本发明公开了一种富蛋白藜麦素食养生粥及制备方法,属于保健食品技术领域,由以下质量份配比的原料制成:大米80~100份、糯米60~80份、藜麦仁40~50份、燕麦仁20~30份、花生仁10~15份、红豆10~20份、绿豆10~20份、红枣10~20份、大豆浓缩蛋白20~30份、食用碱8~12份,本发明的素食养生粥,以大米、糯米为主要原料,辅以藜麦仁、燕麦仁、花生仁等高蛋白食材,再搭配大豆浓缩蛋白以强化素食养生粥的蛋白质含量及氨基酸种类,含有人体必需的全部8种必需氨基酸尤其富含植物中缺乏的赖氨酸,且不含大豆抗营养因子,消化率高,营养丰富均衡,性状稳定口感细腻,适合各类人群食用,是一种理想的绿色健康食品。

技术领域
本发明属于保健食品技术领域,特别涉及一种富蛋白藜麦素食养生粥及制备方法。
背景技术
粥是中国传承千年的重要食品,可调节胃口,增进食欲,补充身体需要的水分,备受历代养生家的重视。它味道鲜美、润喉易食,营养丰富又易于消化,实在是养生保健的佳品。
粥的妙不可言,在于它介于饭、菜和汤三者之间。有饭的饱腹之功,有菜的美味爽口,也不乏汤的营养开胃。粥既适合做早餐,也适合做夜宵,因为,粥中的淀粉充分地与水分结合,既提供热能,又不乏大量水分,极易消化。早起,食粥一大碗,空腹胃虚,谷气便作,所补不细,又极柔腻,与肠胃相得,最为饮食之妙诀。
食粥还可以辅助治疗各种疾病,保健养生,使人延年益寿,由此也衍生出了各种以养生为名义的养生粥。
现有技术的养生粥,主要以大米、小米、糯米、糯米、燕麦、荞麦、玉米、豆类等五谷杂粮作为主材,添加各种药食同源的辅材经熬制而成,其中营养物质主要为碳水化合物,热量高,而作为人类生命的物质基础的蛋白质含量则极低,营养单一,无法满足人们对营养和保健的需求。
发明内容
本发明为克服现有技术中存在的问题,提供一种富蛋白藜麦素食养生粥及制备方法,以大米、糯米为主要原料,辅以藜麦仁、燕麦仁、花生仁等高蛋白食材,再搭配大豆浓缩蛋白以强化素食养生粥的蛋白质含量及氨基酸种类,含有人体必需的全部8种必需氨基酸尤其富含植物中缺乏的赖氨酸,且不含大豆抗营养因子,消化率高,营养丰富均衡,性状稳定口感细腻,适合各类人群食用,是一种理想的绿色健康食品。
一种富蛋白藜麦素食养生粥,由以下质量份配比的原料制成:
大米80~100份、糯米60~80份、藜麦仁40~50份、燕麦仁20~30份、花生仁10~15份、红豆10~20份、绿豆10~20份、红枣10~20份、大豆浓缩蛋白20~30份、食用碱8~12份。
进一步的,大米90份、糯米70份、藜麦仁45份、燕麦仁30、花生仁12份、红豆10份、绿豆10份、红枣20份、大豆浓缩蛋白25份、食用碱10份。
进一步的,所述大豆浓缩蛋白为醇法大豆浓缩蛋白。
进一步的,所述大豆浓缩蛋白的干基蛋白质含量65~75%,脂肪含量不大于0.5%。
一种富蛋白藜麦素食养生粥的制备方法,包括以下步骤:
S1、将大米、糯米、藜麦仁、燕麦仁浸泡8~12小时;花生仁、红豆、绿豆浸泡12~24小时;红枣,洗净去核,切块备用;
S2、将大豆浓缩蛋白、食用碱按比例混合均匀,加入6~10倍于浓缩蛋白质量的清水,利用均质机均质,加热至50~70℃并保持2~4小时,沥干,得到蛋白浆料、及蛋白浆液,备用;
S3、将大米、糯米、藜麦仁、燕麦仁、花生仁、红豆、绿豆放入锅中,加水,大火烧至沸腾;
S4、加入红枣及步骤S2中得到的蛋白浆液,搅拌均匀,关小火熬制至糯米完全煮熟;
S5、加入步骤S2中得到的蛋白浆料,搅拌均匀,继续小火熬制10~15分钟,关火冷却。
进一步的,步骤S2中,得到的蛋白浆料及蛋白浆液均在50~70℃环境中保温备用。
进一步的,步骤S5中,熬制的温度为50~70℃。
进一步的,还包括设于步骤S5后的,以下步骤:
S6、装罐、采用巴氏灭菌法灭菌。
进一步的,步骤S6中,灭菌温度为62~65℃,灭菌时间为20~30分钟。
本发明配方中:
藜麦,是全谷全营养完全蛋白碱性食物,胚芽占种子的30%,且具有营养活性,优质藜麦的蛋白质含量高达16%-22%(牛肉20%),品质与奶粉及肉类相当,富含多种氨基酸,其中有人体必需的全部8种必需氨基酸,比例适当且易于吸收,尤其富含植物中缺乏的赖氨酸,钙、镁、磷、钾、铁、锌、硒、锰、铜等矿物质营养含量高,富含不饱和脂肪酸、类黄酮、B族维生素和E族维生素、胆碱、甜菜碱、叶酸、α-亚麻酸、β-葡聚糖等多种有益化合物,膳食纤维素含量高达7.1%,胆固醇为0,不含麸质,低脂,低热量(305kcal/100g),低升糖(GI升糖值35,低升糖标准为55),几乎都是常见食物里最优秀的。
藜麦属于易熟易消化食品,口感独特,有淡淡的坚果清香或者人参香,具有均衡补充营养、增强机体功能、修复体质、调节免疫和内分泌、提高机体应激能力、预防疾病、抗癌、减肥、辅助治疗等功效,适于所有群体食用,尤其适于高血糖、高血压、高血脂、心脏病等慢性病,以及婴幼儿、孕产妇、儿童、学生、老年人等特殊体质和生活不规律人群。长期食用,效果显著。
燕麦,营养丰富及全面,具有独特的保健功能。据中国医学科学院卫生研究所综合分析,中国裸燕麦含粗蛋白质达15.6%,脂肪8.5%,还有淀粉释放热量以及磷、铁、钙等元素,与其它8种粮食相比,均名列前茅。燕麦的蛋白质含量是大米的1.5~3倍,且氨基酸组成比较全面,人体必需的8种氨基酸含量的均居首位,尤其是含赖氨酸高达0.68克。燕麦具有降血脂、降血糖、降低胆固醇和防止多种疾病等保健功效,是目前为止,美国农作物中唯一被FDA认证的保健食品。
花生仁中,蛋白质含量高达25%~36%,脂肪含量约40%,维生素A、维生素B6、维生素E、维生素K,以及矿物质钙、磷、铁等营养成分,含有8种人体所需的氨基酸及不饱和脂肪酸,含卵磷脂、胆碱、胡萝卜素、粗纤维等物质;具有扶正补虚、悦脾和胃、润肺化痰、滋养调气、利水消肿、止血生乳、清咽止疟、促进人的脑细胞发育,增强记忆的作用。
大豆浓缩蛋白,是以低温脱脂大豆粉为原料,去除其中可溶性糖类及灰分等,制得的蛋白质含量在65%(Nx6.25,干基)以上的大豆蛋白产品。其中,采用乙醇洗涤法制备的大豆浓缩蛋白,因其生产工艺简单、高效,产品色泽好、蛋白质回收率高,不产生污水或废物,不需要专门的污水或废物处理,生产成本低,而广泛应用,该法得到的大豆浓缩蛋白称为醇法大豆浓缩蛋白。
醇法大豆浓缩蛋白(SPC),蛋白质含量高,各种氨基酸含量极其丰富,不含大豆抗营养因子(胰蛋白酶抑制因子、大豆凝集素、大豆球蛋白以及β-伴大豆球蛋白),消化率高,具有良好的凝胶性、持油持水性。但因为乙醇对蛋白质的变性作用,醇法大豆浓缩蛋白的氮溶解指数(NSI)小于10%,使得其在食品中的应用范围受到了极大的限制。
相对于现有技术,本发明取得了以下有益效果:
1、本发明的富蛋白藜麦素食养生粥,以大米、糯米为主要原料,辅以藜麦仁、燕麦仁、花生仁等高蛋白食材,再搭配大豆浓缩蛋白以强化素食养生粥的蛋白质含量及氨基酸种类,含有人体必需的全部8种必需氨基酸尤其富含植物中缺乏的赖氨酸,且不含大豆抗营养因子,消化率高,营养丰富均衡,利用大豆浓缩蛋白良好的持油持水性,制备的素食养生粥性状稳定口感细腻,适合各类人群食用,特别针对免疫力低下、经常熬夜的工作者、术后伤后康复者及运动者等需要补充蛋白质的人群,是一种理想的绿色健康食品。
2、本发明的富蛋白藜麦素食养生粥的制备方法,大豆浓缩蛋白、食用碱按比例混合经过一系列预处理,得到蛋白浆料、及蛋白浆液。经处理后的大豆浓缩蛋白与水的亲和能力更佳,制得的素食养生粥的不仅蛋白含量高,而且性状稳定口感细腻;蛋白浆液,在熬制过程的大火转小火时添加,可有效缩短熬制时间,口感粘稠,而且可有效避免食用碱的熬制过程中对维生素的破坏作用,提高素食养生粥的营养均衡性。
3、本发明的富蛋白藜麦素食养生粥的制备方法,对大豆浓缩蛋白的预处理及添加熬制的温度均控制在70℃以下,可有效减少蛋白质的热变性,有利于提高素食养生粥中的蛋白功能性及消化率。

下面将结合本发明的实施例,对发明的技术方案进行清楚、完整地描述。显然,所描述的实施例仅仅是本发明的一部分实施例,而不是全部的实施例。基于本发明的实施例,本领域普通技术人员在没有作出创造性劳动前提下所获得的所有其他实施例,都属于本发明保护的范围。
实施例1
一种富蛋白藜麦素食养生粥,由以下质量份配比的原料制成:
大米80份、糯米80份、藜麦仁45份、燕麦仁20份、花生仁10份、红豆10份、绿豆20份、红枣20份、大豆浓缩蛋白30份、食用碱8份。
上述的富蛋白藜麦素食养生粥的制备方法,包括以下步骤:
S1、将大米、糯米、藜麦仁、燕麦仁浸泡10小时;花生仁、红豆、绿豆浸泡18小时;红枣,洗净去核,切块备用;
S2、将大豆浓缩蛋白、食用碱按比例混合均匀,加入8倍于浓缩蛋白质量的清水,利用均质机均质,加热至70℃并保持4小时,沥干,得到蛋白浆料、及蛋白浆液,50~70℃环境中备用;
S3、将大米、糯米、藜麦仁、燕麦仁、花生仁、红豆、绿豆放入锅中,加水,大火烧至沸腾;
S4、加入红枣及步骤S2中得到的蛋白浆液,搅拌均匀,关小火熬制至糯米完全煮熟;
S5、加入步骤S2中得到的蛋白浆料,搅拌均匀,控制温度在60℃,小火熬制15分钟,关火冷却。
S6、装罐、采用巴氏灭菌法灭菌,灭菌温度为62~65℃,灭菌时间为20~30分钟。
实施例2
一种富蛋白藜麦素食养生粥,由以下质量份配比的原料制成:
大米90份、糯米80份、藜麦仁50份、燕麦仁30份、花生仁15份、红豆15份、绿豆10份、红枣10份、大豆浓缩蛋白25份、食用碱12份。
上述的富蛋白藜麦素食养生粥的制备方法,包括以下步骤:
S1、将大米、糯米、藜麦仁、燕麦仁浸泡12小时;花生仁、红豆、绿豆浸泡12小时;红枣,洗净去核,切块备用;
S2、将大豆浓缩蛋白、食用碱按比例混合均匀,加入10倍于浓缩蛋白质量的清水,利用均质机均质,加热至50℃并保持2小时,沥干,得到蛋白浆料、及蛋白浆液,50~70℃环境中备用;
S3、将大米、糯米、藜麦仁、燕麦仁、花生仁、红豆、绿豆放入锅中,加水,大火烧至沸腾;
S4、加入红枣及步骤S2中得到的蛋白浆液,搅拌均匀,关小火熬制至糯米完全煮熟;
S5、加入步骤S2中得到的蛋白浆料,搅拌均匀,控制温度在70℃,小火熬制15分钟,关火冷却。
S6、装罐、采用巴氏灭菌法灭菌,灭菌温度为62~65℃,灭菌时间为20~30分钟。
实施例3
一种富蛋白藜麦素食养生粥,由以下质量份配比的原料制成:
大米100份、糯米60份、藜麦仁40份、燕麦仁25份、花生仁15份、红豆20份、绿豆15份、红枣20份、大豆浓缩蛋白20份、食用碱10份。
上述的富蛋白藜麦素食养生粥的制备方法,包括以下步骤:
S1、将大米、糯米、藜麦仁、燕麦仁浸泡12小时;花生仁、红豆、绿豆浸泡24小时;红枣,洗净去核,切块备用;
S2、将大豆浓缩蛋白、食用碱按比例混合均匀,加入6倍于浓缩蛋白质量的清水,利用均质机均质,加热至50℃并保持3小时,沥干,得到蛋白浆料、及蛋白浆液,50~70℃环境中备用;
S3、将大米、糯米、藜麦仁、燕麦仁、花生仁、红豆、绿豆放入锅中,加水,大火烧至沸腾;
S4、加入红枣及步骤S2中得到的蛋白浆液,搅拌均匀,关小火熬制至糯米完全煮熟;
S5、加入步骤S2中得到的蛋白浆料,搅拌均匀,控制温度在70℃,小火熬制10分钟,关火冷却。
S6、装罐、采用巴氏灭菌法灭菌,灭菌温度为62~65℃,灭菌时间为20~30分钟。
实施例4
一种富蛋白藜麦素食养生粥,由以下质量份配比的原料制成:

1.一种富蛋白藜麦素食养生粥,其特征在于,由以下质量份配比的原料制成:
大米80~100份、糯米60~80份、藜麦仁40~50份、燕麦仁20~30份、花生仁10~15份、红豆10~20份、绿豆10~20份、红枣10~20份、大豆浓缩蛋白20~30份、食用碱8~12份。
2.根据权利要求1所述的麦素食养生粥,其特征在于,大米90份、糯米70份、藜麦仁45份、燕麦仁30、花生仁12份、红豆10份、绿豆10份、红枣20份、大豆浓缩蛋白25份、食用碱10份。
3.根据权利要求1~2任一项所述的素食养生粥,其特征在于,所述大豆浓缩蛋白为醇法大豆浓缩蛋白。
4.根据权利要求3所述的素食养生粥,其特征在于,所述大豆浓缩蛋白的干基蛋白质含量65~75%,脂肪含量不大于0.5%。
5.一种富蛋白藜麦素食养生粥的制备方法,其特征在于,包括以下步骤:
S1、将大米、糯米、藜麦仁、燕麦仁浸泡8~12小时;花生仁、红豆、绿豆浸泡12~24小时;红枣,洗净去核,切块备用;
S2、将大豆浓缩蛋白、食用碱按比例混合均匀,加入6~10倍于浓缩蛋白质量的清水,利用均质机均质,加热至50~70℃并保持2~4小时,沥干,得到蛋白浆料、及蛋白浆液,备用;
S3、将大米、糯米、藜麦仁、燕麦仁、花生仁、红豆、绿豆放入锅中,加水,大火烧至沸腾;
S4、加入红枣及步骤S2中得到的蛋白浆液,搅拌均匀,关小火熬制至糯米完全煮熟;
S5、加入步骤S2中得到的蛋白浆料,搅拌均匀,继续小火熬制10~15分钟,关火冷却。
6.根据权利要求5所述的素食养生粥的制备方法,其特征在于,步骤S2中,得到的蛋白浆料及蛋白浆液均在50~70℃环境中保温备用。
7.根据权利要求5所述的素食养生粥的制备方法,其特征在于,步骤S5中,熬制的温度为50~70℃。
8.根据权利要求5~7任一项所述的素食养生粥的制备方法,其特征在于,还包括设于步骤S5后的,以下步骤:
S6、装罐、灭菌。
9.根据权利要求8所述的素食养生粥的制备方法,其特征在于,步骤S6中,灭菌采用巴氏灭菌法,灭菌温度为62~65℃,灭菌时间为20~30分钟。
