技术领域
本发明属于食品领域,具体涉及一种体内祛湿养生粥及其制备方法。
背景技术
中医认为湿有两种,一种是外湿,一种是内湿;外湿多因气候潮湿、涉水淋雨、居处潮湿所致;另外一种湿气是内湿,内湿是疾病病理变化的产物。内湿严重的症状主要包括以下几个方面:a.食欲不振、腹胀、腹泻等消化功能减退的症状;b.伴有精神委靡、嗜睡、身体发困;c.肚子胀、不想喝水、舌苔白腻等;d.早晨刷牙时就呕吐、恶心,嗓子不舒服等;e.湿气重体内易滋生对身体有害菌类,且代谢不畅通。
目前,随着生活压力的增大,处于亚健康的人越来越多,但千寒易除,一湿难去,目前还没有疗效显著的祛湿药物,主要是一些中草药调理药物,但中草药食取繁琐,大多需要煎煮且味道苦涩,使很多人望而却步。市场上还出现了几种针对祛湿的调理产品,其主要是使用具有祛湿功能的食品材料制成,但这些产品的配方不合理,主要存在以下不足:a.祛湿效果不理想;b.在调理祛湿等症状的同时出现多种其它副作用,比如代谢差等不足;c.功能单一:除了祛湿之外其它方面的保健功能弱。
发明内容
本发明的目的在于提供一种体内祛湿养生粥及其制备方法,以纯天然绿色物质为原料,全程低温发酵萃取分解而成。
基于上述目的,本发明采取如下技术方案:
一种体内祛湿养生粥,由发酵萃取液、固态发酵物料和调味物料按照质量比(0.4~0.6)︰1︰(0.1~0.2)混合发酵而成;具体地,发酵萃取液和固态发酵物料发酵完成后,再加入调味物料混合而成;
所述发酵萃取液由以下重量份数的原料制成:蒲公英1~2份、霍香1~2份、马齿苋1~2份、荷叶1~2份、甘草1.5~2份、陈皮1.5~2份、桔梗1.5~2份、苹果5~7份、香蕉5~7份、蜂蜜5~7份、米酒曲0.5~1份、水100~130份、玉米1.5~2份;
固态发酵物料由以下重量份数的原料制成:砂仁4~5份、芡实10~15份、赤小豆15~20份、薏米仁15~20份、山药15~20份、莲子10~12份、山楂7~9份、红薯干15~20份、红枣肉4~8份、白扁豆8~10份、槐米2~3份、酵母菌0.2~0.3份;
调味物料由以下重量份数的原料组成:黄大豆(即黄豆、大豆)10~12份、山药8~10份。
优选地,上述体内祛湿养生粥,由发酵萃取液、固态发酵物料和调味物料按照质量比0.5︰1︰(0.1~0.2)混合发酵而成;
所述发酵萃取液由以下重量份数的原料制成:蒲公英2份、霍香2份、马齿苋2份、荷叶2份、甘草2份、陈皮2份、桔梗2份、苹果5份、香蕉5份、蜂蜜5份、米酒曲0.5份、水100份、玉米2份;
固态发酵物料由以下重量份数的原料制成:砂仁5份、芡实10份、赤小豆15份、薏米仁15份、山药15份、莲子10份、山楂7份、红薯干15份、红枣肉5份、白扁豆8份、槐米2份、酵母菌0.2份;
调味物料由以下重量份数的原料组成:黄大豆10份、山药10份。
上述体内祛湿养生粥的制备方法,包括以下步骤:
(1)发酵萃取液的制备
a. 将玉米粉碎,过筛,加4~6倍质量的水熬成玉米粥(熬制10~30min)备用;
b. 将苹果、香蕉洗净,沥干水分,切碎;
c. 将蒲公英、霍香、马齿苋、荷叶、甘草、陈皮、桔梗混合粉碎,过筛;
c. 将剩余水、蜂蜜、米酒曲放入发酵萃取桶中,然后加入步骤a、步骤b和步骤c的原料,搅拌均匀后把桶口密封,盖上桶盖;
d. 30~32℃发酵12~18天,期间每天进行搅动,发酵结束后,过滤,得到发酵萃取液;
(2)固态发酵物料的制备
A、将红薯干、赤小豆、薏米仁、白扁豆低温翻炒,直至发出香味,出锅,备用;
B、将山药洗净,切片,沥干水分,加入山药重量10~20%的麦麸,混合后低温翻炒至山药发黄,弃麦麸,留山药备用;
C、按重量份将砂仁、芡实、莲子、山楂、红枣肉、槐米和翻炒过的赤小豆、山药、红薯干、薏米仁白扁豆混合,粉碎,过筛;
D、将步骤C的物料加入固态发酵罐中,加酵母菌,得到固态发酵物料;
E、进一步地,对步骤D中的固态发酵物料进行发酵分解,具体而言:将步骤D中的固态发酵物料与步骤(1)中的发酵萃取液混合均匀,32~39℃转动发酵分解6~8天,发酵结束后低温烘干;
(3)混合调味
I. 将黄大豆低温翻炒至黄大豆变色,粉碎,晾凉;
II. 按重量份将步骤E中低温烘干后物料、翻炒过的黄大豆和剩余翻炒过的山药混合、粉碎,过200目筛,即得。
进一步地,所述低温烘干是指在30~37℃干燥至水分≤10%。
进一步地,所述低温翻炒的温度为80~90℃。所述步骤A中大米、黑米、薏米翻炒的时间为60~100min。所述步骤B和步骤I物料的翻炒时间为40~60min。所述步骤E中转动时的转速为10~12r/min。
本发明的体内祛湿养生粥每天饮用2次(早饭后和晚饭后各一次),每次饮用10g,冲泡方法:40℃以下温开水送服或者冲服。
本发明中部分原料的作用,霍香:藿香味辛、性微温,归脾、胃、肺经,具有祛暑解表,化湿脾,理气和胃的功效,主治外感暑湿、寒湿、湿温及湿阻中焦所致寒热头昏、胸脘痞闷、食少身困、呕吐泄泻,并妊娠恶阻,胎动不安,口臭,鼻渊,手足癣。
甘草:甘草 补脾益气,清热解毒,祛痰止咳,缓急止痛,调和诸药。用于脾胃虚弱,倦怠乏力,心悸气短,咳嗽痰多,脘腹、四肢挛急疼痛,痈肿疮毒,缓解药物毒性、烈性。
荷叶:味苦、涩,性平,归心、肝、脾经,具有清暑利湿、升阳止血的功效。用于治疗暑热病证、脾虚泄泻和多种出血证。现代药理学研究证实,荷叶具有解热、抑菌、解痉、促进肠道蠕动、排出毒素、排水利尿、健康消脂的作用。
砂仁:性味归经:辛,温。归脾、胃、肾经。 功能主治:化湿开胃,温脾止泻,理气安胎。用于湿浊中阻,脘痞不饥,脾胃虚寒,呕吐泄泻,妊娠恶阻,胎动不安。
莲子:莲子主入心脾肾三个脏腑,具有平补气阴、固涩、止泻的功效,用于补气、安神、缩小便,可治疗由肾气不固引起的尿频、遗精等,还可治疗气阴不足导致的失眠、脾虚泄泻、小便清长等。
芡实:固肾涩精,补脾止泄,利水渗湿。治遗精,淋浊,带下,小便不禁,泄泻,痢疾,着痹。
白扁豆:能健脾,化湿,消暑,用于脾虚生湿,食少便溏,白带过多,暑湿吐泻,烦渴胸闷等症状。
赤小豆:甘、酸,平。归心、小肠经。利水消肿,解毒排脓。用于水肿胀满,脚气浮肿,风湿热痹等。
本发明中以藿香、砂仁为君药,甘草、荷叶、莲子、芡实、白扁豆为臣药,桔梗、蒲公英、陈皮、山楂、山药、红枣肉、槐米为佐药,辅以苹果,香蕉,蜂蜜,玉米,红薯干,赤小豆,黄大豆,相互搭配,发挥药效作用,使得得到的固态祛湿养生粥口感酸甜,具有健脾、解毒、袪湿、助消化的功效。
本发明的积极有益效果:
(1)祛湿养生粥全程低温发酵萃取分解而成,利用高科技把原料分解成更加细小的纳米肽系列,本产品均采用纯天然绿色原料,绝不添加任何防腐剂,不仅能很好地保持各原料的营养成分,还能有效分解出各种人体所需的各种微量元素,氨基酸,电解质,矿物质等,更能便于人体的吸收和利用;
(2)该祛湿养生粥能显著地健脾祛湿、清热排毒;
(3)该祛湿养生粥中各种成份的比例合理,其还具有消除疲劳、代谢脂肪等多种功能;
(4)该祛湿养生粥口感好(酸甜风味),无任何副作用,且使食用者增加食欲,长期食用,可增强体质。

实施例1
一种体内祛湿养生粥,由发酵萃取液、固态发酵物料和调味物料按照质量比0.5︰1︰0.15混合发酵而成;
所述发酵萃取液原料组成为:蒲公英2斤、霍香1斤、马齿苋2斤、荷叶1斤、甘草2斤、陈皮1.5斤、桔梗2斤、苹果5斤、香蕉7斤、蜂蜜5斤、米酒曲0.5斤、水120斤、玉米2斤;
固态发酵物料原料组成为:砂仁5斤、芡实10斤、赤小豆20斤、薏米仁15斤、山药20斤、莲子10斤、山楂9斤、红薯干15斤、红枣肉4斤、白扁豆8斤、槐米3斤、酵母菌0.3斤;
调味物料组成为:黄大豆10斤、山药8斤;另准备麦麸3斤。
上述体内祛湿养生粥的制备方法,包括以下步骤:
(1)发酵萃取液的制备
001:每次发酵萃取前要把液态萃取房间打扫干净整洁,房间设备均用紫外线杀菌消毒备用;
002.检查温控设备,加热器,电源线路是否正常,这些操作应在每次装物料前一天完成;
003. 将玉米粉碎,过60目筛,加水10斤熬制10min,得到玉米粥,备用;
004. 将苹果、香蕉洗净,沥干水分,切成约1.5cm2,厚0.2cm左右的块备用;
005. 将蒲公英、霍香、马齿苋、荷叶、甘草、陈皮、桔梗混合粉碎,过8目筛;
006. 将剩余水、蜂蜜、米酒曲放入发酵萃取桶中,然后加入步骤003、步骤004和步骤005的原料,搅拌均匀后把桶口密封,盖上桶盖;
007. 30~32℃发酵12天,期间每天进行搅动(物料装好前两天应每天搅动3次,每次间隔8h,第3天至第5天搅动2次,每次间隔12h,第6天后每天搅动1次,每次搅动完成后要把桶口封好,以免杂菌进入),每次搅匀即可,发酵结束后,过滤,得到发酵萃取液;
需要强调的是,发酵过程中,发酵温度不宜过低,过低容易导致发酵周期较长,同时使得易于感染杂菌;发酵温度也不易过高,主要原因在于,发酵温度过高,对于食材口感影响较大,同时使得微生物生长过快,消耗影响过多,降低粥内营养成分含量。
(2)固态发酵物料的制备
001.发酵分解要把固态发酵车间打扫干净整洁,检测发酵设备,线路功能是否正常,发酵分解车间用紫外线杀菌消毒,发酵分解设备用蒸汽高温灭菌,这些操作均在装物料前一天完成;
002. 将红薯干、赤小豆、薏米仁、白扁豆80~90℃低温翻炒80min(一般炒至发出物料本身的香味),出锅,备用;
003. 将全部山药洗净,切成0.3cm厚的片,沥干水分,和麦麸混合后80~90℃低温翻炒至山药发黄(此时,山药既有山药的香味又有麦麸的香味,而且,山药和麦麸翻炒后可增加山药的药效,翻炒时间约60min),弃麦麸,留山药备用;
004. 将砂仁、芡实、莲子、山楂、红枣肉、槐米和翻炒过的赤小豆、20斤山药、红薯干、薏米仁白扁豆混合,粉碎,过10目筛;
005. 将步骤004的物料加入固态发酵罐中,加酵母菌,得到固态发酵物料;
006. 加入发酵萃取液,转动发酵设备搅拌均匀进行低温发酵,发酵设备温度参数应控制在32~39℃范围,转速10r/min(注,本发酵设备为全自动发酵设备,能自动加热散热,自动转动)定时观察发酵设备,发酵分解6~8天;
007. 低温烘干:前一天把烘干车间打扫干净,整洁,用紫外线消毒杀菌,检测温控设备,风扇,抽湿机,排风扇,线路是否正常,把发酵分解好的物料分别装入托盘中放烘干架上,不能放太厚,太厚不容易烘干,定时翻动物料,每天应1~2次。烘干时抽湿机,风扇,排风扇,加热器要全部打开,温控设备应控制在30~37℃,物料干燥度为水分≤10%;
需要强调和解释的是,本申请制备固体祛湿养生粥过程中,不采用过多的高温灭菌措施,以保证较好的食材口感;而在发酵过程中,强调适当的低温发酵操作,对于发酵温度和发酵时间要求较为严格。这种操作的原因主要是:一方面在于避免高温环境下微生物的快速生长对于养分的快速消耗进而造成营养成分的不必要损失和高温对于产品口感的影响,另一方面也在于确保较好的发酵周期,避免杂菌的生长和制备周期的过长。而低温发酵过程中对于杂菌的控制,一方面主要依赖优势发酵菌种的快速生长、繁殖来抑制、阻碍杂菌生长和感染,同时发酵过程中的偏酸性环境也进一步抑制了其他有害微生物的生长,从而确保最终产品中仅含有对人体有益的微生物菌株,而不含有其他杂菌。
(3)混合调味
008. 将黄大豆80~90℃低温翻炒60min,粉碎,晾凉;
009. 将步骤007、步骤008的物料和剩余的山药混合、粉碎(注,粉碎过程应用低温粉碎设备,粉碎温度不得超过40℃,温度过高物料益生菌容易遭到破坏),过200目筛,即得,分装,每袋10g。
实施例2
一种体内祛湿养生粥,由发酵萃取液、固态发酵物料和调味物料按照质量比0.5︰1︰0.16混合发酵而成;
所述发酵萃取液原料组成为:蒲公英1斤、霍香2斤、马齿苋1斤、荷叶2斤、甘草1.5斤、陈皮2斤、桔梗1.5斤、苹果7斤、香蕉5斤、蜂蜜7斤、米酒曲1斤、水100斤、玉米1.5斤;
固态发酵物料原料组成为:砂仁4斤、芡实15斤、赤小豆15斤、薏米仁20斤、山药15斤、莲子12斤、山楂7斤、红薯干20斤、红枣肉8斤、白扁豆10斤、槐米2斤、酵母菌0.2斤;
调味物料组成为:黄大豆10斤、山药10斤;另准备麦麸3斤。
上述体内祛湿养生粥的制备方法,包括以下步骤:

调味物料由以下重量份数的原料组成:黄大豆10斤、山药10斤;
另准备麦麸4斤。

004. 将砂仁、芡实、莲子、山楂、红枣肉、槐米和翻炒过的赤小豆、15斤山药、红薯干、薏米仁白扁豆混合,粉碎,过10目筛;
005. 将步骤004的物料加入固态发酵罐中,加酵母菌,得到固态发酵物料;
006. 加入发酵萃取液,转动发酵设备搅拌均匀进行低温发酵,发酵设备温度参数应控制在32~39℃范围,转速10r/min(注,本发酵设备为全自动发酵设备,能自动加热散热,自动转动)定时观察发酵设备,发酵分解6~8天;

典型病例:
1、王某,女,25岁,自述口黏口臭、大便发粘、容易疲劳,饮用实施例1的祛湿养生粥(每次10g,早晚各一次,40℃以下温开水送服或者冲服)15天后,口臭有所改善;30天后,大便正常;60天后,面色红润。
2、李某,男,48岁。浮肿体胖,双腿沉重,舌苔白喉。经人介绍饮用本发明实施例2的祛湿养生粥(每次10g,早晚各一次,40℃以下温开水送服或者冲服)养心茶20天后,舌苔白喉减轻;45天后,浮肿减轻,易累感消失;现仍阶段性饮用。
1、临床观察对象
头重如裹、双腿沉重、口黏口臭、舌苔白喉、大便发粘或水肿泻痢等患者共178人,年龄范围为18~55岁,患病时间最短者1个月,最长者3年, 疗效判断标准:治愈:全部症状消失,舌苔变为薄白苔;显效:主症明显改善,次症 全部消失,舌苔明显改善;有效:症状有好转,舌苔有改善;无效:症状、舌苔象均无改善。
2、治疗方法
直接饮用本发明实施例1的养生粥,用量:一日两次,每次用量10g。服用时间:早饭和晚饭后各一次。将养生粥连服1个月为一疗程,最多观察2个疗程。治疗期间少吃甜食、辛辣刺激、油腻的食物。
3、治疗结果
痊愈165例,占92.7%;有效13例,占7.3%;无效0例。
对本实施例所述祛湿养生粥进行检测,检测项目、检测结果和检测方法如表1所示。

由表1至4可知,本发明通过全程低温发酵制得的祛湿养生粥富含各种微量元素,氨基酸,电解质,细小的纳米肽、矿物质等,更能利于人体吸收和利用,从而调和人体机能,达到祛湿养生的目的。

1.一种体内祛湿养生粥,其特征在于,由发酵萃取液、固态发酵物料和调味物料按照质量比(0.4~0.6)︰1︰(0.1~0.2)混合发酵而成;

固态发酵物料由以下重量份数的原料制成:砂仁4~5份、芡实10~15份、赤小豆15~20份、薏米仁15~20份、山药15~20份、莲子10~12份、山楂7~9份、红薯干15~20份、红枣肉4~8份、白扁豆8~10份、槐米2~3份、酵母菌0.2~0.3份;
调味物料由以下重量份数的原料组成:黄大豆10~12份、山药8~10份。
2.根据权利要求1所述的体内祛湿养生粥,其特征在于,由发酵萃取液、固态发酵物料和调味物料按照质量比0.5︰1︰(0.1~0.2)混合发酵而成,
所述发酵萃取液由以下重量份数的原料制成:蒲公英2份、霍香2份、马齿苋2份、荷叶2份、甘草2份、陈皮2份、桔梗2份、苹果5份、香蕉5份、蜂蜜5份、米酒曲0.5份、水100份、玉米2份;
固态发酵物料由以下重量份数的原料制成:砂仁5份、芡实10份、赤小豆15份、薏米仁15份、山药15份、莲子10份、山楂7份、红薯干15份、红枣肉5份、白扁豆8份、槐米2份、酵母菌0.2份;
调味物料由以下重量份数的原料组成:黄大豆10份、山药10份。
3. 权利要求1或2所述体内祛湿养生粥的制备方法,其特征在于,包括以下步骤:
(1)发酵萃取液的制备
a. 将玉米粉碎,过筛,加4~6倍质量的水熬成玉米粥备用;
b. 将苹果、香蕉洗净,沥干水分,切碎;
c. 将蒲公英、霍香、马齿苋、荷叶、甘草、陈皮、桔梗混合粉碎,过筛;
c. 将剩余水、蜂蜜、米酒曲放入发酵萃取桶中,然后加入步骤a、步骤b和步骤c的原料,搅拌均匀;
d. 30~32℃发酵12~18天,期间每天进行搅动,发酵结束后,过滤,得到发酵萃取液;
(2)固态发酵物料的制备
A、将红薯干、赤小豆、薏米仁、白扁豆低温翻炒,直至发出香味,出锅,备用;
B、将山药洗净,切片,沥干水分,加入山药重量10~20%的麦麸,混合后低温翻炒至山药发黄,弃麦麸,留山药备用;
C、按重量份将砂仁、芡实、莲子、山楂、红枣肉、槐米和翻炒过的赤小豆、山药、红薯干、薏米仁白扁豆混合,粉碎,过筛;
D、将步骤C的物料加入固态发酵罐中,加酵母菌,得到固态发酵物料;
E、对步骤D中固态发酵物料进行进一步的发酵分解处理,具体而言:将步骤D的固态发酵物料与步骤(1)的发酵萃取液混合均匀,32~39℃转动发酵分解6~8天,发酵结束后低温烘干;
(3)混合调味
I. 将黄大豆低温翻炒至黄大豆变色,粉碎;
II. 按重量份将步骤E中低温烘干后物料、翻炒过的黄大豆和剩余翻炒过的山药混合、粉碎,过200目筛,即得。
4.根据权利要求3所述养肾分解粥的制备方法,其特征在于,所述低温烘干是指在30~37℃干燥至水分≤10%。
5.根据权利要求3所述体内祛湿养生粥的制备方法,其特征在于,所述低温翻炒的温度为80~90℃。
6.根据权利要求5所述体内祛湿养生粥的制备方法,其特征在于,所述步骤A中红薯干、赤小豆、薏米仁、白扁豆翻炒的时间均为60~100min。
7.根据权利要求5所述体内祛湿养生粥的制备方法,其特征在于,所述步骤B和步骤I物料的翻炒时间均为40~60min。
8.根据权利要求3所述体内祛湿养生粥的制备方法,其特征在于,所述步骤E中转动时的转速为8~12r/min。
