Abstract
本发明公开了一种全甜型桑果养颜饮品的生产工艺,涉及饮品加工技术领域,包括如下步骤:(1)桑果挑选,(2)桑果清洗,(3)桑果破碎,(4)桑果榨汁,(5)桑果原汁澄清,(6)桑果饮品配料,(7)脱气杀菌,(8)灌装储藏。本发明利用清洗助剂有效清除桑果表面附着的灰尘、农残和重金属等杂质,并通过澄清助剂的使用,使所制桑果饮品的透光率达到85%,再通过养颜添加剂和调味剂的添加,增强所制桑果饮品的养颜功效和改善口感。

本发明涉及饮品加工技术领域,具体涉及一种全甜型桑果养颜饮品的生产工艺。
背景技术:
桑果,又名桑葚,桑树的成熟果实,为桑科植物桑的果穗。农人喜欢食用其成熟的鲜果,味甜汁多。每年4-6月果实成熟时采收,去杂质,晒干或略蒸后晒干食用,也可来泡酒。《本草纲目》等多种医药典籍中对桑葚的药用价值和用法有详尽的阐述,桑葚性味甘寒,具有补肝益肾、生津润燥、乌发明目等功效,古来就是百姓常采用的一种利尿、保健、消暑的鲜果。
为了延长桑果的食用期限,提高产品附加值,现在市场上出现了不少的桑果汁产品,受到消费者的喜爱。但目前市售桑果饮品多以浊汁型、不透明、添加防腐剂的饮品为主,该种桑果饮品光泽度差、沉淀严重、口感黏稠、有分层现象,产品品质不稳定;并且由于是浊汁型饮品,很容易混入杂质,从而影响产品品质和安全。
发明内容:
本发明所要解决的技术问题在于提供一种澄清透明、光泽度好、无沉淀、口感佳的全甜型桑果养颜饮品的生产工艺。
本发明所要解决的技术问题采用以下的技术方案来实现:
一种全甜型桑果养颜饮品的生产工艺,包括如下步骤:
(1)桑果挑选:挑选八九成熟的新鲜桑果,剔除腐烂桑果及杂质,去除桑果底部的青根;
(2)桑果清洗:向20-25℃清水中加入清洗助剂,搅拌溶解完全后用以浸泡桑果,浸泡5-10min后将桑果捞出,再利用20-25℃清水冲洗,并及时沥干;
(3)桑果破碎:采用破碎机对桑果进行破碎,破碎为整果的1/3-1/2;
(4)桑果榨汁:采用榨汁机对破碎后的桑果进行压榨,反复压榨3次,所得渣液过200目筛,即得桑果原汁;
(5)桑果原汁澄清:20-25℃下向桑果原汁中加入果胶酶,搅拌15-30min后静置1-2h,然后加入澄清助剂,搅拌10-15min后静置2-3h,取上清液并过300目筛,即得澄清桑果原汁;
(6)桑果饮品配料:向澄清桑果原汁中加入养颜添加剂、调味剂和纯净水,搅拌均匀后过300目筛,即得桑果饮品;
(7)脱气杀菌:采用真空脱气机于0.075MPa下对桑果饮品进行脱气,并利用超高温瞬时灭菌机于125-130℃下对脱气后的桑果饮品灭菌4-6s;
(8)灌装储藏:在无菌灌装车间内,采用全自动灌装机对经灭菌处理后的桑果饮品进行灌装和封口,并抽样检测和留样跟踪,经灌装后的桑果饮品于3-7℃下低温储藏,保质期6个月。
所述清洗助剂的质量浓度为1-10g/L。
所述清洗助剂由如下重量份数的原料制成:多聚谷氨酸/泊洛沙姆10-15份、氧化羟丙基淀粉1-5份、麦芽糊精1-5份、羧甲基纤维素钠0.5-2份、聚氧化乙烯0.5-2份。
所述步骤(5)中桑果原汁、果胶酶和澄清助剂的质量比为100:0.001-0.01:0.05-0.2。
所述澄清助剂由如下重量份数的原料制成:多聚谷氨酸/泊洛沙姆10-15份、酪朊酸钠0.5-1份、微晶纤维素0.5-1份、田菁胶0.1-0.5份。
所述多聚谷氨酸/泊洛沙姆的制备方法为:研磨下向多聚谷氨酸中加入去离子水直至完全溶解,并以5℃/min的升温速度升温至60-70℃保温研磨10-15min,再加入泊洛沙姆188,充分混合后于微波频率2450MHz、输出功率700W下微波回流处理3-5min,再次充分混合,继续微波回流处理3-5min,如此反复微波回流处理3-5次,然后加入聚乙二醇单甲醚和氢化蓖麻油,于60-70℃下研磨至水分挥干,所得固体经超微粉碎机制成微粉。
所述多聚谷氨酸、泊洛沙姆188、聚乙二醇单甲醚和氢化蓖麻油的质量比为5-10:5-10:0.5-3:0.1-1。
所述步骤(6)中澄清桑果原汁、养颜添加剂、调味剂和纯净水的质量比为10-50:0.1-0.5:0.1-0.5:50-100。
所述养颜添加剂由如下重量份数的原料制成:葡萄籽提取物0.1-0.5份、木瓜籽提取物0.1-0.5份、维生素E 0.1-0.5份、β-胡萝卜素0.1-0.5份、苦瓜提取物0.05-0.2份、杨梅素0.05-0.2份。
所述调味剂由如下重量份数的原料制成:蜂蜜0.1-0.5份、柠檬酸钠0.1-0.5份、乳酸0.05-0.2份、葡萄糖0.05-0.2份、桑葚香精0.01-0.05份。
本发明的有益效果是:本发明利用清洗助剂有效清除桑果表面附着的灰尘、农残和重金属等杂质,提高桑果的卫生性和食用安全性;并通过澄清助剂的使用,使所制桑果饮品的透光率达到85%,制得澄清透明、光泽度好、无沉淀的桑果饮品;再通过养颜添加剂和调味剂的添加,增强所制桑果饮品的养颜功效和改善口感,从而制得养颜功效好、口感佳的桑果饮品。
具体实施方式:
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
(1)桑果挑选:挑选八九成熟的新鲜桑果,剔除腐烂桑果及杂质,去除桑果底部的青根;
(2)桑果清洗:向20-25℃清水中加入清洗助剂,清洗助剂的质量浓度为8g/L,搅拌溶解完全后用以浸泡桑果,浸泡10min后将桑果捞出,再利用20-25℃清水冲洗,并及时沥干;
(3)桑果破碎:采用破碎机对桑果进行破碎,破碎为整果的1/3-1/2;
(4)桑果榨汁:采用榨汁机对破碎后的桑果进行压榨,反复压榨3次,所得渣液过200目筛,即得桑果原汁;
(5)桑果原汁澄清:20-25℃下向100g桑果原汁中加入0.005g果胶酶,搅拌15min后静置1h,然后加入0.15g澄清助剂,搅拌10min后静置2h,取上清液并过300目筛,即得澄清桑果原汁;
(6)桑果饮品配料:向20g澄清桑果原汁中加入0.2g养颜添加剂、0.1g调味剂和50g纯净水,搅拌均匀后过300目筛,即得桑果饮品;
(7)脱气杀菌:采用真空脱气机于0.075MPa下对桑果饮品进行脱气,并利用超高温瞬时灭菌机于125-130℃下对脱气后的桑果饮品灭菌4-6s;
(8)灌装储藏:在无菌灌装车间内,采用全自动灌装机对经灭菌处理后的桑果饮品进行灌装和封口,并抽样检测和留样跟踪,经灌装后的桑果饮品于3-7℃下低温储藏,保质期6个月。
清洗助剂由10g多聚谷氨酸/泊洛沙姆、3g氧化羟丙基淀粉、1g麦芽糊精、0.5g羧甲基纤维素钠、0.5g聚氧化乙烯混合而成。
澄清助剂由10g多聚谷氨酸/泊洛沙姆、0.5g酪朊酸钠、1g微晶纤维素、0.3g田菁胶混合而成。
多聚谷氨酸/泊洛沙姆的制备:研磨下向10g多聚谷氨酸中加入去离子水直至完全溶解,并以5℃/min的升温速度升温至60-70℃保温研磨10min,再加入10g泊洛沙姆188,充分混合后于微波频率2450MHz、输出功率700W下微波回流处理5min,再次充分混合,继续微波回流处理5min,如此反复微波回流处理3次,然后加入1g聚乙二醇单甲醚和0.5g氢化蓖麻油,于60-70℃下研磨至水分挥干,所得固体经超微粉碎机制成微粉。
养颜添加剂由0.5g葡萄籽提取物、0.3g木瓜籽提取物、0.2g维生素E、0.2gβ-胡萝卜素、0.05g苦瓜提取物、0.05g杨梅素混合而成。
调味剂由0.5g蜂蜜、0.5g柠檬酸钠、0.05g乳酸、0.1g葡萄糖、0.03g桑葚香精混合而成。
实施例2
(1)桑果挑选:挑选八九成熟的新鲜桑果,剔除腐烂桑果及杂质,去除桑果底部的青根;
(2)桑果清洗:向20-25℃清水中加入清洗助剂,清洗助剂的质量浓度为5g/L,搅拌溶解完全后用以浸泡桑果,浸泡10min后将桑果捞出,再利用20-25℃清水冲洗,并及时沥干;
(3)桑果破碎:采用破碎机对桑果进行破碎,破碎为整果的1/3-1/2;

多聚谷氨酸/泊洛沙姆的制备:研磨下向5g多聚谷氨酸中加入去离子水直至完全溶解,并以5℃/min的升温速度升温至60-70℃保温研磨10min,再加入5g泊洛沙姆188,充分混合后于微波频率2450MHz、输出功率700W下微波回流处理3min,再次充分混合,继续微波回流处理3min,如此反复微波回流处理5次,然后加入0.5g聚乙二醇单甲醚和0.2g氢化蓖麻油,于60-70℃下研磨至水分挥干,所得固体经超微粉碎机制成微粉。
养颜添加剂由0.3g葡萄籽提取物、0.5g木瓜籽提取物、0.1g维生素E、0.1gβ-胡萝卜素、0.05g苦瓜提取物、0.05g杨梅素混合而成。
调味剂由0.5g蜂蜜、0.3g柠檬酸钠、0.1g乳酸、0.05g葡萄糖、0.02g桑葚香精混合而成。
对照例1

分别对实施例1、实施例2、对照例1、对照例2、对照例3所述桑果饮品的加工工艺进行桑果杂质清除率测定以及所制桑果饮品进行透光率测定,结果如表1所示。

(1)桑果挑选:挑选八九成熟的新鲜桑果,剔除腐烂桑果及杂质,去除桑果底部的青根;
(2)桑果清洗:向20-25℃清水中加入清洗助剂,搅拌溶解完全后用以浸泡桑果,浸泡5-10min后将桑果捞出,再利用20-25℃清水冲洗,并及时沥干;
(3)桑果破碎:采用破碎机对桑果进行破碎,破碎为整果的1/3-1/2;
