背景技术
榴莲属热带水果,产自东南亚国家,近年在国内的广西、云南有少量引进栽培。榴莲果肉由假种皮的肉包组成,肉色淡黄、粘性多汁,含糖分13%,淀粉11%,蛋白质3%,还有多种维生素、脂肪、钙、铁和磷等,对人体有很好的补养作用,是良好的果品类营养来源;榴莲有特殊的气味,含有多种酯类、酮类、烃类和含硫化合物,气味浓烈、香气馥郁,很适合制作成回味和质感特别又营养丰富的果汁饮料。因为榴莲果实体型硕大、体表带刺、果皮厚实,携带和食用困难,对榴莲进行工业化的深加工,能提供食用便利。国内公开的发明专利申请:一种榴莲饮料的制备方法;专利号:201110393883;公开日:2012.06.13;公开了一种对榴莲果肉破碎榨汁,制备成榴莲饮料的方法。但采用果肉破碎榨汁的加工方法,容易丢失果肉的部分营养成分。
发明内容
本发明所要解决的技术问题在于提供一种营养成分含量高,饮用安全的含有榴莲和葵花籽的饮料。
本发明所要解决的技术问题采用以下技术方案来实现:
一种含有榴莲和葵花籽的饮料,由以下重量的组分制成:榴莲100g、葵花籽40g、花生芽10g、杏仁10g、西瓜多糖6g、白砂糖15g、板栗蛋白肽粉30g、咖啡粉5g、紫甘薯花青素3g、呈味肽3g、蜂花粉3g、富硒蛋白粉5g、枸杞提取物5g、甘草提取物3g、高粱根提取物2g、丹参提取物3g、芦荟提取物5g、绞股蓝提取物3g、防腐剂0.05-0.5g。
上述饮料的制备方法如下:
(1)将榴莲切成薄片,置于低温冷风干燥机中,冷风温度7-12℃,处理至香椿叶水分达到16-18%时取出,送入研磨机,连续研磨2小时,过180目筛板,再通过挤出机挤出得到榴莲泥;通过研磨挤出得到的榴莲泥饮用口感好,香味纯,营养成分易于吸收;
本发明采用低温冷风干燥,能极大程度上防止榴莲表面氧化,产生自由基和不良风味,榴莲的水分含量控制在这个范围是为了让榴莲既有良好的口感又有较好的贮藏特性;
(2)将葵花籽、花生芽和杏仁分别入锅炒熟,再一同送入粉碎机粉碎,过120目筛,得打混合粉料;
(3)将西瓜多糖、白砂糖、板栗蛋白肽粉、咖啡粉、紫甘薯花青素、呈味肽、蜂花粉、富硒蛋白粉、枸杞提取物、甘草提取物、高粱根提取物、丹参提取物、芦荟提取物、绞股蓝提取物和防腐剂搅拌均匀,再加入榴莲泥和混合粉料;
(4)各种物料调和完后,送入真空干燥箱干燥,至物料水分在8%以下,取出破碎成粉末即成。
上述板栗蛋白肽粉的加工方法如下:
(1)将成熟后的板栗采摘后去壳,得板栗仁,将板栗仁在温度为55-65℃的冷风干燥设备中干燥处理40-50分钟,然后粉碎过80目筛,得到板栗全粉;
(2)将板栗全粉的湿度调节至40-42%,送入微波处理设备中,于微波频率2450MHz、功率500W下间隔微波处理,间隔时间为5分钟,每次微波处理10分钟,连续进行3-4次;
(3)取微波处理后的板栗全粉按重量比1(混合料):12-18(水)左右加水,于75℃水浴中浸泡1.5小时,然后加入木聚糖酶搅拌均匀并保持温度在40~60℃浸提1~4小时,得到提取液待用;
其中木聚糖酶的加入量为板栗全粉重量的0.1-1%;
(4)取上述提取液,利用循环水式多用真空泵进行真空抽滤,得到抽滤后的肽液,对肽液进行喷雾干燥即得板栗蛋白肽粉。
采用上述方法制得的板栗蛋白肽粉,既能充分提取板栗中的有效成分,使板栗的活性物质得到最大限度的保留,又便于人体全面吸收,工艺先进、合理,质量可控。
