[0002]香肠是一种非常古老的食物生产和肉食保存技术,将动物的肉搅碎,再灌入肠衣制成长圆柱体管状食品。中国的香肠有着悠久的历史,香肠的类型也有很多,主要分为川味儿香肠和广味香肠两种。主要不同处在于川味是辣的,广味是甜的。
[0003]目前,随着人们生活水平的改善,对香肠的口味要求越来越高,本发明配方改变了香肠品种及口味,迎合广大人民群众新胃口的需求,制作一种豆腐香肠。
发明内容
[0004]本发明豆腐香肠配方为(以制作10斤豆腐香肠为例):
豆腐8斤,精瘦肉2斤,料酒500g,鸡精50g,盐110g,胡椒15g,花椒15g白糖100g。
[0005]本发明的优点在于,由于配方生产的豆腐香肠,既有香肠的特征又有豆腐的风味。
具体实施方式
[0006]取豆腐8斤,精瘦肉2斤,料酒500g,鸡精50g,盐110g,胡椒15g,花椒15g白糖100g。将豆腐和精瘦肉捣烂,再与佐料搅拌均匀,然后装入肠衣,在低温(5〜10摄氏度)条件下风干,再用柏树垭烟熏而成。蒸或煮熟即可食用。
