合欢皮,别名为合昏皮、夜合皮、合欢木皮、夜台皮等,为豆科植物合欢树的皮。味甘,性平;入心、肝经。能安神解郁,活血消痈。用于心神不安;忧郁,不眠,内外痈疡,跌打损伤。
吴茱萸,别名为吴萸、茶辣、辣子、臭辣子、吴椒等,为芸香科植物吴茱萸的近成熟果实。味辛、苦,性温;入胃、肝经。能散寒止痛;疏肝下气;温中燥湿。用于脘腹冷痛;厥阴头痛;疝痛;脚气肿痛;呕吐吞酸,寒湿泄泻。
甘草,别名为甜草根、红甘草、粉甘草、粉草、美草、蜜甘、蜜草、蕗草、国老、灵通、甜草、甜根子、棒草等,为双子叶植物豆科甘草、胀果甘草或光果甘草的根及根茎。味甘,性平;入胃、肺、脾经。能清热解毒,润肺止咳,调和诸药;炙甘草能补脾益气。用于咽喉肿痛,咳嗽,脾胃虚弱,胃、十二指肠溃疡,肝炎,癔病,痈疖肿毒,药物及食物中毒。
优选地,抗氧剂为蜂胶、谷维素、米糠油和维生素E。
优选地,甜味剂为绵砂糖和索马甜。
优选地,膨松剂为酵母和碳酸氢钠。
优选地,女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草的重量比为8-10:8-12:6-8:3-5:4-6:3-5:2-4:1-3:1-2:4-6。
优选地,蜂胶、谷维素、米糠油和维生素E重量比为3-4:1-2:5-7:1-2。
优选地,绵砂糖和索马甜的重量比为1-2:0.5。
优选地,酵母和碳酸氢钠的重量比为2-3:1-1.5。
优选地,在添加剂的制备过程中,将女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草粉碎混匀得到混合物;加混合溶液超声10-20min,然后回流2-3h,过滤取滤液,减压浓缩得到添加剂。
优选地,在添加剂的制备过程中,混合物和混合溶液重量体积(g/ml)比为1:20-40。
优选地,在添加剂的制备过程中,混合溶液为质量分数为20-30wt%乙醇水溶液。
上述膨松剂、氯化钠、复合维生素、甜味剂、酪蛋白磷酸肽、抗氧剂均为食品级,可从市场购得。
本发明的制备方法为:将糯米、燕麦磨粉后与红薯粉、膨松剂、氯化钠、复合维生素、甜味剂、酪蛋白磷酸肽、添加剂混匀得到中间物料;将蛋清、梨汁、抗氧剂与水混匀后,加入中间物料混匀,制成雪米饼饼胚,蒸制,干燥,膨化得到果香降肝火雪米饼。
本发明选用女贞子、决明子相互配合滋补肝肾、清热明目;选用墨旱莲、菊花、黄连、龙胆草相互配合,在辅助女贞子、决明子进一步补益肝肾、平肝明目的同时清热泻火,再选用莲子、合欢皮相互配合养心安神,吴茱萸、甘草相互配合,疏肝清热、调和诸药、缓解女贞子、决明子、墨旱莲、菊花、黄连、龙胆草的寒性,并配合梨汁的降肝火作用,上述各物质相互配合从内里滋补肝肾、疏肝清热,并缓解上火、赤目等表症,从而内外兼施,起到很好的降肝火作用;选用糯米、燕麦、红薯粉、蛋清、梨汁相互配合,使得本发明营养丰富;梨汁还可以提高本发明的香味和口感,使人们更喜食用;选用酵母和碳酸氢钠相互配合作为膨松剂,使得本发明疏松程度适宜,口感较好;选用蜂胶、谷维素、米糠油和维生素E作为抗氧剂,安全无毒,并能增加本发明的营养成分;且蜂胶具有抗菌抗病毒作用,可以进一步增加保质期,并与梨汁、绵砂糖和索马甜相互配合,进一步改善本发明的口味,消除添加剂带来的苦味;酪蛋白磷酸肽可促进营养成分更好的被人体吸收;上述各物质相互配合使得本发明具有良好的降肝火作用,且营养丰富,果香浓郁、口感好,保质期长。

一种果香降肝火雪米饼,其原料按重量份包括:糯米100份,燕麦25份,红薯粉10份,蛋清5份,梨汁25份,膨松剂1.5份,氯化钠1.5份,复合维生素0.7份,甜味剂4份,酪蛋白磷酸肽5份,抗氧剂11份,添加剂15份。
实施例2
一种果香降肝火雪米饼,其原料按重量份包括:糯米100份,燕麦20份,红薯粉15份,蛋清4份,梨汁30份,膨松剂1份,氯化钠2份,复合维生素0.5份,甜味剂5份,酪蛋白磷酸肽4份,抗氧剂12份,添加剂14份;
其中,添加剂的原料包括:女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草;
抗氧剂为蜂胶、谷维素、米糠油和维生素E;
甜味剂为绵砂糖和索马甜;
膨松剂为酵母和碳酸氢钠。
实施例3
一种果香降肝火雪米饼,其原料按重量份包括:糯米100份,燕麦30份,红薯粉5份,蛋清6份,梨汁20份,膨松剂2份,氯化钠1份,复合维生素1份,甜味剂3份,酪蛋白磷酸肽6份,抗氧剂10份,添加剂16份;
其中,添加剂的原料包括:女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草,其中,女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草的重量比为8:12:6:5:4:5:2:3:1:6;
抗氧剂为蜂胶、谷维素、米糠油和维生素E,其中,蜂胶、谷维素、米糠油和维生素E重量比为3:2:5:2;
甜味剂为绵砂糖和索马甜,其中,绵砂糖和索马甜的重量比为1:0.5;
膨松剂为酵母和碳酸氢钠,其中,酵母和碳酸氢钠的重量比为3:1。
实施例4
一种果香降肝火雪米饼,其原料按重量份包括:糯米100份,燕麦22份,红薯粉13份,蛋清4.5份,梨汁28份,膨松剂1.2份,氯化钠1.8份,复合维生素0.6份,甜味剂4.5份,酪蛋白磷酸肽4.5份,抗氧剂11.5份,添加剂14.5份;
其中,在添加剂的制备过程中,将女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草粉碎混匀得到混合物;加质量分数为30wt%乙醇水溶液超声10min,然后回流3h,过滤取滤液,减压浓缩得到添加剂,其中,混合物和乙醇水溶液重量体积(g/ml)比为1:20,女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草的重量比为10:8:8:3:6:3:4:1:2:4;
抗氧剂为蜂胶、谷维素、米糠油和维生素E,其中,蜂胶、谷维素、米糠油和维生素E重量比为4:1:7:1;
甜味剂为绵砂糖和索马甜,其中,绵砂糖和索马甜的重量比为2:0.5;
膨松剂为酵母和碳酸氢钠,其中,酵母和碳酸氢钠的重量比为2:1.5。
实施例5
一种果香降肝火雪米饼,其原料按重量份包括:糯米100份,燕麦28份,红薯粉7份,蛋清5.5份,梨汁22份,膨松剂1.8份,氯化钠1.2份,复合维生素0.8份,甜味剂3.5份,酪蛋白磷酸肽5.5份,抗氧剂10.5份,添加剂15.5份;
其中,在添加剂的制备过程中,将女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草粉碎混匀得到混合物;加质量分数为20wt%乙醇水溶液超声20min,然后回流2h,过滤取滤液,减压浓缩得到添加剂,其中,混合物和乙醇水溶液重量体积(g/ml)比为1:40,女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草的重量比为9:10:7:4:5:4:3:2:1.5:5;
抗氧剂为蜂胶、谷维素、米糠油和维生素E,其中,蜂胶、谷维素、米糠油和维生素E重量比为3.5:1.5:6:1.5;
甜味剂为绵砂糖和索马甜,其中,绵砂糖和索马甜的重量比为3:1;
膨松剂为酵母和碳酸氢钠,其中,酵母和碳酸氢钠的重量比为2.5:1.2。
试验例1
对实施例5进行性能测试,并以市售普通雪米饼作为对照组,结果如下:
由上表可以看出,本发明理化性能较好、口感好。
试验例2
选取具有头晕胀痛,面红目赤,口苦咽干,急燥易怒,舌边尖红,脉弦数症状的肝火旺盛者100例,分为2组,每组50人,一组食用实施例5作为试验组,另一组食用普通市售雪米饼作为对照组,两组在性别、年龄上无统计学差异,两组三餐饮食相同,分别于每天三餐2h后食用5片实施例5或普通市售雪米饼,连续食用60天,统计结果如下表:
由上表可以看出本发明具有良好的降肝火功能。

1.一种果香降肝火雪米饼,其特征在于,其原料按重量份包括:糯米100份,燕麦20-30份,红薯粉5-15份,蛋清4-6份,梨汁20-30份,膨松剂1-2份,氯化钠1-2份,复合维生素0.5-1份,甜味剂3-5份,酪蛋白磷酸肽4-6份,抗氧剂10-12份,添加剂14-16份。
2.根据权利要求1所述果香降肝火雪米饼,其特征在于,添加剂的原料包括:女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草。
3.根据权利要求1或2所述果香降肝火雪米饼,其特征在于,抗氧剂为蜂胶、谷维素、米糠油和维生素E。
4.根据权利要求1-3任一项所述果香降肝火雪米饼,其特征在于,甜味剂为绵砂糖和索马甜。
5.根据权利要求1-4任一项所述果香降肝火雪米饼,其特征在于,膨松剂为酵母和碳酸氢钠。
6.根据权利要求2所述果香降肝火雪米饼,其特征在于,女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草的重量比为8-10:8-12:6-8:3-5:4-6:3-5:2-4:1-3:1-2:4-6。
7.根据权利要求3所述果香降肝火雪米饼,其特征在于,蜂胶、谷维素、米糠油和维生素E重量比为3-4:1-2:5-7:1-2。
8.根据权利要求4所述果香降肝火雪米饼,其特征在于,绵砂糖和索马甜的重量比为1-2:0.5。
9.根据权利要求5所述果香降肝火雪米饼,其特征在于,酵母和碳酸氢钠的重量比为2-3:1-1.5。
10.根据权利要求1-9任一项所述果香降肝火雪米饼,其特征在于,在添加剂的制备过程中,将女贞子、决明子、墨旱莲、菊花、黄连、龙胆草、莲子、合欢皮、吴茱萸、甘草粉碎混匀得到混合物;加混合溶液超声10-20min,然后回流2-3h,过滤取滤液,减压浓缩得到添加剂;优选地,在添加剂的制备过程中,混合物和混合溶液重量体积(g/ml)比为1:20-40;优选地,在添加剂的制备过程中,混合溶液为质量分数为20-30wt%乙醇水溶液。
