背景技术
果冻呈半固体状,由增稠剂加水、果汁等制成,其外观晶莹,色泽鲜艳,清甜滋润、口感软滑,是一种深受广大消费者喜爱的消闲食品。随着人们生活质量的提高,对消闲食品的营养健康也有了更高的追求,果冻中经常添加一些果肉,然而果肉的品种很少,也都是以鲜果为主,调配研制出新型的果冻,特别是果冻中添加的固型物,需要更加营养,口感更好。
硒对人体的重要生理功能越来越为各国科学家所重视,各国根据本国自身的情况都制定了硒营养的推荐摄入量。美国推荐成年男女硒的每日摄入量(RDI)分别为70微克/天和55微克/天,而英国则为75微克/天和60微克/天。中国营养学会推荐的成年人摄入量为50~200微克/天。

发明内容
为解决现有技术中存在的问题,本申请提供一种富硒美容果冻。
一种富硒美容果冻,包含以下组分:
富硒绿茶粉15-30份、鲜牛奶50-60份、龙眼20-35份、黑花生米8-15份、葡萄糖10-20份、鲜芦荟55-60份、苋菜50-55份、蜂蜜30-35份、亚硒酸钠0.5-2份、高粱淀粉8-10份、红薯粉30-40份、魔芋胶8-15份、果胶4-6份、蜂胶液20-25份、黄瓜霜4-7份、缬草2-5份、百合6-10份、酸枣仁4-8份、首乌藤4-10份、密蒙花5-10份、柠檬酸钠0.1-0.2份、白砂糖50-55份、水溶性叶黄素酯2-10份、凝胶剂20-50份、复配乳化增稠稳定剂20-40份、果糖浆50-200份、甜味剂2-5份、全脂奶粉8-10份、乳酸钙10-40份、水适量。
优选地,所述凝胶剂为黄原胶、魔芋粉、卡拉胶、海藻酸钠和琼脂中的一种或多种组合。
优选地,所述甜味剂为安赛蜜、甜蜜素、阿斯巴甜和甜菊糖中的一种或多种组合。
前述富硒美容果冻的制备方法:
(1)将龙眼洗净,取其果肉,与鲜牛奶、黑花生米混合置于榨汁机中榨汁,所得汁液与亚硒酸钠、葡萄糖合并,充分搅拌,混匀后置于20~25℃条件下发酵20-24小时,将所得发酵物经胶体磨磨浆,用3层纱布过滤,得滤液备用;
(2)将鲜芦荟洗净,切成小块,置于容器中,用其质量6倍的50%乙醇溶液浸泡0.4~1.2小时,放入回流提取器中提取3次,每次提取时间0.4~1.2小时,合并提取液,再加入2倍量50%的乙醇溶液,充分搅拌,用0.6微米的微孔滤膜过滤器过滤,得芦荟凝胶备用;
(3)将苋菜洗净,置于榨汁机中,倒入适量的水,榨汁,用4层纱布过滤,得滤液备用;
(4)将绿豆淀粉用沸水调和,成浓稠状,加入高粱淀粉和红薯粉、步骤(3)处理得到的滤液、蜂蜜,充分搅拌,混合均匀,呈面团状,放入模型中制成直径0.6~0.8cm的苋菜红糯米团,倒入锅中,加入适量的水,将糯米团煮熟后取出,冷却备用;
(5)将黄瓜霜、缬草、百合、酸枣仁、首乌藤、密蒙花、千里光用5-10倍量的水加热提取,过滤,得中药提取液备用;
(6)将魔芋胶、果胶、芦荟凝胶与白砂糖混合均匀,置于容器中,用冷开水浸泡5-10min后于60℃的水浴中,水浴加热至溶解完全,煮胶完成后用3层纱布进行过滤,除去胶液中的泡沫和杂质;
(7)将步骤(1)、(4)、(5)处理得到的物料与蜂胶液、柠檬酸钠、水溶性叶黄素酯、凝胶剂、复配乳化增稠稳定剂、果糖浆、甜味剂、全脂奶粉、乳酸钙次加入到煮好的胶液中,充分搅拌,混合均匀后,灌装,封盖后,将果冻置于85℃的条件下杀菌15min即可。

富硒绿茶粉15份、鲜牛奶50份、龙眼20份、黑花生米8份、葡萄糖10份、鲜芦荟55份、苋菜50份、蜂蜜30份、亚硒酸钠0.5份、高粱淀粉8份、红薯粉30份、魔芋胶8份、果胶4份、蜂胶液20份、黄瓜霜4份、缬草2份、百合6份、酸枣仁4份、首乌藤4份、密蒙花4份、柠檬酸钠0.1份、白砂糖50份、水溶性叶黄素酯2份、黄原胶20份、复配乳化增稠稳定剂20份、果糖浆50份、甜蜜素2份、全脂奶粉8份、乳酸钙10份、水适量。
富硒美容果冻的制备方法:
(1)将龙眼洗净,取其果肉,与鲜牛奶、黑花生米混合置于榨汁机中榨汁,所得汁液与亚硒酸钠、葡萄糖合并,充分搅拌,混匀后置于20℃条件下发酵20-24小时,将所得发酵物经胶体磨磨浆,用3层纱布过滤,得滤液备用;
(2)将鲜芦荟洗净,切成小块,置于容器中,用其质量6倍的50%乙醇溶液浸泡0.4小时,放入回流提取器中提取3次,每次提取时间0.4小时,合并提取液,再加入2倍量50%的乙醇溶液,充分搅拌,用0.6微米的微孔滤膜过滤器过滤,得芦荟凝胶备用;
(3)将苋菜洗净,置于榨汁机中,倒入适量的水,榨汁,用4层纱布过滤,得滤液备用;
(4)将绿豆淀粉用沸水调和,成浓稠状,加入高粱淀粉和红薯粉、步骤(3)处理得到的滤液、蜂蜜,充分搅拌,混合均匀,呈面团状,放入模型中制成直径0.6cm的苋菜红糯米团,倒入锅中,加入适量的水,将糯米团煮熟后取出,冷却备用;
(5)将黄瓜霜、缬草、百合、酸枣仁、首乌藤、密蒙花、千里光用5-10倍量的水加热提取,过滤,得中药提取液备用;
(6)将魔芋胶、果胶、芦荟凝胶与白砂糖混合均匀,置于容器中,用冷开水浸泡5min后于60℃的水浴中,水浴加热至溶解完全,煮胶完成后用3层纱布进行过滤,除去胶液中的泡沫和杂质;
(7)将步骤(1)、(4)、(5)处理得到的物料与蜂胶液、柠檬酸钠、水溶性叶黄素酯、凝胶剂、复配乳化增稠稳定剂、果糖浆、甜味剂、全脂奶粉、乳酸钙次加入到煮好的胶液中,充分搅拌,混合均匀后,灌装,封盖后,将果冻置于85℃的条件下杀菌15min即可。
实施例2
一种富硒美容果冻,包含以下组分:
富硒绿茶粉30份、鲜牛奶60份、龙眼35份、黑花生米15份、葡萄糖20份、鲜芦荟60份、苋菜55份、蜂蜜35份、亚硒酸钠2份、高粱淀粉10份、红薯粉40份、魔芋胶15份、果胶6份、蜂胶液25份、黄瓜霜7份、缬草5份、百合10份、酸枣仁8份、首乌藤10份、密蒙花10份、柠檬酸钠0.2份、白砂糖55份、水溶性叶黄素酯10份、卡拉胶50份、复配乳化增稠稳定剂40份、果糖浆200份、阿斯巴甜5份、全脂奶粉10份、乳酸钙40份、水适量。
富硒美容果冻的制备方法:
(1)将龙眼洗净,取其果肉,与鲜牛奶、黑花生米混合置于榨汁机中榨汁,所得汁液与亚硒酸钠、葡萄糖合并,充分搅拌,混匀后置于25℃条件下发酵24小时,将所得发酵物经胶体磨磨浆,用3层纱布过滤,得滤液备用;
(2)将鲜芦荟洗净,切成小块,置于容器中,用其质量6倍的50%乙醇溶液浸泡1.2小时,放入回流提取器中提取3次,每次提取时间1.2小时,合并提取液,再加入2倍量50%的乙醇溶液,充分搅拌,用0.6微米的微孔滤膜过滤器过滤,得芦荟凝胶备用;
(3)将苋菜洗净,置于榨汁机中,倒入适量的水,榨汁,用4层纱布过滤,得滤液备用;
(4)将绿豆淀粉用沸水调和,成浓稠状,加入高粱淀粉和红薯粉、步骤(3)处理得到的滤液、蜂蜜,充分搅拌,混合均匀,呈面团状,放入模型中制成直径0.6~0.8cm的苋菜红糯米团,倒入锅中,加入适量的水,将糯米团煮熟后取出,冷却备用;
(5)将黄瓜霜、缬草、百合、酸枣仁、首乌藤、密蒙花、千里光用5-10倍量的水加热提取,过滤,得中药提取液备用;
(6)将魔芋胶、果胶、芦荟凝胶与白砂糖混合均匀,置于容器中,用冷开水浸泡10min后于60℃的水浴中,水浴加热至溶解完全,煮胶完成后用3层纱布进行过滤,除去胶液中的泡沫和杂质;
(7)将步骤(1)、(4)、(5)处理得到的物料与蜂胶液、柠檬酸钠、水溶性叶黄素酯、凝胶剂、复配乳化增稠稳定剂、果糖浆、甜味剂、全脂奶粉、乳酸钙次加入到煮好的胶液中,充分搅拌,混合均匀后,灌装,封盖后,将果冻置于85℃的条件下杀菌15min即可。
Claims (4)
1.一种富硒美容果冻,包含以下组分:
富硒绿茶粉15-30份、鲜牛奶50-60份、龙眼20-35份、黑花生米8-15份、葡萄糖10-20份、鲜芦荟55-60份、苋菜50-55份、蜂蜜30-35份、亚硒酸钠0.5-2份、高粱淀粉8-10份、红薯粉30-40份、魔芋胶8-15份、果胶4-6份、蜂胶液20-25份、黄瓜霜4-7份、缬草2-5份、百合6-10份、酸枣仁4-8份、首乌藤4-10份、密蒙花5-10份、柠檬酸钠0.1-0.2份、白砂糖50-55份、水溶性叶黄素酯2-10份、凝胶剂20-50份、复配乳化增稠稳定剂20-40份、果糖浆50-200份、甜味剂2-5份、全脂奶粉8-10份、乳酸钙10-40份、水适量。
2.根据权利要求1所述的富硒美容果冻,优选地,所述凝胶剂为黄原胶、魔芋粉、卡拉胶、海藻酸钠和琼脂中的一种或多种组合。
3.根据权利要求1所述的富硒美容果冻,优选地,所述甜味剂为安赛蜜、甜蜜素、阿斯巴甜和甜菊糖中的一种或多种组合。
4.前述权利要求1-3任一项富硒美容果冻的制备方法:
(1)将龙眼洗净,取其果肉,与鲜牛奶、黑花生米混合置于榨汁机中榨汁,所得汁液与亚硒酸钠、葡萄糖合并,充分搅拌,混匀后置于20~25℃条件下发酵20-24小时,将所得发酵物经胶体磨磨浆,用3层纱布过滤,得滤液备用;
(2)将鲜芦荟洗净,切成小块,置于容器中,用其质量6倍的50%乙醇溶液浸泡0.4~1.2小时,放入回流提取器中提取3次,每次提取时间0.4~1.2小时,合并提取液,再加入2倍量50%的乙醇溶液,充分搅拌,用0.6微米的微孔滤膜过滤器过滤,得芦荟凝胶备用;
(3)将苋菜洗净,置于榨汁机中,倒入适量的水,榨汁,用4层纱布过滤,得滤液备用;
(4)将绿豆淀粉用沸水调和,成浓稠状,加入高粱淀粉和红薯粉、步骤(3)处理得到的滤液、蜂蜜,充分搅拌,混合均匀,呈面团状,放入模型中制成直径0.6~0.8cm的苋菜红糯米团,倒入锅中,加入适量的水,将糯米团煮熟后取出,冷却备用;
(5)将黄瓜霜、缬草、百合、酸枣仁、首乌藤、密蒙花、千里光用5-10倍量的水加热提取,过滤,得中药提取液备用;
(6)将魔芋胶、果胶、芦荟凝胶与白砂糖混合均匀,置于容器中,用冷开水浸泡5-10min后于60℃的水浴中,水浴加热至溶解完全,煮胶完成后用3层纱布进行过滤,除去胶液中的泡沫和杂质;
(7)将步骤(1)、(4)、(5)处理得到的物料与蜂胶液、柠檬酸钠、水溶性叶黄素酯、凝胶剂、复配乳化增稠稳定剂、果糖浆、甜味剂、全脂奶粉、乳酸钙次加入到煮好的胶液中,充分搅拌,混合均匀后,灌装,封盖后,将果冻置于85℃的条件下杀菌15min即可。
