代餐粉是一种由谷类、豆类、薯类、膳食纤维制成的一种单一或者综合性的冲调粉剂产品,具有营养均衡、食用方便快捷,可以代替正餐食用,尤其是适合代替晚餐,可以很好的控制饮食热量,补充全面的营养。但是目前市场上的老年代餐大多是考虑到老年人进食不流畅而生产的易食的代餐膏、代餐粉等,但是忽略了营养问题和养生问题,尤其是缺少针对预防三高、延缓老年痴呆、增强免疫力的功能性的营养代餐粉,因此,需要研发适合老年人食用的具有预防三高、延缓老年痴呆、增强免疫力的功能性的营养代餐粉。

(1)按重量份将大豆、小米、荞麦、燕麦、糙米、薏仁混合,放入红外炉中烘焙,冷却,研磨,过筛,然后混合搅拌均匀,得到混合粉末备用;
(2)按重量份将蛹虫草、决明子、百合、葛根、枸杞洗干净,粉碎,置于提取罐中,经过3次提取,得到中药提取液;将中药提取液真空浓缩,干燥得到中药提取物;
(3)按重量份将山药、莲藕、胡萝卜、南瓜、香菇、黑木耳清洗干净,切成碎粒,烘干,研磨过筛,得到蔬菜粉;
(4)去核的大枣、去皮的核桃、芡实、莲子、酸枣仁分别洗净、烘干,然后粉碎拌匀,过筛,加入步骤(1)中的混合粉末和步骤(2)中的中药提取物,混合搅拌均匀,加入步骤(3)中的蔬菜粉、黄精继续搅拌混合,得到混合粉;
(5)将步骤(4)中的混合粉置于烘箱中烘干,烘至水分含量为1-5%,冷却后对产品进行紫外灭菌处理,冷却至室温后,再装入外包装中,即为所述老年人营养代餐粉。

(4)去核的大枣、去皮的核桃、芡实、莲子、酸枣仁分别洗净、烘干,然后粉碎拌匀,过筛,加入步骤(1)中的混合粉末和步骤(2)中的中药提取物,混合搅拌均匀,加入步骤(3)中的蔬菜粉、黄精继续在300r/min的速度下搅拌混合120min,得到混合粉;
(5)将步骤(4)中的混合粉置于烘箱中在80℃烘干,烘至水分含量为1-5%,冷却后对产品进行紫外灭菌处理,冷却至室温后,再装入外包装中,即为所述老年人营养代餐粉。
实施例2
一种老年人营养代餐粉,以重量份计,包括如下原料:大豆50份,小米50份,荞麦50份,燕麦50份,糙米50份,薏仁50份,蛹虫草30份,决明子25份,山药25份,芡实15份,百合15份,莲子15份,莲藕10份,胡萝卜10份,南瓜10份,香菇10份,核桃10份,大枣10份,酸枣仁10份,黑木耳5份,黄精5份,葛根5份,枸杞5份;
一种多功能代餐粉的制备方法,包括以下步骤:
(1)按重量份将大豆、小米、荞麦、燕麦、糙米、薏仁混合,放入红外炉中在100-150℃烘焙,冷却,研磨,过筛,然后混合搅拌均匀,得到混合粉末备用;
(2)按重量份将蛹虫草、决明子、百合、葛根、枸杞洗干净,粉碎,置于提取罐中,提取温度为98℃,经过3次提取,第一次提取40min,第二次提取30min,第三次提取15min;得到中药提取液,将中药提取液真空浓缩,干燥得到中药提取物;
(3)按重量份将山药、莲藕、胡萝卜、南瓜、香菇、黑木耳清洗干净,切成碎粒,烘干,研磨过筛,得到蔬菜粉;
(4)去核的大枣、去皮的核桃、芡实、莲子、酸枣仁分别洗净、烘干,然后粉碎拌匀,过筛,加入步骤(1)中的混合粉末和步骤(2)中的中药提取物,混合搅拌均匀,加入步骤(3)中的蔬菜粉、黄精继续在500r/min的速度下搅拌混合80min,得到混合粉;
(5)将步骤(3)中的混合粉置于烘箱中在90℃烘干,烘至水分含量为1-5%,冷却后对产品进行紫外灭菌处理25min,冷却至室温后,再装入外包装中,即为所述多功能代餐粉。
实施例3
一种老年人营养代餐粉,以重量份计,包括如下原料:大豆60份,小米60份,荞麦60份,燕麦60份,糙米60份,薏仁60份,蛹虫草40份,决明子30份,山药30份,芡实20份,百合20份,莲子20份,莲藕15份,胡萝卜15份,南瓜15份,香菇15份,核桃15份,大枣15份,酸枣仁15份,黑木耳10份,黄精10份,葛根10份,枸杞10份;
一种多功能代餐粉的制备方法,包括以下步骤:
(1)按重量份将大豆、小米、荞麦、燕麦、糙米、薏仁混合,放入红外炉中在100-150℃烘焙,冷却,研磨,过筛,然后混合搅拌均匀,得到混合粉末备用;
(2)按重量份将蛹虫草、决明子、百合、葛根、枸杞洗干净,粉碎,置于提取罐中,提取温度为100℃,经过3次提取,第一次提取60min,第二次提取20min,第三次提取10min;得到中药提取液,将中药提取液真空浓缩,干燥得到中药提取物;
(3)按重量份将山药、莲藕、胡萝卜、南瓜、香菇、黑木耳清洗干净,切成碎粒,烘干,研磨过筛,得到蔬菜粉;
(4)去核的大枣、去皮的核桃、芡实、莲子、酸枣仁分别洗净、烘干,然后粉碎拌匀,过筛,加入步骤(1)中的混合粉末和步骤(2)中的中药提取物,混合搅拌均匀,加入步骤(3)中的蔬菜粉、黄精继续在800r/min的速度下搅拌混合30min,得到混合粉;
(5)将步骤(3)中的混合粉置于烘箱中在100℃烘干,烘至水分含量为1-5%,冷却后对产品进行紫外灭菌处理20min,冷却至室温后,再装入外包装中,即为所述多功能代餐粉。

1.一种老年人营养代餐粉,其特征在于,以重量份计,包括如下原料:大豆40-60份,小米40-60份,荞麦40-60份,燕麦40-60份,糙米40-60份,薏仁40-60份,蛹虫草20-40份,决明子20-30份,山药20-30份,芡实10-20份,百合10-20份,莲子10-20份,莲藕5-15份,胡萝卜5-15份,南瓜5-15份,香菇5-15份,核桃5-15份,大枣5-15份,酸枣仁5-15份,黑木耳1-10份,黄精1-10份,葛根1-10份,枸杞1-10份。
2.根据权利要求1所述的老年人营养代餐粉,其特征在于,以重量份计,包括如下原料:大豆50份,小米50份,荞麦50份,燕麦50份,糙米50份,薏仁50份,蛹虫草30份,决明子25份,山药25份,芡实15份,百合15份,莲子15份,莲藕10份,胡萝卜10份,南瓜10份,香菇10份,核桃10份,大枣10份,酸枣仁10份,黑木耳5份,黄精5份,葛根5份,枸杞5份。
3.一种如权利要求1至2中任一项所述的老年人营养代餐粉的制备方法,其特征在于,包括以下步骤:
(1)按重量份将大豆、小米、荞麦、燕麦、糙米、薏仁混合,放入红外炉中烘焙,冷却,研磨,过筛,然后混合搅拌均匀,得到混合粉末备用;
(2)按重量份将蛹虫草、决明子、百合、葛根、枸杞洗干净,粉碎,置于提取罐中,经过3次提取,得到中药提取液;将中药提取液真空浓缩,干燥得到中药提取物;
(3)按重量份将山药、莲藕、胡萝卜、南瓜、香菇、黑木耳清洗干净,切成碎粒,烘干,研磨过筛,得到蔬菜粉;
(4)去核的大枣、去皮的核桃、芡实、莲子、酸枣仁分别洗净、烘干,然后粉碎拌匀,过筛,加入步骤(1)中的混合粉末和步骤(2)中的中药提取物,混合搅拌均匀,加入步骤(3)中的蔬菜粉、黄精继续搅拌混合,得到混合粉;
(5)将步骤(4)中的混合粉置于烘箱中烘干,烘至水分含量为1-5%,冷却后对产品进行紫外灭菌处理,冷却至室温后,再装入外包装中,即为所述老年人营养代餐粉。
4.根据权利要求3所述的老年人营养代餐粉的制备方法,其特征在于,步骤(1)中所述烘焙温度为100-150℃。
5.根据权利要求3所述的老年人营养代餐粉的制备方法,其特征在于,步骤(2)中所述提取温度为96-100℃。
6.根据权利要求3所述的老年人营养代餐粉的制备方法,其特征在于,步骤(2)中所述3次提取,第一次提取40-80min,第二次提取15-30min,第三次提取5-8min。
7.根据权利要求3所述的老年人营养代餐粉的制备方法,其特征在于,步骤(4)中所述搅拌速度为300-800r/min,搅拌时间为30-120in。
8.根据权利要求3所述的老年人营养代餐粉的制备方法,其特征在于,步骤(5)中所述烘干温度为80-100℃。
