本发明公开供糖尿病患者食用的配方食品,包括8‑11份魔芋粉、40‑55份蛋白粉、24‑35份啤酒酵母、6‑12份抗性糊精和风味食品添加剂;本发明创新了食品的成分和配比,配方食品在饭前服用,可增加胰高血糖素样肽1和肠抑胃肽等肠道多肽的释放,延缓胃排空,增加饱腹感,降低食欲,控制体重;此外,本品丰富的膳食纤维和微量元素,加速脂肪代谢、排除肠道内的脂肪毒素,不仅可有助于维持胃肠道功能,也能够保证患者的营养平衡;有效地缓解糖尿病患者出现的周围神经病变;风味食品添加剂提升了食品食用时的体验,口感和味道都会改良;淀粉含量低、食用后饱腹感强、复合膳食同时有助于肠道健康的特点,有助于糖尿病患者的身体健康。

技术领域
本发明属于特殊医学用途配方食品技术领域,尤其涉及一种供糖尿病患者食用的配方食品。
背景技术
随着现代医学的发展,传统疾病逐渐得到控制,但由于人们饮食结构的改变,我国慢性病逐年增加,慢病人口已接近3亿人,已成为我国重大的公共卫生问题。以糖尿病为例,我国糖尿病患病率高达 9.7%,北京市18至80岁常住居民的糖尿病患病率为8.6%,还有5.1%的空腹血糖受损人群。因此,政府十分重视,国务院连续出台了《关于促进健康服务业发展的若干意见》、《中国食物与营养发展纲要 2014-2020年》等文件,2014年卫生部部长陈竺指出“对于慢性病要发挥营养治疗的作用”,国家已将健康产业设定为我国未来发展的重要方向。
营养功能食品是健康产业的核心领域,既能满足人们不断增长的食品消费需求,又能满足人们的健康诉求,在我国属新兴产业,每年增速在30%以上,发展十分迅速。同时涌现了江中集团、新时代健康产业集团、完美有限公司等一批优秀企业,市场产品琳琅满目,但整体研究基础较为薄弱,产品质量良莠不齐,机制不明确,产品与发达国家相比还有较大差距。从人均消费水平来看,美国和澳洲分别为 56美元和41.6美元,国内市场仅为11.4美元,可见我国营养功能食品发展潜力之巨大、发展空间之广阔。
此外,我国营养功能食品产品极少呈现食品形态,基本为胶囊、丸剂、片剂等药品形态,难以起到日常饮食即可干预的作用效果。因此,开展国内营养功能产品的机理研究、产品创制和转型升级势之所迫,迫在眉睫。
现有技术中,为了解决上述技术问题,出现了大量的适于糖尿病患者食用的营养食品,例如申请公布号为CN101695376A的发明专利公开了一种预防糖尿病的保健食品,其按重量百分比的主要原料组成是:小麦面粉55-75%,荞麦面粉3-10%,大麦面粉3-10%,莜麦面粉3-10%,青稞面粉3-10%,牛蒡1-3%,赤小豆1-3%,山药2-4%,葛根2%-4%,肉桂0.5-1%,玉米须0.5-1%,灵芝0.5-1%,黄芩 0.5-1%,丹参0.8-1.5%,黄芪0.8-1.5%,黄精0.8-1.5%,茯苓0.8-1.5%,桑叶1-3%。该保健食品可为人体全面均衡地补充营养物质,增强免疫力,适合各类糖尿病患者食用。
但现有技术中的相关营养保健食品,其多含有中药提取物,遵从药食同源原理,因此其口感和味道仍有待提高,同时现有的适用于糖尿病患者食用的营养保健食品不能很好的配合唐脑病患者的情况,无法有效提供均衡营养,不能有效辅助糖尿病患者控制血糖。
并且在现有技术中,并没有针对性的对于糖尿病可能出现的其他病变进行预防。
综上所述,能否基于现有技术中的不足,提供一种原料组分改进的适于糖尿病患者食用的配方食品,使其具有使用方便,原料组分配伍合理,在不改变饮食习惯的前提下,可以提供的充足蛋白质,保证机体的蛋白需求,有效辅助糖尿病患者控制血糖,有效补充营养,延缓胃排空,增加饱腹感,降低食欲,控制体重、缓解糖尿病患者出现的周围神经病变的功能成为本领域技术人员亟待解决的技术问题。

为了解决上述技术问题,本发明提供了一种供糖尿病患者食用的配方食品,其特征在于,包括8-11份魔芋粉、40-55份蛋白粉、24-35 份啤酒酵母、6-12份抗性糊精和风味食品添加剂。
进一步的,还包括维生素B1、维生素B6、维生素B12和烟酰胺。
进一步的,所述维生素B1、维生素B6、维生素B12和烟酰胺的分量分别为9-22mg/kg、7-22mg/kg、10-66mg/kg和110-330ug/kg。
进一步的,所述风味食品添加剂包括木糖醇、麦香香精和三氯蔗糖。
糖尿病神经病变是糖尿病主要的慢性并发症,其中以糖尿病周围神经病变最为常见。糖尿病周围神经病变是由于患者长期严重高血糖而导致的代谢障碍、微循环异常和自身免疫紊乱。常见的临床表现为肢体麻木、对称性下肢疼痛、刺痛甚至剧痛,部分患者出现单肢周围神经或脊神经分布区域剧烈疼痛。该病变严重影响了患者的生活质量,给患者带来巨大的痛苦。
糖尿病周围神经病变的确切发病机制尚不完全清楚,大量研究表明该病变的发生可能与糖代谢紊乱有关。糖代谢紊乱可能会通过两种方式造成周围神经产生病变:①糖尿病所处的高血糖会通过糖酵解途径产生大量的6-磷酸果糖,当6-磷酸果糖超过了糖酵解途径的代谢能力时,多余的6-磷酸果糖会代谢生成尿苷二磷酸-N-乙酰葡糖胺 (UDP-GlcNAc),从而最终产生前白蛋白(PA-1)和转化生长因子β(TGF-β1)等炎症因子引起神经末梢炎症。②糖尿病所处的高血糖状态会激活葡萄糖的旁路代谢——多元醇代谢途径,促进葡萄糖依次通过醛糖还原酶(Aldose reductase,ALR)和山梨醇脱氢酶 (Sorbitoldehydrogenase,SDH)的催化作用生成果糖。该代谢途径会大量消耗NADPH,NADPH的消耗会导致NO合成减少或者谷胱甘肽减少,引起血管的血流量下降和大量自由基产生,造成神经损伤。
另外,由于神经组织内缺乏果糖激酶,无法代谢果糖,所以通过多元醇代谢途径产生的山梨醇和果糖会在细胞内堆积,引起细胞内的渗透压增高,最终造成神经细胞的肿胀和坏死。
糖尿病周围神经病变目前在临床上缺乏特异性的治疗方法,控制饮食和控制血糖是预防和治疗糖尿病周围神经病变的根本方法。同时大量研究表明,B1、B6、B12和烟酰胺等B族维生素可以有效地缓解糖尿病周围神经病变。①这些维生素是糖代谢的辅酶主要成分,可以促进血糖通过糖酵解途径进行代谢。②血糖在糖酵解途径中产生的 6-磷酸果糖,在B族维生素的作用下,可以转化为5-磷酸戊糖,最后通过磷酸戊糖代谢途径产生NADPH。该作用会消耗过剩的6-磷酸果糖,它不仅可以抑制6-磷酸果糖通过多元醇代谢途径生成山梨醇和果糖,维持细胞内的渗透压稳定,也可以减少6-磷酸果糖通过转化为 UDP-GlcNAc而产生PA-1和TGF-β1等炎症因子;同时它还可以补充葡萄糖多元醇代谢途径消耗的NADPH,缓解因其缺乏而引起的神经损伤。
本发明中的啤酒酵母富含1优质膳食纤维、完整的B族维生素、酵母铬和均衡营养素如蛋白质、维生素、矿物质、核酸等;优质膳食纤维具有抑制食欲、加速脂肪代谢、排除肠道内的脂肪毒素的作用; B族维生素能够加速脂肪代谢、快速消耗热量、促使毛发、皮肤更健康;酵母铬能够降低中性脂肪、协助胰岛素加速糖的代谢、增加重要的抗衰老荷尔蒙DHEA脱氢表雄酮来遏制衰老;均衡营养素蛋白质、维生素、矿物质、核酸等能够脂肪细胞排空的同时,迅速填入,充满营养素的细胞体积比充满脂肪的细胞体积要小得多,达到只减脂肪不减营养健康塑身效果。
而魔芋粉主要成分为魔芋葡甘聚糖,魔芋葡甘聚糖是一种多糖类可食半纤维,其吸水后体积会膨胀约80~100倍,因此人体摄入极少量魔芋葡甘聚糖即有饱胀感,并且魔芋葡甘聚糖不能被人体的酶消化,不提供养分,能够减缓胆固醇、糖分物质的吸收,具有润肠通便功效;蛋白粉优选为乳清蛋白与大豆蛋白,乳清蛋白与大豆蛋白均为优质蛋白质,含有人体所需的各种必需氨基酸。在饮食中,常常推荐植物蛋白与动物蛋白搭配食用,此外,乳清蛋白有助于降低超重者体重和餐后糖负荷,降低肥胖相关性疾病发生的风险。而大豆蛋白质则有助于降低血浆胆固醇含量,起到防止和减轻动物蛋白对肾脏损害的作用;所述抗性糊精能够提供膳食纤维,改善粘度。
维生素B1在体内转变成硫胺素焦磷酸(又称辅羧化酶),参与糖在体内的代谢。添加维生素B1可帮助消化,特别是碳水化合物的消化;维生素B6既能参与蛋白质合成与分解代谢,参与所有氨基酸代谢,如与血红素的代谢有关,与色氨酸合成烟酸有关;又参与糖异生、UFA代谢,与糖原、神经鞘磷脂和类固醇的代谢有关;维生素 B12以辅酶的形式存在,可以增加叶酸的利用率,促进碳水化合物、脂肪和蛋白质的代谢,具有活化氨基酸的作用和促进核酸的生物合成,可促进蛋白质的合成,它对婴幼儿的生长发育有重要作用,代谢脂肪酸,使脂肪、碳水化合物、蛋白质被身体适当运用;烟酰胺在蛋白质和糖的新陈代谢中起作用,可改善人类和动物的营养;木糖醇为人体提供能量,合成糖元,减少脂肪和肝组织中的蛋白质的消耗,使肝脏受到保护和修复,减少人体内有害酮体的产生,不会因食用而为发胖忧虑。可广泛用于食品、医药、轻工等领域。木糖醇与普通的白砂糖相比,具有热量低的优势——每克木糖醇仅含有2.4卡路里热量,比其他大多数碳水化合物的热量少40%。
与现有技术相比,本发明取得了以下有益效果:本发明创新了食品的成分和配比,糖尿病患者在食用本配方食品后,在不改变饮食习惯的前提下,可以提供的充足蛋白质,保证机体的蛋白需求;同时,配方食品在饭前服用,可增加胰高血糖素样肽1和肠抑胃肽等肠道多肽的释放,延缓胃排空,增加饱腹感,降低食欲,控制体重;此外,本品丰富的膳食纤维和微量元素,加速脂肪代谢、排除肠道内的脂肪毒素,不仅可有助于维持胃肠道功能,也能够保证患者的营养平衡;配方食品还提供了适量的B族维生素,它可以有效地缓解糖尿病患者出现的周围神经病变;风味食品添加剂提升了食品食用时的体验,口感和味道都会改良;淀粉含量低、食用后饱腹感强、复合膳食同时有助于肠道健康的特点,有助于糖尿病患者的身体健康。
具体实施方式
如在说明书及权利要求当中使用了某些词汇来指称特定组件。本领域技术人员应可理解,硬件制造商可能会用不同名词来称呼同一个组件。本说明书及权利要求并不以名称的差异来作为区分组件的方式,而是以组件在功能上的差异来作为区分的准则。说明书后续描述为实施本申请的较佳实施方式,然所述描述乃以说明本申请的一般原则为目的,并非用以限定本申请的范围。本申请的保护范围当视所附权利要求所界定者为准。
以下对本申请作进一步详细说明,但不作为对本申请的限定。
实施例一:
一种供糖尿病患者食用的配方食品,其特征在于,包括8份魔芋粉、40份蛋白粉、24份啤酒酵母、6份抗性糊精、维生素B1、维生素B6、维生素B12、烟酰胺、木糖醇、麦香香精和三氯蔗糖,所述维生素B1、维生素B6、维生素B12和烟酰胺的分量分别为9mg/kg、 7mg/kg、10mg/kg和110ug/kg。
配方食品在饭前服用,可增加胰高血糖素样肽1和肠抑胃肽等肠道多肽的释放,延缓胃排空,增加饱腹感,降低食欲,控制体重。
实施例二:
一种供糖尿病患者食用的配方食品,其特征在于,包括10份魔芋粉、48份蛋白粉、28份啤酒酵母、8份抗性糊精、维生素B1、维生素B6、维生素B12、烟酰胺、木糖醇、麦香香精和三氯蔗糖,所述维生素B1、维生素B6、维生素B12和烟酰胺的分量分别为12 mg/kg、9mg/kg、14mg/kg和120ug/kg,配方食品在饭前服用。
实施例三:
一种供糖尿病患者食用的配方食品,其特征在于,包括11份魔芋粉、55份蛋白粉、35份啤酒酵母、12份抗性糊精、维生素B1、维生素B6、维生素B12、烟酰胺、木糖醇、麦香香精和三氯蔗糖,所述维生素B1、维生素B6、维生素B12和烟酰胺的分量分别为22 mg/kg、22mg/kg、66mg/kg和330ug/kg,配方食品在饭前服用。
上述实施例一至三的木糖醇、麦香香精和三氯蔗糖均可以根据相关标准和本领域常用量适量添加,此处不做限制与赘述。
上述实施例一至三的食品的GI数值检测数据结果显示,GI数值均低于55,其为低GI食物,适于糖尿病患者食用,且有助于提高糖尿病患者控制血糖的速度。

1.一种供糖尿病患者食用的配方食品,其特征在于,包括8-11份魔芋粉、40-55份蛋白粉、24-35份啤酒酵母、6-12份抗性糊精和风味食品添加剂。
2.如权利要求1所述的一种供糖尿病患者食用的配方食品,其特征在于,还包括维生素B1、维生素B6、维生素B12和烟酰胺。
3.如权利要求2所述的一种供糖尿病患者食用的配方食品,其特征在于,所述维生素B1、维生素B6、维生素B12和烟酰胺的分量分别为9-22mg/kg、7-22mg/kg、10-66mg/kg和110-330mg/kg。
4.如权利要求3所述的一种供糖尿病患者食用的配方食品,其特征在于,所述风味食品添加剂包括木糖醇、麦香香精和三氯蔗糖。
