本发明公开了一种黄秋葵保健饮料及其制备方法,包括有水和黄秋葵汁30%、枸杞汁20%、蜂蜜10%,柠檬酸0.08%,0.02%CMC‑Na和0.08%黄原胶,其制备方法包括:(1)黄秋葵汁的制备;(2)枸杞汁的制备:(3)混合调配;(4)均质;(5)灌装杀菌。本发明的饮料克服了现有单一黄秋葵饮料口感寡淡问题,制作工艺简单,具有多种营养和保健功能,能满足现代人们对健康保健的需求,特别适合疲劳者及运动员恢复健康,有一定的市场价值。

技术领域
本发明具体涉及一种黄秋葵保健饮料及其制备方法,属于保健饮料开发技术领域。
背景技术
黄秋葵被誉为“绿色人参”、“植物伟哥”,因其具有良好的抗疲劳作用,目前开发成保健产品比较少,可开发成保健饮料,方便运动员等人群使用。
因黄秋葵属于蔬菜类植物,制成饮料会有种不适的青草味,因此目前市场上尚无黄秋葵饮料,曾有黄秋葵汁与葡萄汁、菠萝汁制备复合果蔬汁饮料的报道,但也存在保健功能及口感欠佳等问题,尚未工业化生产。
以黄秋葵、枸杞和蜂蜜为主要原料,制成的黄秋葵保健饮料既具有黄秋葵、枸杞和蜂蜜的营养,又能赋予良好的口感,定会为消费者所接受。
发明内容
发明目的:为克服现有技术中单一黄秋葵饮料口感寡淡问题,将黄秋葵、枸杞、蜂蜜按照一定比例搭配,既改善口感,又增加营养。
技术方案如下:
一种黄秋葵保健饮料,包括有水和黄秋葵汁30%-40%、枸杞汁20%-50%、蜂蜜10%-30%、柠檬酸0.05%-0.10%、CMC-Na 0.02%-0.05%,黄原胶0.05%—0.1%。其制备方法如下:
(1)黄秋葵汁的制备:选择鲜绿色黄秋葵嫩荚,用自来水清洗后剪去果蒂,放入沸水中烫漂2min,按照料液比1:5—1:10(g:mL)加水在组织捣碎机中打浆,60℃水浴浸提1h,用4层纱布过滤得黄秋葵汁。
(2)枸杞汁的制备:选择品质优良的枸杞干果,清水清洗后按照料液比1:10-1:20(g:mL)加水浸泡2h,再预煮2min后加入组织捣碎机打浆,用4层纱布过滤得枸杞汁。
(3)混合调配:将黄秋葵汁30%,枸杞汁20%混合均匀,再依次加入预先溶解并过滤后的蜂蜜10%,柠檬酸0.08%,0.02%CMC-Na和0.08%黄原胶,加水搅拌均匀。
(4)均质:将调配好的黄秋葵枸杞混合液加热到60℃,倒入均质机进行均质,在20MP压力下均质5min。
(5)灌装杀菌:将均质后的物料装入玻璃瓶中,在100℃的水中常压杀菌10min,取出后分段冷却至室温。
在饮料中添加0.02%CMC-Na和0.08%黄原胶,可使饮料具有良好的稳定性。
有益效果
本保健饮料以黄秋葵、枸杞和蜂蜜为主要原料,具有黄秋葵、枸杞和蜂蜜的营养,解决了单一黄秋葵饮料或复合果蔬汁的口感及营养问题。
具体实施方式
(1)黄秋葵汁的制备:选择鲜绿色黄秋葵嫩荚,用自来水清洗后剪去果蒂,放入沸水中烫漂2min,按照料液比1:10(g:mL)加水在组织捣碎机中打浆,60℃水浴浸提1h,用4层纱布过滤得黄秋葵汁。
(2)枸杞汁的制备:选择品质优良的枸杞干果,清水清洗后按照料液比1:10(g:mL)加水浸泡2h,再预煮2min后加入组织捣碎机打浆,用4层纱布过滤得枸杞汁。

(5)灌装杀菌:将均质后的物料装入玻璃瓶中,在100℃的水中常压杀菌10min,取出后分段冷却至室温。
Claims (2)
1.一种黄秋葵保健饮料,其特征在于,包括有:水、黄秋葵汁30%-40%、枸杞汁20%-50%、蜂蜜10%-30%、柠檬酸0.05%-0.10%、CMC-Na 0.02%-0.05%,黄原胶0.05%—0.1%。
2.如权利要求1所述的饮料的制备方法,其特征在于,有如下步骤:
(1)黄秋葵汁的制备:选择鲜绿色黄秋葵嫩荚,用清水清洗后剪去果蒂,放入沸水中烫漂2min,按照料液比1:5—1:10(g:mL)加水在组织捣碎机中打浆,60℃水浴浸提1h,用4层纱布过滤得黄秋葵汁;
(2)枸杞汁的制备:选择品质优良的枸杞干果,清水清洗后按照料液比1:10-1:20(g:mL)加水浸泡2h,再预煮2min后加入组织捣碎机打浆,用4层纱布过滤得枸杞汁;
(3)混合调配:将黄秋葵汁30%,枸杞汁20%混合均匀,再依次加入预先溶解并过滤后的蜂蜜10%,柠檬酸0.08%,0.02%CMC-Na和0.08%黄原胶,加水搅拌均匀;
(4)均质:将调配好的黄秋葵枸杞混合液加热到60℃,倒入均质机进行均质,在20MP压力下均质5min。
(5)灌装杀菌:将均质后的物料装入玻璃瓶中,在100℃的水中常压杀菌10min,取出后分段冷却至室温。
