技术领域:
本发明涉及一种药膳,特别是涉及一种产后瘦身的菌菇鸵鸟肉丸药膳及制备方法。
背景技术:
产后瘦身是指女性在生产后进行的减肥,主要方法包括饮食减肥、运动减肥、药物减肥、物理减肥等。传统中医认为,产后瘦身与痰、湿、气虚等有关,可通过祛痰、利湿、补气来达到产后瘦身的目的。目前药膳以产后瘦身茶多见,食疗亦以鱼类或素食为主,动物肉类的药膳未见相关文献及专利报道。且茶或素食类瘦身药膳产妇用后容易导致使用者营养缺乏,存在一定缺陷。
鸵鸟肉营养丰富,具有极高营养价值,品质优于其他禽肉或畜类。其肉质鲜嫩滑润,汁多味鲜,口感好,无异味,且具有高蛋白、低脂肪、低胆固醇、低热量的特点。研究表明,其单位脂肪含量仅为牛肉、猪肉的十分之一,但其铁、钙、锌、硒等的含量均高于一般肉类,还含有27种人体必需氨基酸。
本发明针对现有产后素食类瘦身产品容易导致营养缺乏的的问题,旨在制作一款营养全面且能的祛痰、利湿、补气的产后瘦身药膳,本案由此产生。
发明内容:
针对上述现有技术存在的缺陷,本发明的目的在于,提供一种营养全面且能的祛痰、利湿、补气的产后瘦身菌菇鸵鸟肉丸药膳。
为了实现上述目的,本发明采用的技术方案为:
一种产后瘦身的菌菇鸵鸟肉丸药膳,其特征在于:按重量份计,包括以下原料:鸵鸟肉400-600份、兔腿肉60-80份、鸡枞菌40-60份、羊肚菌40-60份、淮山药60-80份;莱菔子10-20份、红枣15-25份、黄芥子5-15份、代代花5-15份、玉竹10-20份、百合15-25份;芡实40-60份、荷叶5-15份、白茯苓10-20份、薏苡仁10-20份、白茅根15-25份、芦根10-20份、郁李仁5-15份、没药2-6份、番红花2-6份;香橼10-20份、红豆15-25份、黑豆15-25份、紫苏15-25份、生姜40-60份、胡椒2-6份、山楂10-20份、鸡内金10-20份。
优选地,所述的产后瘦身的菌菇鸵鸟肉丸药膳,按重量份计,包括以下原料:鸵鸟肉500份、兔腿肉70份、鸡枞菌70份、羊肚菌70份、淮山药70份;莱菔子15份、红枣20份、黄芥子10份、代代花10份、玉竹15份、百合20份;芡实50份、荷叶10份、白茯苓15份、薏苡仁15份、白茅根20份、芦根15份、郁李仁10份、没药4份、番红花4份;香橼15份、红豆20份、黑豆20份、紫苏20份、生姜50份、胡椒4份、山楂15份、鸡内金15份。
进一步地,所述的产后瘦身的菌菇鸵鸟肉丸药膳,还包括以下配料及调味料:蛋清、料酒、生抽、老抽、鸡精、香油、五香粉,精盐 ,0.1%木瓜蛋白酶。
所述的配料及调味料按重量份计,包括5-15份蛋清、4-8份料酒、5-15份生抽、5-10份老抽、5-8份鸡精、5-8份香油、2-6份五香粉,精盐适量,0.1%木瓜蛋白酶0.4-0.8U/μg。
优选地,所述的配料及调味料按重量份计,包括10份蛋清、6份料酒、10份生抽、8份老抽、6份鸡精、6份香油、4份五香粉、精盐适量,0.1%木瓜蛋白酶0.6U/μg。
本发明还提供了一种产后瘦身的菌菇鸵鸟肉丸药膳的制备方法,其特征在于,包括以下步骤:
(1)姜汁水制备:取重量份的生姜洗净切成细姜丝,泡600-800份温水中10min后用干净纱布绞汁备用;
(2)鸵鸟肉和兔腿肉预处理:取重量份的鸵鸟肉和兔腿肉洗净切块,在步骤1中制备的姜汁水中焯一下去腥味和血水,加入0.1%木瓜蛋白酶,60℃水解6h,取出沥干后剁成肉糜,加入上述重量份的盐、生抽、料酒、鸡精、五香粉、香油腌制;
(3)材料预处理:各取重量份的干鸡枞菌和羊肝菌用冷水泡软后捞起挤去水,切成碎末备用;红枣去核后与淮山药、芡实、百合、白茯苓、红豆、黑豆、薏苡仁碾磨成混合粉;荷叶用冷水清洗后备用;
(4)药包和浸泡液制作:各取重量份的玉竹、白茅根、芦根、郁李仁、莱菔子、黄芥子、代代花、没药、香橼、山楂、鸡内金用冷水浸泡20min后装入洁净纱布,制成浸泡液和药包备用;
(5)肉丸制作:取步骤2中制得的肉糜,加入步骤3中的菌菇碎末、混合粉,再加入碾成粉的胡椒和洗净剁碎的番红花、紫苏,加入适量蛋清、老抽,顺时针搅打上劲,将肉丸团匀,每个肉丸均用荷叶包裹;
(6)隔水蒸煮:蒸锅中放入适量清水以及步骤4中的浸泡液和药包,上置搁架,将步骤5中制得的肉丸上锅用猛火蒸15-20分钟即可。
下面对本发明的配方中所选用的主要原料的性能及作用机理进行简要分析:
1、君药:
鸵鸟肉:高蛋白、低脂肪、低胆固醇、低热量。
鸡枞菌:性平味甘,具有益胃、清神、治痔等功效。据《本草纲目》记载,鸡枞菌具有“益胃、清神、治痔”等药用功效,鸡枞菌中含有多种具有药理作用的化学成分,如多糖、皂苷、多酚、蛋白质等。鸡枞菌多糖多糖不仅是一种非特异性免疫增强剂,而且具有降血糖、降血脂、抗凝血及止吐等多种生理活性。其蛋白质含量与香菇、金针菇、口蘑等常见的食用菌相比都高,远超过一般粮食作物,可与豆类作物媲美。具有17种氨基酸,种类齐全,其中必需氨基酸含量占氨基酸总量40.82%,其与非必需氨基酸比值0.63,接近FAO/WHO(1973)推荐的理想蛋白质模式,有利于人体吸收, 可作为优质的蛋白质来源, 且其中鲜味氨基酸含量较高,使得鸡枞菌食用时味道鲜美。
羊肚菌:性平,味甘寒无毒。具有益肠消食、化痰理气、润胃健脾之功效。羊肚菌子囊体和菌丝体不仅营养成分丰富,除包括蛋白质、碳水化合物、脂肪、粗纤维、核黄素、烟酸、叶酸和维生素等多种成分,羊肚菌中还含有多糖、酶类、吡喃酮抗生素、脂肪酸类化合物、氨基酸、矿物质及其他多种化学成分。实验研究表明羊肚菌多糖具有增强肌体免疫力,降低胆固醇含量的作用。不饱和脂肪酸是羊肚菌具有降血脂、抗衰老、消除自由基功效的主要原因。羊肚菌所含的亚油酸和油酸分别有降低人体胆固醇浓度和降低低密度脂蛋白(LDL),升高高密度脂蛋白(HDL)的功能,有助预防动脉硬化,防治肥胖、中风、心肌梗塞等作用。
兔肉:性凉味甘,入肝、脾、大肠经;具有补中益气、凉血解毒、清热止渴等作用。
淮山药:味甘,性平。 归脾,肺,肾经。补脾养胃,生津益肺,补肾涩精,清热解毒。
2、臣药:
红枣:味甘性温、归脾胃经,有补中益气、养血安神、缓和药性的功能。
莱菔子:性平,味辛、甘、无毒,归肺、胃经。具有消食导滞,降气化痰功效。
百合:味甘,性微寒。归心、肺经。养阴润肺,清心安神。
玉竹:味甘,性平。归肺、胃经。滋阴润肺;养胃生津。
黄芥子:性温、味辛。入肺经。润肺化痰、消肿止痛、温中散寒。
代代花:性微寒,味苦、酸。行气宽中,消食,化痰,健胃。
3、佐药:
白茯苓:性平,味甘、淡。归心、肺、脾、肾经。能渗湿健脾。
芡实:性平,味甘涩,归脾、肾经。有补脾去湿,益肾固精功效。
薏苡仁:性微寒,味甘淡。有利水消肿、健脾去湿、舒筋除痹、清热排脓的功效。
白茅根:味甘,性寒,具有凉血止血、清热利尿。
芦根:清热泻火、生津止渴、除烦、止呕、利尿。
郁李仁:润燥滑肠、下气利水之功效。
没药:味苦,平,无毒。入肝、脾、心、肾经。活血散瘀、行气舒筋。
番红花:味甘性平,能活血化瘀,散郁开结,止痛。
荷叶:性平,味苦涩。有清暑利湿、凉血止血功效。
4、使药:
香橼:理气化疲,止呕消肿,疏肝健脾。
红豆:性平,味甘酸。健脾止泻,利水消肿。
黑豆:味甘,性微寒。能补肾益阴,健脾利湿,除热解毒。
紫苏:味辛、性温,具有发汗、顺气、镇痛、利尿、解毒、安胎、镇咳和化痰之功效。
胡椒:温中散寒,下气,消痰的功能。
生姜:味辛,性温。能开胃止呕,化痰止咳,发汗解表。
山楂:性微温,味甘、酸。归脾、胃、肝经。有消食化积、活血散瘀功效。
鸡内金:性平味甘,归脾、胃、小肠、膀胱经。有运脾消食、固精止遗功效。
本发明按中医药“君臣佐使”原理科学配方,具有补中益气,宽胸化痰、活血化瘀、利湿利尿、和胃消脂的功效。鸵鸟肉搭配鸡枞菌、羊肚菌、兔肉、淮山药,作为组方中的君药,主要起到补中益气及消脂作用,从解决肥胖的根本原因着手。其中兔肉具有补中益气,凉血解毒的功效,有“保健肉”、“减肥肉”之称。与菌菇类相配具有益气补脑、凉血解毒、降压、抗癌、减肥功效。此外,还可以与臣药中的莱菔子、使药中的山楂和鸡内金产生协同作用,和胃助消化,消除脂垢。研究表明莱菔子水溶性生物碱对ApoE基因敲除小鼠血脂的影响,发现莱菔子水溶性生物碱能够提高高密度脂蛋白胆固醇(HDL-C)的含量。动物实验证明玉竹煎剂灌胃可降低实验性高脂血症家兔的甘油三酯、胆固醇及β-脂蛋白。使药中的黑豆和红豆均含有丰富膳食纤维,具有润肠通便、降血压、降血脂、调节血糖、健美减肥作用。上述中药所含有的黄酮类、生物碱、膳食纤维等成分通过不同的机制,协同产生瘦身降脂作用。
宽胸化痰可改善脏腑功能。中医有"肥人多痰"的观点,该痰是指肥胖之痰浊,亦即脂肪过多。臣药莱菔子醇提取物具有显著的祛痰作用,炒莱菔子水提取物具有一定的平喘作用。百合、玉竹作用机理各有不同;使药中的生姜、紫苏、胡椒亦能增强其润肺化痰的作用,上述几味药叠加进而产生协同强化的结果。
利尿泻下则是是给以出路加强排泄的。通过用清热利湿法以强化排泄邪浊。佐药中的白茯苓、芡实、白茅根、芦根、郁李仁、荷叶几味药均有利湿利尿功效。例如实验表明白茅根的利尿作用与其所含丰富钾盐有关;荷叶所含荷叶碱清热利尿。且近代研究证实,荷叶碱有降血脂、降胆固醇和减肥作用,更增加了君药的降脂功效。番红花和没药配伍起到相须作用,提升了活血化瘀的作用,有利于产妇的血液循环,改善肤色,减少色斑。
使药由生姜、山楂、鸡内金、香橼、红豆、黑豆等几味健脾和胃的中药构成,对上述药膳中君药、臣药和佐药的进行调和之后,药膳中含有的营养物质更利于产后妇女的吸收和利用。此外,红豆富含叶酸,产妇、乳母多吃红豆有催乳功效。黑豆皮含有花青素具有抗氧化作用,能清除体内自由基,在胃酸作用下增强抗氧化效果,从而产生养颜美容功效。
本发明的有益效果在于:
本发明在预处理鸵鸟肉时,加入了木瓜蛋白酶,利用酶促反应,使鸵鸟肉和兔肉中所含的大量蛋白质水解成小分子肽或氨基酸。有效转化蛋白质的利用,大大提高其营养价值,并有利于人体消化和吸收。另在药膳中配以易产生饱腹感且热量低的食物(如菌菇类),以及补气、祛痰、化瘀、利湿的“药食两用”中药,效果明显,营养丰富,口感鲜美,若能推广开发必将取得显著的经济效益。
本发明运用中医中药辨证施治,通过补中益气,宽胸化痰、利湿利尿、和胃消脂的几种作用的综合结果,使得肥胖产后妇女用本药膳来降脂瘦身能获得良好的效果。
下面结合具体实施方式对本发明作进一步的详细说明,但本发明的保护范围不限于此。
具体实施方式:
实施例1:
本实施例的一种产后瘦身的菌菇鸵鸟肉丸药膳,按重量份计,包括以下原料:鸵鸟肉400份、兔腿肉60份、鸡枞菌40份、羊肚菌40份、淮山药60份;莱菔子10份、红枣15份、黄芥子5份、代代花5份、玉竹10份、百合15份;芡实40份、荷叶5份、白茯苓10份、薏苡仁10份、白茅根15份、芦根10份、郁李仁5份、没药2份、番红花2份;香橼10份、红豆15份、黑豆15份、紫苏15份、生姜40份、胡椒2份、山楂10份、鸡内金10份。
调味料及其他配料:5份蛋清、4份料酒、5份生抽、5份老抽、5份鸡精、5份香油、2份五香粉,精盐适量,0.1%木瓜蛋白酶0.4U/μg。
上述产后瘦身的菌菇鸵鸟肉丸药膳的制备方法,包括以下步骤:
(1)姜汁水制备:取重量份的生姜洗净切成细姜丝,泡600份温水中10min后用干净纱布绞汁备用;
(2)鸵鸟肉和兔腿肉预处理:取重量份的鸵鸟肉和兔腿肉洗净切块,在步骤1中制备的姜汁水中焯一下去腥味和血水,加入0.1%木瓜蛋白酶0.4U/μg,60℃水解6h,取出沥干后剁成肉糜,加入上述重量份的盐、生抽、料酒、鸡精、五香粉、香油腌制;
(3)材料预处理:各取重量份的干鸡枞菌和羊肝菌用冷水泡软后捞起挤去水,切成碎末备用;红枣去核后与淮山药、芡实、百合、白茯苓、红豆、黑豆、薏苡仁碾磨成混合粉;荷叶用冷水清洗后备用;
(4)药包和浸泡液制作:各取重量份的玉竹、白茅根、芦根、郁李仁、莱菔子、黄芥子、代代花、没药、香橼、山楂、鸡内金用冷水浸泡20min后装入洁净纱布,制成浸泡液和药包备用;
(5)肉丸制作:取步骤2中制得的肉糜,加入步骤3中的菌菇碎末、混合粉,再加入碾成粉的胡椒和洗净剁碎的番红花、紫苏,加入适量蛋清、老抽,顺时针搅打上劲,将肉丸团匀,每个肉丸均用荷叶包裹;
(6)隔水蒸煮:蒸锅中放入适量清水以及步骤4中的浸泡液和药包,上置搁架,将步骤5中制得的肉丸上锅用猛火蒸15分钟即可。
实施例2:
本实施例的一种产后瘦身的菌菇鸵鸟肉丸药膳,按重量份计,包括以下原料:鸵鸟肉500份、兔腿肉70份、鸡枞菌70份、羊肚菌70份、淮山药70份;莱菔子15份、红枣20份、黄芥子10份、代代花10份、玉竹15份、百合20份;芡实50份、荷叶10份、白茯苓15份、薏苡仁15份、白茅根20份、芦根15份、郁李仁10份、没药4份、番红花4份;香橼15份、红豆20份、黑豆20份、紫苏20份、生姜50份、胡椒4份、山楂15份、鸡内金15份。
调味料及其他配料:10份蛋清、6份料酒、10份生抽、8份老抽、6份鸡精、6份香油、4份五香粉、精盐适量,0.1%木瓜蛋白酶0.6U/μg。
上述产后瘦身的菌菇鸵鸟肉丸药膳的制备方法,包括以下步骤:
(1)姜汁水制备:取重量份的生姜洗净切成细姜丝,泡700份温水中10min后用干净纱布绞汁备用;
(2)鸵鸟肉和兔腿肉预处理:取重量份的鸵鸟肉和兔腿肉洗净切块,在步骤1中制备的姜汁水中焯一下去腥味和血水,加入0.1%木瓜蛋白酶0.6U/μg,60℃水解6h,取出沥干后剁成肉糜,加入上述重量份的盐、生抽、料酒、鸡精、五香粉、香油腌制;
(3)材料预处理:各取重量份的干鸡枞菌和羊肝菌用冷水泡软后捞起挤去水,切成碎末备用;红枣去核后与淮山药、芡实、百合、白茯苓、红豆、黑豆、薏苡仁碾磨成混合粉;荷叶用冷水清洗后备用;
(4)药包和浸泡液制作:各取重量份的玉竹、白茅根、芦根、郁李仁、莱菔子、黄芥子、代代花、没药、香橼、山楂、鸡内金用冷水浸泡20min后装入洁净纱布,制成浸泡液和药包备用;
(5)肉丸制作:取步骤2中制得的肉糜,加入步骤3中的菌菇碎末、混合粉,再加入碾成粉的胡椒和洗净剁碎的番红花、紫苏,加入适量蛋清、老抽,顺时针搅打上劲,将肉丸团匀,每个肉丸均用荷叶包裹;
(6)隔水蒸煮:蒸锅中放入适量清水以及步骤4中的浸泡液和药包,上置搁架,将步骤5中制得的肉丸上锅用猛火蒸18分钟即可。
实施例3:
本实施例的一种产后瘦身的菌菇鸵鸟肉丸药膳,按重量份计,包括以下原料:鸵鸟肉600份、兔腿肉80份、鸡枞菌60份、羊肚菌60份、淮山药80份;莱菔子20份、红枣25份、黄芥子15份、代代花15份、玉竹20份、百合25份;芡实60份、荷叶15份、白茯苓20份、薏苡仁20份、白茅根25份、芦根20份、郁李仁15份、没药6份、番红花6份;香橼20份、红豆25份、黑豆25份、紫苏25份、生姜60份、胡椒6份、山楂20份、鸡内金20份。
调味料及其他配料: 15份蛋清、8份料酒、15份生抽、10份老抽、8份鸡精、8份香油、6份五香粉,精盐适量,0.1%木瓜蛋白酶0.8U/μg。
上述产后瘦身的菌菇鸵鸟肉丸药膳的制备方法,包括以下步骤:
(1)姜汁水制备:取重量份的生姜洗净切成细姜丝,泡800份温水中10min后用干净纱布绞汁备用;

(4)药包和浸泡液制作:各取重量份的玉竹、白茅根、芦根、郁李仁、莱菔子、黄芥子、代代花、没药、香橼、山楂、鸡内金用冷水浸泡20min后装入洁净纱布,制成浸泡液和药包备用;
(5)肉丸制作:取步骤2中制得的肉糜,加入步骤3中的菌菇碎末、混合粉,再加入碾成粉的胡椒和洗净剁碎的番红花、紫苏,加入适量蛋清、老抽,顺时针搅打上劲,将肉丸团匀,每个肉丸均用荷叶包裹;
(6)隔水蒸煮:蒸锅中放入适量清水以及步骤4中的浸泡液和药包,上置搁架,将步骤5中制得的肉丸上锅用猛火蒸20分钟即可。
在本发明中精盐的放入量可以根据个人的口味进行增减,没有特殊限制。
本发明的配方中选用的均为安全无明显毒副作用“药食两用”天然中药材,食用安全,补中益气,宽胸化痰、活血化瘀、利湿利尿、和胃消脂,效果明显,尤其适合产后肥胖妇女食用,能有效地降血糖、降血脂、美容养颜。经过20名21-41岁产后肥胖妇女的直接食用(每周食用2-3次,食用三个月后),普遍反映体重明显减轻、血脂水平降低、腰围减小、肤色变白,具体如下表所示。

本发明在所述鸵鸟肉丸中添加膳食调味料,不降低本发明药膳的药用效果,而且使得药膳的味道更加鲜美,口感更好,气味更芳香。
添加了鸡枞菌、羊肚菌、番红花、荷叶几种原料后,瘦身、降血脂、美容效果明显增加。
Claims (6)
1.一种产后瘦身的菌菇鸵鸟肉丸药膳,其特征在于:按重量份计,包括以下原料:鸵鸟肉400-600份、兔腿肉60-80份、鸡枞菌40-60份、羊肚菌40-60份、淮山药60-80份;莱菔子10-20份、红枣15-25份、黄芥子5-15份、代代花5-15份、玉竹10-20份、百合15-25份;芡实40-60份、荷叶5-15份、白茯苓10-20份、薏苡仁10-20份、白茅根15-25份、芦根10-20份、郁李仁5-15份、没药2-6份、番红花2-6份;香橼10-20份、红豆15-25份、黑豆15-25份、紫苏15-25份、生姜40-60份、胡椒2-6份、山楂10-20份、鸡内金10-20份。
2.根据权利要求1所述的一种产后瘦身的菌菇鸵鸟肉丸药膳,其特征在于:按重量份计,包括以下原料:鸵鸟肉500份、兔腿肉70份、鸡枞菌70份、羊肚菌70份、淮山药70份;莱菔子15份、红枣20份、黄芥子10份、代代花10份、玉竹15份、百合20份;芡实50份、荷叶10份、白茯苓15份、薏苡仁15份、白茅根20份、芦根15份、郁李仁10份、没药4份、番红花4份;香橼15份、红豆20份、黑豆20份、紫苏20份、生姜50份、胡椒4份、山楂15份、鸡内金15份。
3.根据权利要求1或2所述的一种产后瘦身的菌菇鸵鸟肉丸药膳,其特征在于:还包括以下配料及调味料:蛋清、料酒、生抽、老抽、鸡精、香油、五香粉,精盐,0.1%木瓜蛋白酶。
4.根据权利要求3所述的一种产后瘦身的菌菇鸵鸟肉丸药膳,其特征在于:所述的配料及调味料按重量份计,包括5-15份蛋清、4-8份料酒、5-15份生抽、5-10份老抽、5-8份鸡精、5-8份香油、2-6份五香粉,精盐适量,0.1%木瓜蛋白酶0.4-0.8U/μg。
5.根据权利要求4所述的一种产后瘦身的菌菇鸵鸟肉丸药膳,其特征在于:所述的配料及调味料按重量份计,包括10份蛋清、6份料酒、10份生抽、8份老抽、6份鸡精、6份香油、4份五香粉、精盐适量,0.1%木瓜蛋白酶适量。
6.根据权利要求4所述的一种产后瘦身的菌菇鸵鸟肉丸药膳的制备方法,其特征在于,包括以下步骤:
(1)姜汁水制备:取重量份的生姜洗净切成细姜丝,泡600-800份温水中10min后用干净纱布绞汁备用;
(2)鸵鸟肉和兔腿肉预处理:取重量份的鸵鸟肉和兔腿肉洗净切块,在步骤1中制备的姜汁水中焯一下去腥味和血水,加入0.1%木瓜蛋白酶,60℃水解6h,取出沥干后剁成肉糜,加入上述重量份的盐、生抽、料酒、鸡精、五香粉、香油腌制;
