本发明属于食品加工领域,具体涉及一种无糖水果制品及其生产工艺,特别是涉及一种基本上不含葡萄糖和蔗糖,并经过钙锌营养强化的水果制品。
背景技术
水果制品中含有人体必需的多种维生素、矿物质、碳水化合物、粗纤维、蛋白质及脂肪等营养素。吃水果制品并能促进身体健康,进而达到防治疾病,养颜美容的效果,是受现代人欢迎的健康食品。但是其含糖量一般较高,其中蔗糖、葡萄糖对糖尿病人的代谢影响巨大,尤其是大枣,香蕉等升糖指数快的水果制品对糖尿病人来说基本没法食用。水果制品消失在糖尿病人食谱之中。由于市面上所谓的水果制品包括低糖水果制品其含糖量一般也在25%以上,导致正常人对各种水果制品的摄入也是要根据糖含量的多少谨慎选择。
《食品营养标签管理规范》中规定无糖食品概念是是指固体或液体食品中每100g或100mL 的含糖(单糖和双糖)量不高于0.5g。低糖的则是要求是指固体或液体食品中每100g或100mL 的含糖量不高于5g。而水果制品中如果酱、果脯等含糖量一般在25%以上,甚至更高。食品中过多的蔗糖和葡萄糖不但带来更高的热量,而且还容易引起或加重龋齿、餐/饮后瞬时血糖升高等病理现象,因此去除较高的蔗糖和葡萄糖是健康饮食的一个关键。无糖水果制品在目前市场中还未有成熟的产品。目前去除糖的工艺一般为过氧化氢法、电解法等对食品的感官评价影响较大,而且具有一定安全隐患,因此采用温和的酶解法在食品生产中有极大优势。
钙是人体不可或缺的微量元素,它既是身体的构造者,又是身体的调节者,是我们人体的生命之源。老年人缺钙是引起骨质疏松症的重要原因,应从改善饮食结构和服用钙品两方面加强钙的摄入量。儿童补钙应以食补为主,在服用钙品时应特别小心,儿童肠胃功能较弱,一般碱性强的钙品,如碳酸钙、活性钙等补钙效果较差。锌是人体不可缺少的微量元素,在维持动物的健康和正常生理机能等方面具有重要作用。锌对儿童的生长发育起着重要的促进作用,成人每天也需要锌13-15毫克,缺少锌,就会导致食欲减退,皮肤粗糙,发育迟缓以及贫血等。然而,令人遗憾的是水果制品中钙和锌的含量极低,通常认为除了极个别品种的以外,水果中钙含量极低、且基本不含有锌。
发明内容
针对上述现有技术中对无糖水果制品的迫切需求和现有技术中无糖水果制品及其生产工艺的缺位和不足,为了解决水果制品含糖量高、能量高、大量摄入带来健康风险、营养不全面的技术问题,本发明在现有技术中不额外添加还原糖制备的水果制品基础上,提出一种降低了水果天然还原糖含量的果制品及其生产工艺,将水果中天然含有的游离果糖、二糖中的果糖单元留在水果制品中,并且将水果中天然含有的游离葡萄糖、二糖中的葡萄糖单元转化为具有更高营养和保健价值的葡萄糖酸钙、葡萄糖酸锌。
具体而言,一方面本发明提供一种无糖水果制品,其特征在于,所述水果制品中天然含有的蔗糖被分解为果糖和葡萄糖,并且所述蔗糖分解产生的葡萄糖与水果制品中天然含有的葡萄糖被进一步转化为葡萄糖酸钙和/或葡萄糖酸锌。
本发明所述的无糖水果制品,其特征在于无糖高钙水果制品基本上不含有蔗糖、葡萄糖或含葡萄糖单元的还原糖。
本发明所述的无糖水果制品,其特征在于,所述水果制品包括但不局限于果汁、果浆、果馅、果冻等含水果成分的制品。
第二方面,本发明还提供所述无糖水果制品的用途,特别是在制备食品、保健品、药品、饲料、饵料中的用途。
本发明所述的无糖水果制品的用途,其特征在于,所述无糖水果制品用于制备调味剂、风味剂、营养补充剂、稀释剂等。所述的营养补充剂包括但不限于钙补充剂、锌补充剂。
第三方面,本发明还提供所述无糖水果制品的制备方法,其特征在于,包括以下工艺步骤:
(1)将水果匀浆、稀释;
(2)添加蔗糖酶降解果制品匀浆稀释液中的天然蔗糖,和/或添加葡萄糖氧化酶将葡萄糖氧化为葡萄糖酸;
(3)向反应体系中流加氢氧化钙和/或氯化锌,将葡萄糖酸转变为葡萄糖酸钙和/或葡萄糖酸锌。
本发明所述无糖水果制品的制备方法,其特征在于,所述步骤(1)包括将水果打浆,加入饮用纯净水稀释,浆体和水的比例为1:0.5-1:3.0(质量/体积),稀释后加热至35-40℃搅拌30-60min,调节pH至5.0-6.0。
本发明所述无糖水果制品的制备方法,其特征在于,所述步骤(2)包括按每克还原糖加入180IU蔗糖酶的量添加蔗糖酶,40-55℃反应15min,再按每克还原糖加入250IU葡萄糖氧化酶的量添加葡萄糖氧化酶,40-55℃反应15min。
本发明所述无糖水果制品的制备方法,其特征在于,所述步骤(2)包括根据稀释液中还原糖的含量,每克还原糖加入180IU蔗糖酶、250IU葡萄糖氧化酶,40-55℃反应30min。
本发明所述无糖水果制品的制备方法,其特征在于,所述步骤(3)包括:向反应体系中流加氢氧化钙,边加边搅拌,实时监测溶液的pH值,当体系pH值升至7.5-8.0时,停止流加氢氧化钙
本发明所述无糖水果制品的制备方法,其特征在于,所述步骤(3)包括:向反应体系中流加氯化锌,边加边搅拌,实时监测溶液的pH值,当体系pH值将至3.5-3.0时停止流加氯化锌。
本发明所述无糖水果制品的制备方法,其特征在于,所述步骤(3)包括同时流加氢氧化钙和氯化锌,至开始生成沉淀时,停止流加。
本发明取得了以下有益的技术效果:
第一、本发明所述无糖水果制品不仅不添加外源性葡萄糖、蔗糖,而且采用条件温和、食品安全的酶解法降解并转化水果制品中天然含有的蔗糖、葡萄糖,同时保留了甜度更高、更健康的果糖。
第二、本发明所述无糖水果制品的生产工艺与现有技术中想方设法降低糖含量的尝试不同,本发明是将水果中的葡萄糖、水果中蔗糖降解产生的葡萄糖转化为营养价值更高的产品,葡萄糖酸钙和葡萄糖酸锌,一方面葡萄糖酸钙和葡萄糖酸锌在摄入人体后不会立即升高血糖值、挑战机体对葡萄糖的耐受;另一方面葡萄糖酸钙和葡萄糖酸锌能够直接起到补充钙、锌的作用,使得本发明无糖水果具有无可比拟的营养价值和保健效果。
第三、本发明所述工艺简单,处理时间短,对风味、口感、颜色等感官性状的影响小。生产获得的无糖、钙/锌强化果浆制品不仅营养健康,而且口感好,产品呈现独特的果糖风味和水果芬芳,尤其适用于糖尿病人群、成长期少年儿童。

具体实施方式
以下进一步通过实施例来理解本发明,其中所述实施例说明了一些制备或使用方法。然而,要理解的是,这些实施例不限制本发明。现在已知的或进一步开发的本发明的变化被认为落入本文中描述的和以下要求保护的本发明范围之内。
实施例 1:无糖、钙强化的草莓果酱的制备
1)取新鲜草莓洗净后打浆,与水溶液按1:1.5(m/v)的比例混合,40℃下搅拌30 min,加入醋酸醋酸钠缓冲溶液调节pH为5.5,取样进行HPLC,获得酶处理之前果浆稀释液中糖含量HPLC图谱(图1)。
(2)检测稀释液中还原糖含量,按每克还原糖加入180IU蔗糖酶的量添加蔗糖酶,50℃反应15min,取样进行HPLC,获得经过蔗糖酶水解后果浆稀释液中糖含量HPLC图谱(图2)。
然后,按每克还原糖加入250IU葡萄糖氧化酶的量添加葡萄糖氧化酶酶,同时在充分搅拌的条件下向反应体系中通入氧气,通氧量为0.2L/h*L,50℃继续反应。
(3)继续充氧反应15min后流加氢氧化钙溶液,维持50℃、充分搅拌的条件,检测pH值,葡萄糖氧化产生的葡萄糖酸不断转化为葡萄糖酸钙,当pH值升高至8.0时,终止反应,得钙营养强化的无糖草莓果浆制品,取样进行HPLC,获得经葡萄糖氧化酶处理、氢氧化钙流加后的果浆稀释液中糖含量HPLC图谱(图3)。
(4)将经过HPLC检测合格、酶解完全的草莓果浆,添加各种辅料,制成无糖、钙强化草莓果酱。
实施例2:无糖、锌强化的香蕉果汁的制备
(1)取新鲜香蕉果肉洗净后打浆,与水溶液按1:1.5(m/v)的比例混合,40℃下搅拌30min,加入醋酸醋酸钠缓冲溶液调节pH为5.5,取样进行HPLC检测。
(2)检测稀释液中还原糖含量,按每克还原糖加入180IU蔗糖酶的量添加蔗糖酶,50℃反应15min,取样进行HPLC检测。
然后,按每克还原糖加入250IU葡萄糖氧化酶的量添加葡萄糖氧化酶酶,同时在充分搅拌的条件下向反应体系中通入氧气,通氧量为0.2L/h*L,50℃继续反应。
(3)继续充氧反应15min后流加氯化锌溶液,维持50℃、充分搅拌的条件,检测pH值,葡萄糖氧化产生的葡萄糖酸不断转化为葡萄糖酸锌,当pH值降低至3.5时,终止反应,得锌营养强化的无糖香蕉果浆制品,取样进行HPLC检测。
(4)将经过HPLC检测、酶解完全后的无糖香蕉果浆添加各种辅料,制成无糖、锌强化的香蕉果汁。
实施例3:HPLC色谱条件和参数
色谱柱为shodex糖柱,流速1.2 mL /min,流动相为乙腈:水=30:70(v:v),进样量为5μL,柱温均为35℃,载气流速:2.0mL/min,雾化温度70℃,蒸发温度100℃。
用葡萄糖、果糖、蔗糖标准品进行预实验,结果表明三种物质在50mg/kg-5000mg/kg范围内线性关系良好。
本发明内容仅仅举例说明了要求保护的一些具体实施方案,其中一个或更多个技术方案中所记载的技术特征可以与任意的一个或多个技术方案相组合,这些经组合而得到的技术方案也在本申请保护范围内,就像这些经组合而得到的技术方案已经在本发明公开内容中具体记载一样。
Claims (10)
1.一种钙、锌营养强化的无糖水果制品,其特征在于,所述水果制品中天然含有的蔗糖被分解为果糖和葡萄糖,并且所述蔗糖分解产生的葡萄糖与水果制品中天然含有的葡萄糖被进一步转化为葡萄糖酸钙和/或葡萄糖酸锌。
2.如权利要求1所述钙、锌营养强化的无糖水果制品,其特征在于所述水果制品基本上不含有蔗糖、葡萄糖或含葡萄糖单元的还原糖。
3.如权利要求1或2所述钙、锌营养强化的无糖水果制品,其特征在于,所述水果制品包括果汁、果浆、果馅、果冻等含水果成分的制品。
4.如权利要求1至3任一所述钙、锌营养强化的无糖水果制品在制备食品、保健品、药品、饲料、饵料中的用途。
5.如权利要求4所述的用途,其特征在于,所述无糖水果高钙制品用于制备调味剂、风味剂、营养补充剂、稀释剂等。
6.如权利要求1至3任一所述钙、锌营养强化的无糖水果制品的制备方法,其特征在于,包括以下工艺步骤
(1)将水果匀浆、稀释;
(2)添加蔗糖酶降解果制品匀浆稀释液中的天然蔗糖,和/或添加葡萄糖氧化酶将葡萄糖氧化为葡萄糖酸;
(3)向反应体系中流加氢氧化钙和/或氯化锌,将葡萄糖酸转变为葡萄糖酸钙和/或葡萄糖酸锌。
7.如权利要求6所述钙、锌营养强化的无糖水果制品的制备方法,其特征在于,所述步骤(1)包括将水果打浆,加入饮用纯净水稀释,浆体和水的比例为1:0.5-1:3.0(质量/体积),稀释后加热至35-40℃搅拌30-60min,调节pH至5.0-6.0。
8.如权利要求6所述钙、锌营养强化的无糖水果制品的制备方法,其特征在于,所述步骤(2)包括按每克还原糖加入180IU蔗糖酶的量添加蔗糖酶,40-55℃反应15min,再按每克还原糖加入250IU葡萄糖氧化酶的量添加葡萄糖氧化酶,40-55℃反应15min。
9.如权利要求6所述钙、锌营养强化的无糖水果制品的制备方法,其特征在于,所述步骤(2)包括根据稀释液中还原糖的含量,每克还原糖加入180IU蔗糖酶、250IU葡萄糖氧化酶,40-55℃反应30min。
10.如权利要求6所述钙、锌营养强化的无糖水果制品的制备方法,其特征在于,所述步骤(3)包括:向反应体系中流加氢氧化钙,边加边搅拌,实时监测溶液的pH值,当体系pH值升至7.5-8.0时,停止流加氢氧化钙;和/或向反应体系中流加氯化锌,边加边搅拌,实时监测溶液的pH值,当体系pH值将至3.5-3.0时停止流加。
