技术领域
本发明涉及一种速溶银耳藕粉压缩食品冲剂及其加工方法。
背景技术
随着人们物质生活水平的逐步提高,人们的饮食越来越注重营养与保健,现在市场生产的保健食品种类繁多,主要以饮品占居较多。目前国内生产的营养饮品常见的有牛奶冲剂、核桃粉冲剂、黑芝麻冲剂、豆奶粉冲剂等,但是这些冲剂大都功效单一,保健效果不是特别理想。而随着人们生活观念的改变,食品冲剂产品的未来主流趋向天然化、功能性。
目前,我国具有十分丰富的中药材植物资源,有些植物既可食用又能作为中药材防病治病,药食两用植物经过多年,甚至数百年、数千年食用而被证实对人体有益无害,适合普通人群长期食用。药食两用植物既具有营养价值,又可防病治病,作为药膳原料,在“治未病”方面大有 用武之地。目前,常见的药膳大都采用食用的方式,但是此种方式在制作时比较麻烦,而且吸收也并不理想。
因此,寻求一种营养丰富、具有多重功效的,且可以增强机体免疫能力的,能够采用冲剂的形式,方便饮用和促进吸收的冲剂很有必要。
发明内容
有鉴于此,本发明目的是提供一种富含微量元素铁Fe和维生素B12等养血因子,具有补气、养血、安神,补脾开胃、养阴清热的功效,能够增加人体的维生素和微量元素的吸收,可以增强机体免疫能力,广泛作为各类人群的保健食品,尤宜女性食用的食品冲剂。

本发明要解决的另一技术问题为提供一种速溶银耳藕粉压缩食品冲剂的加工方法,包括以下步骤:
1)取银耳20-25份放入冷水中浸泡1-2小时,清洗干净候放入离心机内,以1800-2000r/min的速度离心10-15分钟,使其含水量为10-15%,然后将其放入烘干箱内,在40-45℃的条件下干燥2-3小时,得到干燥的银耳,再将其投入粉碎机内,以800-1000r/min粉碎15-20分钟,并过100-120目的筛,制得银耳粉,备用;
2)取鲜藕15-20份洗净,除去藕节后,置于磨浆机内,以2200W的转速研磨8-10分钟,然后加入少量的清水继续研磨2-3分钟,再将其导入分离机内旋液分离并进行沉淀、过滤,再放入离心机脱水至含水量15-20%,最后在40-45℃的低温下干燥2-3小时,制得藕粉,备用;
3)取黄豆3-5份和花生3-5份去皮后投入粉碎机内,粉碎成末并过120-140目的筛,制得黄豆粉和花生粉,备用;
4)取苹果6-8份、水蜜桃6-8份、木菠萝5-7份和胡萝卜5-7份去核、去皮后,切成小块,投入榨汁机内,再加入冰糖1-2份,榨成汁液,并对汁液进行过滤,得到混合液,备用;
5)将步骤4)制得的混合液在45-50℃下真空浓缩至粉末状,得到粉末,然后将粉末放入干燥箱内,在30-40℃的条件下干燥1-2小时,制得果蔬粉末,备用;
6)取红枣2-4份、枸杞1-3份、莲子1-3份、栀子1-3份、当归1-3份和干百合4-6份清洗干净后,放入超声波提取机内,并加入适量的清水,设定超声波提取机的提取温度为40-60℃,超声波频率20-28KHz,提取时间20-30分钟,提取1-2次,然后进行过滤分离,得到滤液,再将滤液真空浓缩至原体积的1/2,制得浓缩液,备用;
7)将步骤6)制得的浓缩液在45-50℃下真空浓缩至粉末状,得到粉末,然后将粉末放入干燥箱内,在30-40℃的条件下干燥1-2小时,制得中药粉末,备用;
8)取脱脂奶粉6-7份和魔芋粉11-13份放入干燥箱内,在30-40℃的条件下干燥30-40分钟,使其含水量不超过3%,得到脱水的脱脂奶粉和魔芋粉,备用;
9)将步骤1)制得的银耳粉、步骤2)制得的藕粉、步骤3)制得的黄豆粉和花生粉、步骤5)制得的果蔬粉末、步骤7)制得的中药粉末、步骤8)得到的脱水的脱脂奶粉和魔芋粉放入搅拌机内,并加入麦芽糊精1-2份和柠檬酸钙1-2份,以140-180r/min的速度搅拌10-20分钟,得到混合粉末,备用;
10)将步骤9)得到的混合粉末置于微波杀菌设备内,在90-100℃的条件下,杀菌120-180秒,再将杀菌后的粉末分袋包装,即可。
在本发明中,银耳味甘、淡、性平、无毒,既有补脾开胃的功效,又有益气清肠、滋阴润肺的作用,既能增强人体免疫力,又可增强肿瘤患者对放、化疗的耐受力,富有天然植物性胶质,具有滋阴的作用;藕粉富含微量元素铁Fe和维生素B12等养血因子,主功效为养血,尤宜女性食用,特别适宜高热病人、吐血者、高血压、肝病、食欲不振、缺铁性贫血、营养不良者;魔芋含有葡苷聚糖,是一种高分子化合物,食后易被消化吸收,并能吸附胆固醇和胆汁酸,对降低血压减少心血管病发作有一定效用,还含有可溶性膳食纤维,这种纤维对抑制餐后血糖升高很有效,因而魔芋精粉及其制品都是糖尿病患者的理想降糖食品;花生具有扶正补虚、悦脾和胃、润肺化痰、滋养调气的功效;大豆富含异黄酮,可断绝癌细胞营养供应,含人体必需的8种氨基酸,多种维生素及多种微量元素,可降低血中胆固醇,预防高血压、冠心病、动肪硬化、可以美容等。
苹果的果糖含量堪称水果之冠,具有很高的营养价值,有利于身体的生长发育;水蜜桃有美肤、清胃、润肺、祛痰等功能,它的蛋白质的含量比苹果、葡萄高一倍,比梨子多七倍;铁的含量比苹果多三倍,比梨子多五倍,素有“果中皇后”的美誉,富含多种维生素,其中维生素C最高。木菠萝蜜中含有丰富的糖类、蛋白质、B族维生素(B1、B2、B6)、维生素C、矿物质、脂肪油等,具有补中益气的功效。

本发明的有益效果在于:将富含多种营养成分,具有补脾开胃、滋阴润肺功效的银耳、鲜藕、魔芋粉作为主要原料,配以黄豆、花生和含有多种维生素、具有补中益气效果的苹果、水蜜桃、木菠萝,以及具有养血生津、养心安神和清热泻火功效的红枣、枸杞、莲子、栀子、当归和干百合,通过将银耳、鲜藕、黄豆和花生研磨成超细粉,将苹果、水蜜桃和木菠萝榨汁后过滤,再将得到过滤液进行真空浓缩、干燥成粉,通过超声波提取机提取红枣、枸杞、莲子、栀子、当归和干百合中的营养成分,再将其真空浓缩并干燥成粉,将魔芋粉和脱脂奶粉经过干燥,最后将得到的原料粉末投入搅拌机内,并加入麦芽糊精和柠檬酸钙进行混合,再将得到的混合粉末进行微波杀菌、分装,即可,制得的食品冲剂富含微量元素铁Fe和维生素B12等养血因子,具有补气、养血、安神,补脾开胃、养阴清热的功效,能够增加人体的维生素和微量元素的吸收,可以增强机体免疫能力,广泛作为各类人群的保健食品,尤宜女性食用。
具体实施方式
实施例1
一种速溶银耳藕粉压缩食品冲剂,由以下重量份数配比的原料制成:银耳25份、鲜藕20份、魔芋粉13份、黄豆5份、花生5份、红枣4份、枸杞3份、莲子3份、栀子3份、当归3份、冰糖2份、苹果8份、水蜜桃8份、胡萝卜7份、麦芽糊精2份、柠檬酸钙2份、干百合6份、木菠萝7份和脱脂奶粉7份。
一种速溶银耳藕粉压缩食品冲剂的加工方法,包括以下步骤:
1)取银耳25份放入冷水中浸泡2小时,清洗干净候放入离心机内,以2000r/min的速度离心15分钟,使其含水量为15%,然后将其放入烘干箱内,在45℃的条件下干燥3小时,得到干燥的银耳,再将其投入粉碎机内,以1000r/min粉碎20分钟,并过120目的筛,制得银耳粉,备用;
2)取鲜藕20份洗净,除去藕节后,置于磨浆机内,以2200W的转速研磨10分钟,然后加入少量的清水继续研磨3分钟,再将其导入分离机内旋液分离并进行沉淀、过滤,再放入离心机脱水至含水量20%,最后在45℃的低温下干燥3小时,制得藕粉,备用;
3)取黄豆5份和花生5份去皮后投入粉碎机内,粉碎成末并过140目的筛,制得黄豆粉和花生粉,备用;
4)取苹果8份、水蜜桃8份、木菠萝7份和胡萝卜7份去核、去皮后,切成小块,投入榨汁机内,再加入冰糖2份,榨成汁液,并对汁液进行过滤,得到混合液,备用;
5)将步骤4)制得的混合液在50℃下真空浓缩至粉末状,得到粉末,然后将粉末放入干燥箱内,在40℃的条件下干燥2小时,制得果蔬粉末,备用;
6)取红枣4份、枸杞3份、莲子3份、栀子3份、当归3份和干百合6份清洗干净后,放入超声波提取机内,并加入适量的清水,设定超声波提取机的提取温度为60℃,超声波频率28KHz,提取时间30分钟,提取2次,然后进行过滤分离,得到滤液,再将滤液真空浓缩至原体积的1/2,制得浓缩液,备用;
7)将步骤6)制得的浓缩液在50℃下真空浓缩至粉末状,得到粉末,然后将粉末放入干燥箱内,在40℃的条件下干燥2小时,制得中药粉末,备用;
8)取脱脂奶粉7份和魔芋粉13份放入干燥箱内,在40℃的条件下干燥40分钟,使其含水量不超过3%,得到脱水的脱脂奶粉和魔芋粉,备用;
9)将步骤1)制得的银耳粉、步骤2)制得的藕粉、步骤3)制得的黄豆粉和花生粉、步骤5)制得的果蔬粉末、步骤7)制得的中药粉末、步骤8)得到的脱水的脱脂奶粉和魔芋粉放入搅拌机内,并加入麦芽糊精2份和柠檬酸钙2份,以180r/min的速度搅拌20分钟,得到混合粉末,备用;
10)将步骤9)得到的混合粉末置于微波杀菌设备内,在100℃的条件下,杀菌180秒,再将杀菌后的粉末分袋包装,即可。
实施例2
一种速溶银耳藕粉压缩食品冲剂,由以下重量份数配比的原料制成:银耳20份、鲜藕15份、魔芋粉11份、黄豆3份、花生3份、红枣2份、枸杞1份、莲子1份、栀子1份、当归1份、冰糖1份、苹果6份、水蜜桃6份、胡萝卜5份、麦芽糊精1份、柠檬酸钙1份、干百合4份、木菠萝5份和脱脂奶粉6份。

9)将步骤1)制得的银耳粉、步骤2)制得的藕粉、步骤3)制得的黄豆粉和花生粉、步骤5)制得的果蔬粉末、步骤7)制得的中药粉末、步骤8)得到的脱水的脱脂奶粉和魔芋粉放入搅拌机内,并加入麦芽糊精1份和柠檬酸钙1份,以140r/min的速度搅拌10分钟,得到混合粉末,备用;
10)将步骤9)得到的混合粉末置于微波杀菌设备内,在90℃的条件下,杀菌120秒,再将杀菌后的粉末分袋包装,即可。
实施例3
一种速溶银耳藕粉压缩食品冲剂,由以下重量份数配比的原料制成:银耳23份、鲜藕18份、魔芋粉12份、黄豆4份、花生4份、红枣3份、枸杞2份、莲子2份、栀子2份、当归2份、冰糖1.5份、苹果7份、水蜜桃7份、胡萝卜6份、麦芽糊精1.5份、柠檬酸钙1.5份、干百合5份、木菠萝6份和脱脂奶粉6.5份。
一种速溶银耳藕粉压缩食品冲剂的加工方法,包括以下步骤:
1)取银耳23份放入冷水中浸泡1.5小时,清洗干净候放入离心机内,以1900r/min的速度离心13分钟,使其含水量为12%,然后将其放入烘干箱内,在45℃的条件下干燥3小时,得到干燥的银耳,再将其投入粉碎机内,以1000r/min粉碎20分钟,并过100目的筛,制得银耳粉,备用;
2)取鲜藕18份洗净,除去藕节后,置于磨浆机内,以2200W的转速研磨9分钟,然后加入少量的清水继续研磨3分钟,再将其导入分离机内旋液分离并进行沉淀、过滤,再放入离心机脱水至含水量18%,最后在45℃的低温下干燥3小时,制得藕粉,备用;
3)取黄豆4份和花生4份去皮后投入粉碎机内,粉碎成末并过130目的筛,制得黄豆粉和花生粉,备用;
4)取苹果7份、水蜜桃7份、木菠萝6份和胡萝卜6份去核、去皮后,切成小块,投入榨汁机内,再加入冰糖1.5份,榨成汁液,并对汁液进行过滤,得到混合液,备用;
5)将步骤4)制得的混合液在50℃下真空浓缩至粉末状,得到粉末,然后将粉末放入干燥箱内,在40℃的条件下干燥2小时,制得果蔬粉末,备用;
6)取红枣3份、枸杞2份、莲子2份、栀子2份、当归2份和干百合5份清洗干净后,放入超声波提取机内,并加入适量的清水,设定超声波提取机的提取温度为50℃,超声波频率26KHz,提取时间30分钟,提取2次,然后进行过滤分离,得到滤液,再将滤液真空浓缩至原体积的1/2,制得浓缩液,备用;
7)将步骤6)制得的浓缩液在50℃下真空浓缩至粉末状,得到粉末,然后将粉末放入干燥箱内,在40℃的条件下干燥2小时,制得中药粉末,备用;
8)取脱脂奶粉6.5份和魔芋粉12份放入干燥箱内,在40℃的条件下干燥40分钟,使其含水量不超过3%,得到脱水的脱脂奶粉和魔芋粉,备用;
9)将步骤1)制得的银耳粉、步骤2)制得的藕粉、步骤3)制得的黄豆粉和花生粉、步骤5)制得的果蔬粉末、步骤7)制得的中药粉末、步骤8)得到的脱水的脱脂奶粉和魔芋粉放入搅拌机内,并加入麦芽糊精1.5份和柠檬酸钙1.5份,以160r/min的速度搅拌20分钟,得到混合粉末,备用;
10)将步骤9)得到的混合粉末置于微波杀菌设备内,在100℃的条件下,杀菌160秒,再将杀菌后的粉末分袋包装,即可。
实验例
一、食品冲剂指标检测
实验对象:本发明实施例1、实施例2和实施例3制得的食品冲剂。
实验标准:按照GB7101-2003的规定进行指标检测。
下表为本发明三组实施例固体饮料指标检测结果:
由上表可见,本发明实施例1、实施例2和实施例3制得的食品冲剂,其理化指标及微生物指标检测符合固体饮料国家标准GB7101-2003的规定。
二、临床实验
实验对象:将40名缺铁性贫血患者,根据服用药物不同,分为两组,每组20人。
实验方法:对照组的20人服用常规药物,益气养元颗粒,一天3次;实验组的20人使用本发明的食品冲剂,每天早晚各一次,记录时间为3个月,记录次数为1。
实验结果:
由此实验结果可得,本发明食品冲剂相比于常规治疗手段,不仅使用方便,补血效果显著。
典型案例:
徐某,女,35岁,患有缺铁性贫血,面色苍白,神疲乏力,头晕,视目昏花,多梦而夜寐不酣,食欲减退,且面色枯黄精神不振,在使用本发明用药一个月后感觉精神较未服本中药前有了明显的好转,服用了两个月后面色变得红润,不适症状完全消失精神状态明显好转。
本发明的有益效果在于:将富含多种营养成分,具有补脾开胃、滋阴润肺功效的银耳、鲜藕、魔芋粉作为主要原料,配以黄豆、花生和含有多种维生素、具有补中益气效果的苹果、水蜜桃、木菠萝,以及具有养血生津、养心安神和清热泻火功效的红枣、枸杞、莲子、栀子、当归和干百合,通过将银耳、鲜藕、黄豆和花生研磨成超细粉,将苹果、水蜜桃和木菠萝榨汁后过滤,再将得到过滤液进行真空浓缩、干燥成粉,通过超声波提取机提取红枣、枸杞、莲子、栀子、当归和干百合中的营养成分,再将其真空浓缩并干燥成粉,将魔芋粉和脱脂奶粉经过干燥,最后将得到的原料粉末投入搅拌机内,并加入麦芽糊精和柠檬酸钙进行混合,再将得到的混合粉末进行微波杀菌、分装,即可,制得的食品冲剂富含微量元素铁Fe和维生素B12等养血因子,具有补气、养血、安神,补脾开胃、养阴清热的功效,能够增加人体的维生素和微量元素的吸收,可以增强机体免疫能力,广泛作为各类人群的保健食品,尤宜女性食用。
当然,以上只是本发明的典性实例,除此之外,本发明还可以有其它多种具体实施方式,凡采用等同替换或等效变换形成的技术方案,均落在本发明要求保护的范围之内。
Claims (5)
1.一种速溶银耳藕粉压缩食品冲剂,其特征在于:由以下重量份数配比的原料制成:银耳20-25份、鲜藕15-20份、魔芋粉11-13份、黄豆3-5份、花生3-5份、红枣2-4份、枸杞1-3份、莲子1-3份、栀子1-3份、当归1-3份、冰糖1-2份、苹果6-8份、水蜜桃6-8份、胡萝卜5-7份、麦芽糊精1-2份、柠檬酸钙1-2份、干百合4-6份、木菠萝5-7份和脱脂奶粉6-7份。
2.如权利要求1所述的速溶银耳藕粉压缩食品冲剂,其特征在于:由以下重量份数配比的原料制成:银耳25份、鲜藕20份、魔芋粉13份、黄豆5份、花生5份、红枣4份、枸杞3份、莲子3份、栀子3份、当归3份、冰糖2份、苹果8份、水蜜桃8份、胡萝卜7份、麦芽糊精2份、柠檬酸钙2份、干百合6份、木菠萝7份和脱脂奶粉7份。
3.如权利要求1所述的速溶银耳藕粉压缩食品冲剂,其特征在于:由以下重量份数配比的原料制成:银耳20份、鲜藕15份、魔芋粉11份、黄豆3份、花生3份、红枣2份、枸杞1份、莲子1份、栀子1份、当归1份、冰糖1份、苹果6份、水蜜桃6份、胡萝卜5份、麦芽糊精1份、柠檬酸钙1份、干百合4份、木菠萝5份和脱脂奶粉6份。
4.如权利要求1所述的速溶银耳藕粉压缩食品冲剂,其特征在于:由以下重量份数配比的原料制成:银耳23份、鲜藕18份、魔芋粉12份、黄豆4份、花生4份、红枣3份、枸杞2份、莲子2份、栀子2份、当归2份、冰糖1.5份、苹果7份、水蜜桃7份、胡萝卜6份、麦芽糊精1.5份、柠檬酸钙1.5份、干百合5份、木菠萝6份和脱脂奶粉6.5份。
5.一种速溶银耳藕粉压缩食品冲剂的加工方法,其特征在于:包括以下步骤:
1)取银耳20-25份放入冷水中浸泡1-2小时,清洗干净候放入离心机内,以1800-2000r/min的速度离心10-15分钟,使其含水量为10-15%,然后将其放入烘干箱内,在40-45℃的条件下干燥2-3小时,得到干燥的银耳,再将其投入粉碎机内,以800-1000r/min粉碎15-20分钟,并过100-120目的筛,制得银耳粉,备用;
2)取鲜藕15-20份洗净,除去藕节后,置于磨浆机内,以2200W的转速研磨8-10分钟,然后加入少量的清水继续研磨2-3分钟,再将其导入分离机内旋液分离并进行沉淀、过滤,再放入离心机脱水至含水量15-20%,最后在40-45℃的低温下干燥2-3小时,制得藕粉,备用;
3)取黄豆3-5份和花生3-5份去皮后投入粉碎机内,粉碎成末并过120-140目的筛,制得黄豆粉和花生粉,备用;
4)取苹果6-8份、水蜜桃6-8份、木菠萝5-7份和胡萝卜5-7份去核、去皮后,切成小块,投入榨汁机内,再加入冰糖1-2份,榨成汁液,并对汁液进行过滤,得到混合液,备用;
5)将步骤4)制得的混合液在45-50℃下真空浓缩至粉末状,得到粉末,然后将粉末放入干燥箱内,在30-40℃的条件下干燥1-2小时,制得果蔬粉末,备用;
6)取红枣2-4份、枸杞1-3份、莲子1-3份、栀子1-3份、当归1-3份和干百合4-6份清洗干净后,放入超声波提取机内,并加入适量的清水,设定超声波提取机的提取温度为40-60℃,超声波频率20-28KHz,提取时间20-30分钟,提取1-2次,然后进行过滤分离,得到滤液,再将滤液真空浓缩至原体积的1/2,制得浓缩液,备用;
7)将步骤6)制得的浓缩液在45-50℃下真空浓缩至粉末状,得到粉末,然后将粉末放入干燥箱内,在30-40℃的条件下干燥1-2小时,制得中药粉末,备用;
8)取脱脂奶粉6-7份和魔芋粉11-13份放入干燥箱内,在30-40℃的条件下干燥30-40分钟,使其含水量不超过3%,得到脱水的脱脂奶粉和魔芋粉,备用;
9)将步骤1)制得的银耳粉、步骤2)制得的藕粉、步骤3)制得的黄豆粉和花生粉、步骤5)制得的果蔬粉末、步骤7)制得的中药粉末、步骤8)得到的脱水的脱脂奶粉和魔芋粉放入搅拌机内,并加入麦芽糊精1-2份和柠檬酸钙1-2份,以140-180r/min的速度搅拌10-20分钟,得到混合粉末,备用;
10)将步骤9)得到的混合粉末置于微波杀菌设备内,在90-100℃的条件下,杀菌120-180秒,再将杀菌后的粉末分袋包装,即可。
