本发明涉及酿酒技术领域,特别涉及一种金钗石斛紫薯酒的生产工艺。
背景技术
金钗石斛素有“中华仙草”、“药中黄金”之美称,富含石斛碱、石斛次碱、茎含多糖、6-羟基石斛碱等活性物质及多种矿物质。金钗石斛既补又清,补而不腻,清而不伤胃,长期服用还能抗衰老,延年益寿。研究表明,金钗石斛还具有免疫调节、抗衰老、防治癌症等功效。
紫薯性味平微寒,具有凉血、解毒之功,能补中益气、健脾和胃、除烦止渴,为优质的制酒原料。紫薯的主要成分为淀粉,富含蛋白质,粗纤维,钙、磷、铁微量元素以及硫胺素、核黄素、尼克酸、维生素B1、维生素B2等人体必需营养素。高粱白酒以去皮的高粱为原料,经浸泡、蒸煮、糖化发酵、蒸馏贮存等工艺酿制而成,酒体晶莹醇厚,风格独特。但现有的石斛酒在口感和营养价值方面还存在一定欠缺,难以满足广大消费者的需求,影响了石斛酒的推广和发展。如何改良现有石斛发酵酒制备工艺,使石斛发酵酒营养成分多样和口感风味纯正成为研究热点。以金钗石斛和高粱为原料,经酶解、发酵、澄清等工艺制得的金钗石斛高粱酒,金钗石斛营养成分易被人体吸收,极大提高金钗石斛的综合利用价值。目前,关于金钗石斛高粱酒的研究鲜有报道,且在市场上也未见金钗石斛高粱酒的产品流通。
专利(申请号CN201510225793.1)公开了一种铁皮石斛保健酒的生产方法,以铁皮石斛、土豆和山药为主要原料,辅以草豆蔻、厚朴、天仙藤,经清洗、粉碎、糖化、发酵、后发酵、微波辐射、陈酿而制得;专利(申请号CN201210504913.8)公开了一种银杏高粱酒及银杏高粱健身酒的制备方法,以银杏仁和红高粱为原料酿制而成,由银杏叶、银杏花、枸杞、山楂、决明子、黄芪和熟地组成中药,加入银杏高粱酒中浸渍而制得;上述两种产品中药成分较多,消费人群有限。专利(申请号CN201510117608.7)公开了一种高粱酒的制备方法,将高粱经水煮、蒸熟、发酵得到发酵高粱,用高粱白酒浸泡所述发酵高粱后取清液,得到高粱酒,产品成分单一,营养成分不足。并没有石斛紫薯配合发酵出来的酒营养丰富。
发明内容
为克服上述现有技术的缺陷,本发明提供一种金钗石斛紫薯酒的生产工艺,以优化石斛酒的生产工艺,促进金钗石斛的酒饮料开发。
具体是通过以下技术方案得以实现的:
一种金钗石斛紫薯酒的生产工艺,它包括以下步骤:
(1)金钗石斛的处理:取金钗石斛鲜条清洗放入冷藏库中,将温度降低到-25℃冷藏3-5h,在0.6-0.8个标准大气压下,用微波将石斛加热到40-45℃,直至其含水量为8-13%,将金钗石斛加工为粉末,再对粉末进行超微粉碎,得到金钗石斛超微粉备用;
(2)紫薯处理:选用未去皮的紫薯,洗净沥干后,与麦芽、茯苓、狗脊、菊芋、乌梅、金樱子、覆盆子、柠檬打碎为浆液,胶磨3-5次后得到紫薯浆液;
(3)酶解:将步骤(1)所得的金钗石斛超微粉和步骤(2)所得的紫薯浆液混合均匀,得到混合液,加入α-淀粉酶、糖化酶、果胶复合酶、纤维素酶,在45-55℃下存放10-15h,每隔40min搅拌12min,搅拌速率为80-100r/min;
(4)发酵:在步骤(3)酶解后的混合物在130-150℃下处理3-5min,待温度降至常温后,加入混合物质量0.8-1.3%的活化酒曲,在33-45℃下发酵80-130h,每小时搅拌10min,搅拌速率为100-130r/min,然后将温度降至3-9℃,密封静置发酵8-12天;
(5)分离:将步骤(4)得到的发酵产物经真空抽滤过滤,得到滤液与滤渣,将滤渣与其质量0.5-0.8倍葡萄酒混合,在40-55℃下密封浸泡6-10h,待温度降至室温后真空抽滤,合并两次滤液进行微滤后,在3-7℃下静置5-9个月,得到金钗石斛紫薯酒。
进一步的,步骤(2)中,所述紫薯、麦芽、茯苓、狗脊、菊芋、乌梅、金樱子、覆盆子、柠檬的质量比为25:6:2:1:7:3:4:3:7。
进一步的,步骤(3)中,所述金钗石斛超微粉和的紫薯浆液的质量比为1:7。
进一步的,步骤(3)中,所述α-淀粉酶的质量为混合液质量的0.8-1.2%;所述糖化酶的质量为混合液质量的0.6-0.8%;所述果胶复合酶的质量为混合液质量的0.6-0.9%;所述纤维素酶的质量为混合液质量的0.3-0.8%。
本发明的有益效果:
1、本发明将金钗石斛超微粉碎,配合紫薯、麦芽、茯苓、狗脊、菊芋、乌梅、金樱子、覆盆子、柠檬制作成的浆液,使得混合物有机酸含量高,呈弱酸性,提高酶解效率,最大化破解原料细胞壁,酶解产物经短时间的高温处理,既可以熟化营养物质,又能防止其中活性成分的分解,并且其中碳水化合物丰富,加入酒曲发酵之后,多糖、单糖成分进一步增加,提高了酒的口感、营养价值、保健功能。
2、本发明将发酵后的产物过滤,滤渣又经葡萄酒浸泡过滤,最大化利用原料中的营养成分,节省成本。
3、本发明石斛酒对中风手足不遂,骨节疼痛,肌肉顽麻,腰膝酸痛有显著的治疗效果,对于治疗患有风虚劳,腹内冷,不多食,脚气痹弱,筋骨疼痛也有显著效果。
具体实施方式
实施例1
一种金钗石斛紫薯酒的生产工艺,它包括以下步骤:
(1)金钗石斛的处理:取金钗石斛鲜条清洗放入冷藏库中,将温度降低到-25℃冷藏3h,在0.6个标准大气压下,用微波将石斛加热到40℃,直至其含水量为8%,将金钗石斛加工为粉末,再对粉末进行超微粉碎,得到金钗石斛超微粉备用;
(2)紫薯处理:选用未去皮的紫薯,洗净沥干后,与麦芽、茯苓、狗脊、菊芋、乌梅、金樱子、覆盆子、柠檬打碎为浆液,胶磨3次后得到紫薯浆液;其中,所述紫薯、麦芽、茯苓、狗脊、菊芋、乌梅、金樱子、覆盆子、柠檬的质量比为25:6:2:1:7:3:4:3:7;
(3)酶解:将步骤(1)所得的金钗石斛超微粉和步骤(2)所得的紫薯浆液混合均匀,得到混合液,加入α-淀粉酶、糖化酶、果胶复合酶、纤维素酶,在45℃下存放10h,每隔40min搅拌12min,搅拌速率为80r/min;其中,所述金钗石斛超微粉和的紫薯浆液的质量比为1:7;所述α-淀粉酶的质量为混合液质量的0.8%;所述糖化酶的质量为混合液质量的0.6%;所述果胶复合酶的质量为混合液质量的0.6%;所述纤维素酶的质量为混合液质量的0.3%;

实施例2
一种金钗石斛紫薯酒的生产工艺,它包括以下步骤:
(1)金钗石斛的处理:取金钗石斛鲜条清洗放入冷藏库中,将温度降低到-25℃冷藏5h,在0.8个标准大气压下,用微波将石斛加热到45℃,直至其含水量为13%,将金钗石斛加工为粉末,再对粉末进行超微粉碎,得到金钗石斛超微粉备用;
(2)紫薯处理:选用未去皮的紫薯,洗净沥干后,与麦芽、茯苓、狗脊、菊芋、乌梅、金樱子、覆盆子、柠檬打碎为浆液,胶磨5次后得到紫薯浆液;其中,所述紫薯、麦芽、茯苓、狗脊、菊芋、乌梅、金樱子、覆盆子、柠檬的质量比为25:6:2:1:7:3:4:3:7;
(3)酶解:将步骤(1)所得的金钗石斛超微粉和步骤(2)所得的紫薯浆液混合均匀,得到混合液,加入α-淀粉酶、糖化酶、果胶复合酶、纤维素酶,在55℃下存放15h,每隔40min搅拌12min,搅拌速率为100r/min;其中,所述金钗石斛超微粉和的紫薯浆液的质量比为1:7;所述α-淀粉酶的质量为混合液质量的1.2%;所述糖化酶的质量为混合液质量的0.8%;所述果胶复合酶的质量为混合液质量的0.9%;所述纤维素酶的质量为混合液质量的0.8%;
(4)发酵:在步骤(3)酶解后的混合物在150℃下处理5min,待温度降至常温后,加入混合物质量1.3%的活化酒曲,在45℃下发酵130h,每小时搅拌10min,搅拌速率为130r/min,然后将温度降至9℃,密封静置发酵12天;
(5)分离:将步骤(4)得到的发酵产物经真空抽滤过滤,得到滤液与滤渣,将滤渣与其质量0.8倍葡萄酒混合,在55℃下密封浸泡10h,待温度降至室温后真空抽滤,合并两次滤液进行微滤后,在7℃下静置9个月,得到金钗石斛紫薯酒。
试验例
选取267名于阴虚潮热、盗汗、睡眠差、食欲不振患者,患者年龄在35-75之间,没有其他疾病或者器质性损伤,其症状持续时间超过3个月、且没有减轻迹象,患者每日早餐、中餐后,饮用本发明石斛紫薯酒25ml,连续饮用3个月,期间不服用其他药物,不改变原有饮食习惯。
疗效评定标准:显效,症状消失、体质恢复正常、观察一年无复发者;好转,症状明显好转、体质逐渐恢复;无效,达不到好转标准者。

由以上数据可以看出,本发明保健酒的有效率达到97.4%,其中显效率达到81.3%,并且,饮用患者反应本发明石斛紫薯酒口感微带酸甜、气味芬芳,口感上佳,显效及好转患者表示,饮用本发明酒之后,相对以前,不易疲劳,腿脚更有力,可见本发明保健效果显著。

(4)发酵:在步骤(3)酶解后的混合物在130-150℃下处理3-5min,待温度降至常温后,加入混合物质量0.8-1.3%的活化酒曲,在33-45℃下发酵80-130h,每小时搅拌10min,搅拌速率为100-130r/min,然后将温度降至3-9℃,密封静置发酵8-12天;

3.根据权利要求1所述的金钗石斛紫薯酒的生产工艺,其特征在于,步骤(3)中,所述金钗石斛超微粉和的紫薯浆液的质量比为1:7。
4.根据权利要求1所述的金钗石斛紫薯酒的生产工艺,其特征在于,步骤(3)中,所述α-淀粉酶的质量为混合液质量的0.8-1.2%;所述糖化酶的质量为混合液质量的0.6-0.8%;所述果胶复合酶的质量为混合液质量的0.6-0.9%;所述纤维素酶的质量为混合液质量的0.3-0.8%。
