由于花生具有独特的营养价值,且在我国种植面积广,因此花生的相关深加工产品也在不断发展。花生糖是我国一种传统的小吃,随着科技的发展,人民生活方式的不断丰富,对于花生糖这种小吃,除了保留原有的风味之外,还相应的有其他的养生、保健方面的诉求。
发明内容
本发明要解决的技术问题是提供一种养胃花生糖,还提供了该养胃花生糖的制备方法。
为了解决以上技术问题,本发明采用以下技术方案:一种养胃花生糖,以重量份为单位,其组成原料为:花生30~90份、胡萝卜提取物8~20份、山楂提取物6~19份、山药提取物4~13份、赤砂糖20~30份、盐2~5份、硬化剂1~3份、稳定剂0.5~1.5份、植物油2~6份。
所述的养胃花生糖,其制备方法如下:
S1:将花生去外衣后碾碎,加热至120~135℃,保持温度烘烤5~10min;
S2:步骤S1所得花生碎冷却至25~35℃;
S3:将胡萝卜提取物、山楂提取物、山药提取物加入步骤S2所得花生碎,搅拌均匀,浸渍1~3h;
S4:将赤砂糖、盐、硬化剂、稳定剂、植物油加入步骤S3所得混合物料中,加热至40~50℃,在转速为300~900r/min下,充分搅拌20~50min;
S5:将步骤S4所得混合物料置于模具中,待其冷却后切块即可。
优选的,所述的胡萝卜提取物,是通过将胡萝卜干经100℃纯净水煎煮浸提30~60min、浓缩1~2h制成的。
优选的,所述的山楂提取物,是通过将山楂干经90℃纯净水煎煮浸提20~40min、浓缩0.8~1.2h制成的。
优选的,所述的山药提取物,是通过将山药干在60℃的75%wt乙醇溶液中浸提0.8~1.6h,后经蒸发除去溶剂制成的。
