Abstract
本发明提供一种紫淮山营养粉产品,下述重量份的原料:紫淮山30~50份、大米粉10~25份、白及5~15份、白术3~8份,经醇提、酶解、喷雾干燥制成。本发明采用紫淮山、白及和白术等健脾胃的中药材,相互配合,其保健效果更加显著;通过对紫淮山进行醇提,完全避免了紫淮山中易氧化功能性物质的破坏,充分利用紫淮山淀粉等物质。

背景技术
紫淮山(DioscoreaalataL.),学名参薯,又称大薯、脚板薯。薯蓣科薯蓣属一年或多年生藤本植物,与我们熟知的怀山药是同科同属不同种。原产热带地区,我国长江以南多省区均有栽培,主要分布于浙江、湖南、广西、广东、江西、云南、福建、台湾等地。紫淮山块茎富含多糖、粘液质、蛋白质、淀粉、多种氨基酸、矿物元素,具有多种功能性成分如薯蓣皂甙、尿囊素、多酚、植物固醇、花青素等。
紫淮山含有多种活性功能成分,目前主要用于鲜食,采后直接进入市场销售,我国种植的紫淮山品种含水量高,极不耐贮藏,且贮藏过程中其块茎极易折断损伤,进一步影响其商品价值,极大地缩短了紫淮山的鲜销市场半径。为解决紫淮山的销售问题,提高其附加值,需将紫淮山进行深加工。

公开号为CN103005330A的中国专利公开了一种紫山药纯粉及其制备方法与应用,所述的紫山药纯粉是以新鲜无公害紫山药为原料,经前处理、切片成粒、干燥、粉碎、灭菌分装步骤制得,其细度为100目以上。紫淮山含有花青素、薯蓣皂甙等活性物质,在制粉过程中易因高温导致活性丧失,从而影响其保健功能,同时紫淮山在常压下高温干燥时容易褐变。真空冷冻干燥虽然可以保护产品原有的生物活性和品质,但得到的产品是块状,需进行粉碎等二次加工才能获得粉状产品,得到的粉状产品粒径分布广,颗粒直径大,粉碎时的高温对产品品质也有较大影响。

公开号为CN105231145A的中国专利公开了一种一种紫淮山原浆的冷冻方法,包括如下步骤:1)取刚采收的紫淮山,将其放于冷藏室内,使其温度迅速降到2~5℃,贮藏待用,使用前用温度1~5℃低温水将其清洗干净;2)将所述清洗干净的紫淮山进行冷打浆,得到淮山浆,打浆机转速为800~900r/min,筛孔直径0.6~1.2mm;3)向所述淮山浆中添加浓度为0.05~0.1%的柠檬酸和浓度为0.01~0.02%的异抗坏血酸进行护色,并将护色后的淮山浆灌装到包装袋中;4)将所述灌装后的淮山浆液送到速冻室中,在温度-40~-30℃下速冻,完成冻结;5)将所述冻结后的淮山浆送入冻藏室,在温度-20~-18℃的条件下冻藏。
公开号为CN105942324A的中国专利公开了一种紫淮山速溶粉的生产方法,包括以下步骤:(1)原料处理:选取无虫害、无霉变的新鲜紫淮山,清洗除杂、去皮、切分;(2)护色:将上述切分后的紫淮山立刻浸入0.1%-0.5%质量浓度的柠檬酸溶液中护色5-10min,然后立刻用清水冲洗以洗去紫淮山表面的柠檬酸溶液;(3)打浆、胶磨:于上述清洗后的紫淮山中加入1-2倍紫淮山重量的紫淮山乳酸发酵液,混匀,打浆,再用胶体磨均质,得紫淮山浆;上述紫淮山乳酸发酵液是取紫淮山清洗除杂、去皮、打浆后,加入2-3倍紫淮山重量的清水,混匀,得紫淮山浆液,再于紫淮山浆液中接入乳酸菌发酵剂,常温下密封发酵2-4天,使pH值为3-4,得到;其中,该乳酸菌发酵剂为老泡菜水或植物乳杆菌,该老泡菜水的添加量为紫淮山浆液重量的5-20%,该植物乳杆菌的接种量按紫淮山浆液中菌体含量达到106-108CFU/g计;(4)发酵、离心:将所得紫淮山浆在常温下密封发酵12-24小时,再进行渣液分离,分别收集紫淮山渣和色素液,备用;(5)于上述紫淮山渣中加入清水洗渣,再渣液分离,重复洗渣1-2次,每次加入的清水重量为紫淮山渣重量的0.5-1倍,每次洗渣后分离出的洗渣水并入上述色素液中;于洗渣后分离得到的紫淮山渣中加入2-3倍紫淮山渣重量的清水,混匀后输送至滚筒干燥机进行干燥至含水量为5-10%,冷却、粉碎后过80-100目筛,得紫淮山粉A;(6)将上述加入有洗渣水的色素液真空浓缩至固形物含量为8-12%,再加入为色素液固形物重量1%-8%的乳清蛋白作为壁材,与色素液混合均匀后送入喷雾干燥设备中进行喷雾干燥,制得微胶囊化的紫淮山粉B;(7)将紫淮山粉A与紫淮山粉B按重量比30:1-1:1混合,即得紫淮山速溶粉。
上述文献资料在处理过程中都忽略了紫淮山中含有丰富的粘液质,粘液质主要成分为糖蛋白,研究表明,淮山中粘液质具有多种功能活性。淮山中主要成分是淀粉,在处理淮山淀粉时并未将粘液质充分利用。
发明内容
针对紫淮山花青素加工过程中损失严重、产品粘度过强以及冲泡过程中泡沫过多干扰搅拌等问题,本发明利用醇提与吸附、酶解蛋白相结合,解决紫淮山营养产品现有问题的困扰,提供一种能提高富含花青素、泡沫少、分散好、方便冲泡的保健紫淮山营养粉产品。
本发明第一个目的是提供一种紫淮山营养粉产品,下述重量份的原料:紫淮山30~50份、大米粉10~25份、白及5~15份、白术3~8份,经醇提、酶解、喷雾干燥制成。
在一个具体实施方案中,其中各原料成分以以下重量份组成:紫淮山40~45份、大米粉15~20份、白及10~15份、白术5~8份,经醇提、酶解、喷雾干燥制成。
上述营养粉产品的制备方法,依次包括如下步骤:
(1)紫淮山洗净、去皮,直接在护色剂中放置30~50min,取出放置在40℃~50℃低温烘干,粉碎成粉,加入乙醇水溶液在50℃~60℃进行搅拌提取1~3h,过滤得滤液和滤渣。
(2)将白及和白术在60℃~80℃分别烘干,再在90℃~100℃下分别蒸10~25min,再用球磨机进行磨碎得混合物。
(3)取优质大米,粉碎后再加入15~30倍重量的水,再加入麦芽粉,在25℃~30℃下保温30~60min,再在90℃~100℃下煎煮30~50min得米汤。
(4)滤液在40℃~60℃下进行减压浓缩到干,得紫淮山提取物。
(5)向混合物中加入滤渣和水,再加入中性蛋白酶,在30℃~45℃下进行酶解30~60min,再加入米汤,在90℃~100℃下煎煮20~40min,三层纱布过滤两次,得滤液,再加入紫淮山提取物,混合后经喷雾干燥得营养粉。
所述步骤(1)中护色剂是由壳聚糖、柠檬酸和氯化钙配制的混合溶液,优选为1~1.2%壳聚糖、1.2%柠檬酸和0.6~0.8%氯化钙的水溶液。
所述步骤(1)中加入乙醇水溶液的量L与紫淮山的重量kg比为3~6:1,其中乙醇水溶液优选20~50%乙醇水溶液,20%乙醇水溶液的配制方法为20mL无水乙醇加入80mL水混合即可。
所述步骤(1)中过滤为陶瓷膜过滤一次。
所述步骤(3)中加入麦芽粉的量kg与大米重量kg比0.5~3:20。
所述步骤(5)中加入水的量L与滤渣的重量kg比为10~30:1。
所述步骤(5)中加入中性蛋白酶的量为终浓度达到40U/L以上。
技术效果
1、本发明采用紫淮山、白及和白术等健脾胃的中药材,相互配合,其保健效果更加显著。
2、通过对紫淮山进行醇提,完全避免了紫淮山中易氧化功能性物质的破坏,充分利用紫淮山淀粉等物质。
3、通过对紫淮山滤渣、白及和白术进行蛋白酶解,形成了大量易吸收的小肽类物质,通过蒸煮方式也减少了中药味对产品的影响。
4、通过麦芽对大米淀粉的降解,产生大量的饴糖,对后期产品的可食性更好,又通过紫色素改善其产品的色泽度。
具体实施方式
下面用本发明的实施实例来进一步说明本发明的实质性内容,但并不以此限制本发明。
实施例1
紫淮山洗净、去皮,直接在护色剂中放置45min,取出后放置45℃低温烘干,粉碎成粉,取85kg加入乙醇水溶液在55℃进行搅拌提取2h,过滤得滤液和滤渣。将白及和白术在60℃烘干,取25kg白及和12kg白术分别在95℃下蒸20min,再用球磨机进行磨碎得混合物。取35kg优质大米,粉碎后再加入700kg的水,再加入麦芽粉,在28℃下保温60min,再在100℃下煎煮30min得米汤。滤液在45℃下进行减压浓缩到干,得紫淮山提取物。向混合物中加入滤渣和水,再加入中性蛋白酶,在35℃下进行酶解50min,再加入米汤,在100℃下煎煮25min,三层纱布过滤两次,得滤液,再加入紫淮山提取物,混合后经喷雾干燥得营养粉。
实施例2
紫淮山洗净、去皮,直接在护色剂中放置40min,取出放置50℃低温烘干,粉碎成粉,取130kg加入乙醇水溶液在60℃进行搅拌提取3h,过滤得滤液和滤渣。将白及和白术在80℃烘干,取40kg白及和20kg白术分别在100℃下蒸15min,再用球磨机进行磨碎得混合物。取50kg优质大米,粉碎后再加入1100kg的水,再加入麦芽粉,在30℃下保温60min,再在90℃下煎煮50min得米汤。滤液在50℃下进行减压浓缩到干,得紫淮山提取物。向混合物中加入滤渣和水,再加入中性蛋白酶,在35℃下进行酶解40min,再加入米汤,在90℃下煎煮40min,三层纱布过滤两次,得滤液,再加入紫淮山提取物,混合后经喷雾干燥得营养粉。
Claims (9)
1.一种紫淮山营养粉产品,下述重量份的原料:紫淮山30~50份、大米粉10~25份、白及5~15份、白术3~8份,经醇提、酶解、喷雾干燥制成。
2.根据权利要求1所述紫淮山营养粉产品,其中各原料成分以以下重量份组成:紫淮山40~45份、大米粉15~20份、白及10~15份、白术5~8份,经醇提、酶解、喷雾干燥制成。
3.根据权利要求1~2所述紫淮山营养粉产品的制备方法,依次包括如下步骤:
(1)紫淮山洗净、去皮,直接在护色剂中放置30~50min,取出放置在40℃~50℃低温烘干,粉碎成粉,加入乙醇水溶液在50℃~60℃进行搅拌提取1~3h,过滤得滤液和滤渣;
(2)将白及和白术在60℃~80℃分别烘干,再在90℃~100℃下分别蒸10~25min,再用球磨机进行磨碎得混合物;
(3)取优质大米,粉碎后再加入15~30倍重量的水,再加入麦芽粉,在25℃~30℃下保温30~60min,再在90℃~100℃下煎煮30~50min得米汤;
(4)滤液在40℃~60℃下进行减压浓缩到干,得紫淮山提取物;
(5)向混合物中加入滤渣和水,再加入中性蛋白酶,在30℃~45℃下进行酶解30~60min,再加入米汤,在90℃~100℃下煎煮20~40min,三层纱布过滤两次,得滤液,再加入紫淮山提取物,混合后经喷雾干燥得营养粉。
4.根据权利要求3的方法,其中步骤(1)所述护色剂是由壳聚糖、柠檬酸和氯化钙配制的混合溶液,优选为1~1.2%壳聚糖、1.2%柠檬酸和0.6~0.8%氯化钙的水溶液。
5.根据权利要求3的方法,其中步骤(1)所述加入乙醇水溶液的量L与紫淮山的重量kg比为3~6:1,其中乙醇水溶液优选20~50%乙醇水溶液。
6.根据权利要求3的方法,其中步骤(1)所述过滤为陶瓷膜过滤一次。
7.根据权利要求3的方法,其中步骤(3)所述加入麦芽粉的量kg与大米重量kg比0.5~3:20。
8.根据权利要求3的方法,其中步骤(5)所述加入水的量L与滤渣的重量kg比为10~30:1。
9.根据权利要求3的方法,其中步骤(5)所述加入中性蛋白酶的量为终浓度达到40U/L以上。
