板栗:又名栗,素有“千果之王”的美誉,板栗中所含的丰富的不饱和脂肪酸、维生素和矿物质,能防治高血压病、冠心病、动脉硬化、骨质疏等疾病,还含有丰富的维生素C,能够维持牙齿、骨骼、血管肌肉的正常功用,可以预防和治疗骨质疏松、腰腿酸软、筋骨疼痛乏力,板栗因具有较高含量的碳水化合物而口感香甜细腻,是老少皆宜的保健果品。
杏仁:富含蛋白质、脂肪、糖类、胡萝卜素、维生素C、维生素P以及钙、磷、铁等营养成分,具有润肺、减肥、抗肿瘤和降低胆固醇的功效,杏仁不能生食,烤熟或炒熟后口感酥脆香甜,是常见的干果。
本发明还公开了上述低脂混合花生酱的制备方法,包括以下步骤:
1)按重量份数称取花生、芝麻和杏仁,分别烘烤至九层熟后,将花生和杏仁脱皮,将脱皮后的花生、杏仁和芝麻分别放入挤压机进行压榨,得花生油、芝麻油和杏仁油以及花生碎屑、芝麻碎屑和杏仁碎屑,将花生碎屑、芝麻碎屑和杏仁碎屑混合均匀后进行精磨,200目过滤得精磨酱,将精磨酱装入滤油器中,施压5-10min把精磨酱中的油脂滤出后,将滤油器中剩余的精磨酱取出,得混合酱;
2)按重量份数称取生板栗肉,置于蒸汽20min后取出自然冷却,将冷却后的板栗肉研磨成板栗粉,按重量份称取去离子水,加入板栗粉中,搅拌均匀得板栗糊;
3)把步骤1)所得混合酱和步骤2)所得板栗糊混合,加入蔗糖和柠檬酸钠,缓慢搅拌均匀后即制得低脂花生酱。
其中,滤油器包括滤油管和滤油头,所述滤油管为不锈钢管,其一端设有内螺纹,所述滤油头一侧设有与所述滤油管内螺纹向切合的外螺纹,所述滤油头内部依次设有金属滤网、玻璃纤维网、玻璃球、玻璃纤维网、金属滤网和金属孔板;步骤3)中,搅拌时所用搅拌工具为碳化竹棒。
本发明的有益效果是:
1)本发明低脂混合花生酱营养丰富,具有多种保健功效,制备时先对花生、芝麻和杏仁分别压榨,把大部分的油脂去除后混合研磨成低粒度的混合酱,再利用混合酱中的油脂通过滤油器的速度快的特点对精磨后的混合酱进一步脱脂,最后再用碳化竹棒吸附残留的油脂,实现了制备过程中在保持各组分营养成分的前提下多次脱油的目的;
2)在混合酱中加入板栗糊和蔗糖,增加了碳水化合物的含量,可以改善脱油后混合酱的口感,同时板栗糊和蔗糖还可以稀释混合酱,使其粘度降低而不易板结,延长其存储时间。

以下结合实例对本发明进行描述,所举实例只用于解释本发明,并非用于限定本发明的范围。
实施例1
一种低脂混合花生酱,按重量分数计,包括以下成分:花生100份、芝麻50份、生板栗肉30份、杏仁10份、蔗糖15份、去离子水40份、柠檬酸钠1份。
实施例2
一种低脂混合花生酱,按重量分数计,包括以下成分:花生150份、芝麻80份、生板栗肉60份、杏仁20份、蔗糖25份、去离子水60份、柠檬酸钠2份。
实施例3
一种低脂混合花生酱,按重量分数计,包括以下成分:花生125份、芝麻75份、生板栗肉45份、杏仁15份、蔗糖20份、去离子水50份、柠檬酸钠1.5份。
实施例1-3低脂混合花生酱的制备方法,包括以下步骤:
1)按重量份数称取花生、芝麻和杏仁,分别烘烤至九层熟后,将花生和杏仁脱皮,将脱皮后的花生、杏仁和芝麻分别放入挤压机进行压榨,得花生油、芝麻油和杏仁油以及花生碎屑、芝麻碎屑和杏仁碎屑,将花生碎屑、芝麻碎屑和杏仁碎屑混合均匀后进行精磨,200目过滤得精磨酱,将精磨酱装入滤油器中,施压5-10min把精磨酱中的油脂滤出后,将滤油器中剩余的精磨酱取出,得混合酱;
2)按重量份数称取生板栗肉,置于蒸汽20min后取出自然冷却,将冷却后的板栗肉研磨成板栗粉,按重量份称取去离子水,加入板栗粉中,搅拌均匀得板栗糊;
3)把步骤1)所得混合酱和步骤2)所得板栗糊混合,加入蔗糖和柠檬酸钠,缓慢搅拌均匀后即制得低脂花生酱。
