣的甜度,蒸制大枣再与生姜渣、人参、黄精及枸杞子等混合提取,不仅可以最大限度的提取药材中的有效成分,保证产品的功效,还可以得到令人愉悦的香甜味,让果冻产品口感更佳。
本发明步的煎煮提取工艺,第一煎采用短时间提取,先把风味物质提取出来,第二煎再用长时间提取,以提取完全药材中的有效成分,采用两次煎煮提取工艺,最大限度的保留了有效成分和风味。
为最大限定的保留风味,本发明对第一煎的提取时间进行了优化,具体如下:
由上表可以看出,时间过短,枣的香甜味和姜辣味不明显,说明时间太短,有效成分还不能被提取出来,时间过长,姜的香味和红枣香甜味又变淡,而辣味越来越明显,为了保留产品良好风味,因此,本发明优选第一煎煮的时间为30-50min。
本发明将步骤b)第一煎提取得到的提取液A直接与胶糖混合物混合均匀,避免了提取液浓缩所带来的风味损失,再与姜汁及瓜拉纳提取物煮沸,煮沸的时间长短也会对风味的保持具有一定的影响,本发明同时对煮沸时间也进行了优化,具体如下:
由上表可以看出,时间过短,生姜味过于明显,而且有部分胶体未完全溶解,影响产品均一性。时间过长,红枣香味和姜香味损失较大,姜辣味也随着减弱。因此,本发明将胶糖混合物加入提取液A搅拌溶解至分散均匀后,加入姜汁及瓜拉纳提取物煮沸的时间优选为5-10分钟。
本发明与现有技术相比,具有如下有益效果:
本发明的保健果冻香辣爽口,水润有弹性,入口具有姜枣香和姜辣味,甜润可口,开袋即食、便于携带,具有开胃提神抗疲劳的功效,非常适合长途车司机或工作学习任务重需要提神抗疲劳的人群食用。
具体实施方式
下面通过具体实施方式来进一步说明本发明,以下实施例为本发明具体的实施方式,但本发明的实施方式并不受下述实施例的限制。
实施例1:
原料药配比:
生姜30份、大枣20份、黄精20份、枸杞子20份、人参10份、红糖10份,瓜拉纳提取物(咖啡因含量22%)2份、卡拉胶0.8份,刺槐豆胶0.4份,山梨酸钾0.05份。
其制备工艺包括如下步骤:
a)取大枣,洗净,烘干,切成3-5mm厚片,用大火蒸制40min至大枣色泽变为红褐色;黄精,洗净,润透,切成2-4mm厚片;人参,洗净,润透,切成1-2mm薄片;取生姜,洗净,粗碎,榨汁,得到生姜汁,用洁净器保存,备用;
b)取生姜渣、蒸制大枣、人参、黄精及枸杞子加水煎煮提取两次,第一次加6倍量水,煎煮50min,滤过,得提取液A,第二次加6倍量水,煎煮1小时,滤过,滤液浓缩到相对密度1.08-1.10,为浓缩液B;
c)取拉卡胶、刺槐豆胶和红糖混合均匀,得胶糖混合物;
d)取胶糖混合物,加入提取液A,搅拌溶解至分散均匀,加入姜汁及瓜拉纳提取物煮沸5分钟;再加入浓缩液B,加入山梨酸钾混匀,包装,灭菌,即得。
实施例2:
原料药配比:
生姜20份、大枣20份、黄精10份、枸杞子10份、人参10份、红糖10份、瓜拉纳提取物(咖啡因含量22%)2份、卡拉胶0.4份,刺槐豆胶0.3份,山梨酸钾0.03份。
其制备工艺包括如下步骤:
a)取大枣,洗净,烘干,切成3-5mm厚片,用大火蒸制45min至大枣色泽变为红褐色;黄精,洗净,润透,切成2-4mm厚片;人参,洗净,润透,切成1-2mm薄片;取生姜,洗净,粗碎,榨汁,得到生姜汁,用洁净器保存,备用;
b)取生姜渣、蒸制大枣、人参、黄精及枸杞子加水煎煮提取两次,第一次加4倍量水,煎煮30min,滤过,得提取液A,第二次加8倍量水,煎煮2小时,滤过,滤液浓缩到相对密度1.08-1.10,为浓缩液B;
c)取拉卡胶、刺槐豆胶和红糖混合均匀,得胶糖混合物;
d)取胶糖混合物,加入提取液A,搅拌溶解至分散均匀,加入姜汁及瓜拉纳提取物煮沸6分钟;再加入浓缩液B,加入山梨酸钾混匀,包装,灭菌,即得。
对比例1:
原料药配比同实施例1。
a)取大枣,洗净,烘干,切成3-5mm厚片,用大火蒸制40min至大枣色泽变为红褐色;黄精,洗净,润透,切成2-4mm厚片;人参,洗净,润透,切成1-2mm薄片;取生姜,洗净,粗碎,榨汁,得到生姜汁,用洁净器保存,备用;
b)取生姜渣、蒸制大枣、人参、黄精及枸杞子加水煎煮提取两次,第一次加6倍量水,煎煮50min,第二次加6倍量水,煎煮1小时,提取液合并,滤过,滤液浓缩到相对密度1.08-1.10,为浓缩液;
c)取拉卡胶、刺槐豆胶和红糖混合均匀,得胶糖混合物;
d)取胶糖混合物,加入浓缩液溶解至分散均匀,加入姜汁及瓜拉纳提取物煮沸5分钟;再加入山梨酸钾混匀,包装,灭菌,即得。
对比例2:
原料药配比同实施例2。
步骤a):取大枣,洗净,烘干,切成3-5mm厚片;黄精,洗净,润透,切成2-4mm厚片;人参,洗净,润透,切成1-2mm薄片;取生姜,洗净,粗碎;
其余同实施例2。
分别取实施例1-2和对比例1-2的果冻,选择20-50岁15名志愿者进行风味测试,志愿者试食4个样品后,选择口感最佳样品。其结果如下表所示:
由感官评分结果可知:本发明采用生姜榨汁,保留姜香和辣味,再通过红枣蒸制,不仅能提升红枣的香味,而且可以增加红枣的甜度,蒸红枣与生姜等混合提取,可以得到令人愉悦的香甜味,让果冻产品口感更佳, 采用两次煎煮提取工艺,并将提取液分别处理,最大限度保留了有效成分和风味。
为了说明本发明的有益效果,本发明还进行了以下产品体验试验:
实验方法:征集年龄段为30-50岁的10名志愿者,志愿者均为开长途车司机(当天开车累计时间为6-8小时)他们都有开车期间喝红牛习惯 ,每开车2小时身体感觉疲劳或注意力不能集中时食用本发明果冻,不喝红牛。
实验结果:10名志愿者中有7名反馈食用本发明的果冻产品后,精神和身体状态跟以前喝红牛的状态没有明显区别,食用果冻后,困乏状态得以缓解,反馈果冻的姜辣味具有很好提神醒脑作用。 10名志愿者中,6名志愿者连续开车4小时仍未出现困乏状态。产品整体体验感评价结果显示,60%的志愿者主述本发明果冻产品具有明显的提神抗疲劳功效。
Claims (4)
1.一种姜味提神抗疲劳果冻,其特征在于,由下述重量份的原料制成:
生姜20-30份、大枣20-40份、黄精10-30份、枸杞子10-30份、人参10-30份、红糖10-30份、瓜拉纳提取物1-3份,卡拉胶0.4-0.8份、刺槐豆胶0.3-0.6份、山梨酸钾0.03-0.06份。
2.根据权利要求1所述的一种姜味提神抗疲劳果冻,其特征在于,所述瓜拉纳提取物中咖啡因的含量为22%。
3.根据权利要求1或2所述的一种姜味提神抗疲劳果冻,其特征在于,所述卡拉胶与刺槐豆胶的质量比为1:1-2:1,优选为2:1。
4.根据权利要求1-3任一项所述的一种姜味提神抗疲劳果冻的制备方法,其特征在于,包括如下步骤:
a)取大枣,洗净,烘干,切成3-5mm厚片,用大火蒸制30-60min至大枣色泽变为红褐色;黄精,洗净,润透,切成2-4mm厚片;人参,洗净,润透,切成1-2mm薄片;取生姜,洗净,粗碎,榨汁,得到生姜汁,用洁净器保存,备用;
b)取生姜渣、蒸制大枣、人参、黄精及枸杞子加水煎煮提取两次,第一次加4-6倍量水,煎煮30-50min,滤过,得提取液A,第二次加6-8倍量水,煎煮1-2小时,滤过,滤液浓缩到相对密度1.08-1.10,为浓缩液B;
c)取拉卡胶、刺槐豆胶和红糖混合均匀,得胶糖混合物;
d)取胶糖混合物,加入提取液A,搅拌溶解至分散均匀,加入姜汁及瓜拉纳提取物煮沸5-10分钟;再加入浓缩液B,加入山梨酸钾混匀,包装,灭菌,即得。
