Abstract

本发明的用椰子水发酵的椰宝,其特征在于:其是由椰子加糖和硫酸铵,接入菌种发酵而得;菌种有酵母菌、胶膜醋酸杆菌和乳酸菌。
本发明的椰宝食用纤维利用椰子水生产,能对人体有重要的作用,方便人体的吸收,抑制有害物质的吸收,排泄有害物质,提高人体免疫功能,预防和减轻大肠憩室症,调节血糖,降低胆固醇,具有减肥功能。

Description

将椰子水发酵制作的食用纤维及其生产方法
本发明是属于一种生物发酵技术领域,具体地说是通过生物发酵提取食用纤维。
目前,国内的粗纤维产品有类聚糖,阿拉柏胶糖、多聚糖类,它们均属于化学合成,对人体肝脏有一定的损伤,且因在体内积聚而影响食欲。
本发明的目的在于提供一种将椰子水发酵制作的食用纤维。
本发明的将椰子水发酵制作的食用纤维是这样的:
工艺流程、椰子水→过滤→加热→加糖、硫酸铵→接种→发酵→成品→杀菌
主要菌种:酵母菌As205、胶膜醋酸杆菌、乳酸菌
原料配比为:椰子水100-150%    糖    9-15%
            硫酸铵0.4-1.5%    菌种  0.1-1.5%
菌种间的配比为:酵母菌10-30%,胶膜醋酸杆菌30-60%,乳酸菌20-40%。
生产过程:椰子水过滤,然后经过温度为100℃加热,加入糖和硫酸铵,溶化后,冷却至常温,接入酵母菌、胶膜醋酸杆菌、乳酸菌,发酵4-15天,进行杀菌,包装。
本发明的将椰子水发酵制作的食用纤维是利用椰子水生产,能对人体有重要的作用,方便人体的吸收,能抑制有害物质的吸收,排泄有害物质,提高免疫功能,预防和减轻大肠憩室症,调节血糖,降低胆固醇,具有减肥功能。
实施例1、1000g椰子水过滤后,加热100℃,然后加入100g的糖和4.5g的硫酸铵,溶化、搅均,冷却至常温,接入3g的酵母菌、10g的胶膜醋酸菌、5g的乳酸菌,发酵5天成为白色半透明固体,切块,杀菌而成。
实施例2、1500g椰子水过滤后,加热至100℃,然后加入120g的糖和6g的硫酸铵,溶化、搅均,冷却至常温,再接入4g的酵母菌、20g的胶膜醋酸菌、15g的乳酸菌发酵8天,成白色半透明固体,切块,杀菌得成品。

Claims (2)

1、一种将椰子水发酵制作的食用纤维,原料是:椰子水、糖、硫酸铵、菌种,其特征在于:原料配比为:椰子水100-150%、糖9-15%、硫酸铵0.4-1.5%、菌种0.1-1.5%;其菌种有酵母菌、胶膜醋酸杆菌和乳酸菌,菌种间的配比为:酵母菌10-30%,胶膜醋酸杆菌30-60%,乳酸菌20-40%。
2、根据权利要求1所述的将椰子水发酵制作的食用纤维的生产方法,其特征在于:生产方法是椰子水通过过滤后,加热至100℃,加入糖和硫酸铵,搅均、冷却,接入菌种,进行发酵4-15天而得成品。
