Abstract
本发明公开了一种全植物果蔬酵素及其制备方法。主要包括:以上百种新鲜果蔬和白砂糖为原料按一定质量比例混合均匀,通过四道接菌工艺,经540天以上时间发酵,使果蔬层层渐进发酵,最后获得所述全植物酵素。按照本发明的制备方法制备得到的酵素,不加任何添加剂和水分,富含人体必需的维生素、氨基酸、矿物质等微量元素,易于吸收,能改善消化、促进代谢、提高人体免疫力,且老少皆宜。

技术领域
本发明属于食品加工技术领域,具体涉及一种全植物果蔬酵素及其制备方法。
背景技术
酵素也就是酶(enzyme),是指具有生物催化功能的大分子物质,后来把经微生物发 酵得到的具有生物活性物质的发酵液或发酵制品统称为酵素。酵素作为一种生物催化剂,是人体内各种代谢活动所必须的物质,具有调节体质、净化血液、美容养颜、促进 新陈代谢等多种功能。酵素是应用发酵技术得到的产物,采用的原材料均是纯天然的植 物、水果、菌菇、海产品等食材,且不掺杂其他化学成分,不会产生不良反应,因而是 发展前景广阔的保健食品,具有很大的开发价值,如今,酵素在中国台湾,日本比较风 靡,中国大陆也在陆续对酵素进行研究与开发。
新鲜水果和蔬菜中含有丰富的酵素,但水果和蔬菜在加工食用过程会中会损失很大部分酵素。《黄帝内经》中讲究五行与五色的搭配关系,日常食物很难做到搭配合理。而酵素可以采用红、黄、白、黑、绿五种以上颜色,将上百种果蔬的根、茎、叶、果、籽、芽营养素全部萃取出,能够调理五脏,养护身心健康。整个加工过程在常温状态下进行,保留果蔬原有酵素,营养丰富,容易吸收,老少皆宜。
目前市场上大部分酵素采用单一原料进行恒温短时发酵,萃取液中的大分子物质分解不彻底,不易被人体吸收。而采用自然发酵,菌种生成数量有限,发酵周期比较长。酵素在制作过程中添加水分或添加剂,亦会降低酵素活性。因此在保证酵素的品质以及种类的丰富程度上,尚需要改进大量的改进。
发明内容
本发明要解决的技术问题在于,针对现有技术的上述缺陷,提供一种全植物果蔬酵素及其制备方法,按照本发明的制备方法制备得到的酵素不加任何添加剂及水分,将五种颜色果蔬全部溶于一体,多种益生菌常温发酵,最大程度保留果蔬营养成分,老少皆宜,集营养与保健于一身。
为实现上述目的,本发明采用以下技术方案:
一种全植物果蔬酵素,其特征在于由包括以下组分的原料经发酵而得:
水果包括:红富士、青苹果、雪梨、鸭梨、巨峰、玫瑰香、红提、枣、橘子、橙子、柚子、李子、桃子、西瓜、杏、甜瓜、香瓜、哈密瓜、青木瓜、荔枝、柿子、柠檬、香蕉、芒果、椰子、金桔、槟榔、红毛丹、山竹、菠萝、石榴、山楂、桑葚、草莓、沙糖桔、圣女果、枇杷、无花果、杨桃、人参果、猕猴桃、杨梅、蓝莓、樱桃、火龙果、番石榴、莲雾、白兰瓜、青梅、西梅、水蜜桃、龙眼、雪莲果、百香果、甘蔗中的至少四十种。
蔬菜包括:黄洋葱、紫洋葱、南瓜、姜、大葱、大蒜、韭菜、蒜薹、芹菜、马铃薯、茄子、菠菜、青椒、红甜椒、黄甜椒、绿甜椒、胡萝卜、青萝卜、心里美萝卜、甜菜根、红薯、紫薯、黄瓜、西红柿、茴香、牛蒡、冬瓜、油菜、绿豆芽、黄豆芽、小白菜、大头菜、紫甘蓝、花椰菜、黄花菜、西兰花、大白菜、香椿、茼蒿 、莴苣、芋头、西葫芦、山药、扁豆、芸豆、菜豆、豇豆、百合、丝瓜、苦瓜、佛手瓜、藕、苋菜、魔芋、草菇、平菇、香菇、金针菇、杏鲍菇、银耳、黑木耳、人参、枸杞、当归中的至少四十种。
所述的全植物果蔬酵素,其特征在于:所述的全植物果蔬酵素同时含有80种以上五种颜色的水果和蔬菜,且水果和蔬菜的质量比为1:1~2。
一种全植物果蔬酵素的制备方法,其特征在于包括如下步骤:
(1)前处理:原料称量后清洗、消毒;清除表面水分;将果蔬切片。
(2)萃取:将切片后的果蔬和白砂糖按质量比为1:0.2~0.6混合均匀,加入酵母菌;静置48~60h,连续搅拌3天,保证糖充分溶解。过滤留取滤液。
(3)一次发酵:向滤液中添加复合菌种Ⅰ,静置发酵12~24小时;每天轻轻捞去表层发酵产生的气泡,持续30天;
(4)二次发酵:待发酵液不再产生气泡,加入复合菌种Ⅱ,于常温下培养8~12个月;
(5)后熟:将发酵满一年的酵素进行过滤分装,加入双歧杆菌,于常温下培养1~3个月,即得全植物酵素。
所述的全植物果蔬酵素的制备方法,其特征在于:步骤(1)果蔬消毒采用50~100ppm的次氯酸钠溶液浸泡2~5min后,流水冲洗干净;采用冷风吹至表面完全干燥;果蔬切片保留根、茎、叶、皮、种子等。
所述的全植物果蔬酵素的制备方法,其特征在于:步骤(2)所述果蔬和白砂糖混合时,先加入叶类蔬菜,再加入根茎类蔬菜,最后加入水果类。物料与糖充要分混合,不能有缝隙。所述酵母菌添加量为所述混合原料重量的0.3~3‰。
所述的全植物酵素的制备方法,其特征在于:步骤(3)所述复合菌种Ⅰ为酵母菌与醋酸菌的混合菌种,所述酵母菌与醋酸菌质量比为1:0.2~1,添加量为所述发酵液重量的0.3~3‰。
所述的全植物酵素的制备方法,其特征在于:步骤(4)所述复合菌种Ⅱ为乳酸菌与匍枝根霉菌的混合菌种,所述乳酸菌与匍枝根霉菌质量比为1:0.1~1,添加量为所述发酵液重量的0.2~2‰。
所述的全植物酵素的制备方法,其特征在于:步骤(5)所述双歧杆菌添加量为所述发酵液重量的0.1~1‰
实施本发明的全植物果蔬酵素,具有以下有益效果:
1、本发明采用全植物发酵,按照五行五色原理进行配比,同时将上百种果蔬根、茎、叶、果、籽、芽中营养素全部萃取出。整个生产过程中不添加水份和添加剂,原液灌装,酵素含量高,营养均衡全面,老少皆宜。
2、本发明在常温状态下发酵时间长达一年半,经历春夏秋冬一年四季温度变化,缓慢发酵过程中将大分子物质完全分解成小分子,并形成丰富的氨基酸、矿物质、有机酸等物质,使口感更丰富,营养物质更全面,吸收率高。
3、本发明分四道工艺进行接种,每道工艺根据发酵的特点接入特定菌种,并引入一种新的菌种匍枝根霉,提高糖化转化率,使果蔬层层渐进发酵成熟。除有效控制发酵的方向外,还可抑制杂菌生长,避免有害物质的产生,使酵素成分更加稳定。
具体实施方式
下面以实施例对本发明作进一步说明,但本发明并不局限于这些实施例。
实施例1:
全植物果蔬酵素的制备方法,由如下重量组分的原料经发酵而成:
水果包括:红富士、青苹果、梨、葡萄、红提、橘子、橙子、柚子、李子、桃子、西瓜、杏、甜瓜、香瓜、哈密瓜、青木瓜、荔枝、柠檬、香蕉、芒果、金桔、菠萝、石榴、山楂、桑葚、草莓、圣女果、枇杷、无花果、杨桃、人参果、猕猴桃、杨梅、蓝莓、樱桃、火龙果、白兰瓜、青梅、水蜜桃、甘蔗各1.5kg。
蔬菜包括:黄洋葱、紫洋葱、南瓜、姜、大葱、大蒜、韭菜、芹菜、马铃薯、茄子、菠菜、青椒、红甜椒、黄甜椒、胡萝卜、青萝卜、心里美萝卜、甜菜根、红薯、紫薯、黄瓜、西红柿、冬瓜、油菜、小白菜、大头菜、紫甘蓝、花椰菜、西兰花、茼蒿、莴苣、西葫芦、山药、丝瓜、苦瓜、藕、平菇、香菇 、金针菇、黑木耳各1.5kg。
制备方法如下:
1、前处理:采购7~8成熟的果蔬原料,剔除破损、腐烂、发霉、病虫害的原料。用流动的水将原料表面的泥土、杂质清洗干净;用100ppm的次氯酸钠溶液浸泡3min。用流动水冲洗数次去除氯酸钠。清洗干净的原料用冷风吹干表面。
2、萃取:果蔬切片或段,保留水果蔬菜的根、茎、叶、皮、种子。切片原则是剖切面越大越好,以利于萃取汁液。在桶底铺一层3~4cm厚的白砂糖,完全覆盖桶底,原料不能接触桶底。先加入蔬菜,再加入水果,其中木瓜、凤梨、柠檬最后加入。加料过程中一层料一层糖,蔬菜类加糖稍多一些,物料与糖充分混合,最后覆盖一层白糖封住物料,不能有缝隙。一桶加入30kg白砂糖。接入100ml酵母菌,盖棉布封桶,静置48~60h。连续搅拌3天,保证糖充分溶解。30目的纱网过滤,留取滤液。
3、一次发酵:滤液中加入质量比为1:0.5的酵母菌与醋酸菌混合菌种100ml,静置12~24h。3~4天会产生大量絮状物,用漏勺轻轻捞取。发酵30天左右,表面气泡越来越少趋于平静。
4、二次发酵:待发酵液不再产生气泡,加入质量比为1:0.5的乳酸菌与匍枝根霉菌复合菌种100ml,于常温下培养8个月;
5、后熟:将发酵液进行过滤分装,分装时用100目纱布过滤一遍,加入1‰双歧杆菌,于常温下培养1个月,即得全植物酵素。再进行无菌灌装,至此酵素制作完成。
实施例2:
全植物果蔬酵素的制备方法,由如下重量组分的原料经发酵而成:
水果包括:红富士、青苹果、雪梨、鸭梨、巨峰、玫瑰香、红提、枣、橘子、橙子、柚子、李子、桃子、西瓜、杏、甜瓜、香瓜、哈密瓜、青木瓜、荔枝、柠檬、香蕉、芒果、金桔、槟榔、红毛丹、菠萝、石榴、山楂、桑葚、草莓、沙糖桔、圣女果、枇杷、无花果、杨桃、人参果、猕猴桃、杨梅、蓝莓、樱桃、火龙果、番石榴、白兰瓜、青梅、西梅、水蜜桃、龙眼、雪莲果、甘蔗个1kg。
蔬菜包括:黄洋葱、紫洋葱、南瓜、姜、大葱、大蒜、韭菜、芹菜、马铃薯、茄子、菠菜、青椒、红甜椒、黄甜椒、胡萝卜、青萝卜、心里美萝卜、甜菜根、红薯、紫薯、黄瓜、西红柿、牛蒡、冬瓜、油菜、绿豆芽、小白菜、大头菜、紫甘蓝、花椰菜、黄花菜、西兰花、大白菜、莴苣、芋头、西葫芦、山药、菜豆、百合、丝瓜、苦瓜、佛手瓜、藕、平菇、香菇、金针菇、杏鲍菇、黑木耳、人参、枸杞各2kg。
制备方法如下:

4、二次发酵:待发酵液不再产生气泡,加入质量比为1:0.1的乳酸菌与匍枝根霉菌复合菌种90ml,于常温下培养12个月。
5、后熟:将发酵液进行过滤分装,分装时用100目纱布过滤一遍,加入0.1%双歧杆菌,于常温下培养3个月,即得全植物酵素。再进行无菌灌装,至此酵素制作完成。

1.一种全植物果蔬酵素,其特征在于由包括以下组分的原料经发酵而得:
水果包括:红富士、青苹果、雪梨、鸭梨、巨峰、玫瑰香、红提、枣、橘子、橙子、柚子、李子、桃子、西瓜、杏、甜瓜、香瓜、哈密瓜、青木瓜、荔枝、柿子、柠檬、香蕉、芒果、椰子、金桔、槟榔、红毛丹、山竹、菠萝、石榴、山楂、桑葚、草莓、沙糖桔、圣女果、枇杷、无花果、杨桃、人参果、猕猴桃、杨梅、蓝莓、樱桃、火龙果、番石榴、莲雾、白兰瓜、青梅、西梅、水蜜桃、龙眼、雪莲果、百香果、甘蔗中的至少四十种;蔬菜包括:黄洋葱、紫洋葱、南瓜、姜、大葱、大蒜、韭菜、蒜薹、芹菜、马铃薯、茄子、菠菜、青椒、红甜椒、黄甜椒、绿甜椒、胡萝卜、青萝卜、心里美萝卜、甜菜根、红薯、紫薯、黄瓜、西红柿、茴香、牛蒡、冬瓜、油菜、绿豆芽、黄豆芽、小白菜、大头菜、紫甘蓝、花椰菜、黄花菜、西兰花、大白菜、香椿、茼蒿 、莴苣、芋头、西葫芦、山药、扁豆、芸豆、菜豆、豇豆、百合、丝瓜、苦瓜、佛手瓜、藕、苋菜、魔芋、草菇、平菇、香菇、金针菇、杏鲍菇、银耳、黑木耳、人参、枸杞、当归中的至少80种。
2.根据权利要求1所述的全植物果蔬酵素,其特征在于:所述的全植物果蔬酵素同时含有80种以上五种颜色的水果和蔬菜,且水果和蔬菜的质量比为1:1~2。
3.一种全植物果蔬酵素的制备方法,其特征在于包括如下步骤:
(1)前处理:原料称量后清洗、消毒;清除表面水分;将果蔬切片;
