Description
技术领域:
本发明涉及一种药膳,特别是涉及一种养颜瘦身的灌汤鸵鸟肉丸药膳及制备方法。
背景技术:
美容和瘦身是现代社会女性孜孜不倦的追求,但结果往往不够理想。典籍中有很多美容养颜或治疗肥胖症的方剂。同时在膳食组成中,许多食物既是食品,也是药物,故古人早就有“医食同源、药食同根”之说。目前减肥瘦身以茶、药粥之类多见,且以鱼肉或素食为主,兼具养颜和瘦身的动物肉类的药膳未见相关文献及专利报道。素食类瘦身药膳用后容易导致使用者营养缺乏,存在一定缺陷。
鸵鸟肉营养丰富,具有极高营养价值,品质优于其他禽肉或畜类。肉质鲜嫩滑润,汁多味鲜,口感好,无异味,且具有高蛋白、低脂肪、低胆固醇、低热量的特点。研究表明,其单位脂肪含量仅为牛肉、猪肉的十分之一,但其铁、钙、锌、硒等的含量均高于一般肉类,还含有27种人体必需氨基酸。本发明旨在制作一款营养全面且兼具养颜瘦身功效的鸵鸟肉药膳,本案由此产生。
发明内容:
针对上述现有技术存在的缺陷,本发明的目的在于提供一种营养全面且兼具和胃消脂、活血行瘀、宽胸化痰、清热利尿功效的灌汤鸵鸟肉丸药膳,肥胖人群使用后获得美容养颜、降脂减肥的良好效果。
为了实现上述目的,本发明采用的技术方案为:
一种养颜瘦身的灌汤鸵鸟肉丸药膳,其特征在于:按重量份计,包括以下原料:鸵鸟肉400-600份、竹荪40-60份、洋甘菊40-60份、柠檬马鞭草40-60份;桃花5-15份、玫瑰花5-15份、莱菔子10-20份、槐米10-20份、冰糖5-15份、黑豆10-30份、红豆10-30份;荷叶10-30份、鸭跖草5-15份、淡竹叶5-15份、香薷5-15份、白茯苓10-20份、落花生10-20份、黑芝麻10-30份、红枣10-20份、珍珠粉3-7份;洋葱10-20份、生姜5-15份、肉桂2-6份、豆蔻2-6份、香叶2-6份、淡豆豉10-30份、山楂10-20份、罗勒5-15份。
优选地,所述的养颜瘦身的灌汤鸵鸟肉丸药膳,按重量份计,包括以下原料:鸵鸟肉500份、竹荪50份、洋甘菊50份、柠檬马鞭草50份;桃花10份、玫瑰花10份、莱菔子15份、槐米15份、冰糖10份、黑豆20份、红豆20份;荷叶20份、鸭跖草10份、淡竹叶10份、香薷10份、白茯苓15份、落花生15份、黑芝麻20份、红枣15份、珍珠粉5份;洋葱15份、生姜10份、肉桂4份、豆蔻4份、香叶4份、淡豆豉20份、山楂15份、罗勒10份。
进一步地,所述的养颜瘦身的灌汤鸵鸟肉丸药膳,还包括以下配料及调味料:鸡爪、猪皮、蛋清、料酒、生抽、老抽、鸡精、香油、五香粉、花椒、小茴香、淀粉、精盐,0.1%木瓜蛋白酶。
所述的配料及调味料按重量份计,包括5-15份鸡爪、5-15份猪皮、5-15份蛋清、4-8份料酒、5-15份生抽、5-10份老抽、5-8份鸡精、5-8份香油、2-6份五香粉、2-6份花椒、2-6份小茴香、5-15份淀粉,精盐适量、0.1%木瓜蛋白酶0.4-0.8U/μg。
优选地,所述的配料及调味料按重量份计,包括10份鸡爪、10份猪皮、10份蛋清、6份料酒、10份生抽、8份老抽、6份鸡精、6份香油、4份五香粉、4份花椒、4份小茴香、10份淀粉,精盐适量、0.1%木瓜蛋白酶0.6U/μg。
本发明还提供了一种养颜瘦身的灌汤鸵鸟肉丸药膳的制备方法,其特征在于,包括以下步骤:
(1)鸵鸟肉预处理:
按上述配比,取重量份的鸵鸟肉洗净,加入0.1%木瓜蛋白酶0.6U/μg,60℃水解6h,取出沥干后剁成肉糜,加入精盐、生抽、鸡精、五香粉、香油腌制,加入淀粉和蛋清以及洗净剁碎的洋葱,顺时针搅打上劲;
(2)猪皮鸡爪冻制备
①按照所述重量份,将生姜切片、鸡爪去骨备用;将洋甘菊、柠檬马鞭草、莱菔子、槐米、鸭跖草、淡竹叶、香薷、山楂、淡豆豉、花椒、肉桂、香叶、小茴香、豆蔻用冷水浸泡10min后用纱布包装好制得药包;另取桃花、玫瑰花冷水浸泡10min备用;
②凉水中加入料酒、生姜焯烫猪皮,捞出后用刀刮去残留猪毛后切条;
③水开后调入料酒、冰糖,放入切好的猪皮、去骨鸡爪、生姜和药包,中火炖50min后加入老抽、盐,继续煮20min以上至熟烂;
④制冻:煮好后捞出生姜和①中制得的药包,放入桃花和玫瑰花搅拌均匀后倒入耐热容器中,冷却后盖保鲜膜入冰箱冷藏2小时以上;
(3)混和丁制备
各取重量份的黑豆、红豆、白茯苓浸泡60min后碾成芝麻大小颗粒并蒸熟,落花生碾成芝麻大小颗粒、红枣去核切成小丁;上述材料与黑芝麻、珍珠粉混合后制得混和丁;
(4)灌汤肉丸制备
①取重量份的干竹荪用冷水泡软后捞起挤去水,改刀成片备用;荷叶洗净备用;
②将步骤(2)中制得的猪皮鸡爪冻切成1厘米见方的小块,取适量搅好的肉泥,包入一粒皮冻、罗勒以及适量竹荪,将肉丸团匀;均匀地滚上上述混和丁,每个肉丸均用荷叶包裹,上锅用猛火蒸10分钟即可。
下面对本发明的配方中所选用的主要原料的性能及作用机理进行简要分析如下:
1、君药:
鸵鸟肉:高蛋白、低脂肪、低胆固醇、低热量。
竹荪:性温味甘,具有活血、健脾、益胃、助消化之功效。
洋甘菊:味微苦、甘香,明目、退肝火,治疗失眠,降低血压,可增强活力、提神。增强记忆力、降低胆固醇。
柠檬马鞭草:原产南美,叶子多被用作草药茶,具有芳香性,能助消化、止痉挛。
2、臣药:
桃花:甘、苦、平、微温,入心、肺、大肠经。泻下通便,利水消肿。用于水肿,腹水,便秘。
玫瑰花:性温味甘。行气解郁、疏肝理气、和血散瘀和收敛。
莱菔子:性平,味辛、甘、无毒,归肺、胃经。具有消食导滞,降气化痰功效。
槐米:性微寒、味苦,具有凉血、止血,清肝泻火等功效。
冰糖:味甘、性平,入肺、脾经;有补中益气,和胃润肺的功效。
黑豆:性平、味甘;归脾、肾经;具有消肿下气、润肺燥热、活血利水、祛风除痹、补血安神、明目健脾、补肾益阴、解毒的作用。
红豆:性平,味甘、酸。利水消种,解毒排脓。
3、佐药:
荷叶:性平,味苦涩,有解暑热、清头目、止血之功效。
鸭跖草:味甘、微苦,性寒。能清热,解毒,利尿。为消肿利尿、清热解毒之良药。
淡竹叶:甘淡,寒,无毒。入心经、肾经。甘淡渗利,性寒清降,善导心与小肠之火下行而利尿通淋。
香薷:味辛、性微温,具有驱风发汗、行水散湿、温胃调中之功能。
白茯苓:性平,味甘、淡。归心、肺、脾、肾经。能渗湿健脾。
落花生:甘、平,入脾、肺。健脾和胃、利肾去水、理气通乳、治诸血症。
黑芝麻:性平味甘,归肝、肾经。有补益精血,润燥滑肠功效。
红枣:味甘性温、归脾胃经,有补中益气、养血安神、缓和药性的功能。
珍珠粉:味咸甘寒无毒。具有安神定惊、明目去翳、解毒生肌等功效。
4、使药:
洋葱:性味辛温。有降血脂、抗动脉硬化功效。
生姜:味辛,性温。能开胃止呕,化痰止咳,发汗解表。
肉桂:性大热,味辛、甘。有补火助阳,引火归源,散寒止痛,活血通经之功效。
豆蔻:辛,热。归肺经、脾经、胃经。散寒燥湿,解酒毒,化湿消痞,行气温中,开胃消食。
香叶:辛;微温。健胃理气。主脘胀腹痛;跌扑损伤;疥癣。
淡豆豉:性味苦寒,具有解表,除烦,宣郁,解毒之功效。
山楂:性微温,味甘、酸。归脾、胃、肝经。有消食化积、活血散瘀功效。
罗勒:性温昧辛。有疏风行气,化湿消食、活血、解毒之功能。
本发明按中医药“君臣佐使”原理科学配方,具有和胃消脂、活血行瘀、宽胸化痰、利尿泻下的功效。鸵鸟肉搭配竹荪和柠檬马鞭草,作为组方中的君药,主要起到和胃消脂作用,从解决肥胖的根本原因着手。其中柠檬马鞭草含有丰富的柠檬醛,可控制胃部痉挛及绞痛,克服反胃和胀气,并能促进胆汁分泌以分解脂肪。与竹荪相配具有益气补脑、凉血解毒、降压、抗癌、减肥功效。此外,还可以与臣药中的莱菔子、使药中的山楂、香叶等产生协同作用,和胃助消化,消除脂垢。莱菔子水溶性生物碱对ApoE基因敲除小鼠血脂的影响,发现莱菔子水溶性生物碱能够提高高密度脂蛋白胆固醇( HDL-C) 的含量。同时红枣、荷叶等富含的膳食纤维亦降低血浆胆固醇。一方面水溶性膳食纤维(SDF)具有吸附胆固醇的作用,使胆固醇不易透过肠黏膜吸收;另一方面,SDF可部分阻断胆汁酸与胆固醇的肠肝循环,加速胆盐、胆酸等从粪便排泄,从而降低血中胆酸与胆固醇水平。上述中药所含有的黄酮类、生物碱、膳食纤维等成分通过不同的机制,协同产生和胃消食降脂作用。
肥胖者血液中脂肪过多,容易引起动脉硬化,特别是心、脑血管病变多由此产生。活血行瘀的药物对扩张冠状动脉,增加血流量,降低血脂,以及防止斑块形成和促进其消退均有作用。臣药中的桃花含有多种维生素和微量元素,这些物质能疏通经络,扩张末梢毛血管,改善血液循环,促进皮肤营养和氧供给,滋润皮肤。防止色素在皮肤内慢性沉淀,有效地清除体表中有碍美容的黄褐斑、雀斑、黑斑。《千金药方》载:“桃花三株,空腹饮用,细腰身”。玫瑰花含有黄酮、 香茅醇、香叶醇、苯乙醇、萜类等成分,具有抗氧化活性、调节血脂、 抗血栓、抗菌等作用。同时本发明中的使药大部分偏温性,如生姜、肉桂、山楂、豆蔻等均能活血行瘀,与桃花、玫瑰花产生协同作用,美容养颜,并且降低肥胖者的危险因素。
宽胸化痰可改善脏腑功能。中医有"肥人多痰"的观点,该痰是指肥胖之痰浊,亦即脂肪过多。臣药莱菔子醇提取物具有显著的祛痰作用,炒莱菔子水提取物具有一定的平喘作用。臣药中的冰糖和使药中的生姜亦能增强其润肺化痰的作用,数者叠加从而产生协同强化作用的结果。
清热利尿则是是给以出路加强排泄的。鸭跖草、淡竹叶、白茯苓等均能通过多种机制清热利尿,如淡竹叶能增加尿中氯化物的排泄量。肥胖之人,体质大多强壮结实,如有大便秘结者,可通过用泻下通便法以排泄脂垢邪浊。佐药中的黑芝麻起到润肠通便作用。
本发明的有益效果在于:本发明运用中医中药辨证施治,通过和胃消脂、活血行瘀、宽胸化痰、清热利尿的几种作用的综合结果,使得肥胖人群用本药膳来美容养颜、降脂减肥并获得良好的效果。
在预处理鸵鸟肉时,加入了木瓜蛋白酶,利用酶促反应,使鸵鸟肉所含的大量蛋白质水解成小分子肽或氨基酸。有效转化蛋白质的利用,大大提高其营养价值,并有利于人体消化和吸收。
下面结合具体实施方式对本发明作进一步的详细说明,但本发明的保护范围不限于此。
具体实施方式:
实施例1:
本实施例的一种养颜瘦身的灌汤鸵鸟肉丸药膳,按重量份计,包括以下原料:鸵鸟肉400份、竹荪40份、洋甘菊40份、柠檬马鞭草40份;桃花5份、玫瑰花5份、莱菔子10份、槐米10份、冰糖5份、黑豆10份、红豆10份;荷叶10份、鸭跖草5份、淡竹叶5份、香薷5份、白茯苓10份、落花生10份、黑芝麻10份、红枣10份、珍珠粉3份;洋葱10份、生姜5份、肉桂2份、豆蔻2份、香叶2份、淡豆豉10份、山楂10份、罗勒5份。
配料及其他调味料:5份鸡爪、5份猪皮、5份蛋清、4份料酒、5份生抽、5份老抽、5份鸡精、5份香油、2份五香粉、2份花椒、2份小茴香、5份淀粉,精盐适量、0.1%木瓜蛋白酶0.4U/μg。
上述养颜瘦身的灌汤鸵鸟肉丸药膳的制备方法,包括以下步骤:
(1)鸵鸟肉预处理:
按上述配比,取重量份的鸵鸟肉洗净,加入0.1%木瓜蛋白酶0.4U/μg,60℃水解6h,取出沥干后剁成肉糜,加入精盐、生抽、鸡精、五香粉、香油腌制,加入淀粉和蛋清以及洗净剁碎的洋葱,顺时针搅打上劲;
(2)猪皮鸡爪冻制备
①按照所述重量份,将生姜切片、鸡爪去骨备用;将洋甘菊、柠檬马鞭草、莱菔子、槐米、鸭跖草、淡竹叶、香薷、山楂、淡豆豉、花椒、肉桂、香叶、小茴香、豆蔻用冷水浸泡10min后用纱布包装好制得药包;另取桃花、玫瑰花冷水浸泡10min备用;
②凉水中加入料酒、生姜焯烫猪皮,捞出后用刀刮去残留猪毛后切条;
③水开后调入料酒、冰糖,放入切好的猪皮、去骨鸡爪、生姜和药包,中火炖50min后加入老抽、盐,继续煮20min以上至熟烂;
④制冻:煮好后捞出生姜和①中制得的药包,放入桃花和玫瑰花搅拌均匀后倒入耐热容器中,冷却后盖保鲜膜入冰箱冷藏2小时以上;
(3)混和丁制备
各取重量份的黑豆、红豆、白茯苓浸泡60min后碾成芝麻大小颗粒并蒸熟,落花生碾成芝麻大小颗粒、红枣去核切成小丁;上述材料与黑芝麻、珍珠粉混合后制得混和丁;
(4)灌汤肉丸制备
①取重量份的干竹荪用冷水泡软后捞起挤去水,改刀成片备用;荷叶洗净备用;
②将步骤(2)中制得的猪皮鸡爪冻切成1厘米见方的小块,取适量搅好的肉泥,包入一粒皮冻、罗勒以及适量竹荪,将肉丸团匀;均匀地滚上上述混和丁,每个肉丸均用荷叶包裹,上锅用猛火蒸10分钟即可。
实施例2:

按上述配比,取重量份的鸵鸟肉洗净,加入0.1%木瓜蛋白酶0.6U/μg,60℃水解6h,取出沥干后剁成肉糜,加入精盐、生抽、鸡精、五香粉、香油腌制,加入淀粉和蛋清以及洗净剁碎的洋葱,顺时针搅打上劲;
(2)猪皮鸡爪冻制备
①按照所述重量份,将生姜切片、鸡爪去骨备用;将洋甘菊、柠檬马鞭草、莱菔子、槐米、鸭跖草、淡竹叶、香薷、山楂、淡豆豉、花椒、肉桂、香叶、小茴香、豆蔻用冷水浸泡10min后用纱布包装好制得药包;另取桃花、玫瑰花冷水浸泡10min备用;
②凉水中加入料酒、生姜焯烫猪皮,捞出后用刀刮去残留猪毛后切条;

配料及其他调味料:15份鸡爪、15份猪皮、15份蛋清、8份料酒、15份生抽、10份老抽、8份鸡精、8份香油、6份五香粉、6份花椒、6份小茴香、15份淀粉,精盐适量、0.1%木瓜蛋白酶0.8U/μg。
上述养颜瘦身的灌汤鸵鸟肉丸药膳的制备方法,包括以下步骤:
(1)鸵鸟肉预处理:
按上述配比,取重量份的鸵鸟肉洗净,加入0.1%木瓜蛋白酶0.8U/μg,60℃水解6h,取出沥干后剁成肉糜,加入精盐、生抽、鸡精、五香粉、香油腌制,加入淀粉和蛋清以及洗净剁碎的洋葱,顺时针搅打上劲;
(2)猪皮鸡爪冻制备
①按照所述重量份,将生姜切片、鸡爪去骨备用;将洋甘菊、柠檬马鞭草、莱菔子、槐米、鸭跖草、淡竹叶、香薷、山楂、淡豆豉、花椒、肉桂、香叶、小茴香、豆蔻用冷水浸泡10min后用纱布包装好制得药包;另取桃花、玫瑰花冷水浸泡10min备用;
②凉水中加入料酒、生姜焯烫猪皮,捞出后用刀刮去残留猪毛后切条;

②将步骤(2)中制得的猪皮鸡爪冻切成1厘米见方的小块,取适量搅好的肉泥,包入一粒皮冻、罗勒以及适量竹荪,将肉丸团匀;均匀地滚上上述混和丁,每个肉丸均用荷叶包裹,上锅用猛火蒸10分钟即可。
在本发明中精盐的放入量可以根据个人的口味进行增减,没有特殊限制。
本发明的配方中选用的均为安全无明显毒副作用“药食两用”天然中药材,食用安全,和胃消脂、活血行瘀、宽胸化痰、利尿泻下,效果明显,尤其适合肥胖成年患者食用,能有效地降血糖、降血脂、美容养颜。经过20名31-50岁肥胖患者的直接食用(每周食用2-3次,食用三个月后),普遍反映体重明显减轻、血脂水平降低、腰围减小、脸色改善,具体如下表所示。

本发明在所述灌汤鸵鸟肉丸中添加膳食调味料,不降低本发明药膳的药用效果,而且使得该肉丸的味道更加鲜美,口感更好,气味更芳香。
添加了竹荪、柠檬马鞭草、桃花、玫瑰花、肉桂、珍珠粉几种原料后,降血脂、美容瘦身效果明显增加。
Claims (6)
1.一种养颜瘦身的灌汤鸵鸟肉丸药膳,其特征在于:按重量份计,包括以下原料:鸵鸟肉400-600份、竹荪40-60份、洋甘菊40-60份、柠檬马鞭草40-60份;桃花5-15份、玫瑰花5-15份、莱菔子10-20份、槐米10-20份、冰糖5-15份、黑豆10-30份、红豆10-30份;荷叶10-30份、鸭跖草5-15份、淡竹叶5-15份、香薷5-15份、白茯苓10-20份、落花生10-20份、黑芝麻10-30份、红枣10-20份、珍珠粉3-7份;洋葱10-20份、生姜5-15份、肉桂2-6份、豆蔻2-6份、香叶2-6份、淡豆豉10-30份、山楂10-20份、罗勒5-15份。
2.根据权利要求1所述的一种养颜瘦身的灌汤鸵鸟肉丸药膳,其特征在于:按重量份计,包括以下原料:鸵鸟肉500份、竹荪50份、洋甘菊50份、柠檬马鞭草50份;桃花10份、玫瑰花10份、莱菔子15份、槐米15份、冰糖10份、黑豆20份、红豆20份;荷叶20份、鸭跖草10份、淡竹叶10份、香薷10份、白茯苓15份、落花生15份、黑芝麻20份、红枣15份、珍珠粉5份;洋葱15份、生姜10份、肉桂4份、豆蔻4份、香叶4份、淡豆豉20份、山楂15份、罗勒10份。
3.根据权利要求1或2所述的一种养颜瘦身的灌汤鸵鸟肉丸药膳,其特征在于:还包括以下配料及调味料:鸡爪、猪皮、蛋清、料酒、生抽、老抽、鸡精、香油、五香粉、花椒、小茴香、淀粉、精盐,0.1%木瓜蛋白酶。
4.根据权利要求3所述的一种养颜瘦身的灌汤鸵鸟肉丸药膳,其特征在于:所述的配料及调味料按重量份计,包括5-15份鸡爪、5-15份猪皮、5-15份蛋清、4-8份料酒、5-15份生抽、5-10份老抽、5-8份鸡精、5-8份香油、2-6份五香粉、2-6份花椒、2-6份小茴香、5-15份淀粉,精盐适量、0.1%木瓜蛋白酶0.4-0.8U/μg。
5.根据权利要求4所述的一种养颜瘦身的灌汤鸵鸟肉丸药膳,其特征在于:所述的配料及调味料按重量份计,包括10份鸡爪、10份猪皮、10份蛋清、6份料酒、10份生抽、8份老抽、6份鸡精、6份香油、4份五香粉、4份花椒、4份小茴香、10份淀粉,精盐适量、0.1%木瓜蛋白酶0.6U/μg。
6.根据权利要求4所述的一种养颜瘦身的灌汤鸵鸟肉丸药膳的制备方法,其特征在于,包括以下步骤:
(1)鸵鸟肉预处理:
按上述配比,取重量份的鸵鸟肉洗净,加入0.1%木瓜蛋白酶,60℃水解6h,取出沥干后剁成肉糜,加入精盐、生抽、鸡精、五香粉、香油腌制,加入淀粉和蛋清以及洗净剁碎的洋葱,顺时针搅打上劲;
(2)猪皮鸡爪冻制备
①按照所述重量份,将生姜切片、鸡爪去骨备用;将洋甘菊、柠檬马鞭草、莱菔子、槐米、鸭跖草、淡竹叶、香薷、山楂、淡豆豉、花椒、肉桂、香叶、小茴香、豆蔻用冷水浸泡10min后用纱布包装好制得药包;另取桃花、玫瑰花冷水浸泡10min备用;
②凉水中加入料酒、生姜焯烫猪皮,捞出后用刀刮去残留猪毛后切条;
③水开后调入料酒、冰糖,放入切好的猪皮、去骨鸡爪、生姜和药包,中火炖50min后加入老抽、盐,继续煮20min以上至熟烂;
