本发明涉及一种复原葡萄干饮料及其制作方法,属于食品加工技术领域。一种复原葡萄干饮料及其制作方法由以下重量份的原料制成:葡萄干100‑150份,水200‑300份,柠檬酸钠0.1‑0.2份,柠檬酸0.1‑0.2份,山梨酸钾0.1‑0.15份。该复原葡萄干饮料的制作依靠葡萄干,原料丰富,供给充足,且易运输、储存,降低了葡萄干饮料的制作成本,提高了葡萄干饮料的品质。

本发明属于食品加工技术领域,主要涉及一种复原葡萄干饮料及其制作方法。
背景技术
葡萄不仅味美可口,而且营养价值很高。成熟的浆果中葡萄含糖量高达10%-30%,以葡萄糖为主。葡萄中的多种果酸有助于消化,适当多吃些葡萄,能健脾和胃。葡萄中含有矿物质钙、钾、磷、铁以及多种维生素B1、维生素B2、维生素B6、维生素C和维生素P等,还含有多种人体所需的氨基酸,常食葡萄对神经衰弱、疲劳过度大有裨益。研究发现,葡萄比阿司匹林能更好地阻止血栓形成,并能降低人体血清胆固醇水平,降低血小板的凝聚力,对预防心脑血管病有一定作用。
将葡萄做成饮料,可以解渴的同时补充维生素,提供能量,有益身体健康,但是新鲜的葡萄不易储存和运输,且在制作葡萄饮料的过程中含有败坏的葡萄,不仅影响口感,还对人体健康有一定的损害。
发明内容
为克服葡萄饮料的原料易败坏、难长途运输的缺点,本发明提供一种复原葡萄干饮料及其制作方法,该发明不仅能保证原料的优良,不受运输条件限制,而且能得到一种口味优良的葡萄饮料。
本发明解决技术问题所采用的技术方案为:一种复原葡萄干饮料由如下质量分数的原料制备而成:葡萄干100-150份,水200-300份,柠檬酸钠0.1-0.2份,柠檬酸0.1-0.2份,山梨酸钾0.1-0.15份。
优选的,一种复原葡萄干饮料由如下质量分数的原料制备而成:葡萄干125份,水250份,柠檬酸钠0.15份,柠檬酸0.15份,山梨酸钾0.125份。
所述一种复原葡萄干饮料的制备方法如下:
S1.清洗原料,并按照份数称取;
S2.将葡萄干加入二倍的清水浸泡10分钟;
S3.将浸泡的容器放入超声清洗机中超声1小时;
S4.将超声后的葡萄干过滤,清水清洗1遍;
S5.将清洗后的葡萄干放入榨汁机中,再倒入和葡萄干等量的清水榨汁;
S6.将榨汁后的浑浊液过滤留下上清液;
S7.将在留下的上清液中加入柠檬酸钠,柠檬酸,山梨酸钾;
S8.将混合后的液体装瓶,杀菌,封盖。
新疆维吾尔自治区是我国唯一的绿葡萄干产地。据考证栽培无核白绿葡萄已1000多年。新疆吐鲁番盆地近年来年产约5000吨绿葡萄干,远销国内外。由于新疆吐鲁番盆地具有特别适合葡萄生长和制干的气候,新疆维吾尔族果农富有栽培无核白葡萄的经验和制作葡萄干的传统技能,使新疆绿葡萄干外形美观,品质优良,形成色、香、味、形“四绝”,名驰中外。葡萄干除了富含人体所需的营养物质如氨基酸、葡萄糖等物质外,还含有丰富的水溶性维生素,具有补血气、抗衰老、抗氧化和消炎等效果。
本发明所具有的有益效果如下:
(1)本发明原料采用新疆盛产的无核白绿葡萄干,原料充足,能体现地域特色;
(2)本发明的技术方案采用的原料不受场地限制,易储存和运输,降低了生产成本;
(3)本发明添加剂较少,属于天然的配方,对人体更加有益。
具体实施方式:
实施例1
S1.清洗上述原料,并按照份数称取:葡萄干100份,水200份;
S2.将葡萄干加入200份的清水浸泡10分钟;
S3.将浸泡的容器放入超声清洗机中超声1小时;
S4.将超声后的葡萄干过滤,清水清洗1遍;
S5.将清洗后的葡萄干放入榨汁机中,再倒入与葡萄干分量相同的清水榨汁;
S6.将榨汁后的浑浊液过滤留下上清液;
S7.将在留下的上清液中加入柠檬酸钠0.1份,柠檬酸0.1份,山梨酸钾0.1份;
S8.将混合后的液体装瓶,杀菌,封盖。
实施例2

S2.将葡萄干加入200份的清水浸泡10分钟;
S3.将浸泡的容器放入超声清洗机中超声1小时;
S4.将超声后的葡萄干过滤,清水清洗1遍;
S5.将清洗后的葡萄干放入榨汁机中,再倒入与葡萄干分量相同的清水榨汁;
S6.将榨汁后的浑浊液过滤留下上清液;
S7.将在留下的上清液中加入柠檬酸钠0.15份,柠檬酸0.15份,山梨酸钾0.125份;
S8.将混合后的液体装瓶,杀菌,封盖。
实施例3
S1.清洗上述原料,并按照份数称取:葡萄干150份,水300份;
S2.将葡萄干加入200份的清水浸泡10分钟;
S3.将浸泡的容器放入超声清洗机中超声1小时;
S4.将超声后的葡萄干过滤,清水清洗1遍;
S5.将清洗后的葡萄干放入榨汁机中,再倒入与葡萄干分量相同的清水榨汁;
S6.将榨汁后的浑浊液过滤留下上清液;
S7.将在留下的上清液中加入柠檬酸钠0.2份,柠檬酸0.2份,山梨酸钾0.15份;
S8.将混合后的液体装瓶,杀菌,封盖。
对实施例1-3复原葡萄干饮料饮品进行感官评定,结果如下表1:

由上表可知本产品实施例2,色泽纯正均一,无杂质,香味浓郁、协调,酸甜适中,无苦涩味,口感优于实施案例1和3。

1.一种复原葡萄干饮料,其特征是,由如下质量份数的原料制备而成:葡萄干100-150份,水200-300份,柠檬酸钠0.1-0.2份,柠檬酸0.1-0.2份,山梨酸钾0.1-0.15份。
2.一种复原葡萄干饮料的制作方法,其特征是,包括以下步骤:
S1.清洗上述原料,并按照份数称取;
S2.将葡萄干加入清水浸泡10分钟;
S3.将浸泡的容器放入超声清洗机中超声1小时;
S4.将超声后的葡萄干过滤,清水清洗1遍;
S5.将清洗后的葡萄干放入榨汁机中,再倒入清水榨汁;
S6.将榨汁后的浑浊液过滤留下上清液;
S7.将S6的上清液中加入柠檬酸钠0.1-0.2份,柠檬酸0.1-0.2份,山梨酸钾0.1-0.2份;
S8.将混合后的液体装瓶,杀菌,封盖。
3.根据权利要求2所述一种复原葡萄干饮料的制作方法,其特征是,所述步骤S2加入的清水量为葡萄干质量的2倍。
4.根据权利要求2所述一种复原葡萄干饮料的制作方法,其特征是,所述步骤S5加入的清水量和葡萄干的量相同。
