Abstract
本发明公开了一种欧米伽3固体饮料,它采用亚麻籽油微囊粉60‑96重量份、益生菌0.02‑0.1重量份、复合果蔬酵素3‑10重量份、竹叶黄酮3‑20重量份、菊粉1‑10重量份,通过“等量递增法”制成;本发明将益生元和欧米伽3同时包埋成水溶性微囊粉,再将微囊粉同益生菌、复合果蔬酵素、竹叶黄酮优化组和,可改善肠道菌群平衡,增强人体免疫,帮助人体清除血液胆固醇、甘油三酯及人体自由基,在预防及改善心脑血管疾病、糖尿病、癌症等慢病的同时,起到抗病毒抗炎,减轻肠道负担,缓解便秘等胃肠功能虚弱症状的作用,又可促进欧米伽3等营养吸收。

本发明涉及食药用菌深加工技术领域,具体涉及一种富含益生菌、酵素及竹叶黄酮的欧米伽3固体饮料。
背景技术
肠道是营养物质吸收的主要场所,营养物质在肠道内的消化吸收是决定营养高效利用的重要因素。人体肠道健康与肠道菌群密不可分。肠道菌群的失调,可造成免疫系统的过度活跃,从而产生自体免疫疾病。益生菌通过调理肠道菌群,维持肠道菌群的平衡,从而促进营养物质的吸收、提高免疫力、预防和治疗便秘及腹泻、降低血脂、抑制肠道病源和腐败微生物的生长,分解致癌物质等。益生元如低聚异麦芽糖、低聚半乳糖、低聚果糖等是益生菌的营养物质,以未经消化的形式进入肠道,通过降低PH值和被有益菌发酵,促进肠道内双歧杆菌、乳酸杆菌等有益菌生长,帮助其调整肠道健康,促进营养物质包括蛋白质、脂肪酸等的吸收。
酵素指具有生物催化功能的高分子物质。存在于所有的动、植物和微生物体内,是维持机体正常功能,消化食物,修复组织等生命活动的一种必需物质,够加快生化反应的速度,人体每天所摄取食物的消化吸收、体内各器官的运作、细胞的新陈代谢都离不开酵素,而分解进去体内任何物质如蛋白质、脂肪、化合物都需要酵素的参与才能够完成。通过增加酵素,可以分解有害菌的温床——宿便,并使之排出体外,清除毒素。同时对于肠胃道功能虚弱或有障碍者,如:胀气、胃痛、腹泻、便秘、口臭等症状,都可使之得到改善。
近年来,病毒性疾病在动物疾病中占主导地位并种类逐年增多,病毒性疾病具有病原变异快和缺乏特异性的治疗药物等特点,相对于细菌性传染病,其更难以诊断和防治。目前FDA批准用于临床的抗病毒药比抗菌药少得多, 而且还存在毒副作用和耐药性等问题。因此,亟需寻找和开发安全、高效的新型抗病毒药物。
黄酮类化合物具有广泛的药理活性,分布广泛,种类繁多,是天然产物中一类重要的化合物。竹叶黄酮是竹叶提取物的主要活性成分之一,在竹叶中的含量占1-2%,主要以荭草普、异荭草普、牡荆普和异牡荆普等黄酮碳普为主,同时,还含有木犀草素、芹菜素等黄酮普元。与氧普黄酮相比,竹叶黄酮结构稳定、不易降解、食用安全性强。因具备较强的自由基清除能力,从而具有良好的消炎、抗病毒、降血脂、抗辐射、抗癌、抗衰老、改善心血管系统和脑神经系统等功能。
欧米伽3,可简称为ω-3,是一组多元不饱和脂肪酸,常见于深海鱼类和某些植物中,对人体健康十分有益。ω-3成份主要有三种:α-亚麻酸(ALA)、二十碳五烯酸(EPA)、二十二碳六烯酸(DHA)。
欧米伽3(ω-3)是生命的核心物质,是心脏、视网膜、大脑等重要组织的的主要脂肪组分。其中来源于植物的α-亚麻酸(α-Linolenic acid, ALA)是ω-3系不饱和脂肪酸家族的“家长”,其在人体肝脏内、在去饱和酶和延长酶的作用下,能够转化成为人体必需的生命活性因子EPA(二十碳五烯酸,俗称血管清道夫)和DHA(二十二碳六烯酸,俗称脑黄金)。DHA和EPA是脑、视网膜等细胞膜的重要成分,都选择性的渗入大脑皮质、视网膜、睾丸、精子等重要器官中,参与构成乙醇胺磷脂和神经磷脂,同时对提高大脑细胞功能、提高记忆力、预防老年痴呆症、预防心脑血管疾病、癌症、糖尿病等具有显著效果。可以说其对维持人体进化、保持身体健康具有重要作用,但其自身不能合成,必需在食物中摄取。
虽然欧米伽3(ω-3)对人体具有多项重要生理功能,但随着现代人类食物结构的改变,欧米伽3不饱和脂肪酸摄入越来越少。据中国居民的膳食结构的调查结果发现,中国人均欧米伽3摄入量40mg/d,与其他国家相比都相去甚远,甚至不到世界卫生组织和联合国粮农组推荐摄入量的一半,导致人体欧米伽3(ω-3)严重缺乏,破坏人体脂肪酸组成平衡,导致许多“富贵病“如糖尿病、高血压和高血脂的产生,所以必须通过日常饮食来补充。同时,2013版《中国居民膳食营养素参考摄入量》中建议,国人α-亚麻酸每天的摄入量应为1600-1800毫克。
目前,市面上的欧米伽3脂肪酸补充食品主要以深海鱼油、植物性油脂如亚麻籽油、紫苏籽油及其软胶囊为主,其所含欧米伽3脂肪酸为脂溶性,一般具有容易氧化、酸败、不易吸收等缺点,同时也不具备调理肠道健康的功能,对于促消化、缓解便秘胀气、抗病抗炎的功能并不显著。
发明内容
本发明的目的在于针对现有技术的缺陷和不足,提供一种具有调节肠道健康作用的含有益生菌的富含益生菌、酵素及竹叶黄酮的欧米伽3固体饮料。
为实现上述目的,本发明采用的技术方案是:它由如下重量份的组分配比而成:亚麻籽油微囊粉60-96份、益生菌0.02-0.1份、复合果蔬酵素3-10份、竹叶黄酮3-20份、菊粉1-10份;
进一步地,所述的亚麻籽油微囊粉通过以下方法制备:将38份亚麻籽油、0.02份大豆卵磷脂、2份乙酰化单、双甘油脂肪酸酯在60℃条件下混溶并保温制得油相,将28份低聚异麦芽糖粉、24份低聚果糖、6份酪蛋白酸钠、0.1份磷酸氢二钾和70份水在60℃下混溶后保温制得水相,随后将油相加入到水相中,用高速剪切机乳化15-30min后,再以28-30KHz、功率1000-1200W的超声波处理15-30min,将上述得到的乳液在喷雾干燥塔中干燥,保持乳化液温度为65℃,喷雾干燥的进风温度为170℃、出风温度80℃,将乳化液经喷雾干燥后筛分、冷却,制得颗粒;
进一步地,所述的益生菌为嗜酸乳杆菌、乳双岐杆菌、CBT混合益生菌中2种或2种以上组成的菌种;
进一步地,所述的嗜酸乳杆菌、乳双歧杆菌、CBT混合益生菌在定量益生菌粉中的活菌数分别为:嗜酸乳杆菌为3.0×109-3.6×1012cfu/g,乳双歧杆菌为7.0×109-8.5×1012cfu/g,CBT混合益生菌为1.0×109-2.0×1012cfu/g;
进一步地,所述的CBT混合益生菌由下列重量份的组分配比而成:长双歧杆菌4-8份、干酪乳杆菌2-4份、鼠李糖乳杆菌4-8份;
进一步地,所述的CBT混合益生菌中长双歧杆菌、干酪乳杆菌、鼠李糖乳杆菌在定量益生菌粉中的活菌数分别为:长双歧杆菌1.0×109-3.0×1012cfu/g、干酪乳杆菌1.0×109-3.0×1012cfu/g、鼠李糖乳杆菌1.0×109-3.0×1012cfu/g;
进一步地,所述的复合果蔬酵素通过以下方法制备:取木瓜9份、菠萝7份、凤梨9份、蓝莓5份、黑加仑8份、哈密瓜15份、核桃5份、黑木耳10份、香蕉25份、葡萄10份、苹果15份、柠檬10份、桂圆7份、芒果10份、萝卜20份、蘑菇15份、黄瓜15份、南瓜19份、茭白11份、西红柿10份、青瓜14份,并用清水洗净切块,晾干;然后按照1:15(g/ml)比例加入蒸馏水,煮沸1.5小时;再加入50份红糖、30份蜂蜜并搅拌均匀,再离心取上清液;调节所得上清液PH至5.0后投入发酵桶,接入发酵液体积3%的酿酒酵母与乳酸菌,在32℃发酵30天以上,然后过滤、喷雾干燥得果蔬酵素粉;
进一步地,所述的竹叶黄酮通过以下方法制备:将新鲜的淡水竹竹叶在40℃下烘干后粉碎成10目左右大小,然后加入重量比为0.05:0.05的纤维素酶、果胶酶的复合酶解液,在40℃条件下酶解20h,过滤后得酶解液;然后用质量百分比浓度为20-30%的乙醇溶液将所得酶解液于大孔吸附树脂层析柱中等度洗脱除去杂质,得第一洗脱液;再以质量百分比浓度为40-70%的乙醇溶液将所得酶解液于大孔吸附树脂层析柱中等度洗脱,得第二洗脱液;再将第二洗脱液采用减压蒸馏的方法分离出乙醇和固体产物,蒸馏温度为90℃,固体产物烘干至恒重得竹叶黄酮。
进一步地,一种欧米伽3固体饮料的制备工艺为:先将益生菌与亚麻籽油微囊粉按等量递增法混合均匀,再加复合果蔬酵素按等量递增法混合均匀,再加竹叶黄酮按等量递增法混合均匀,最后加菊粉按等量递增法混合均匀。
采用上述方案后,本发明有益效果为:本发明所述的一种欧米伽3固体饮料,将益生元和欧米伽3同时包埋成水溶性微囊粉,再将微囊粉同益生菌、复合果蔬酵素、竹叶黄酮优化组和,人们同时摄入欧米伽3、益生菌、复合果蔬酵素、竹叶黄酮和益菌因子的益生元,可大量增殖有益菌,提高外源性益生菌在肠道粘膜的定植率,改善肠道菌群平衡,增强人体免疫,帮助人体清除血液胆固醇、甘油三酯及人体自由基,在预防及改善心脑血管疾病、糖尿病、癌症等慢病的同时,起到抗病毒抗炎,减轻肠道负担,缓解便秘等胃肠功能虚弱症状的作用,又可促进欧米伽3等营养吸收。
具体实施方式
下面对本发明作进一步的说明。
实施例1:取亚麻籽油微囊粉79.95份、含嗜酸乳杆菌、乳双歧杆菌的益生菌0.05份、复合果蔬酵素5份、竹叶黄酮10份、菊粉5份;采用“等量递增法”,先将益生菌与亚麻籽油微囊粉按等量递增法混合均匀,再加复合果蔬酵素按等量递增法混合均匀,再加竹叶黄酮按等量递增法混合均匀,最后加菊粉按等量递增法混合均匀。
实施例2:取亚麻籽油微囊粉64.9份、含嗜酸乳杆菌、乳双歧杆菌、CBT混合益生菌的益生菌0.1份、复合果蔬酵素10份、竹叶黄酮15份、菊粉10份;采用“等量递增法”,先将益生菌与亚麻籽油微囊粉按等量递增法混合均匀,再加复合果蔬酵素按等量递增法混合均匀,再加竹叶黄酮按等量递增法混合均匀,最后加菊粉按等量递增法混合均匀。
以上所述,仅用以说明本发明的技术方案而非限制,本领域普通技术人员对本发明的技术方案所做的其它修改或者等同替换,只要不脱离本发明技术方案的精神和范围,均应涵盖在本发明的权利要求范围当中。
Claims (9)
1.一种欧米伽3固体饮料,其特征在于它由如下重量份的组分配比而成:亚麻籽油微囊粉60-96份、益生菌0.02-0.1份、复合果蔬酵素3-10份、竹叶黄酮3-20份、菊粉1-10份。
2.根据权利要求1所述的一种欧米伽3固体饮料,其特征在于所述的亚麻籽油微囊粉通过以下方法制备:将38份亚麻籽油、0.02份大豆卵磷脂、2份乙酰化单、双甘油脂肪酸酯在60℃条件下混溶并保温制得油相,将28份低聚异麦芽糖粉、24份低聚果糖、6份酪蛋白酸钠、0.1份磷酸氢二钾和70份水在60℃下混溶后保温制得水相,随后将油相加入到水相中,用高速剪切机乳化15-30min后,再以28-30KHz、功率1000-1200W的超声波处理15-30min,将上述得到的乳液在喷雾干燥塔中干燥,保持乳化液温度为65℃,喷雾干燥的进风温度为170℃、出风温度80℃,将乳化液经喷雾干燥后筛分、冷却,制得颗粒。
3.根据权利要求1所述的一种欧米伽3固体饮料,其特征在于所述的益生菌为嗜酸乳杆菌、乳双岐杆菌、CBT混合益生菌中2种或2种以上组成的菌种。
4.根据权利要求3所述的一种欧米伽3固体饮料,其特征在于所述的嗜酸乳杆菌、乳双歧杆菌、CBT混合益生菌在定量益生菌粉中的活菌数分别为:嗜酸乳杆菌为3.0×109-3.6×1012cfu/g,乳双歧杆菌为7.0×109-8.5×1012cfu/g,CBT混合益生菌为1.0×109-2.0×1012cfu/g。
5.根据权利要求3所述的一种欧米伽3固体饮料,其特征在于所述的CBT混合益生菌由下列重量份的组分配比而成:长双歧杆菌4-8份、干酪乳杆菌2-4份、鼠李糖乳杆菌4-8份。
6.根据权利要求5所述的一种欧米伽3固体饮料,其特征在于所述的CBT混合益生菌中长双歧杆菌、干酪乳杆菌、鼠李糖乳杆菌在定量益生菌粉中的活菌数分别为:长双歧杆菌1.0×109-3.0×1012cfu/g、干酪乳杆菌1.0×109-3.0×1012cfu/g、鼠李糖乳杆菌1.0×109-3.0×1012cfu/g。
7.根据权利要求1所述的一种欧米伽3固体饮料,其特征在于所述的复合果蔬酵素通过以下方法制备:取木瓜9份、菠萝7份、凤梨9份、蓝莓5份、黑加仑8份、哈密瓜15份、核桃5份、黑木耳10份、香蕉25份、葡萄10份、苹果15份、柠檬10份、桂圆7份、芒果10份、萝卜20份、蘑菇15份、黄瓜15份、南瓜19份、茭白11份、西红柿10份、青瓜14份,并用清水洗净切块,晾干;然后按照1:15(g/ml)比例加入蒸馏水,煮沸1.5小时;再加入50份红糖、30份蜂蜜并搅拌均匀,再离心取上清液;调节所得上清液PH至5.0后投入发酵桶,接入发酵液体积3%的酿酒酵母与乳酸菌,在32℃发酵30天以上,然后过滤、喷雾干燥得果蔬酵素粉。
8.根据权利要求1所述的一种欧米伽3固体饮料,其特征在于所述的竹叶黄酮通过以下方法制备:将新鲜的淡水竹竹叶在40℃下烘干后粉碎成10目左右大小,然后加入重量比为0.05:0.05的纤维素酶、果胶酶的复合酶解液,在40℃条件下酶解20h,过滤后得酶解液;然后用质量百分比浓度为20-30%的乙醇溶液将所得酶解液于大孔吸附树脂层析柱中等度洗脱除去杂质,得第一洗脱液;再以质量百分比浓度为40-70%的乙醇溶液将所得酶解液于大孔吸附树脂层析柱中等度洗脱,得第二洗脱液;再将第二洗脱液采用减压蒸馏的方法分离出乙醇和固体产物,蒸馏温度为90℃,固体产物烘干至恒重得竹叶黄酮。
9.一种欧米伽3固体饮料的制备工艺,其特征在于它的工艺方法为:先将益生菌与亚麻籽油微囊粉按等量递增法混合均匀,再加复合果蔬酵素按等量递增法混合均匀,再加竹叶黄酮按等量递增法混合均匀,最后加菊粉按等量递增法混合均匀。
