Abstract
本发明提供了一种大麦苗青汁粉的制备方法,包括选料、清洗杀菌、切段,漂烫、冷却、干燥、低温气流粉碎。本发明能充分利用大麦苗中所含有的营养物质,用途广,既能作饮料饮用,又能作为天然色素及植物纤维补充剂加入面粉中,改善面粉的营养价值和维生素含量。本发明还提供了麦绿面粉的制备方法。

技术领域
本发明与麦绿面粉及大麦苗青汁粉的制备方法有关。
背景技术
麦绿素俗称“绿色血液”,是人们日益喜欢的一种时尚保健品。大麦青苗是目前国内外公认的生产麦绿素产品的最佳原料。专利申请号为96101836.4提供了一种大麦绿粉的制备方法,这种方法生产出的产品植物纤维基本未保留,崩结剂破坏了产品的天然性,所需设备较多,工艺复杂。专利申请号200410047890.8提供了一种大麦青苗茶的制备工艺,该工艺生产出的产品只能泡茶饮用,不能食用,用途受限制,且未充分利用其食物纤维及叶绿素,营养成份未充分利用。
发明内容
本发明的目的是为了克服以上不足,提供一种能充分利用大麦苗中所含有的营养物质,用途广,既能作饮料饮用,又能作为天然色素及植物纤维补充剂加入面粉中,改善面粉的营养价值和维生素含量,抗疲劳,缓解便秘的大麦青苗汁粉的制备方法。本发明的另一个目的是为了提供一种麦绿面粉的制备方法。
本发明目的是这样来实现的:
本发明大麦苗青汁粉的制备方法,包括以下步骤:
1)选料:选用高度不超过30cm的大麦嫩苗地真叶,去掉地上茎:
2)清洗杀菌:去掉泥土及其它杂质;
3)切段:切成1~2cm的原料段;
4)漂烫:将上述原料段放入漂烫水中进行漂烫,漂烫温度为90±2℃,漂烫时间为30~60秒,杀酶、防止褪色和褐变;
5)用流动水将漂烫后的原料段在3秒钟内冷却到15~20℃,防止发酵和黄变;
6)在70±5℃温度下,对冷却后的原料段进行干燥;
7)低温气流粉碎:在-20℃±1℃温度下,高压高速气流对原料段进行撞击细胞破壁粉碎即制得大麦苗青汁粉。
上述的清洗杀菌工序时至少进行水浸清洗一次,流动清洗一次,气泡清洗一次,去除泥土及其它杂质,用100PPm的次氯酸钠溶液或臭氧水进行消毒杀菌。
本发明麦绿面制备方法,面粉中加入大麦青苗汁粉,混合均匀即制得麦绿面粉。
上所述的大麦青苗汁粉与面粉按重量比1~3∶100配料,混合均匀即制得麦绿面粉。
采用本发明方法充分利用大麦中食物纤维和叶绿素及营养成份,抗疲劳,缓解便秘,保健效果好。经检测,采用本方法生产出的大麦青苗汁粉中不溶性膳食纤维为0.119%,蛋白质26.7%,脂肪6.64%,Vcl8.9mg/100g,VB10.26mg/100g,即可加水作饮料饮用,又能加入面粉中。采用本方法生产的麦绿面粉是天然的绿色面食,色泽鲜绿,颗粒细腻,在未加水时颜色外观接近一般面粉,加水后色泽变化大,增加美感和食欲。
具体实施方式
实施例1:
本实施例1大麦苗青汁粉的制备方法,包括以下步骤:
1)选料:选用高度不超过30cm的大麦嫩苗的真叶,去掉地上茎;
2)清洗杀菌:进行水浸清洗一次,流动清洗一次,气泡清洗一次,去掉泥土及其它杂物,用100PPm的次氯酸钠溶液或臭氧水进行消毒杀菌;
3)切段:切成1~2cm的原料段;
4)漂烫:将上述原料段放入漂烫水中进行漂烫,漂烫水温度为90±2℃,漂烫时间为40秒;
5)用流动水将漂烫后的原料段在3秒钟内进行冷却到20℃;
6)对冷却后的原料段进行干燥:将原料段置于烘箱中,天然气锅炉燃烧所产生的高温蒸汽经管道进入热交换器的有换热片的管道内,新鲜空气经净化后经鼓风机鼓入热交换器中的换热片间,空气被高温的换热片通过热交换加热成75℃的清洁热空气再经管道经烘箱下侧部的空气进口进入放置原料段的烘箱中,热风循环带走原料段中的水分,将原料段烘干而不造成污染。
7)低温气流粉碎:在-20℃温度下,高压高速气流对原料段进行撞击细胞破壁粉碎即制得大麦苗青汁粉,气源压力为10kg/cm2,粉碎时工作压力为8kg/cm2。
实施例2:
本实施例2麦绿面粉的制备方法是大麦青苗汁粉与面粉按重量比1.5∶100配料,然后在面粉中加入大麦青苗汁粉,混合均匀即制得麦绿面粉。

Claims (5)
1.大麦苗青汁粉的制备方法,包括以下步骤:
1)选料:选用高度不超过30cm的大麦嫩苗的真叶,去掉地上茎;
2)清洗杀菌:去掉泥土及其它杂物;
3)切段:切成1~2cm的原料段;
4)漂烫:将上述原料段放入漂烫水中进行漂烫,漂烫水温度为90±2℃,漂烫时间为30~60秒;
5)用流动水将漂烫后的原料段在3秒钟内进行冷却到15~25℃;
6)在70±5℃温度下,对冷却后的原料段进行干燥;
7)低温气流粉碎:在-20℃±1℃温度下,高压高速气流对原料段进行撞击细胞破壁粉碎即制得大麦苗青汁粉。
2.如权利要求1所述的大麦苗青汁粉的制备方法,其特征在于清洗杀菌工序时至少进行水浸清洗一次,流动清洗一次,气泡清洗一次,去除泥土,及其它杂质用100PPm的次氯酸钠溶液或臭氧水进行消毒杀菌。
3.如权利要求1或2所述的大麦苗青汁粉的制备方法,其特征在于低温气流粉碎工序时,气源的压力至少为10kg/cm2,粉碎时工作压力至少为8kg/cm2。
4.麦绿面的制备方法,其特征在于面粉中加入大麦青苗汁粉,混合均匀即制得麦绿面粉。
5.如权利要求4所述的麦绿面粉的制备方法,其特征在于大麦青苗汁粉与面粉按重量比1~3∶100配料,混合均匀即制得麦绿面粉。
