本发明公开了一种香圆天麻石仙桃固体饮料及其制备方法,该固体饮料主要由香圆、天麻、石仙桃、山药、百合、陈皮、薄荷、桑叶、枇杷花、胖大海、金银花、甘草、罗汉果以及包埋剂、增溶剂、抗结剂、甜味剂、酸味剂等经提取、浓缩、调配、均质、喷雾干燥及高压杀菌、包装制备而成。本发明基于药食同源的理念,制备的香圆天麻石仙桃固体饮料质构稳定性好、清亮透明、具有原料特有的香气和滋味,在满足消费者解渴的同时又能发挥其理气润肺、化痰止咳、增强机体免疫力的功效,进而可预防或缓解雾霾对人体呼吸系统造成的危害。

技术领域
本发明涉及固体饮料及其加工方法技术领域,具体涉及一种香圆天麻石仙桃固体饮料及其制备方法。
背景技术
近几年我国大部分地区都遭遇了较为严重的雾霾天气。雾霾的组分十分复杂,大小有数百种颗粒物,这些颗粒物通过人体呼吸进入呼吸道,就会沉积于人的肺泡当中,沉积肺泡的烟尘被溶解后进入血液,容易造成血液中毒,未被溶解的部分被细胞吸收后容易破坏细胞造成尘肺;霾中所含的其他有害物质如二氧化硫刺激人的呼吸道对人的危害更大,严重时其内的污染物杂质可使人的中枢神经发生病变,引起肺水肿或慢性气管炎,特别是当人们吸入肺部,可导致肺气肿及肺癌等疾病。当前人们对雾霾的有效防护措施是减少外出或外出时配戴面罩,在饮食方面,人们大多食用清肺润肺的食物来预防或缓解,而目前市场上关于此类保健饮品很少。
香圆是一种传统的药食同源物品,具有疏肝理气、化痰止咳、治疗肝郁、胸胁胀痛等功效。香圆中含有柚皮苷、橙皮甙、柠檬酸、苹果酸、果胶、鞣质及维生素C等多种有益于人体的营养成分。香圆中含有的柚皮苷和柠檬苦素虽都是苦味素,但都具有药用价值。柚皮苷药物有较强的祛痰镇咳作用,清除自由基,抗氧化作用,还具有抗菌消炎、止咳化痰、预防并辅助治疗心脑血管疾病等。柠檬苦素的主要生理活性和药理作用是抗癌、抗病毒、消炎等。由于香圆味苦、酸涩,很难被一般人接受,作为食品的应用则比较少。
发明内容
本发明所要解决的技术问题在于缓解雾霾天气对人体健康造成的危害,提供了一种具有理气润肺、化痰止咳功效的香圆天麻石仙桃固体饮料及其制备方法。
解决上述技术问题所采用的技术方案是该香圆天麻石仙桃固体饮料由下述质量份配比的原料制成:香圆100份、天麻10~70份、石仙桃10~50份、山药5~35份、百合5~20份、陈皮5~15份、薄荷5~15份、桑叶5~15份、枇杷花5~15份、胖大海5~15份、金银花5~15份、甘草5~15份、罗汉果5~15份以及包埋剂2.5~5份、增溶剂0.5~2.5份、抗结剂0.1~0.5份、甜味剂1.5~5份、酸味剂0.25~0.75份。
本发明香圆天麻石仙桃固体饮料优选由下述质量份配比的原料制成:香圆100份、天麻15~50份、石仙桃10~35份、山药5~25份、百合5~15份、陈皮3~10份、薄荷3~10份、桑叶3~10份、枇杷花3~10份、胖大海3~10份、金银花3~10份、甘草3~10份、罗汉果3~10份以及包埋剂1.5~4份、增溶剂0.5~1.5份、抗结剂0.1~0.3份、甜味剂1.5~3.5份、酸味剂0.25~0.5份。
本发明香圆天麻石仙桃固体饮料进一步优选由下述质量份配比的原料制成:香圆100份、天麻17.5份、石仙桃12.5份、山药7.5份、百合7.5份、陈皮3.75份、薄荷3.75份、桑叶3.75份、枇杷花3.75份、胖大海3.75份、金银花3.75份、甘草3.75份、罗汉果3.75份以及包埋剂2份、增溶剂0.5份、抗结剂0.125份、甜味剂2.25份、酸味剂0.25份。
上述的包埋剂是β-环糊精与麦芽糊精质量比为3:5的混合物;所述的增溶剂是卵磷脂与酪朊酸钠、蔗糖脂肪酸醋质量比为1:1:1的混合物;所述的抗结剂是二氧化硅;所述的甜味剂是白砂糖与塔格糖、木糖醇质量比为100:1:1的混合物;所述的酸味剂是柠檬酸与苹果酸、酒石酸质量比为3:2:1的混合物。
本发明香圆天麻石仙桃固体饮料的制备方法为:
1、将充分成熟的香圆鲜果进行去皮、打浆,向果浆中加入其质量3%~7%的复合酶,在40~50℃下处理1.5~2.0小时,过滤,将滤液真空减压浓缩至可溶性固形物含量为7%~20%,得到香圆浸膏。
2、按照上述质量份配比,取天麻、石仙桃、山药、百合、陈皮、薄荷、桑叶、枇杷花、胖大海、金银花、甘草、罗汉果原料,清洗、粉碎后过100~120目筛,得到混合原料粉;向混合原料粉中加入其10~20倍的纯净水,在70~80℃下提取2~3小时,过滤,将滤液真空减压浓缩至可溶性固形物含量为17%~20%,得到浓缩浸膏。
3、按照上述质量份配比,取包埋剂、增溶剂、抗结剂、甜味剂、酸味剂,与步骤1得到的香圆浸膏以及步骤2得到的浓缩浸膏充分混匀,得到原料混合物,将原料混合物依次进行均质处理、喷雾干燥、高压杀菌处理、分装,得到香圆天麻石仙桃固体饮料产品。
上述步骤1中,所述的复合酶优选中温淀粉酶与果胶酶、纤维素酶、柚皮苷酶质量比为1:2~5:1~3:1~5的混合物。
上述步骤1和步骤2中,所述的过滤优选先用带100~200目不锈钢筛网的板框式过滤机粗滤,然后用0.45μm的微孔滤膜超滤。
上述步骤1和步骤2中,进一步优选所述的真空减压浓缩的温度为50~70℃,真空度为~0.05~~0.13MPa。
上述步骤3中,优选在60~70℃、压力20~25MPa下均质2~3次,优选喷雾干燥的进风温度为190~200℃、进风量为20~25m3/h;优选在450~500MPa下25~30℃杀菌处理10~20分钟。
本发明所用原材料的功效如下:
香圆:味辛、微苦、酸,性温归肝、脾、肺,经气香行散,可升可降,具有舒肝理气、宽胸化痰、除湿和中的作用。
天麻:兰科植物天麻的干燥块茎,性平,味甘,具有消风化痰、清利头目、宽胸利膈、治心忪烦闷作用,具有增强机体非特异性免疫和细胞免疫的作用,既能增强人体免疫力,又可增强肿瘤患者对放、化疗的耐受力。
石仙桃:性甘、淡、凉,具有清热养阴、化痰止咳作用,可用于肺热咳嗽、肺结核咳血等症,而且对肝炎病人有保肝、助消化、促食欲的作用。
山药:味甘、性平,归脾、肺、肾经,具有补脾养胃、生津益肺、补肾涩精的作用,用于脾虚食少、久泻不止、肺虚喘咳、肾虚遗精、带下、尿频、虚热消渴。
百合:性微寒,具有清火、润肺、安神的功效,其花、鳞状茎均可入药,是一种药食兼用的花卉。
陈皮:辛散通温,气味芳香,长于理气,能入脾肺,故既能行散肺气壅遏,又能行气宽中,用于肺气拥滞、胸膈痞满及脾胃气滞、脘腹胀满等症。
薄荷:性味辛、凉,具有疏散风热、清利头目、利咽透疹、疏肝行气和治疗咽喉肿痛的作用。
桑叶:性味苦、甘、性寒,具有清肝养肝、疏散风热、清肺、明目的作用。
琵琶花:味淡、微温,具有治伤风感冒、咳嗽痰血、润肺化痰之功效。
胖大海:味甘、淡、性凉,归肺、大肠经,具有清热润肺、利咽解毒、润肠通便等作用,用于肺热声哑、干咳无痰、咽喉干痛、头痛目赤等症。
金银花:被誉为清热解毒的良药,性甘寒气芳香,甘寒清热而不伤胃,既能宣散风热,还善清解血毒。
甘草:是一种补益中草药,气微,味甜而特殊,具有清热解毒、祛痰止咳、脘腹功效等。
罗汉果:中医以其果实入药,性凉、味甘,含有罗汉果甜苷、多种氨基酸和维生素等药用成分,主治肺热痰火咳嗽、咽喉炎、扁桃体炎、急性胃炎、便秘等。
本发明的有益效果如下:
本发明从药食同源的理念出发,结合原辅料的功效特点,将多种药食同源物品通过科学配伍,得到了一种具有理气润肺、化痰止咳的保健型香圆天麻石仙桃固体饮料。将香圆、天麻、石仙桃等具有生津润燥、清热化痰、增强机体免疫力等功效,对急性气管炎和上呼吸道感染均有改善及辅助治疗作用的多种原料复配,多种原辅料配伍,既可协同发挥各原料的改善及辅助治疗上呼吸道感染作用,又可以中和香圆的苦味,并且使产品富含多种有机酸、维生素等,可以增强产品的营养价值。
本发明的香圆天麻石仙桃固体饮料是对香圆进行酶法脱苦后,再加入天麻、石仙桃、山药、百合等辅料改善其口感,使其更易被大众接受,既解决了因香圆果肉味道苦涩而被浪费的问题,又能更好的发挥各原料祛痰、止咳的保健功效,成为当下预防和缓解雾霾引发的呼吸道疾病的最适保健饮品。该产品遵循天然、营养、回归自然的思想,产品具有组分营养化、原料绿色化、功能保健化、包装优雅化的特点,该多元化集一体的保健型固体饮料,不仅口感细腻,滋味独特而且还具有理气润肺、化痰止咳的功效,在雾霾高发的今天,能更好的预防和缓解因雾霾引发的呼吸道疾病。香圆天麻石仙桃固体饮料作为新兴的饮料品类必将拥有广阔的市场空间。

具体实施方式
下面结合附图和实施例对本发明进一步详细说明,但本发明的保护范围不仅限于这些实施例。
实施例1
本实施例的香圆天麻石仙桃固体饮料的配方组成为:香圆200g、天麻35g、石仙桃25g、山药15g、百合15g、陈皮7.5g、薄荷7.5g、桑叶7.5g、枇杷花7.5g、胖大海7.5g、金银花7.5g、甘草7.5g、罗汉果7.5g以及包埋剂4g、增溶剂1g、抗结剂0.25g、甜味剂4.5g、酸味剂0.5g,其中包埋剂是β-环糊精与麦芽糊精质量比为3:5的混合物,增溶剂是卵磷脂与酪朊酸钠、蔗糖脂肪酸醋质量比为1:1:1的混合物,抗结剂是二氧化硅,甜味剂是白砂糖与塔格糖、木糖醇质量比为100:1:1的混合物,酸味剂是柠檬酸与苹果酸、酒石酸质量比为3:2:1的混合物。
如图1所示,本实施例香圆天麻石仙桃固体饮料的制备方法如下:
1、选取充分成熟的香圆鲜果200g,将香圆鲜果进行去皮、打浆,向果浆中加入其质量5%的复合酶,所用复合酶为中温淀粉酶与果胶酶、纤维素酶、柚皮苷酶质量比为1:3:3:5的混合物,在50℃条件下酶解2.0小时,以提高出汁率并脱苦;将酶解后的果浆逐级进行粗滤和超滤处理,粗滤是用带200目不锈钢筛网的板框式过滤机过滤,超滤是用0.45μm的微孔滤膜过滤,然后将滤液在温度为60℃、真空度为0.10MPa下减压浓缩至可溶性固形物含量为20%,得到香圆浸膏。
2、按配方称取天麻35g、石仙桃25g、山药15g、百合15g、陈皮7.5g、薄荷7.5g、桑叶7.5g、枇杷花7.5g、胖大海7.5g、金银花7.5、甘草7.5g、罗汉果7.5g,清洗、粉碎后过120目筛,得到混合原料粉;向混合原料粉中加入其质量20倍的纯净水,在80℃下提取3小时,然后进行粗滤和超滤处理,粗滤是用带200目不锈钢筛网的板框式过滤机过滤,超滤是用0.45μm的微孔滤膜过滤,然后将滤液在温度为60℃、真空度为0.10MPa下减压浓缩至可溶性固形物含量为20%,得到浓缩浸膏。
3、按配方称取包埋剂4g、增溶剂1g、抗结剂0.25g、甜味剂4.5g、酸味剂0.5g,与步骤1得到的香圆浸膏以及步骤2得到的浓缩浸膏充分混匀,得到原料混合物,将原料混合物在温度70℃、压力25MPa下均质2次后进行喷雾干燥,喷雾干燥的进风温度为200℃、进风量为20m3/h,制得香圆天麻石仙桃固体饮料半成品,将制得的半成品在500MPa下30℃杀菌处理15分钟后,按每包5.0±0.2g独立包装,得到香圆天麻石仙桃固体饮料产品,其含水量小于5%。
实施例2
本实施例的香圆天麻石仙桃固体饮料的配方组成为:香圆200g、天麻100g、石仙桃70g、山药50g、百合30g、陈皮20g、薄荷20g、桑叶20g、枇杷花20g、胖大海20g、金银花20g、甘草20g、罗汉果20g以及包埋剂8g、增溶剂3g、抗结剂0.6g、甜味剂7g、酸味剂1g,其中所用包埋剂、增溶剂、抗结剂、甜味剂、酸味剂与实施例1相同,制备方法也与实施例1相同,得到香圆天麻石仙桃固体饮料产品。
实施例3
本实施例的香圆天麻石仙桃固体饮料的配方组成为:香圆200g、天麻30g、石仙桃20g、山药10g、百合10g、陈皮6g、薄荷6g、桑叶6g、枇杷花6g、胖大海6g、金银花6g、甘草6g、罗汉果6g以及包埋剂3g、增溶剂1g、抗结剂0.2g、甜味剂3g、酸味剂0.5g,其中所用包埋剂、增溶剂、抗结剂、甜味剂、酸味剂与实施例1相同,制备方法也与实施例1相同,得到香圆天麻石仙桃固体饮料产品。
发明人按照表1中的评分标准对实施例1得到的香圆天麻石仙桃固体饮料产品进行了感官评价,感官评价评分标准见表1,并按照固体饮料国家标准(GB/T29602-2013)和食品安全国家标准(GB7101-2015)对其理化性能和卫生指标进行测试,结果见表2。

本发明实施例1制备的固体饮料形态为颗粒固体,无结块,无刺激、焦糊及其他异味,均匀一致,无肉眼可见杂质,冲溶后呈均匀悬浊液,口感及滋味酸甜可口,具有原料独特的果香味,后味悠久。一般加入10倍水冲饮,速溶性好,色泽清澈透明,香味十足。

由表2可见,本发明实施例1制备的固体饮料的理化指标和卫生指标均符合固体饮料国家标准(GB/T29602-2013)和食品安全国家标准(GB7101-2015)的各项指标要求。

Claims (9)

1.一种香圆天麻石仙桃固体饮料,其特征在于该饮料由下述质量份配比的原料制成:香圆100份、天麻10~70份、石仙桃10~50份、山药5~35份、百合5~20份、陈皮5~15份、薄荷5~15份、桑叶5~15份、枇杷花5~15份、胖大海5~15份、金银花5~15份、甘草5~15份、罗汉果5~15份以及包埋剂2.5~5份、增溶剂0.5~2.5份、抗结剂0.1~0.5份、甜味剂1.5~5份、酸味剂0.25~0.75份。
2.根据权利要求1所述的香圆天麻石仙桃固体饮料,其特征在于该固体饮料由下述质量份配比的原料制成:香圆100份、天麻15~50份、石仙桃10~35份、山药5~25份、百合5~15份、陈皮3~10份、薄荷3~10份、桑叶3~10份、枇杷花3~10份、胖大海3~10份、金银花3~10份、甘草3~10份、罗汉果3~10份以及包埋剂1.5~4份、增溶剂0.5~1.5份、抗结剂0.1~0.3份、甜味剂1.5~3.5份、酸味剂0.25~0.5份。
3.根据权利要求1所述的香圆天麻石仙桃固体饮料,其特征在于该固体饮料由下述质量份配比的原料制成:香圆100份、天麻17.5份、石仙桃12.5份、山药7.5份、百合7.5份、陈皮3.75份、薄荷3.75份、桑叶3.75份、枇杷花3.75份、胖大海3.75份、金银花3.75份、甘草3.75份、罗汉果3.75份以及包埋剂2份、增溶剂0.5份、抗结剂0.125份、甜味剂2.25份、酸味剂0.25份。
4.根据权利要求1~3任意一项所述的香圆天麻石仙桃固体饮料,其特征在于:所述的包埋剂是β-环糊精与麦芽糊精质量比为3:5的混合物;所述的增溶剂是卵磷脂与酪朊酸钠、蔗糖脂肪酸醋质量比为1:1:1的混合物;所述的抗结剂是二氧化硅;所述的甜味剂是白砂糖与塔格糖、木糖醇质量比为100:1:1的混合物;所述的酸味剂是柠檬酸与苹果酸、酒石酸质量比为3:2:1的混合物。
5.一种权利要求1所述的香圆天麻石仙桃固体饮料的制备方法,其特征在于,它由下述步骤组成:
(1)将充分成熟的香圆鲜果进行去皮、打浆,向果浆中加入其质量3%~7%的复合酶,在40~50℃下处理1.5~2.0小时,过滤,将滤液真空减压浓缩至可溶性固形物含量为7%~20%,得到香圆浸膏;
(2)按照权利要求1的质量份配比,取天麻、石仙桃、山药、百合、陈皮、薄荷、桑叶、枇杷花、胖大海、金银花、甘草、罗汉果原料,清洗、粉碎后过100~120目筛,得到混合原料粉;向混合原料粉中加入其10~20倍的纯净水,在70~80℃下提取2~3小时,过滤,将滤液真空减压浓缩至可溶性固形物含量为17%~20%,得到浓缩浸膏;
(3)按照权利要求1的质量份配比,取包埋剂、增溶剂、抗结剂、甜味剂、酸味剂,与步骤(1)得到的香圆浸膏以及步骤(2)得到的浓缩浸膏充分混匀,得到原料混合物,将原料混合物依次进行均质处理、喷雾干燥、高压杀菌处理、分装,得到香圆天麻石仙桃固体饮料产品。
6.根据权利要求5所述的香圆天麻石仙桃固体饮料的制备方法,其特征在于:在步骤(1)中,所述的复合酶是中温淀粉酶与果胶酶、纤维素酶、柚皮苷酶质量比为1:2~5:1~3:1~5的混合物。
7.根据权利要求5所述的香圆天麻石仙桃固体饮料的制备方法,其特征在于:在步骤(1)和步骤(2)中,所述的过滤是先用带100~200目不锈钢筛网的板框式过滤机粗滤,然后用0.45μm的微孔滤膜超滤。
8.根据权利要求5所述的香圆天麻石仙桃固体饮料的制备方法,其特征在于:在步骤(1)和步骤(2)中,所述的真空减压浓缩的温度为50~70℃,真空度为~0.05~~0.13MPa。
9.根据权利要求5所述的香圆天麻石仙桃固体饮料的制备方法,其特征在于:在步骤(3)中,所述的均质是在60~70℃、压力20~25MPa下均质2~3次,所述的喷雾干燥的进风温度为190~200℃、进风量为20~25m3/h;所述的高压杀菌是在450~500MPa下25~30℃杀菌处理10~20分钟。
