本发明中通过合理添加大米粉、燕麦粉、富硒酵母粉、鱼粉、中药提取剂、水果粉、卵磷脂、牛磺酸、壳聚糖、海藻酸钠、葡萄糖酸内酯、复合酶制剂和甜味剂,各物料相互配合,其营养丰富,口感爽滑耐咀嚼,具有健脾开胃、理气消食、美容养颜等功效,保健效果好。其中,大米粉、燕麦粉、富硒酵母粉、鱼粉和水果粉、卵磷脂、牛磺酸配合,营养丰富,营养结构合理,有效提高本发明米线整体营养价值,具有解毒生津、健脾开胃、利尿通便、理气活血、排毒养颜、抗衰老、增强免疫力等功效,食疗与养生效果好,有效改善人体体质;再通过添加中药提取剂,合理选用当归、使君子、酸枣仁、柴胡、千里光、桑寄生、芦荟和山楂叶,各中药配伍性好,具有抗炎解热、清肝明目、杀虫止痛、强筋补肾、补血活血、开胃消食等功效,能有效改善人体体质及预防疾病,有效调节本发明制品营养结构,提高本发明制品食疗与保健效果;再通过壳聚糖、海藻酸钠和葡萄糖酸内酯,三者相互配合,具有协同作用,有效改善水分子与本发明淀粉分子之间的相互作用,提高本发明中淀粉分子的热稳定性和凝沉性,改善本发明制品的拉伸强度、柔韧性及内部组织的均一性和持水作用,推迟老化,米线断头率低,复水性好,耐蒸煮,口感爽滑。

实施例1
本发明提出的一种营养爽滑助消化米线,其原料按重量份包括:大米粉220份、燕麦粉20份、富硒酵母粉5份、鱼粉15份、中药提取剂1份、水果粉6份、卵磷脂0.1份、牛磺酸0.05份、壳聚糖1.2份、海藻酸钠1.5份、葡萄糖酸内酯1份、复合酶制剂0.5份、甜味剂1份。
实施例2
本发明提出的一种营养爽滑助消化米线,其原料按重量份包括:大米粉300份、燕麦粉10份、富硒酵母粉12份、鱼粉25份、中药提取剂2份、水果粉12份、卵磷脂0.1份、牛磺酸0.2份、壳聚糖2.2份、海藻酸钠0.8份、葡萄糖酸内酯2份、复合酶制剂0.2份、甜味剂2份。
其中,水果粉的原料按重量份包括:香蕉粉6份、苹果粉10份、柠檬粉2份;水果粉的粒度为80目;
甜味剂由甜菊素、低聚果糖按重量比为1:2组成;
中药提取剂的原料按重量份包括:当归10份、使君子8份、酸枣仁2份、柴胡5份、千里光1份、桑寄生4份、芦荟2份、山楂叶2份;其按以下工艺进行制备:将当归、使君子、酸枣仁、柴胡、千里光、桑寄生、芦荟和山楂叶清洗,干燥,粉碎得到混合中药,然后加水煎煮4次,其中,每次加水量为混合中药总重量的10倍,煎煮温度为90℃,合并煎煮液,真空干燥,研磨过80目筛,得到中药提取剂。
实施例3
本发明提出的一种营养爽滑助消化米线,其原料按重量份包括:大米粉260份、燕麦粉16份、富硒酵母粉9份、鱼粉20份、中药提取剂1.5份、水果粉9份、卵磷脂0.25份、牛磺酸0.12份、壳聚糖1.6份、海藻酸钠1.1份、葡萄糖酸内酯1.5份、复合酶制剂0.35份、甜味剂1.5份。
其中,水果粉的原料按重量份包括:香蕉粉9份、苹果粉8份、柠檬粉5份;水果粉的粒度为90目;
甜味剂由甜菊素、低聚果糖按重量比为1:3组成;
中药提取剂的原料按重量份包括:当归15份、使君子4.8份、酸枣仁4份、柴胡3.5份、千里光2.5份、桑寄生2.5份、芦荟3.5份、山楂叶3份;其按以下工艺进行制备:将当归、使君子、酸枣仁、柴胡、千里光、桑寄生、芦荟和山楂叶清洗,干燥,粉碎得到混合中药,然后加水煎煮5次,其中,每次加水量为混合中药总重量的13倍,煎煮温度为88℃,合并煎煮液,真空干燥,研磨过100目筛,得到中药提取剂。
实施例4
本发明提出的一种营养爽滑助消化米线,其原料按重量份包括:大米粉240份、燕麦粉12份、富硒酵母粉6份、鱼粉16.5份、中药提取剂1.2份、水果粉7份、卵磷脂0.2份、牛磺酸0.1份、壳聚糖1.4份、海藻酸钠1份、葡萄糖酸内酯1.2份、复合酶制剂0.25份、甜味剂1.2份。
其中,水果粉的原料按重量份包括:香蕉粉12份、苹果粉5份、柠檬粉6份;水果粉的粒度为120目;
甜味剂由甜菊素、低聚果糖按重量比为1:1组成;
中药提取剂的原料按重量份包括:当归18份、使君子4份、酸枣仁6份、柴胡2份、千里光4份、桑寄生1份、芦荟5份、山楂叶4份;其按以下工艺进行制备:将当归、使君子、酸枣仁、柴胡、千里光、桑寄生、芦荟和山楂叶清洗,干燥,粉碎得到混合中药,然后加水煎煮6次,其中,每次加水量为混合中药总重量的15倍,煎煮温度为85℃,合并煎煮液,真空干燥,研磨过120目筛,得到中药提取剂。
实施例5
本发明提出的一种营养爽滑助消化米线,其原料按重量份包括:大米粉290份、燕麦粉18份、富硒酵母粉10份、鱼粉22份、中药提取剂1.8份、水果粉8份、卵磷脂0.25份、牛磺酸0.12份、壳聚糖2份、海藻酸钠1.2份、葡萄糖酸内酯1.2份、复合酶制剂0.4份、甜味剂1.8份。
其中,水果粉的原料按重量份包括:香蕉粉10份、苹果粉6份、柠檬粉4份;水果粉的粒度为100目;
甜味剂由甜菊素、低聚果糖按重量比为1.5:4组成;
中药提取剂的原料按重量份包括:当归12份、使君子5.2份、酸枣仁3.5份、柴胡3份、千里光3份、桑寄生2份、芦荟3份、山楂叶2.4份;其按以下工艺进行制备:将当归、使君子、酸枣仁、柴胡、千里光、桑寄生、芦荟和山楂叶清洗,干燥,粉碎得到混合中药,然后加水煎煮5次,其中,每次加水量为混合中药总重量的12倍,煎煮温度为88℃,合并煎煮液,真空干燥,研磨过110目筛,得到中药提取剂。

1.一种营养爽滑助消化米线,其特征在于,其原料按重量份包括:大米粉220-300份、燕麦粉10-20份、富硒酵母粉5-12份、鱼粉15-25份、中药提取剂1-2份、水果粉6-12份、卵磷脂0.1-0.5份、牛磺酸0.05-0.2份、壳聚糖1.2-2.2份、海藻酸钠0.8-1.5份、葡萄糖酸内酯1-2份、复合酶制剂0.2-0.5份、甜味剂1-2份。
2.根据权利要求1所述营养爽滑助消化米线,其特征在于,水果粉的原料按重量份包括:香蕉粉6-12份、苹果粉5-10份、柠檬粉2-6份。
3.根据权利要求1或2所述营养爽滑助消化米线,其特征在于,水果粉的粒度为80-120目。
4.根据权利要求1-3中任一项所述营养爽滑助消化米线,其特征在于,甜味剂由甜菊素、低聚果糖按重量比为1-2:2-4组成。
5.根据权利要求1-4中任一项所述营养爽滑助消化米线,其特征在于,中药提取剂的原料按重量份包括:当归10-18份、使君子4-8份、酸枣仁2-6份、柴胡2-5份、千里光1-4份、桑寄生1-4份、芦荟2-5份、山楂叶2-4份。
6.根据权利要求1-5中任一项所述营养爽滑助消化米线,其特征在于,中药提取剂按以下工艺进行制备:将当归、使君子、酸枣仁、柴胡、千里光、桑寄生、芦荟和山楂叶清洗,干燥,粉碎得到混合中药,然后加水煎煮4-6次,其中,每次加水量为混合中药总重量的10-15倍,煎煮温度为85-90℃,合并煎煮液,真空干燥,研磨过80-120目筛,得到中药提取剂。
