下面举例详细说明大枣、山药化痰健脾保健肉脯制作方法:
首先制备中药粉酒:取陈皮3份、半夏3份、茯苓10份、甘草3份、木香1份、苍术5份、白术5份、香附1份、川芎3份、当归 5份共同粉碎,研磨成200目细粉。将药粉浸入3倍量酒中放置两周。
选取配料:它配料为,精肉60%,酱油2%,芝麻油2%,葱末2%,姜末2%,绿豆淀粉8%,精盐2.5%,肉蔻面0.05%,中药粉酒15%,余量为花椒水(浓度为1/40)。
具体制作工艺为:
将精肉60%、大枣肉10%、山药10%,加入中药粉酒腌制12小时;
