本发明涉及一种面条,尤其涉及一种高营养混蛋面。
背景技术
现有技术中,有鸡蛋面、蔬菜面等多种面条,这些面条虽也有一定的营养作用,但大多数面条久煮后容易浑烫、断裂,重新加热容易变成糊涂面,而面条作为人们的主食之一,如果能富含多种营养物质,使传统主食既好吃、又能强身健体,也是饮食业长期探讨的问题。
发明内容
针对上述传统面条存在的不足,本发明提供了一种口感劲道、富含高营养物质、久煮不浑汤、不断裂、具有保健作用、纯天然的高营养混蛋面。
本发明的技术方案:一种高营养混蛋面,它是由以下重量份配比的原料制作而成:小麦粉100~120份、鹌鹑蛋汁10~12份、头窝蛋 8~12份、海鸭蛋15~20份、蕨粉0.5~1份、芭蕉芋淀粉3~8份、食盐0.8~1.2份、植酸1~3份、瓜尔胶1~1.5份、朵贝茶树梗及叶煎汁15~30份。
进一步,上述高营养混蛋面是由以下重量份配比的原料制作而成:小麦粉110份、鹌鹑蛋汁11份、头窝蛋10份、海鸭蛋18份、蕨粉0.6份、芭蕉芋淀粉5份、食盐1份、植酸2份、瓜尔胶1.2份、朵贝茶树梗及叶煎汁24份。
本发明所采用的原料说明:
头窝蛋:产自110~130天之初产蛋鸡,乃母鸡一生精华之精,头窝蛋蛋重一般在42~53克之间,每只头窝蛋鸡平均要积蓄3~9天的营养才能产下一枚小小的头窝蛋。厚积而薄发,蛋黄色深,蛋清粘稠,无激素和抗生素,胆固醇低且味道鲜美,含丰富的维生素、氨基酸和人体所需的各种微量元素,与普通鸡蛋相比,等重的头窝蛋营养含量相对要高得多。常食头窝蛋,能增加营养、增强体质,是老少皆宜的理想营养佳品,特别适合孕妇、产妇和儿童食用。
蕨粉:蕨粉为蕨类植物蕨的根茎中所含的淀粉经加工而得。《本草纲目》载:“其根紫色,皮内有白粉,捣烂,再三洗澄,取粉作柜粘,荡皮作线食之,色淡紫而甚滑美也。”《广州植物志》亦载:“蕨,根茎含淀粉称蕨粉,制取之可供食用及糊料。”蕨粉可制粉条、粉皮,配制糕饼点心,亦能代替豆粉、藕粉,营养价值十分丰富。蕨粉系民间常用药物之一,具有清热、利湿、益气的作用。现代研究认为,蕨粉对癌细胞有一定的抑制作用,常吃蕨粉有预防和辅助治疗癌症的作用。
芭蕉芋淀粉:性寒能清肠热,味甘能润肠通便,可治疗热病烦渴等症;缓和胃酸的刺激,保护胃黏膜;而且芭蕉中含血管紧张素转化酶抑制物质,可以抑制血压的升高;芭蕉果肉甲醇提取物对细菌、真菌有抑制作用,可消炎解毒;芭蕉中大量的碳水化合物、膳食纤维等可以防癌抗癌。
与现有技术相比,本发明的优点在于:
1、本发明产品配方原料采用鹌鹑蛋汁、头窝蛋以及海鸭蛋“三蛋”配方,使面条含有丰富的氨基酸、磷、铁、钙、锌、碘等微量元素,同时加入了蕨粉和芭蕉芋淀粉,增加了面条中的粗蛋白、粗脂肪以及粗纤维;长期食用本发明的面条,对人体能综合摄入大量的营养成份具有积极作用,特别对老年、妇女、儿童,尤其是肠、胃、肝、胆、脾、高血压、高血脂、脑血栓患者长期食用,有潜移默化的营养、保健、治疗作用;
2、本发明营养丰富、醇香味美、溜滑细腻,由于面条中加入瓜尔胶、朵贝茶树梗及叶煎汁,使面条更劲道且久煮不浑汤、不断裂、有韧性,是许多同类产品不可比拟的;
3、本发明产品无任何色素、防腐添加剂,属纯天然绿色食品。

本发明的实施例:选鲜鹌鹑蛋、头窝蛋、海鸭蛋分别清洗、消毒、打蛋过滤、搅拌,取优质小麦粉、筛粉,取筛优质小麦粉110份、鹌鹑蛋汁11份、头窝蛋10份、海鸭蛋18份、蕨粉0.6份、芭蕉芋淀粉5份、食盐1份、植酸2份、瓜尔胶1.2份、朵贝茶树梗及叶煎汁 24份,混合、搅拌、熟化、压面片、成型、检验,烘干、检验,切条、检验、包装,即得高营养混蛋面。
